好久没跟新了，今天带来了这个做给爸妈的蛋糕~&lt;br /&gt;
两老不喜欢奶油蛋糕，所以这个pandan layer cake最适合了。&lt;br /&gt;
&lt;br /&gt;

最近老爸的身体出状况，也不适合吃太多椰浆，所以这蛋糕我只做了6"小小的一个。&lt;br /&gt;
这次我用四方慕斯框来制作，结果试验成功 :)&lt;br /&gt;

这次特别添加了网购回来的蓬莱米粉，第一次接触此米粉，做出来的戚风很蓬松软绵，不知道是否来自米粉的威力，哈~&lt;br /&gt;
很“软弱 ”的蛋糕体，虽然经过长时间的倒扣，脱模还是有阻碍 :P&lt;br /&gt;

冰箱内还剩下半杯豆浆，看看时间，做面包的话又太迟了，最后决定做戚风最好了~&lt;br /&gt;
我们一家大小都很爱吃戚风，恩每次都要吃上两片才够。&lt;br /&gt;

从教堂回来，要准备礼拜天的下午茶，问了老公想吃啥，他依然点了蛋糕类中最喜欢的“卷在一起”的蛋糕 ^^&lt;br /&gt;

A：4个蛋黄、植物油60g、水60g、幼糖10g&lt;/div&gt;
&lt;div align="left"&gt;
B：4个蛋白、玉米粉10g、幼糖45g、罐头玉米80g&lt;br /&gt;
C：低筋粉90g&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
内馅：&lt;br /&gt;
打发鲜奶油&lt;/div&gt;
&lt;div align="left"&gt;
&lt;/div&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;div align="left"&gt;
做法：&lt;/div&gt;
&lt;div align="left"&gt;
1。烤盘铺纸，撒上表面装饰，备用。&lt;br /&gt;
2。蛋黄与糖拌均，水与油放在同一容器中，与过筛的底粉分2次交替混入搅拌均匀。&lt;/div&gt;
&lt;div align="left"&gt;
3。先混合糖与玉米粉。&lt;/div&gt;
&lt;div align="left"&gt;
4。蛋白打至起泡，分次加入做法2。&lt;/div&gt;
&lt;div align="left"&gt;
5。将1/3的蛋白霜加入面糊中拌均，再加入余剩的蛋白霜拌均。&lt;/div&gt;
&lt;div align="left"&gt;
6。拌好的面糊倒入烤盘抹平，入烤箱中层180度烤15分钟左右。&lt;/div&gt;
7。蛋糕出炉后，立刻溢出烤箱，将四周围的烤纸撕开散热。待凉后在蛋糕开始卷起处用小刀切3条不切到底的线条，涂上内馅，卷起，稍微定型即可。放入冰箱半小时或以上定型。&lt;br /&gt;

干酵母 2g&lt;br /&gt;

1. 混合搅拌至卷起成团即可。&lt;br /&gt;
2. 室温发酵2小时，放入冰箱冷藏20~24小时备用。&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&amp;nbsp;&lt;u style="color: #e06666;"&gt;蔬菜墨西哥馅&lt;/u&gt;&lt;br /&gt;
&lt;br /&gt;
A) 低筋粉100g、奶粉10g、糖粉50g&lt;br /&gt;
B) 盐5g、奶油20g、蛋白60g&lt;br /&gt;
C) 青葱、红萝卜切丁&lt;br /&gt;
&lt;br /&gt;
1. 材料A过筛后加入盐。奶油用手拌匀，再加蛋白&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 静置30分钟以上，最后加入也C拌匀。&lt;br /&gt;
&lt;br /&gt;
2. 入如挤花袋，以螺旋方式由内向外均匀挤在完成最&lt;br /&gt;
&amp;nbsp; &amp;nbsp; 后发酵的面团上。&lt;br /&gt;
&lt;br /&gt;
3. 入预热烤箱180°c烤至表面金黄即可。&lt;br /&gt;
&lt;br /&gt;

