A Summer Classic: Blueberry Crisp

We had a sudden hankering. You know how it is. A craving hits that will not be denied. Insistent. Growling. Desire with an uppercase D. So I'm digging into the archives.

June is here. And you start imagining fresh, juicy blueberries, nestled beneath a perfectly golden crumble of a crust, warm, the deepest purple, bubbling as you slide it- ever so gently- out of the oven and onto a cooling rack to rest and settle until you can't stand it a minute longer, breathing in the cinnamon laced aroma of a summer dessert classic.

The forever glorious blueberry crisp.

And this one's gluten-free. And dairy-free. No xanthan gum either- a bonus.

So darling.

Don't wait.

Blueberry season is short and sweet.

Peace + Love,

Beautiful Quinoa Salad with Grilled Veggies.

But first a note---

The times they are a'changin' sang Bob Dylan. The whole wide world is rising up, clamoring for change, for justice, for respect and compassion for all human beings- black, brown, indigenous, (and yes, white), young and old, fragile and strong, quiet and fierce, timid and brave, burdened and free. Let us take a breath and listen, learn, empathize, grow, support, love and take care of one another.

History can teach us how we got here. Truth has the power to enlighten us, if we face it, honestly, with humility and empathy. Understanding another person's experience and perspective, their challenges and their pain, is a first step toward healing, toward a better, shared future.

So let's come together and make the world kinder, less cynical, more equitable, just, and safe- not just for some, but for everyone (as the song goes). Let's ask Why? instead of assuming we know. Let's listen instead of defending our own position. Let's do our homework and uncover the history, the causes and effects, the inherited fears and assumptions we all make each and every day- that may not even be true.

Being human means we have a head and a heart.

We can change, change our mind, choose the higher Good, shun the cynical, do the right thing, take a stand for compassion. We can uplift, we can share, we can teach.

And we can respect one another. And from that mutual respect, we all benefit.

With Love + Peace + Justice + Kindness + Empathy,

ON TO THE RECIPE::

Everyone loves a good old fashioned barbecue, or a family backyard picnic. The smoky summer scent of charred goodies grilling. Lemonade chilling. Badminton birdies sailing. The crack of croquet balls. The last pink of June daylight. Punching lids on firefly jars. It's the stuff of a midsummer night's dream.

But if you need to be on a gluten-free diet- or if you happen to be vegan- or allergic to wheat- barbecues can be a tad less than convivial. Those mysterious grilling sauces and marinades (so often containing wheat-laced soy sauce). Those gluten-rich fluffy hot dog buns. All those meaty manly burgers and boiled egg dotted salads.

What's a gluten-free vegan to do?

Munch on lettuce?

Don't worry, Babycakes. I've got your back.

How about a light and summery quinoa salad with grilled corn, fresh parsley, lemon, and chopped mint topped with smoky grilled veggies- velvety red onion, sliced zucchini, charred bell peppers, portobello mushrooms, tender-crisp asparagus and butter soft eggplant?

A veritable vegan feast.

Gluten-free.

Fabulous.
Jump to recipe>

Gluten-Free Goddess Quinoa Breakfast Cake

Gluten-Free Goddess Quinoa Breakfast Cake. Tender and sweet.

There are some days (okay, I confess) I eat a brownie for breakfast. And not just a brownie. A tender, dark chocolate melt-in-your-mouth Gluten-Free Goddess Brownie. A brownie to delight in. A brownie to savor. A brownie even gluten-eaters would covet. Is it a nutritious choice? Um, probably not. Except as food for the soul. And sometimes, let’s face it. The soul needs chocolate.

But this morning there was a trendy new box of quinoa flakes perched on the kitchen counter. And a fresh bag of plump seedless raisins nearby. I leaned against the counter's edge and sipped my morning cup of java. I started daydreaming about cake. Maybe a carrot cake. With cinnamon. I knew what I had to do. Quinoa was calling to me.

Quinoa (pronounced keen-wa) is a fab ancient faux grain (it's actually a fruit seed) that is high in protein and naturally gluten-free, and lucky for cereal lovers, it turns out quinoa flakes make a satisfying hot cereal choice, too. But today we're interested in baking with quinoa, right? And as luck would have it, quinoa cereal flakes approximate quick-oats-style oatmeal in size and texture.

