Coolest Birthday Cakes - Casino Birthday Cake Designs

Had a tough time thinking of some of the coolest birthday cakes to make for mum-in-law's 84th birthday in August, which happens to fall on National Day of Singapore as well. Looked through various birthday cake designs and theme cakes and finally came up with a casino themed cake for her as she loves to go to the casino.

Instead of a poker cake, visualized a baccarat game where there was a tie as well as a pair and of course a winning hand!

Here is the preparation for the fondant birthday cake...

Started off with the playing cards. Decided to do with the biggest cards in the pack which is the four aces... This was quite a challenge as all the pieces had to be hand cut as I do not have any cutters for this.

Next was the preparation of the casino chips. Tried to get as close to the actual colours as I could. As I did not have the correct mould cutters for this, had to make do with bottle covers, etc...

Thought it came out pretty well, except that it was very time consuming, especially for the white edges.

Next was preparing the alphabets for the words, "PAIR" and "TIE". This was to make it look just like the baccarat gaming table.

Now came time to bake the cake. After baking the cake, covered it with a light green fondant base, followed by placing the designs that had been prepared.

Finally, after a few hours, the cake was ready. Here is a picture of the cake which I am proud of and I feel that this is one of the coolest birthday cakes that I have come up with on a full fondant birthday cake ...

The cake also has a winning hand! Whoever bet on pairs and ties would have won! At the same time, these wins are normally paid out 8:1 or greater... :) Which means even more money coming in at the casino.

WOW! Over the last few months especially, I have been playing around with cheesecake recipes following some books and modifying some recipes.

Coolest Birthday Cakes - Mickey Mouse Cake

With tons of Mickey Clubhouse cakes on the net, my neighbour picked a few as samples for me to go by when making for her 2 year old daughter's birthday celebration. This is one of the coolest birthday cakes and making use of the ever popular Mickey Mouse as the theme of the cake. Note that this is not an original design.

In order to start getting the whole cake done up properly, three to four days in advance, I started preparing Mickey's head with black fondant mixed with gumpaste as I needed to get it to stand upright, and especially for the ears to stick on and not fall off.

All the stars, hearts as well as alphabets had to be prepared in advance so that they would have time to harden and stand upright. The flowers and leaves were fun to make as I started to visualize the cake with some colourful flowers and butterflies as well.

It was a joy to see such a cheerful Mickey Mouse cake, especially after days of planning... The Mickey and friend figurines were purchased and provided by the customer.

Did not expect the pot of flowers which Minnie Mouse is standing on to give me a challenge, but had to re-do it as I found that it was difficult to get Minnie to stand up straight there and she kept leaning either forward or backward. However, it all finally came together. :)

Snowskin Mooncake

Personally, I prefer the snowskin mooncake as compared to the traditional baked mooncakes. The snowskin mooncake is not only easy to make, yet it has a nice soft texture as well as comes in a kaleidoscope of colours and flavours. Best of all, it tastes pretty delicious!

Recently bought a set of mooncake moulds from Hong Kong during my recent trip there and here are some of the results... :) Prior to these new moulds, had made some snowskin mooncakes as well but forgotten to snap the pictures.

Japanese Cotton Cheesecake Recipe

Always love cakes that are light and fluffy. Have been making cheesecakes recently and thought of trying out this Japanese Cheesecake Recipe. The Japanese are well known for their cottony soft Cotton Cheesecake Recipe and fortunately for me, I found this recipe in one of my recipe books and modified it a little.

Baby Cotton Cheesecake Recipe

Japanese Cotton Cheesecake Recipe

Ingredients:-

A
200 g Cream cheese
30 g Butter
150 g Milk

B
50 g Flour
38 g Cornflour

C
5 Egg yolks

D
5 Egg whites
1/4 tsp Cream of tartar
100 g Sugar

Method:-

1 Place A in a mixing bowl. Stir over double boiler until thicken. Remove from heat.
2 Add in B and beat well.
3 Add in C one at a time and mix till well combined.
4 In a separate mixing bowl, whip D till soft peaks form.
5 Add D into cream cheese mixture and mix well.
6 Pour into 8 inches prepared baking tin.
7 Bake in steam bath 170 degrees C for approximately 45 minutes till a pick inserted into the centre comes out clean.
8 Remove cake from oven and unmould to cool.