这次用王残忍老师的配方，一个很棒的直接法吐司。&lt;br /&gt;
做了四回的庞多米，美中不足的是每次做出来的吐司边边都会有个“小气孔” （如图），懊恼为何如此。。。&lt;br /&gt;
&lt;br /&gt;
说回王老师的讲解，我才知道原来不是每个吐司都需要擀卷两次、有的只需要擀一次、有的则不能用擀面棍，只能用手压面；&lt;br /&gt;
还有，并非每个面团都要以分割“滚圆”松弛，因为有的面包不能有此动作；&lt;br /&gt;
有的吐司适合做成山形，有的则只能做成平头带该吐司、有的只能做成小餐包。。。。&lt;br /&gt;
&lt;br /&gt;
深奥哦，面包制作就是如此有趣。我就是其中一个不能自拔的，让我们一起学习，一起探索吧^^&lt;br /&gt;

那天做angku kuih 剩下的咸豆沙，拖了几天才做了这豆沙饼。&lt;br /&gt;
同样的食谱，我做了第三回，口感一样，就是放凉后不脆了。。&lt;br /&gt;
不是食谱的问题，我。。。也不知，就是不像外面卖的放上几天酥脆依然，还是因为他们添加了什么X粉的，才会那样脆？？&lt;br /&gt;

最近在FB狂吹“相思”风，我也被吹到头发乱~~&lt;br /&gt;
说真的，我没吃过真正的相思蛋糕，唯有一做，方能解馋和满足好奇心。&lt;br /&gt;
哪知，一吃就爱上了，我的家人也同样喜欢。&lt;br /&gt;

&amp;nbsp; &amp;nbsp;&amp;nbsp; 盐 1/4小匙&lt;br /&gt;
&amp;nbsp; &amp;nbsp;&amp;nbsp; 蛋黄 100g&lt;br /&gt;
&amp;nbsp; &amp;nbsp;&amp;nbsp; 全蛋 1个&lt;br /&gt;
&amp;nbsp; &amp;nbsp;&amp;nbsp; pandan paste 1滴 &lt;br /&gt;
&lt;br /&gt;
B) 香港面粉 65g （过筛）&lt;br /&gt;
&lt;br /&gt;
C) 蛋白 200g&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 幼糖 55g （嗜甜者可再增加）&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp;&amp;nbsp; 塔塔粉 一小撮&lt;br /&gt;
&lt;br /&gt;
1. 混合(A) 用打蛋器略打至发泡，筛入(B)，&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 搁置一旁，避免吹到风&lt;br /&gt;
&lt;br /&gt;
2. 蛋白和塔塔粉打至起泡，分3次加入糖打至&lt;br /&gt;
&amp;nbsp;&amp;nbsp;&amp;nbsp; 翻过来不会掉。&lt;br /&gt;
&lt;br /&gt;
3. 取1/3蛋白霜入(1)中，轻轻混合后再倒入剩&lt;br /&gt;
&amp;nbsp; &amp;nbsp; 余的蛋白霜内。&lt;br /&gt;
&lt;br /&gt;
4.&amp;nbsp; 倒入7''方模，底部铺纸，送入预热烤箱，160°C，60分钟。&lt;br /&gt;

350g 粉做两条12两吐司还像不理想，吐司不是很高。&lt;br /&gt;

噔噔~蹬蹬~~ 我的angku kuih 登场咯！&lt;br /&gt;
最近频见格友做各式口味的龟粿，颜色又好看，看得我心痒的不得了，连做梦都梦见它 ，Helena还笑我走火入魔了，哈哈^^&lt;br /&gt;
赶紧败了个mini size木模，昨晚就开工了~&lt;br /&gt;
做了这个咸口味的，没有特别的原因，虽然较多工，但我很喜欢之前做的咸豆沙配方。&lt;br /&gt;
这样的搭配也很好吃，友人吃了还赞好呢。&lt;br /&gt;

&amp;nbsp;原来木模真的能印出美丽的花纹，我没有照食谱说的抹油，改用撒粉再将粉倒出，这样就能轻易地倒扣出来，成品也不会沾满粉啦~&lt;br /&gt;

第一次制作，也因为买的模子跟书上的有差异，就得自己衡量大小。&lt;br /&gt;
然后将做好的kuih冷冻保存，要吃的时候再蒸熟，这是Helena教的哦^^ &lt;br /&gt;
昨晚也蒸了几个做实验，出来的kuih个个颜色很美很深； 可是这些都是今早冷冻后蒸的，出来的色泽没有昨晚的美丽，奇怪。。。&lt;br /&gt;