The taste is different, though. More nutty than oats. Kinda toasty. A tad unfamiliar. And it takes some getting used to. Bland as oatmeal, it is not. It has a definite personality. And... I am here to tell you- quinoa flakes are a tasty little number for baking. Different, yes. But once you nibble a second bite, and a third, and a fourth, you start thinking, Hey. This is good stuff! You break off a warm piece of quinoa cake and ferry it, sock-footed, across the saltillo tile floor to your script-typing coffee sipping husband and offer it with a smile. You urge, Try this.

And he murmurs, Hmmm.

And you reassure him with, The second bite is better, give it a minute, and he interrupts and says, No, this is excellent. It’s different, but it’s good. Very good, actually.

Yup. This particular gluten-free goddess couldn't agree more.

Enjoy, my lovelies.

Karina xo

Jump to recipe>

Gluten-Free Goddess Blueberry Muffins With Coconut Flour

I rise and bake to the rosy morning sun, stirring my batter half asleep, sipping hot coffee. A northern mockingbird sings his deceit outside the kitchen window. He is remarkable in his uncanny repertoire, a gifted mimic, silhouetted high against a summer-blue sky, perched on the tallest utility pole.

I've been reading this week. Finding books a provocative companion. Words that illuminate and poke. Shared stories that send shivers of recognition, trigger anger, or tug one's soul (kicking and whining) into that impossible place- that place where you don't want to go. The stuff that scares you. Because it might be true.

Reading a book at twenty about mothers and daughters is one thing. You bring to its wisdom your newly hatched self-hood, your fresh experience, your familial-infused expectations (and prejudices). The expectations, assumptions and dreams of a young woman. You are the heroine, the daughter starting out on your journey, looking at a long and winding road ahead. So you read. And listen. And play with ideas. You see what fits.

And what doesn't.

And then you stand, decades later, stirring blueberry muffin batter on a cloudless morning. And here, now, the words ring deeper. And the truth stings darker. There is a lifetime of days spiraling out beneath you and above you (because by now you know that time is not linear, or finite, like a string of numbers across a calendar). And the same words vibrate with a different meaning, engraved with experience and regret. The same words illuminate as if from a different light source.

Not from the world.

From within you.

Learning something old as if it is new. And discovering truths as if for the first time, arriving, as T. S. Elliot wrote, where we started.

Peace on the journey, all you daughters out there...

Karina

xo

Scones for a blueberry day.

Blueberries and summer. I cannot imagine one without the other. It is virtually impossible. Beyond my control. The same way a certain scent, caught unexpectedly in passing, can- in a single heartbeat- transport you to another time and place.

Scents and tastes and memories link and embed themselves deep in the mushy hardware of our brain, micro-threading bits of life experience into electrical impulses that spark and conjure images and emotions that rival the blinking hot concept of time travel. Sun warmed wild mint, for instance, jolts me into my six year old body faster than you can wish for blueberry pancakes, tugging me into a swirl of loneliness and boredom I can almost taste, the heat and dust of a summer afternoon prowling a parking lot, looking for a tiny piece of shade apart from the bees.

In a perfect world I would have been blueberry picking, roused from innocent rumpled sleep before first light by a beloved grandmother or a tender hearted aunt, and given a small metal pail to fill, tasting every other silvery blue berry I picked, listening to my steady companion hum I'll Fly Away.

But I have no blueberry stories of childhood.

My picking days came later. As a young mother bending and reaching under a cobalt Cape Cod sky, plucking berries into buckets. Back then summer was forever woven with the fate of blueberries. Scattered on clean white scoops of yogurt in an antique bowl, baked into tender blueberry breads drizzled with lemon glaze (the cherished, hand written recipe given to me by an old friend, Ms Graysea - it was her mother's famous blueberry cake), or bursting out of muffin tops glittering with sugar, and scented with cinnamon.

But the truth is I cannot rewrite my childhood. Nor change what is beyond my control to change. And I do not believe in destiny. I am not a fatalist. I do not believe in a master plan. I wrestle with mystery and meaning every single day, with nary a satisfactory answer in sight. It seems to me that nothing happens for a reason. And everything happens for a reason.

