สปาเก็ตตี้ผัดหมูและโหระพา or Spaghetti with Pork and Thai Basil is not a real Thai dish but it's base on Thai taste. This recipe is from my idea to make spaghetti more interest for Thai people so it has a little bit hot and taste like Asian. And sure! you can eat this with rice :-)

This recipe method is similar to Stir fried pork with holy basil but it taste different because of Thai basil and Holy basil. Thai basil gives you a sweet flavour but Holy basil gives a hot flavour. If you do like hot and spicy dish I recommend you to try Stir fried pork with holy basil serve on spaghetti ;-)

See how Thai basil look like :-)

different from Italian basil

"Por Pia Tod" ปอเปี๊ยะ Deep Fried Spring rolls I made this with a few ingredients to show you how to cook it, you can also add more ingredients in this recipes, like shrimp, pork or bean sprout are good in this recipe too. Let's try to make some experiment for your unique spring roll =)

Their have many kind of spring roll wrappers, so I use Spring roll pastry for this recipes. It's different from Rice paper. Make sure you got the right one :) I use 5"x5" size, not sure is it available the same size in your market or not, if you got a big one you can cut it to smaller size or make it as a real big one ;-)

We're Thai and we eat rice almost everyday, (sometimes we ate noodles) That's mean I was born with rice cooker and I never cook rice without rice cooker unless we're on campfire LOL and it's always turn out bad (burn)

Thai Jasmine rice is the most popular for us, it's really soft and aromatic different from Japanese rice (short gain rice) they're little sticky. Origin of this kind of rice is Thailand, some country want to sign patent that the rice is them with the name of Jasmine rice (without "Thai") This's sound so weird for me.

I just found the way how to cook it perfectly and I've try this for a while (4-5 times) and it turn out great, so I'll show to how now :-) First thing you going to need is Thai Jasmine Rice (Sure! you can't cook rice without rice isn't it?, hahaha) and water. You also need heavy duty pot, it's also help you to prevent from burning. It's not a big deal if you don't have it, cook it on any pot you have.

Perfect Thai Jasmine rice Ratio

1 cup rice : 1+1/2 cup water

1 cup of rice can serve up to 2 serving, up to how much you serve per plate but for my family 1 cup can serve for 2 person eat with many side dishes :)

*make sure you have a big pot, the rice will double when it's done.

Favorite Finds : Cute Valentine's day Breakfast

Just cut your hot dog into half and leave around 1cm. to connect the end.

ราดหน้า Rad Na or Lard Nar is popular dish in Thailand too. "Warm gravy and soft noodles" So this recipe I made today is the easiest recipe like a base of the dish or in other word this is a authentic style, Nowadays many restaurant add more ingredients, such as carrot, broccoli, baby corn, mushroom, or whatever you can find in your market. You can also change the pork into any kind of meat you like, shrimp and squid is very popular for this dish.

Fresh Wide Rice noodles, Chinese Kale, Sweet Soy sauce

I use fresh wide rice noodles, if you can't find the fresh one you can substitute with dried one. You may use other kind of noodles which you like, rice vermicelli is great too. I have try this with spaghetti sound weird but it's turn out great! ;-)

You will need : (a meal for one person)

3/4 cup Wide Rice Noodle (if use dried wide rice noodle cook it by following direction from the package before cooking)

1/4 cup Pork (slice)

1 cup Chinese Kale (cut 1" long)

1 ts. Garlic (chop)

2 ts. Corn starch (dissolve with 4 ts. water)

2 ts. Soy Bean paste

1 ts. Sweet soy sauce

1 ts. Sugar

1 ts. Soy sauce

1 ts. Fish sauce

3 ts. Oyster sauce

1+1/2 cup Water

Cooking oil for frying

*You could mix Blue ingredients before cooking and add in at once, for easier step ;-)

Spicy tuna salad, or in Thai word call " Yum salad tuna " (ยำสลัดทูน่า) This dish very popular in FUJI Japanese restaurant in Thailand. Kind of funny! Thai style in Japanese restaurant, but it's really delicious and become the most popular menu for the restaurant. (I'm surely) Every table must order this menu. This dish adapted for our taste so that why they add some lemongrass and chili.