&amp;nbsp;&lt;u&gt;&lt;span style="color: #e06666;"&gt;金瓜咸龟粿&amp;nbsp; &lt;i&gt;Yum Yum @ 77期（番薯红龟粿）&lt;/i&gt;&lt;/span&gt;&lt;/u&gt;&lt;br /&gt;
&lt;i&gt;成品共19个&lt;/i&gt;&lt;br /&gt;
&lt;br /&gt;
皮料： 100g 金瓜泥、150g糯米粉、2大匙糖、120ml滚水、1大匙油&lt;br /&gt;
&lt;br /&gt;
适量香蕉叶，剪成椭圆形&lt;br /&gt;
油，抹皮用&lt;br /&gt;
&lt;br /&gt;
馅料： 参考&lt;a href="http://happinesstory.blogspot.com/2011/09/tau-sha-piah.html"&gt;这里&lt;/a&gt;&lt;br /&gt;
&lt;br /&gt;
1. 糯米粉和糖混匀，加入滚水搅拌均匀，加入金瓜泥和油搓成光滑的面团，盖着休息10分钟。&lt;br /&gt;
&lt;br /&gt;
2. 将皮料分成小份，每份22g，搓圆，压扁。包入10g绿豆馅揉圆，压入撒粉木龟模中，敲出。我的模6mm X5mm。&lt;br /&gt;
&lt;br /&gt;
3. 放在抹油的香蕉叶上，排入竹蒸笼，大火蒸10分钟或至呈晶莹剔透。&lt;br /&gt;
&lt;br /&gt;
4. 取出，抹上少许油即可。&lt;br /&gt;

小秘诀：&lt;br /&gt;
&lt;br /&gt;
* 蒸angku kuih的水煮滚了后，先倒入一杯冷水降温，才放入kuih，蒸的时候打开盖2至3次，以确保蒸笼内部温度不过高，以免将angku kuih的花纹蒸得模糊了。&lt;br /&gt;

耶，我的第二款bahulu登场咯~~ 这次玩了点花样，添加1 1/2 tsp绿茶粉营造和风味的鸡蛋糕^^&lt;br /&gt;
这回我将糖的分量再减少，可说的低糖版bahulu。&lt;br /&gt;
&lt;br /&gt;
昨天打算去买个kuih模，结果“不小心”意外地撞见这个蛋型模子，就把它领回家了。&lt;br /&gt;
主要原因是贪它方便清洗啦，不用刷到我手酸。&lt;br /&gt;

&lt;i&gt;我只做了以下的一半分量，共29粒&lt;/i&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;ul&gt;
&lt;li&gt;170克面粉，1 1/2 茶匙发粉，绿茶粉适量&lt;/li&gt;
&lt;li&gt;5个蛋 （A级蛋） &lt;span style="color: #e06666;"&gt;我用3个B蛋&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;150克砂糖 （我除半再减至50g，嗜甜者可再添加）&lt;/li&gt;
&lt;li&gt;&amp;nbsp;&lt;/li&gt;
&lt;/ul&gt;
&lt;div&gt;
做法：&lt;/div&gt;
&lt;ol&gt;
&lt;li&gt;前一天把粉料摊放在大平盘里，放在太阳下晒数小时，放凉备用。&lt;/li&gt;
&lt;li&gt;把鸡蛋和砂糖混匀，隔温水，打至白和浓稠状。（这样比较快把蛋打发）&lt;/li&gt;
&lt;li&gt;轻轻的拌入冷却的粉料。&lt;/li&gt;
&lt;li&gt;预热烤箱200度，把模烤热。&lt;/li&gt;
&lt;li&gt;取出模，抹上少许油，舀一大匙面糊入模型中。&lt;/li&gt;
&lt;li&gt;放入烤箱烤至金黄色，取出以牙签插出鸡蛋糕，搁凉，收入罐中。&lt;/li&gt;

新买的《用面包机烘焙专业级面包》 ，虽然我只用面包机打面团，但对这本书还挺感兴趣的，因为里头满是不同口味与口感的吐司。&lt;br /&gt;
我始终比较喜欢制作吐司，所以我做吐司面包的次数远胜于造型面包。&lt;br /&gt;
说回这本吐司书，从材料方面发现其含水量很高，难道用面包机烘制的吐司需要高水量？&lt;br /&gt;

蜂蜜~面包的天然软化剂，添加在面包制作中风味甚佳。请看标题“湿润” 蜂蜜吐司，可想而知其湿润柔软程度； 另方面，面团操作时需要更大的耐心，因为它不是普通的粘手！&lt;br /&gt;