Mini Fruit Tartlets Recipe

Love making these tiny fruit tartlets as they are easy to make and can just be popped into the mouth (though a little big still... :} ). They are a big hit with adults and kids alike at parties!

I even have kids following this fruit tartlets recipe.

Personally, for the tart pastry, I prefer to just buy these off the shelf as it does away with the hassle of doing up the shortcrust pastry.

In fact, the recipe for these mini fruit tartlets can be used for the normal fruit tart recipe with a little modification. Just a matter of different size for the tart base, adding a little more custard and maybe cooking the filling till it thickens more so that it can be cut.

Mini Fruit Tartlets Recipe

(Makes 70)

Ingredients

500 g water

150 g sugar

50 g butter

50 g fresh milk

100 g custard powder

1 egg

Tartlet pastry shells

Fresh fruits, cut into bite-sized pieces

E (optional)

80 g water

1.5 tsp instant jelly

Method

1. Boil A

2. Mix B in a bowl and pour into A (away from fire). Cook over gentle fire until mixture thickens, whisking to prevent lumps.

3. Spoon into tartlet pastry shells. If you are doing in bulk, it would be faster to pipe the custard mixture into the pastry shells.

4. Decorate the tartlets with fruits as desired.

5. Dissolve instant jelly in water and bring to a boil. Allow it to cool a little before glazing the fruits.

Glazing is optional and done only if you wish to have a glazed shiny look so that the fruits look nice and attractive.

How To Fondant Bride and Groom

During our PME Professional Diploma Course, we learned the principles of how to fondant cakes and figures. On the last day of our 5-day course, we were taught the modeling techniques of a fondant bride and groom.

Although it took us beginners several hours to complete the modeling of the fondant bride and groom cake toppers, our instructor could do it in less than an hour. WOW! That goes to show how practice plays an important part in fondant modeling.

Here are some pictures taken as we were walked through the steps on modeling our fondant bride and groom cake toppers.

How to fondant bridegroom

Make 2 of these for the shoes

Roll black fondant to about 9 inches in length

Fold black fondant for the body and the legs, gluing in the centre

Cut a piece of white rectangle for the shirt

Putting the shirt on measuring the length of the shirt

Trim the top of the shirt

Neaten it

Glue the shoes on and insert a skewer in through one leg all the way up

Add some flesh coloured fondant around the top for the neck

Cut a piece of black rectangle for the jacket

Trim to the correct size and round the corners

Make a slit at the back

Glue the jacket on

Slit the top of the jacket for the collar and lapel

Slit the other side as well

Difference Between Fondant and Gumpaste

During my recent PME Professional Diploma Course in Sugarpaste, we worked with sugarpaste, also commonly known as fondant or ready to roll fondant or rolled fondant. They all mean one and the same, just different terms used in different countries.

We also learned the difference between fondant and gumpaste. Basically, gumpaste is fondant with gum powder added to it for your modeling needs so that your figures will be able to dry harder and stand easier. However, gumpaste does not taste as good as fondant.

Fondant and gumpaste can be used interchangeably. Although you can use fondant to make flowers and other decorations, the finished product may tend to droop and become limp after a while. However if you were to do them in gumpaste, they will be able to keep their shape and dry better.

Using gumpaste for your modeling of flowers allows you to roll the paste thinner which gives your flowers a more realistic feel.

I must add that the more humid your area, the more your flowers will go limp and wet even using gumpaste. That was what happened to my sugar flowers. To remedy that, you need to work in an air-conditioned environment especially if you are in a humid country like myself. If you live near a water catchment area or on a high floor, this situation can get even worse!

And if you intend to make those beautiful sugar flowers ahead of time, be sure to store them in a cool and dry place.

HOT TIP:-
Never store fondant figures or fondant cakes in the refrigerator as they will turn wet upon room temperature.

Sugarcraft Cake Decorating - PME Professional Diploma Course (4)

The last day of our PME Professional Diploma Course in Sugarcraft Cake Decorating, we had more hands on practice decorating cakes with fondant. The fifth day of our course, we again covered two tier cakes but this time we were able to do it fairly quickly.

