This cake was for a little boy's birthday party who just loves Jake and the Neverland Pirates. (Gotta love Nick Jr!)

Most of the accesories, including the sail, are made out of fondant and/or gumpaste. The sand is a mixture of graham crackers and brown sugar.

I had a client who had just gone on a 250 mile bike tour with his wife. So he thought it would be fun to replicate her bicycle seat in cake for her birthday party!

First Birthday Cake - Puppy Dog

I love First Birthdays! Especially when I get to do one for my niece who is absolutely in love with dogs. She even barks every time she sees one!! So my sweet Sister-in-Law and I made this special cake for her daughters first birthday party...

The cake is just a 6 inch round. I like to give little One Year Olds a cake that's their size!

The little puppy on top is just made out of fondant. We sculpted all the little body parts and then blended them together with a fondant tool.

I finished him off with some clear vanilla to give him a shiny appearance.

And of course, the adults had to have a cake to eat! So I made a bigger dog all out of buttercream. After putting a thick coat of icing on her, I stuck the whole thing in the freezer for about 20 minutes. When it came out, I used a fork to scrape all over and give the look of fur.

Finish her off with a pink tongue and collar and she looks cute enough to pet!

Easter is quickly approaching and I have a couple of ideas to share with you.
The first one is an Easter Basket cake. You start with a round cake and end up with this:

I used a couple different techniques on these cakes. Start with a solid color coat of icing. Next, I did a basketweave for half of the cake (you can use two different colors when doing the basket weave and end up with the top picture). I used a star tip and writing tip to make the bunny and Easter eggs. I used a star tip to create a rope border making the handle of the basket. The neatest technique I used was to make the embroidered flowers. I've heard you can only use this technique on fondant, but to tell you the truth, I've never used it on fondant! I've only ever used it on buttercream! You take a cookie cutter in the shape you desire, make an imprint in the icing. Then you trace that with a writing tip of your desired width. After that, you use a damp paint brush (used only for cake decorating! no paint allowed!) to "pull" the frosting inward to the middle of the flower. When done lightly and delicately, you end up with beautiful embroidered flowers!

My next idea uses less techniques, but a steady hand! You can start with a 2 layer round cake and end up with this:

If you can picture it...his ears and bow tie used to be a round cake! The easiest way to accomplish this is to draw it out on a piece of paper first and use that as a stencil when you cut. Otherwise, you could end up with a crooked bow tie and lopsided ears!
Something else that made this cake easier was the grass tip. You can easily make the fur of the bunny rabbit with the multi-holed tip. Then you just ice smooth the tie and add the bunnies features in pink and voila! You have a cute Easter Bunny worthy of a photograph and then eating!
Oh yeah...I added jelly beans for the eyes and nose!

Graduation Cake

I made this cake for my sister in law. She played tennis at Florida State University, a Seminole to be proud of!
I used a fondant / gumpaste mix to make the graduation cap, scroll, and tennis racquet. The tennis balls are made from a mold using melted chocolate. I tented the chocolate using gel food colors.
By mixing gold luster dust and garnet food coloring with clear vanilla, I was able to add finishing touches of garnet and gold.

Winnie The Pooh Cake

My daughter is absolutely in love with Winnie the Pooh. So, for her second birthday, I had to make a Pooh cake.I did a transfer technique using a coloring book page and parchment paper. First, I outlined his body using a #3 writing tip. I used a #16 star tip to fill in his body and honey pot. Then, the honey pot was filled with honey using a #5 tip and smearing it around with a damp paintbrush. The same technique was used to fill in the shirt.
The moment of truth came when my 2 year old saw it and yelled out, "Yeah, Pooh Bear!" It's always a plus when they recognize what you've done!

Another Helmet Cake??

Anybody that looks at this blog, knows I'm a Seminole fan. However, when my husband's best friend asked me to duplicate the helmet shaped cake, but with a BYU exterior, I couldn't say no! As a tribute to MY team though....the face mask is off an FSU helmet. I just covered it in dark blue fondant and painted it black!

The clients loved it...and FSU won the game...so I'm okay with it!

FSU Helmet Groom's Cake

I made this FSU Seminole Helmet as a groom's cake. This is one of the first carved cakes I've done and I think it turned out pretty well. The only thing inedible is the face mask (it's an actual face mask off of a toy helmet!)

We even added a mouth guard! And to answer the many questions floating around...no, I did not bite it to give it teeth marks! We used the back side of an Exacto Knife.

Alligator Baby Shower

This is a baby shower cake for a University of Florida Gators fan. Grandma-to-be found a onesie with this alligator on it. I was able to duplicate it in fondant and lay it on top of the cake.

The little white dots are made of fondant. The back side of a piping tip was the perfect size. I used it just like a cookie cutter. I finished off the cake with a small bead border. A simple but beautiful cake!

Basketball Cake

Lincoln High School had their annual end of the year Banquet for the Ladies Basketball Team and I had the honor of presenting them with this cake.
To add some personalization, I used fondant to make each jersey with the girls numbers on them.

To top it off, I baked a cake in a metal bowl and decorated it to look like a basketball. I even "smoothed" out the icing with a paper towel to give it texture.

I think the cake was a slam dunk!

Cherry Blossoms

I was asked to do a cake for an International Dinner night at our church. The theme was based around China. So I did a cake with a cherry blossom tree and some Chinese writing on top.