那么多年的基督徒了，这还是我头一次做这个复活节十字面包。&lt;br /&gt;
两个月前见Jane 上这个面包时就下定决心要在复活节时做来应节。&lt;br /&gt;
为了迎合自己和家人的口味，我省略了all spice powder，所以它不是很传统的复活节面包，倒像是亚洲甜面包 :P&lt;br /&gt;
虽然我的发酵面团做得不很好，但面包体很软，加上巧克力粒和葡萄干，还真的很好吃，我的小朋友不知多爱呢！&lt;br /&gt;

&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;将面团原料中的牛油切成小块，加入面包粉和可可粉里搓成屑状。再加入细砂糖、盐、香料、蛋和发酵面团揉至面团出筋就好。（这个面团不需要筋力很强，所以一般食谱都用普通面粉，但我还是揉到面团可扩展阶段）。&lt;/li&gt;
&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;最后加入巧克力粒和葡萄干揉匀后，放在温暖处进行发酵。&lt;/li&gt;
&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;发酵结束后，分割成16份，每份40克，滚圆后排入方形烤模（20×20cm）中，进行最后发酵。&lt;/li&gt;
&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;准备十字糊：过筛的低粉加玉米油混匀后，一点一点的加入水，搅拌成能挤出的程度，装入裱花袋中备用。&lt;/li&gt;
&lt;li style="margin-bottom: 0.25em; margin-left: 0px; margin-right: 0px; margin-top: 0px; padding-bottom: 0px; padding-left: 0px; padding-right: 0px; padding-top: 0px; text-indent: 0px;"&gt;制作糖浆：细砂糖加水煮至糖化即可。&lt;/li&gt;

今天是我的生日，就做了这个咸蛋糕卷给自己（很少做给自己吃）。&lt;br /&gt;
怎么不是奶油生日蛋糕啊？很简单，因为我不爱奶油蛋糕 :P&lt;br /&gt;
所以就按自己的口味设计了另类的生日蛋糕~&lt;br /&gt;
&lt;br /&gt;
其实上周老爷已带我去吃了顿日式自由大餐，预先替我庆祝了，还送了份大礼给我，令我喜出望外。&lt;br /&gt;
今天也是我妈的母难日，自从为人母后就更加深刻体会母亲的伟大。&lt;br /&gt;
&lt;br /&gt;
所以我的生日没有啥好庆祝的，其实应该好好跟妈妈庆祝才真，若不是她拼了命的把我生出来，我哪儿来的生日？&lt;br /&gt;
听妈妈说，当她怀着我五个多月时曾发生交通意外，所骑的摩多车严重翻覆，所幸在母腹的我平安无事，感恩！&lt;br /&gt;
今天照样带妈妈去吃一餐好的，感谢她❤&lt;br /&gt;

我很喜欢吃面，特别是干捞的。最不喜欢吃果条，这一点就跟我妹恰好相反，哈~&lt;br /&gt;
让我天天吃干捞面都ok的，大面、幼面、板面、手工面。。。都like ❤&lt;br /&gt;
今天晚餐就来个简单的干捞面，加上喜欢的五香肉燥，yummy！&lt;br /&gt;
做法非常简单，放上来做个及记录，如果也合你的胃口，不妨也来DIY，让自己和家人吃得满足又开心 ^^&lt;br /&gt;

&lt;i&gt;调味料方面我随性而加，你也可以加入喜爱的酱料&lt;/i&gt;&lt;br /&gt;
&lt;br /&gt;
1.干净的碗内加入黑酱油、麻油、酱油备用。&lt;br /&gt;
&lt;br /&gt;
2. 将菜心和鱼饼分别烫熟。&lt;br /&gt;
&lt;br /&gt;
3. 煮水，加入全蛋面烫至软，捞起浸入冷水中，再放入热水烫一烫，捞起放入加了调味料的碗内拌匀。&lt;br /&gt;
&lt;br /&gt;
4. 淋上少许葱油、铺上青菜、鱼饼和五香肉燥，配上辣椒油享用。&lt;br /&gt;