Our sugarcraft cake decorating highlight of the day was modeling the bride and groom cake toppers and placing them on the tiered wedding cakes. As we were involved in modeling the fondant bride and groom which took us several hours, the two tier cake was left plain and simple, without any further sugarcraft decorations which would have made them even more elegant.

We were given a free hand to choose the colours of our tiered wedding cakes. Thus you can see various colours so that we had a feel of the different shades the colours could give.

Some of us were brand new to fondant modeling. Plus the fact that to make the bride and groom look real, there were many other small details to take note of. It took us the whole afternoon just to finish off the bride and groom cake toppers and place them on our tiered wedding cakes.

Sugarcraft Cake Decorating - PME Professional Diploma Course (3)

Day 4 of our PME Professional Diploma Course in Sugarcraft Cake Decorating. Today we learn more techniques on decorating cakes with fondant and also the art of marbling fondant. We also learn how to make basic sugarpaste flowers as well as sugarcraft decorations including a cute little rocking horse.

Preparing the rocking horse

Cut the rocking horse according to the picture above. Glue the two headless base to either side of the head as in the picture below and place on a cardboard to harden. This needs to be made with either gumpaste or if using sugarpaste, do mix it with gum powder so that it can harden and stand well.

Learning the art of marbling fondant. Start by adding a few colours to the sugarpaste.

Roll out the sugarpaste

Should you happen to put too much colours that they start to run and smudge, place some icing sugar on the affected area before rolling.

If you are going to cover the cake board as well, roll out the sugarpaste till it is big enough to cover the cake board, then gently bring over the cake and smoothen accordingly with the fondant smoother.

Pinch the sides to make some designs.

As for the lacy designs for the sides of the cake, follow the pictures below:-

It was a fun-filled 5 full days when I took up the PME Professional Diploma Course in Sugarcraft Cake Decorating. Once you master it, it is not that difficult as things always become easier with practice.

It has been almost a year since I became interested in sugarcraft cake decorating. Took up the PME Professional Diploma Course in Sugarpaste flowers late last year and have been waiting for the PME Professional Diploma Course in Sugarpaste ever since.

No Bake Cheesecake Recipe

Love making no bake cheesecakes. They are not only simple to do, you do not need any baking time, although you do need to refrigerate them before eating. :)

Somehow if you can make cheesecakes, be they baked or no bake cheesecakes, you seem to move up a notch in your baking skills in the eyes of those who do not bake.

If you are looking for simple cheesecake recipes, here is an easy no bake cheesecake recipe which I would like to share.

No Bake Pineapple Cheesecake Recipe

Crust
150 g Marie's biscuits, crushed
100 g melted butter

Method
For the crust, mix the melted butter and biscuit crumbs well. Place into 9" round springform pan and refrigerate.

Filling
A
250 g cream cheese (room temperature)
60 g fine sugar

B
200 g whipping cream

C
1 can (450g) pineapple rings/cubes (diced)

D
125 g pineapple syrup

E
1 ½ tbsp gelatin
60 g hot water

Method
1. Cream A till light and fluffy
2. Whisk B and fold into A
3. Dissolve the gelatin in hot water and cool
4. When E is slightly cool, add in D
5. Add D and E mixture into A and B. Mix well
6. Add in C and stir
7. Pour onto prepared crust and refrigerate at least 4 hours
8. Remove from springform pan and serve

Make Fondant Animals and Fondant Creations

Though I took up the PME Diploma in Sugar Flowers, I have not had any formal training on how to make figures with fondant. Suddenly had a craze last week to start using fondant and churning out some fondant creations. Here are some of the fondant figures that I came up with...

Was fortunate to be able to make some fondant animals as well such as the fondant bear, monkey and giraffe. The ducks and frogs were done last year when I had an order for a 1st Birthday cupcakes.

Homemade Cheesecake

Used to make no bake cheesecakes years ago but had basically forgotten how I did it. Recently, as I wanted to try making cheesecakes again, I went to buy the cream cheese to make the cheesecakes. However, if I had bought a 250g slab, it would have cost quite a bit. Was looking to get a 1kg slab, but as it was out of stock, ended up with a 2kg slab instead. Thus, it was cheesecakes galore over the next 1 - 2 weeks!