Because life is for learning.

And each day breaks with a fresh beginning.

So darling. What will you choose today?

Make it good.
Taco Salad Days

Looking for a fresh idea for game day, a summer picnic, or backyard get-together? This cool and breezy quinoa taco salad might be just what you're craving. Laced with lime juice and sea salt, the combo of fluffy quinoa and ripe avocado, spiked with red onion and sunny sweet pepper, served on a crisp bed of romaine lettuce, is a light and healthy twist on the salsa drenched bean and cheese heavy taco salads so ubiquitous years ago.

It's a total win for gluten-free vegans and vegetarians.

And let's face it.

Quinoa is much more hip than canned re-fried beans.

And this particular quinoa taco salad boasts FODMAPs-friendly dairy-free vegan ingredients.

Quinoa is a complete vegetarian protein, so you really don't need the black beans (as a complementary protein)--- unless, of course, you're fond of those fiber rich little beauties in your quinoa salad. And if you do? Legume away dude.

Dairy lover? You can add your favorite shredded cheese or goat cheese, if you desire.

Karina

xo

Seasoning:

I kept the seasoning simple, relying on my favorite New Mexican inspired pairing of lime juice and sea salt.

I made this for Steve- who added a crumbled, hard boiled huevo to his plate and a drizzle of extra virgin olive oil.

By Karina Allrich May 2010.

My vegan quinoa taco salad is sans tomatoes. And bean-free. But if you love black beans with a white hot passion, add 'em in. You can also add crumbled goat cheese on top, if you desire.

You'll need:

1 cup quinoa, rinsed, then cooked in two cups water (I use a rice cooker to do this; here's how.)

Fluff the cooked quinoa with a fork. Scoop into a bowl.

Ingredients:

Extra virgin olive oil, as needed

Juice from 2 medium, juicy limes

Sea salt, to taste

2-3 tablespoons fresh chopped cilantro or parsley

1 half small red or purple onion, diced fine

1 small yellow bell pepper, cored, seeded, diced fine

1 cup roasted corn kernels (I used frozen, roasted on a cookie sheet for 6-7 minutes, then cooled)

1 large head of crisp romaine lettuce, washed, dried, sliced crosswise

Gluten-free tortilla chips

1 large avocado, pitted, peeled, diced

Instructions:

Drizzle the cooked quinoa with extra virgin olive oil and toss to coat. Squeeze on fresh lime juice and toss again. Season with sea salt, to taste.

Add in the fresh chopped cilantro, diced red onion, diced yellow pepper, and roasted corn kernels. Stir lightly to distribute. Taste test for seasoning adjustments.

Line four salad bowls or plates with the fresh romaine. Spoon the quinoa salad on the center of the lettuce. Add the diced avocado to each plate. Tuck in a few tortilla chips around the edges.

Serve with an extra lime wedge.

Serves 4.

More Options:

Add a cup of chilled, drained black beans, if you like your taco salad super hearty.

Add sliced red or yellow cherry or grape tomatoes, if you desire.

Sprinkle with the cheese of your choice.

Serve with your favorite salsa on the side.

Reader Michelle suggests adding diced mango. Sounds yum.

If onions are a FODMAP-No-No for you, omit them.

Recipe Source: Gluten-Free Goddess

All images & content are copyright protected, all rights reserved.

Please do not use our images or content without prior permission.

Lovely and classic gluten-free carrot cake with coconut, iced with lemon cream cheese frosting.
Using a gluten-free pancake and baking mix simplifies this recipe for an old fashioned favorite. Carrot cake!

You'll note that this recipe has no added leavening because it is using a leavened baking and pancake mix (I used Pamela's Gluten-Free Ultimate Baking and Pancake Mix). If you substitute your own GF flour blend without leavening, add baking powder and baking soda (see notes below).
Jump to recipe>

Gluten-Free Goddess Blueberry Flax Muffins
We sold the sofa, kitchen table, and boxes of cookbooks. We recycled toys and jeans and an old PC. The open road was calling. And we listened.

