We really like this dish and I can cook the chicken the night before and cook enough for two meals to add to the rice and beans the next night.

1 package yellow rice prepared as package states
2 cans black beans
Dried onions (or diced onions)
Chicken
Cajun seasoning

I cook the chicken on the stove with a little olive oil and cover with Cajun seasoning. I get chicken tenders and beginning cooking while they are still frozen, as they thaw you get a little water and don’t have to use much oil. Can serve over rice and beans as whole chicken tenders or dice.

Put black beans, onions with salt, pepper, and garlic while rice and chicken cook.

To serve make a bed of rice then beans and chicken on top.
In the picture, the one with whole tenders is my husband's and he likes chips and salsa with his and I like my chicken diced on top with other veggies.

This is a really simple dish that seems much more exciting. I threw this together one night when I was trying to use what I had on hand and LOVED it and it is actually on the menu for this week. I just used the topping on 2 large fillets of Tilapia but it would be enough for 3, my son just would not eat it with the crab on top.

1 can crab meat, drained

3 tilapia filets

1-2 garlic cloves diced

1/2 stick of butter

House seasoning (salt, pepper, garlic salt)

Parmesan cheese, shredded

Melt the butter and add the crab, garlic, and house seasoning, and mix well, Then add the mixture over the top of the tilapia then add a little shredded Parmesan cheese on top. Bake at 350 degrees for about 25-30 minutes. I also topped with a few micro greens.

This is a recipe that has been on the blog for a few years but just realized we didn't have a pic for it so we have added one.

Take one bunch fresh asparagus break the woody ends off. Toss in Olive Oil, garlic salt, and pepper or you can just use house seasoning.

Place in baking dish and bake at 350 for 15-20 mins.

I also like to add sliced mushrooms to this.

Freezer Pizza

Pizza Dough

2 Cup flour, all purpose
2 Teaspoon active dry yeast
1 Teaspoon sugar
1⁄2 Teaspoon salt
3⁄4 Cup water, warm
2 Tablespoon olive oil

For AUTOMATIC BREAD MACHINE, place ingredients in container in following order: water, olive oil, flour, sugar, salt and yeast. Select Dough setting and press Start.
For FOOD PROCESSOR, dissolve yeast and sugar in warm water in a measuring cup; let stand until bubbly--about 10 minutes. Stir in olive oil and salt. Insert metal blade or plastic dough blade. Place flour in work bowl. With motor running, pour yeast mixture through the feed tube in a steady stream, as fast as the flour absorbs it. When the dough forms a ball, stop the machine. Process continuously for 45 seconds to knead. Shape the dough in a ball, and place in greased bowl; turn to grease top. Let rise in a warm place until doubled--about 1 to 1 1/2 hours.

Pizza
Ingredients - This is your households preference......

12 Ounce mozzarella cheese, grated
1⁄4 Pound Italian sausage, browned
1⁄4 Pound ground beef, browned
1⁄4 Cup onion, chopped and sauteed
2 Ounce pepperoni slices
2 Tablespoon Parmesan cheese
1 pizza crust
1 1⁄2 Cup marinara sauce or pizza sauce

To assemble: prepare Pizza Crust as directed.
Spray pizza pan with non-stick cooking spray or brush with olive oil. Gently stretch Pizza Crust to fit pan, forming raised edge at lip. Sprinkle crust with grated mozzarella cheese.
Dot with browned sausage, ground beef, pepperoni and chopped and sauteed onion. Gently spread Marinara Sauce to cover cheese and toppings (This is the secret to a crisp crust - sauce on the top!): flash freeze pizza in pan. When frozen, wrap in aluminum foil.

We used hamburger, sausage, and bacon and different types of cheese that we were already using for a freezer cooking day.

To prepare: do not thaw pizza. Heat oven to 400 degrees. Bake frozen pizza for 20 to 25 minutes, until crust is browned, sauce bubbles and cheese is fully melted.

This recipe came from my friend Katie... She told me the recipe one night and I tried to remember till I got home and my husband LOVED it and I have made it for him several times. It is not my favorite but It is super easy and like I said He LOVES it which is not an easy feat. He comes home most days for lunch so it make a good lunch for him for a couple of days or a good dish for when I go out of town for a day or two to leave at home for him.

So take a pound of hamburger (remember I brown several pounds at once and freezer in bags so this really cuts down on the cooking time for this meal).
Dice up some onions (about 1/2 cup)
peppers (what ever you have about 1/2 cup)
my friends uses some celery but I DO NOT LIKE celery I sometimes add a little
salt, pepper, and garlic salt to taste
1 cup shredded cheddar cheese
2 cans of cream of something soup

Brown the Burger and add the veggies for a few mins. just till they soften a bit.

Mix with a cup or so of shredded cheddar, 2 cans of cream soup (I like on cream of celery, and one cream of chicken) salt, pepper, and garlic, and 1 cup of dry minute rice.