Again FUJI is the most popular Japanese restaurant in Thailand. They have many branch all around our country. FUJI had adapted them food taste up to Thai taste, so almost menu in the restaurant not real Japanese taste :) But I'm surely Sashimi dish is real Japanese, because it's raw LOL

Instant noodles spicy salad or Yum MAMA (ยำมาม่า) is very popular menu for spicy salad street vendor in Thailand. The vendors have many kind of meats and let you select for your dish :) such as shrimp, squid, fish ball, mussel, and many mores! I'm surely if you travel to Thailand you will see new kind of meat which you never taste before like Horseshoe crab's egg (I really like it)

In this recipe, I use shrimp tom yum flavor of MAMA brand which is the most popular brand for instant noodles in Thailand. Thai people call instant noodles as " MAMA " , see how popular they are :)

I'm surely that you can find this package at Asian market and online store. But I've seen these appeared in some Walmart, but not sure for other store. Hopefully you can find this in your market nearby :)

You will need : (1 serving)

1 package of instant noodles - MAMA brand - shrimp tom yum flavor

40 g. squid

40 g. ground pork

1 shallot

2 ts. lime juice

2 ts. fish sauce

1 ts. sugar

Chinese celery (garnish - use any kind of veggies you like)

Thai chili (as much as you like)

This menu is similar like Tom Yum soup but this will have less spicy without chili paste. The key of this menu is add galangal root more than lemongrass. Why? because this menu call "Tom Kha Gai" ต้มข่าไก่

Tom = soup

Kha = galangal

Gai = chicken

Yes! Kha is the main ingredient of this menu. And again Galangal's flavor is absolutely different from ginger root, do not use it to substitute Galangal ;)

Kaffir lime leave, Oyster mushroom, Galangal root

Thai chili, Coconut milk, lemongrass and cilantro

You will need : (1-2 serving)

2+1/2 cups of water

250 ml. coconut milk (200ml. first and 50ml. at the end)

250 g. chicken

60 g. oyster mushroom

1 stalk lemongrass

2 kaffir lime leave

5-6 slices galangal root

3 tbs. tamarind paste

2 tbs. fish sauce

1/2 tbs. sugar

1 pinch salt

1 tbs. lime juice (add as much as you like)

Thai chili (up to your taste)

cilantro (garnishing)

Kanom jeen is Thai rice noodle which usually serve as a single dish dressing with some curry soup. But it can eat in other ways. So today I went out to locally festival and I ate that. See the picture above you'll see how they serve look so simple but the taste is really good :)

<< On the table will have many kind of vegetables as a side dish, such as bean sprouts, string beans, cucumbers, basil and more. You can add those veggies as much as you like!

I like to add green mustard pickled, string bean, bean sprout and sweet basil >>

I like to mix up everything and eat!

If you come to Thailand don't forget to try dish menu :) very delicious and healthy. Finally I'd like to show you how to make this dish soon :) hope you'll like it!

Thai steamed sea bass (sour and spicy style)

I met a lot of foreigner in Thailand who have stayed here for long time, so I ask them "What is your favorite Thai food?" everyone answer me that they love Steamed sea bass! the best of the best, healthy delicious and good combination between fish and sauce :)
If you think that Pad Thai is very popular in Thailand. Yes, it is! but is doesn't the best dish. If you came here and find out more about Thai food. You will found something more interesting than Pad Thai! Like steamed sea bass :)

Sea bass, Umm..actually we serve this dish with the head on but merchant took it out :'( anyway if you buy whole fish from market you should prepare it, take shell and gut off then wash and clean it. The easiest way to do this is buy the fillet one LOL. I like the whole fish because we'll get sweet juice from bones.