The western sky hung big and blue above the high desert arroyos of New Mexico. It felt as deep and wide as an ocean. We thought this signaled home. But I missed the sea more than I ever could have guessed. So we moved to Los Angeles and tried on four different neighborhoods in as many years. I grew adept at packing and shedding. I luxuriated in each and every hour spent with my two grown sons. A gift, each shared coffee date. Movie night. Christmas dinner.

But the city of Los Angeles was never my home. Its entertainment culture felt as walled off to me as the coyote fences in Santa Fe. I felt invisible. And irrelevant. And undernourished. My restless feminine soul was starving.

And so I turned my gaze East again. It somehow felt right. And I found us a temporary nest, an antique barn studio in a post card worthy Connecticut village where I had lived as a child. There I painted. I listened to rivers curving through woods. I inhaled the fog. It smelled like pine. It was quiet here. And the slower pace was more to my liking.

But it is not by the sea. I cannot walk the flats at low tide. I have no place to hang sheets in the ocean breeze. Inevitably, the coast is calling. Like the long and winding road that tugged me West, and pulled me East, the tidal rhythms of living by the sea are infusing my dreams with the colors of ocean glass and bay side creeks. There is sand in my boots from our trip to San Diego and I cannot bring myself to shake it out. I've been looking up rentals in Ventura County. Searching cottages on the Gulf of Mexico. Collecting captures of the wild Maine coast. But dreams are not always affordable. Or logical. Or possible. I've lived long enough to understand that a vision board does not manifest a beach house. And wishing hard does not attract the object of desire. The Law of Nature is indifferent to our dreams.

So while I bake today, I ponder what lies ahead. If you are a fortune teller, adept at reading signs, speak now or forever hold your peace.

This is the easiest yeasted bread you'll ever make. Well, from a scratch recipe, I mean. You'll have to whisk together some gluten-free flours and proof a little yeast in warm (not too hot!) water, but you can handle that, right? Once it's stirred together, you smooth it into a cake pan, let it rise in a warm and cozy oven, then bake it.
Jump to recipe>

Gluten-Free Goddess Whole Grain Strawberry Muffins

Whole Grain Gluten-Free Muffins- with Love + Strawberries

I've been thinking about muffins. And not just any ordinary, ho-hum, run-of-the-mill, starchy, gluten-free muffins. Nope. A tender, whole grain, lower sugar, vanilla scented muffin that bursts with fresh strawberry flavor. Warm from the oven, these pleasantly grainy breakfast treats are pull-apart soft with juicy bites of strawberry. Sweet- but not too sweet.

I used pure maple syrup for the primary sweetener, and a mere two tablespoons of organic brown sugar. And now for the interesting part. I also experimented with no xanthan gum. I used to rely on xanthan gum to give my gluten-free batter and dough the stretchability factor- a trait removed when I booted gluten from my kitchen and wished it vaya con dios.

But here's the thing.

Shunning gluten is a complicated issue. Gluten imparts a flexibility to batter and dough, and baking without it can lead you to crumbly, gritty ruin if you're not careful. You're giving up protein. And you're giving up elasticity. And not only that, you're saying buh-bye to the toothsome texture you are accustomed to.

Reaching for xanthan gum was a quick fix, an immediate solution to this lack of flexibility problem. But many of you now report you don't want to use it. For some it's a price issue (xanthan gum ain't cheap, Darling). For others it's a digestive issue (xanthan gum or its alternative, guar gum, can be hard on sensitive digestion). And for some, it's an allergy issue (to mold or the growth medium, most often cornstarch).

Gluten-free baking without gums is tricky. This, I know. So my first foray into this venture is not vegan. I used two free-range organic eggs. Egg whites help give gluten-free batter that precious stretchability factor. And the protein factor. They bind, and they leaven.

My choice of flours reflects two things- what I had on hand this morning, and my desire to use whole grains (I am liking starches less and less). I picked hazelnut flour for the delightful nutty flavor and protein; millet, brown rice, and sorghum flour because they are whole grain and higher protein than white rice flour or potato starch; and I used coconut flour because it attracts moisture and adds a lovely texture to gluten-free baked goods (not to mention, for its high fiber status).