Mix all together once burger mix is ready add to the rice mixture and pour in a baking dish and bake at 350 for about 40 minutes EASY and GOOD

Buffalo Chicken and Potato Casserole

Let me start by saying this was AMAZING! I saw this floating around on Facebook and THIS is the page that I used the original recipe from. I did change some things on the recipe and we LOVED this dish.

about 1-2 pounds of chicken (I used less than 2 pounds)

4 potatoes peeled and diced

olive oil

house seasoning

small red onion

Franks red hot sauce

ranch dressing

shredded Monterrey jack cheese

real bacon crumbles or you can cook bacon and crumble (I cooked bacon and crumbled it)

chives or green onions (I didn't have green onions so I used chives)

Preheat the oven to 450. Peel and dice the potatoes and chop about half of a small red onion and put in a 9x13 baking dish. I poured some olive olive and mixed the potatoes around so it greased the pan as well. Then I sprinkled them with some house seasoning. Bake potatoes until tender.

While the potatoes are baking cook the chicken in a skillet with some olive oil. I sprinkled the chicken with some house seasoning as well. I cute the chicken in bite sized pieces and added Franks red hot sauce and mixed it together well.

Once the potatoes were done cooking I added some ranch dressing to them and mixed it together. I then put the chicken on top of the potatoes, sprinkled it with cheese and bacon crumbles and chives.

I put entire mixture back in oven and kept it in long enough for the cheese to melt. It was AMAZING!

My son has been Gluten Free for almost 4 years and Gluten Free baking has scared me. I just bought a mix if I need brownies or a cake but recently he has been wanting sandwiches and bread daily and at $6 a loaf (a small loaf at that) it adds up quick so I finally ordered all the flours, starches, and gums needed to actually bake Gluten Free from scratch. This was our first real attempt at a loaf of bread and it was a success.

brown rice flour is not in the picture

Here is what you will need to make this bread.

warm water (105°-110° F)
sugar
Active Dry Yeast
brown rice flour
potato starch (not potato flour)
tapioca starch/flour
½ cup sugar
xanthan gum
salt
vegetable oil or melted butter
large eggs
warm milk or milk of choice

and you can find the recipe at http://www.livingwithout.com/recipes/hawaiian_sweet_bread-2561-1.html?ET=livingwithout:e113113:176530a:&st=email

Makes one 9x5-inch loaf or two 6-inch round boules.

this is before baking

This bread is light for a gluten free bread and cooked all the way through, which I have had issues with before when cooking Gluten Free, and it sliced up nicely. I have part of the loaf in the freezer and it it holds up well, we will be making several loafs to have in the freezer.

I ordered all my flours, starches, and gums from Vitacost you may find them cheaper if you shop around but I could get them all from Vitacost without leaving my house.

NOTE: I used free range farm eggs so the bread has a little bit of a yellow color, if you use regular store bought eggs it will be whiter.

Submitted by Ann Kelly

At my house we have these Cheesy Grits about 3-5 times a week for breakfast. My son LOVES grits and I like giving him a hot breakfast before heading to school. We LOVED Trader Joe's Stone Ground grits but they no longer make them but we have found a local stone ground variety that we like almost as well. But you can use the quick cooking grits as well just follow the instructions on the package to how much water you will need and how long to cook.

TIP: ALWAYS add a little butter and salt to the water before adding the grits, you will be much happier with the end result. ALSO stirring grits is the key to having them lump free. Stir a lot when you first put them into the boiling water and then every couple minutes stir again.

Grits (prepared per the package)

Salt and butter In the pan and to taste

1 egg per 2 servings

1/2 cup diced or shredded cheddar cheese per 2 servings

1-2 Tablespoons of cream or milk per 2 servings

Prepare the grits as they package instructs, stone ground cook for about 20 minutes while quick cook in about 5 and each will call for a little different amounts of water etc.

Once they are ALMOST cooked I add the cheese and stir until it is melted,

Then take the cream or milk and the egg(s) and whisk together until a little frothy. And add SLOWLY to the cheese grits while stirring continuously so you will not get clumps of egg in the grits. My son does no like eggs at all so this way I am able to get some protein into him before school.

Stir the grits for another minute or 2, check to see if you need anymore salt and I usually add a little pepper then serve them hot.

If you make them this way they are so creamy.

Several years ago I made these potatoes when my father came to visit and he said they looked fancy, but really they could not be any easier.

Potatoes (sliced in half)

Olive oil

Seasoning mix of your choice (we like something with a kick)

In a Baking dish put a thin layer of olive oil with a good layer of your favorite seasoning, Originally I used seasoning salt but I switch it up. Just make sure you put a SOLID layer of the seasoning.

Next slice your potatoes in half (I prefer Yukon Gold) and place them flesh side down and bake at 350 degrees for 30-40 minutes, they are so full of favor and so tender.

2 cups shredded monterey jack cheese
1 cup shredded sharp cheddar cheese
1/2 pound of bacon, cooked and crumbled
6 eggs
1/2 cup milk
black pepper
ground cayenne pepper (optional)

Put Montery Jack cheese with flour and place in bottom of greased 8x8 pan (or if you double the recipe in 9x13). Top with cheddar cheese; sprinkle with bacon.