Chopped garlic, if you think it too strong for you, you can thinly slice it instead :)
Thai red chili, Thai people like spicy thing so I add it around 10-12 chili for this dish. If you don't like spicy you can skip it or replace this with red sweet chili for the color :)

Chinese celery, if you can't fine this in your market, I think you can substitute this with thin slice regular celery. It's not big deal to skip it :)

You will need : ( 1 serving for 1-2 persons)

300 g. sea bass or any fish you like

2+1/2 tbs. lime juice

1+1/2 tbs. fish sauce (or salt if you prefer)

2 ts. sugar

8 cloves chopped garlic

10 Thai red chili ( as much as you like)

3-4 stalk Chinese celery for garnish

Panang curry is a dry curry which fried in coconut milk. In this recipe I use chicken for the meat and you can also use another meat you like such as, beef, pork or anything. We traditional serve as a side dish with some rice, but you can adapt to eat with other :) Good luck in the Kitchen.

Red curry paste, same as my earlier recipes which are Stir fried Thai red curry paste and Fish in dried red curry

This dish also add Kaffir lime leave or someone call Thai lime leave. Pull the stem off, roll and finely slice. This will give you citrus flavor. I really love it. Many Thai dish also add it, like Tom Yum Pla and Tom Yum Kung

Thai egg plant, as you can see water get a bit brown because of egg plant effect. That why we should soak it in water, if not your egg plant will getting brown instead :D

Ground roasted peanut, I use mortar to ground it. So in Thailand we rarely use blender to blend anything, we use mortar for ground, blend, and mix. It'll give more aromatic than use blender.

Chicken, You can cut them in any design you like, and cooking time will change up to how thick of your meat :)

You will need : ( 1 serving as a side dish )

200 g. Chicken breast

2 Thai eggplants

2 tbs. roasted peanut

3 tbs. red curry paste

3 kaffir lime leave

4 ts. fish sauce

2 ts. palm sugar

coconut milk ( I use around 5 tbs.)

water (add if the sauce is too thick)

cooking oil for frying

If you a big fan of green curry, I'm surely that you will love this dish too ;) Same ingredient as Green curry fried rice but in this recipe we add one more thing which is coconut milk to make sauce. Alright hope you enjoy this recipe and my video :)

I use Chaokoh brand for the coconut milk, this package is 250 ml. but use just 200 ml. However if you like a lot of water in your sauce add it all and add more seasoning in it.

Red chili, It doesn't spicy but it give a really good color into my dish. Remove seed and membrane first then cut into stripe like that >>>

Baby corn, I buy fresh baby from nearby market if you can't find fresh one just use the frozen instead. *You can also add another vegetables you like such as carrot, beans, etc.

Thai eggplant, cut stem off and thinly slice it, soak in water to prevent from getting brown.

You will need : (3-4 serving)

200 g. dried spaghetti

200 g. chicken breast

100 g. baby corn

2 Thai eggplants

1 handful of Thai basil (sweet basil)

1 red chili

200 ml. coconut milk

50 ml. water

3 tbs. green curry paste

1 tbs. fish sauce

1 tbs. soy sauce

1 tbs. sugar

3 tbs. oyster sauce

2 tbs. cooking oil for frying

They have many style of spicy salad in Thailand. So today I'd like to to show you how to make egg dish, with simple ingredients come with fresh vegetables and spicy :)

Chinese celery, same flavor but this kind is more stronger than the regular one :) If you can't find Chinese celery I think you can substitute it with normal celery but cut into thin stripe.

You will need : ( 1 serving )

2 eggs

1 ts. chopped Thai red chili

1-2 stalk Chinese celery

1/2 medium tomato

3 ts. fish sauce

4 ts. lime juice

2 ts. sugar

Then I decided to try - - - OMG! the heaven is here lol....Then I love it since.

Tamarind paste, In traditional we use sour tamarind dissolve with warm water to get paste. But this bottle really help to cut preparing times :)