Started off with the easiest:- this is what I call the easy no bake cheesecake

No bake pineapple cheesecake

Next was the orange mascarpone cheesecake. This was the only cheesecake that used two types of cheeses - cream cheese and mascarpone cheese.

This feather light marble cheesecake tastes a little like a normal light sponge cake.

Found the devil's cheesecake a little too rich for my liking.

Next I tried the chocolate marble cheesecake. The chocolate covering was what gave this cheesecake its chocolate taste.

Tried something slightly different with the mango cheeesecake. Placed real mango slices on top of the cake and hundreds and thousands at the side to make it colourful. Not too good an idea of the hundreds and thousands as the colours tend to run...

The chocolate chip cheesecake was one of the hot favourites as well as the mango cheesecake and orange mascarpone cheesecake. For an easy no bake cheesecake, the pineapple cheesecake is a great homemade cheesecake to start with.

Snow Coffee Cookies Recipe

Owe a friend of mine this Snow Coffee Cookies recipe for some time now. Due to the very hectic Chinese New Year period and after a break, am putting up the Snow Coffee Cookie recipe now as promised.

Pretty easy to make, these dainty little snow coffee cookies are great not only for coffee lovers but for individuals like myself who do not drink coffee but just love any cakes or cookies with that special coffee flavour.

Snow Coffee Cookies Recipe

Ingredients
A
200 gm butter
100 gm castor sugar
1 - 2 tsp coffee paste (depending on your preference)
15 gm mocha powder

B
220 gm plain flour
1 tsp baking powder

C
60 gm ground almonds
60 gm semolina

D
Some snow sugar for dusting

Method
1. Cream A till light and fluffy
2. Beat in B & C
3. Refrigerate for 30 minutes
4. Shape into rounds, flatten a little and place on baking tray lined with greaseproof paper
5. Bake in preheated 170 degrees Celsius oven for 12 - 15 minutes till golden brown
6. Decorate with D on the top

Chinese New Year Cookies and Fondant Cake Decor

Was terribly busy during the weeks running up to Chinese New Year with the various baking of Chinese New Year Cookies. It was a fun time churning out all these cookies.

Also had an order for some cakes to be delivered before Chinese New Year. And since it was the Lunar New Year of the Rabbit, came up with this simple CNY cake decor.

For the edible cake decor:- Fondant rabbit signifying the zodiac rabbit year. Fondant plum blossom flowers signifying luck. A red fondant background representing joy, virtue, truth and sincerity since red is an auspicious colour. And all things gold for prosperity.

Chinese New Year is here once again...

Personally though I love the traditional CNY cookies, I do yearn for something different as well. This year, I have come up with a few new varieties including some for the chocolate and coffee lovers as well as some traditional cookies.

Christmas Chocolate Cupcakes

Was away in the weeks before Christmas and touched down on home soil only on Christmas Day. Since we were having a family Christmas lunch on Boxing Day, decided to make some Christmas chocolate cupcakes at the very last minute.

Christmas season

Used my basic chocolate cupcake recipe, topped it with chocolate butter cream and added some Christmas decorations and voila! here comes the very easy-to-make Christmas chocolate cupcakes.

As per Cherilyn:- My friends love the cupcakes. They found it very pretty and too delicate to eat. As for me, I found the flower and leaf very crunchy, butterfly marzipan a bit too sweet and cos the butterfly was too big for the cupcake and 1/2 of the butterfly broke. The colours are very sweet and the mint green did have a tinge of mint in it, right? The mint flavour went very well with the chocolate cupcakes... :)

No worries. Thank you for doing such a good work for my cupcakes. My guests love them and said that they are not just pretty but yummy too. My baby also likes the ducks and frogs a lot, she keeps pointing to the cupcakes wanting us to let her have the cupcakes. J

Was approached by my neighbour's daughter looking to celebrate her little girl's first birthday party. She was interested in cupcakes with bright yellow ducks and green frogs on top of the cupcakes and emailed me some birthday cupcake decorating ideas.