Beat eggs and milk. Add black pepper to the milk and egg mixture; pour over all.

Cover and chill 8 hours or overnight. Remove from refrigerator 30 mins before baking. Bake, uncovered at 325 for 40-45 mins or until a knife inserted near the middle comes out clean.

Okay the amounts are estimates...I have made this a bunch and don't measure my ingredients.

1/4 cup real bacon bits or a few slices of bacon
1/2 to 1 pound ground beef
1 package crescent rolls
2 tablespoons of dried minced onions
2 tablespoons chopped hamburger pickle slices (i use dill relish)
2 tablespoons of ranch (I use more)
2 slices American cheese
1 egg, beaten

Heat oven to 375. Cook bacon (if using real bacon). Cook beef with bacon and onions, stirring occasionally. Drain grease if needed. Stir in pickles/relish and ranch dressing.

Unroll dough and separate into 4 rectangles; Place on greased cookie sheet. Press each into a rectangle by firmly pressing the perforations.

Spoon mixture equally in to rectangles. put half a piece of cheese on top of each. Fold dough over. Brush tops with egg.

My grandma use to make this on holidays and it was my FAVORITE dessert! She passed away while I was in college. My Mom got the dish that she always used when she made it and now she makes it for me on Christmas and serves it in the same dish my grandma did.

1 can cherry pie filling
1 can eagle brand milk
1 large can crushed pineapple (use half of the juice)
1 large tub of cool whip
1 cup pecans (optional)

My Mom puts the cherry pie filling in the blendor to chop up. Mix all ingredients and chill for a few hours before serving.

The pantry was getting bare and I had laid out some ground beef and I had some hot dog buns leftover so we made "hot dog" hamburgers and they were really good. I actually liked using the hot dog buns since they are not open on both sides you don't loose the toppings off your burger.

You could mix the burger anyway you like, I used:
1 pound of ground beef
1 egg
about a Tablespoon of house seasoning (salt, pepper, and garlic)
2 teaspoons Worcestershire Sauce

Mix everything together and pat burgers into hot dog shapes and grill. I lined the grill with some heavy duty foil just to the burgers would not fall through the grill. Then dress it as you would a regular hamburger and enjoy.

mayo

dill relish

salt and pepper (to taste)

1/8 cup onion (optional)

few dashes of tabasco sauce (optional)

Combine tuna, eggs and salt and pepper. If you are adding onion add the finely diced onion now.

Add desired amounts of mayo and relish and mix. I taste as I go and add more salt, pepper, mayo or relish as needed. My husband likes to add a few dashes of tabasco sauce to his tuna.

round steak

kroger swiss steak or mccormick swiss steak mix

can of diced tomatoes (you can use two if you like a lot of tomatoes in your swiss steak)

1/2 cup to 1 cup of water (you don't want the mixture too runny but you want enough so that the steak won't dry out and so that you have a good amount of sauce)

Mix tomatoes, water and seasoning together. Place round steak in slow cooker and pour mixture over the top. Cook on low for 8 hours (or until steak is fork tender)

Serve over mashed potatoes.

Easter is the celebration of the resurrection of Jesus Christ, our Lord and Savior. Lots of men died through means of cruxificion but the significance of Jesus dying on the cross was he rose from the dead three days later.

We are all born sinners and should be punished for our sins. Jesus was sent to Earth to fulfill God's plan and he never once sinned as a human. Through Jesus' life, death and resurrection he paid the price for our sins and the wrath of God was poured out on him as opposed to us, for those who believe.

“For God so loved the world, that he gave his only Son, that whoever believes in him should not perish but have eternal life. For God did not send his Son into the world to condemn the world, but in order that the world might be saved through him. Whoever believes in him is not condemned, but whoever does not believe is condemned already, because he has not believed in the name of the only Son of God.(John 3:16-18 ESV)

Jesus said to her, “I am the resurrection and the life. Whoever believes in me, though he die, yet shall he live, and everyone who lives and believes in me shall never die. Do you believe this?” (John 11:25-26 ESV)

And he said to them, “Do not be alarmed. You seek Jesus of Nazareth, who was crucified. He has risen; he is not here. See the place where they laid him. (Mark 16:6 ESV)

White Chili #2

Cooking in Parchment paper is a great way to cook FAST and EASY HEALTHY meals for your family and this process is great for guests as well. Once you learn this process you will LOVE it. I use this process about once a week.

I always use it for fish but chicken would work well as well. I like that I can put the veggies each person in my family will actually eat in with their fish with the seasoning they like the most and everyone is happy. For example My son usually has the simple salmon with carrots and broccoli, and my Husband will have his blackened with beans and onions, and I really like the pineapple listed below.

This is also a fast easy way to cook vegetables without them drying out. I like that I can throw everything in the bags and then leave in the fridge until we are ready to eat they only take about 15-20 minutes in a warm oven to cook completely.

Below are several ideas to go to recipes just click on the title above each picture.
