250/300 g. de topinambours *
1 oeuf
20 g de farine
30 ml de crème liquide
sel et poivre
Bien brosser les topinambours, les mettre à cuire avec la peau dans l'eau bouillante salée , contrôlez la cuisson (environ 10/15 mn) avec la pointe d'un couteau. Égouttez, retirez la peau,  réduire en purée avec le moulin, ajoutez l'oeuf et la farine.Détendre légèrement la purée avec la crème

 200 g de sucre en poudre
Dans un récipient allant au micro-onde mettre l'eau et le sucre faire chauffer 2 m 30, bien remuer, ajouter les citrons coupés en quartier, chauffer à nouveau 7 minutes, remuer délicatement puis remettre au micro-onde 7 minutes, laisser refroidir et conserver ces quartiers de citrons au congélateur pour une utilisation ultérieure.

Ingrédients :
Pour 1 k 500 de jus de raisin1 k de sucre spécial confiture
3 cuillères à café d'Agar-agar (1c. à café  par 500 Gr. de confiture)
10 minutes de cuisson 
Cueillir les grappes de raisin,  les déposer dans une bassine, recouvrir d'eau avec un filet de vinaigre blanc, les retourner délicatement afin de s'assurer que les grains soient propres.  Les mettre à égoutter sur un

6 petits piments rouges frais (ou poivre)
sel 
6 branches de thym
6 bocaux de 50 cl
Laver les courgettes sans les peler, ôtez les extrémités, coupez-les dans le sans de la longueur en tranches fines. Lavez et essuyez les piments, (ces derniers, facultatifs, c'est selon le goût de chacun), vous pouvez remplacer par quelques grains de poivre

Porter à ébullition et laisser mijoter pendant 1 heure.Verser le tout dans un sac à gelée et laisser le jus s'écouler pendant 12 heures.Compter 200 g de sucre pour 50 cl de jus passé.Verser le sucre dans la bassine ( propre) avec 2 cuillères à soupe de jus de citron,