The result? A tasty, blog worthy success. I absolutely love these strawberry muffins.

And I hope you do, too!

Stay safe- be vigilant- choose love,

Karina
xox

Jump to recipe>

Gluten-Free Vegan Potato Leek Soup

Soup for an Insomniac.

Last updated: April 27, 2025

Twenty-nine hours. That's how long I've been awake. I could blame the full moon, big as a gleaming white soup plate hanging in the clear desert sky last night. Or the pollen. The hostile spiky spewing of hundreds of junipers rooted round our plucky little casita. Every time I drifted toward the promise of sleep I would sneeze straight up and fumble in the dark for a Kleenex, my throat as raw as Tom Waits' vocal chords after belting, Make It Rain. We're talking ragged.

So excuse me if I keep today's ramblings short and sweet. I'm hovering outside my body. Any moment now, I might spin off with the tumbleweeds and roll down the dirt road to the highway. I might not even mind, if I end up tumbling west, rolling into the City of Angels in my sleep, snoring down Sunset Boulevard all the way to Ocean Avenue and south to Venice Beach where I live a parallel life in an alternate universe surfing at dawn.

And if you see me, give me a sign.

Any sign will do.

But before I spin toward the crooked dream highway I'll leave you with a perfect soup for spring. Stir it up when the blustery winds blow. xo

Again.

Because trying to wrestle gluten-free pie dough for an apple pie just seemed too fussy. Too complicated. Though in all honesty, that isn't the whole, unvarnished truth. The whole, unvarnished truth is, Yours Truly is more of a cake person than a pie person. It's true- pies have their charm. I've been known to inhale a slice or two of apple pie in my day. But here's the thing. And I'm going to be blunt.

Gluten-free pastry crust is simply not as flaky and tender and melt-in-your-mouth wonderful as wheat pastry crust. There. I said it. Fighting words, to some. And if you are among those true believers feel free to disagree. And go eat your gluten-free pie. I bless you with a thousand sprinkles of pie fairy dust. With love. And kisses. And pink ponies.

Respectfully.

Gluten, you see, is more than a pesky protein with a bad rep. Gluten is what makes pastry dough soft, flaky and tender. Gluten is what inspired bakers to bake all those years ago, firing up their hand-hewn brick-lined ovens. Gluten was their muse. Their seductive mistress. Gluten took them beyond three ingredient pancakes and palm-tossed flatbreads. Gluten fed their imagination. Inspired tarts, baklava, cupcakes. Napoleons. And yes. Apple pie. Because gluten is a magical ingredient (despite its bad press these days). We have to admit it. She's not an easy paramour to replace.

Perhaps some day soon I'll be tempted to experiment with a gluten-free wheat-free pastry dough. I'll be lured into believing I can recreate such delicate, fragile beauty. But not today. I'll bake this 'no apology necessary' Apple Crisp or this amazing vegan Pumpkin Pie with Coconut-Pecan Crust.

For breakfast, I'll eat applesauce cake.

Right now, I can live with that.

Karina xo

Easy.

Here is a lovely, fresh dish for the weekend. A light quinoa salad, if you will. But it's also a stir-fry. With slaw mix. A veritable hybrid of a recipe. We tossed it together this week for an easy supper with warmed buttered tortillas on the side.

Be well, enjoy the weekend- fingers crossed for warm weather. xo

Simple Quinoa Slaw for Spring

We ate this fast, tasty, nourishing dish warm. But you could also make it ahead of time and chill it. When I stir-fry the slaw mix it, is over medium heat, and brief. Just to soften, yet keep the crunch. Warming the quinoa, cabbage and seasoning helps mingle the flavors. To keep it vegan, omit the cheese or use your favorite vegan alternative to dairy.

Ingredients:

2 cups cooked quinoa (We cooked ours in low sodium chicken broth for a flavor boost.)

2-3 tablespoons olive oil

2 heaping cups of white and purple cabbage slaw with carrot

1 tablespoon dried cranberries or golden raisins

2 tablespoons good balsamic vinegar

A drizzle of raw honey, to taste

A sprinkle of snipped chives

Black pepper, to taste

A handful of yellow grape or cherry tomatoes, halved

A sprinkle of Greek feta, or crumbled goat cheese for serving.