猪绞肉 150g、红葱酥20g、蒜酥10g&lt;br /&gt;
&lt;br /&gt;
五香粉&amp;amp;胡椒粉1/2小匙、酱油2大匙、糖1小匙&lt;br /&gt;
&lt;br /&gt;
1. 热锅，加入适量油炒香猪绞肉至肉色变白，加入红葱酥、蒜酥和所以调味料。&lt;br /&gt;
&lt;br /&gt;
2. 转小火。加盖焖约40~60分钟至汤汁略收干即可。&lt;br /&gt;

蛋糕装饰参考Carol老师的《烘焙新手必备的第一本书》，蛋糕体则选用了我最喜欢的香草戚风，6"的小蛋糕，很小巧可爱~&lt;br /&gt;
这次用了圆活动模，徒手脱模真的比起一般的戚风模来的容易。&lt;br /&gt;

我好满意这次的成品，小蛋糕们个个非常饱满，很可爱 ^^&lt;br /&gt;
多年前在某个论坛见到这“巴呼鲁”，就飞奔去买了模子回来玩玩，结果失败收场，统统送给Mr. Bin了。从此就不敢尝试这个看似简单的玩意儿，模子也被收藏在柜子的最底层。&lt;br /&gt;
最近大概能掌握全蛋打发，就想再次挑战这个鸡蛋糕，结果我真的成功了，太开心了！&lt;br /&gt;

做好隔了一夜才拿出来拍照，发现表面湿度不会很严重，因为它们不会黏在一起。&lt;br /&gt;
虽然 冷却后吃起来不会脆皮，但胜在不会干巴巴的，我最喜欢那鸡蛋味，好赞哦~&lt;br /&gt;

&lt;i&gt;我只做了以下的一半分量，共32粒&lt;/i&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;ul&gt;
&lt;li&gt;170克面粉，1 1/2 茶匙发粉 &lt;/li&gt;
&lt;li&gt;5个蛋 （A级蛋） &lt;span style="color: #e06666;"&gt;我用3个B蛋&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;150克砂糖&lt;/li&gt;
&lt;/ul&gt;

做法：&lt;/div&gt;
&lt;ol&gt;
&lt;li&gt;前一天把粉料摊放在大平盘里，放在太阳下晒数小时，放凉备用。&lt;/li&gt;
&lt;li&gt;把鸡蛋和砂糖混匀，隔温水，打至白和浓稠状。（这样比较快把蛋打发）&lt;/li&gt;
&lt;li&gt;轻轻的拌入冷却的粉料。&lt;/li&gt;
&lt;li&gt;预热烤箱200度，把模烤热。&lt;/li&gt;
&lt;li&gt;取出模，抹上少许油，舀一大匙面糊入模型中。&lt;/li&gt;
&lt;li&gt;放入烤箱烤至金黄色，取出以牙签插出鸡蛋糕，搁凉，收入罐中。&lt;/li&gt;
&lt;li&gt;为免鸡蛋糕容易发霉，我家婆还特地把烤好的鸡蛋糕拿到太阳底下晒晒。不过阿嬷说粉有晒过就可以了。&lt;/li&gt;

我不喜欢吃青葱，每次妈妈都会加些自家种的青葱在汤水或菜肴内，我通常都不会去夹来吃。&lt;br /&gt;
但自从做了葱花面包后，发觉经过烘焙过的葱花很香，味道我也可以接受。&lt;br /&gt;
所以今天这个葱烧饼绝对讨妈妈的欢喜，当然我也很喜欢，因为真的很好吃。&lt;br /&gt;
制作过程绝对比面包或包子容易，不一会儿功夫就有香香的烧饼吃了，赞哦！&lt;br /&gt;

水 138g、速发干酵母 3g、面粉 250g、细砂糖 20g、&lt;br /&gt;
麻油适量 （刷面皮）&lt;br /&gt;
&lt;br /&gt;
葱花馅：&lt;br /&gt;
青葱花 75g、花椒粉和盐各适量&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
1. 酵母加入水中混合均匀再再倒入面皮材料中搓成团，松弛20分钟。&lt;br /&gt;
&lt;br /&gt;
2. 擀成薄状的长方形，刷上麻油，1/3部分撒上葱花，然后往下盖上； 刷油再撒上葱花。下方面皮往上盖上，松弛10分钟。&lt;br /&gt;
&lt;br /&gt;
3. 切成菱形。表面撒上芝麻。发酵30分钟。&lt;br /&gt;
&lt;br /&gt;
4. 送入预热烤箱，210°c烤至金黄，轻压旁边弹回即熟 &lt;br /&gt;