The Chinese writing is supposed to say "Faith, Hope, Charity", but I googled the words and can only hope that it actually says that!

I also twisted the layers, making the tree climb up the edge and wrap around the cake. It creates a neat 3D illusion of the tree.

To finish off the effect, there are little cherry blossoms scattered around the bottom of the cake as if they had fallen off the tree.

To make the fondant cherry blossoms:

Use a five petal flower cutter, whatever size you want the flowers. They will end up a little bigger then the cutter you choose. Use a sharp paring knife to cut a tiny bit between each petal. Place the cut piece of fondant on a thin piece of foam. Then use a petal shaper to round and thin out the edges. Finish it off with yellow dots in the middle for the stamens. I also added some gold luster dust for some shimmer with a dry paint brush.

Multiple Birthdays

I have quite a few nieces and nephews. They are all adorable and I want to help make each of their birthdays special. But I have 4 nieces who all have birthdays within a couple weeks of each other! So, for the family, we try to do one big party to celebrate. Even though this is a really fun day with LOTS of presents, the girls always felt bad that they had to share a cake. So I came up with this idea:
A cake within the cake! I made two sheet cakes. The first one, I just iced and put a border around. With the second sheet cake I made little mini cakes for each girl. I took a sketch of a tiara and cut it out to use as a template. Then I cut out individual tiaras for each of my nieces. This size cake is very difficult to ice, so I used a #16 star tip and put contrasting colors on each one to make it look like a tiara. I then added each girls name to personalize it. I finished the cake by placing each tiara in a corner of the first sheet cake and adding "Happy Birthday" to the center.
When it came time to serve, I was able to take a spatula and pick up each tiara and give each Birthday Girl her own personalized cake! What a fun thing to do for my sweet nieces!

Details of The Fisherman Groom's Cake

I think the neatest trick on this cake is the trees. They are grape vines dipped in chocolate!! I added green leaves to the tips when we arrived at the reception venue.

The little groom fishing wasn't too bad either. He is made out of fondant. I used a mixture of clear vanilla and food coloring gel to paint on his clothes and hair. His fishing pole is a toothpick. The little tackle box beside him is made of fondant also.The little fish popping out of the water is fondant also, but is only half a fish. Don't stress about what won't be seen! The geese and ducks are all standard cake toppers--hard plastic figurines. Check out all my groom's cakes.

Baby Shower: Umbrella

"Babies bring...Showers of Joy!"
This is really a fun cake. And a real "wow" factor! You start with a 10" round cake (or whatever size round you would like). After the cake has cooled, cut it in half. I recommend using some type of measuring device and/or straight edge to make sure you get an even straight cut. That is really the most difficult part.
Next, you stack the two halves on top of each other and ice. Add lines to look like an umbrella. I embellished this one with flowers and leaves. I also added a bead border midway down and around the bottom.

The handle of the umbrella is a small wooden rolling pin. You could also use a dowel rod depending on the size and height of the cake. I tied a ribbon around it and added some flowers for decoration.

Adding phrases like "Babies bring...Showers of Joy!" only makes it more worthy to be presented at your next baby shower!

Football Party Cake

My son played flag football this year for the first time. His team was the Cardinals and they went undefeated!! So for their end of the year party, I made this cake. The footballs are made of solid chocolate. They are candy molds and so easy to make! To make the grass for the field I just spread green frosting into a rectangle. Then I used an offset spatula and touched the icing and pulled straight up. This made the icing peak which gave the effect of grass. Then I took a number 3 tip and ran white lines to make the field. I used a number 1 tip to pipe the numbers for each yard line.
And just a little hint on red icing...BUY IT!!! I can't ever get my red icing red enough. It always looks pink. So when I have something that has to be a true red, I buy a little tube of red icing. Most of them come now where you can stick a tip and coupler right on the end. If you can't, just squeeze it into a piping bag and pipe away. That way, you'll always have red icing. Especially on a boys football cake!!

Baby's 1st Birthday Cake

It's one of my favorite types of cakes to make. Baby's first birthday!! I have four children, so I have been able to have this experience 4 times. By the 3rd and 4th times, I didn't want the massive mess and waste caused by the one year old! So the idea I would like to pass on today is: smaller is better. You can't just make your baby a cupcake because then people think the baby is getting jipped. But just a little bit bigger than a cupcake is a perfect size. I have baked the last two cakes in a small metal bowl with a 1.5 cup capacity. A glass pyrex bowl would work as well. A bowl is a great shape because you can decorate it to be many things. One of my daughter's birthdays is on Halloween, so I turned her bowl cake into a pumpkin. So you get an idea of the size, it is sitting on an 8 inch cake plate.

For my son's 1st birthday, I just put a decorative border and wrote on the cake. This cake is sitting on a tea cup plate. This size is perfect for a one year old's birthday because it gives them a big enough cake to play with, but not so much to waste and throw all over your kitchen!

Camouflage Cake

My sweet little niece loves everything camo! Her blankets, her clothes, etc. So for her birthday, her mom asked me to make her a camouflage cake. My first thought was to cover the cake in fondant and then paint the camo on. But then I decided to just cover it with icing. I made icing in all the different camo colors. Then I traced a camo pattern. Then used a number 12 tip to "flood" each section.
Then I used an offset spatula to smooth it all down. I made sure to bring the design down around the edges of the cake to finish off the effect. It was a big hit at the party!