Instructions:

While the quinoa is cooking (here's how I cook mine, in a rice cooker), warm up a large skillet over medium heat. Add the olive oil. Add the slaw with carrot, the cranberries or golden raisins. Toss and stir a bit to warm through- no more than two minutes.

Keeping the slaw slightly crunchy, add in the cooked quinoa and combine with a spoon. Remove the pan from heat. Season with the balsamic vinegar and honey, chives, and black pepper. Stir to combine.

Add in the tomatoes and feta cheese. Toss lightly.

Lovely with warm buttered tortillas, or a wedge of Sweet Potato Cornbread.

Makes 4 servings.

Recipe Source: glutenfreegoddess.net

All images & content are copyright protected, all rights reserved.

Notes:

To keep it strictly vegan, you know the drill: use light veggie broth, agave instead of honey, and vegan cheese.

If you decide to chill it, the cabbage slaw will soften and lose it's crispness.

For us this quinoa dish was the perfect light supper. For others it might be better as a side dish. Either way- it's easy and fast and delicious.

Gluten-Free Goddess Strawberry Rhubarb Crisp

Bake this beautiful strawberry rhubarb crisp and smile.

The secret ingredient in this old fashioned crumble dessert is an ingredient your grandmother probably never heard of.

Quinoa flakes. Gluten-free quinoa cereal flakes add a distinct, toasty and delicate flavor to this fruit crumble's topping. The texture is light and lovely.

We thought it was spectacular.

And these days we need all the beauty and deliciousness we can get. And Spring herself is cooperating here in ole New England, serving up all the natural beauty you could ask for. Crabapple, lilacs, magnolia and apple trees are budding and soon will be snowing purple, pink and white. House finches, bluebirds, robins and cardinals are singing in the thicket. Canopies of trees are bursting from pale lacy green and soft sun-yellows to robust greens that filter ever higher sunlight.

And love. There is a lot of that going around, too. If you seek it out- it's literally all around us. Everywhere you look. In kind gestures of appreciation, faith, creativity, Spirit, and camaraderie.

So in spite of the awful, horrible, no good, very bad troubles that have challenged us these past few years, the human spirit remains strong. And Spring has launched her magic to remind us that the world still holds such beauty.

In light of our shared collective predicament, I thought you might be craving something different this week- something less expected than my Raspberry Jam Bars (though, thank Goddess for those tried and true favorites). Something like a comforting, old school crisp and crumble dessert- the easiest of baked fresh fruit sweets. Lovely for a springtime picnic on your back porch, front steps, or a virtual weekend get-together on FaceTime.

I decided to play around with an alternative topping to the classic pairing of tart rhubarb and sweet ripe strawberries. And I grabbed the box of quinoa flakes from my pantry. So get baking!

Stay safe, stay strong, believe in Love, and bake up something delicious.

Karina
xox

Quinoa with a Pilaf Twist.

But first, love.

It has occurred to me this week that I lack the sentimentality gene. Don't get me wrong. I enjoy a lively romp down memory lane now and again, just like any crow-footed post-mid-life goddess with a lively past and a healthy sense of curiosity. It's amusing- even illuminating- to look back down the road once in awhile. To catch the rear view. To shuffle through old photographs, to listen to a song that evokes the summer of '69. That night in the back seat at the drive-in. Peter Fonda on the big screen. The bolt of first love.

But I am not wistful or gauzy eyed, thinking about the past. I don't romanticize it. Though I had an awfully good time of it (I admit I embraced my tender freedom with gusto).

What is astonishing to me, hitting me upside the head in a virtual shakabuku, is how good my instinct was, way back then. At the tender age of 15. And 17, come to think of it. I made some pretty fine choices back in the day. My teenage heart seemed to know a thing or two about love. Though my complicated childhood made it inevitable I would eventually feel undeserving, and soon enough gravitate to the familiar territory of exploitation. The roots of self-sabotage are sown in the shadow of the dysfunctional family altar. Just when the individuating soul is awakening, the unconscious rumbles from its slumber of innocence and stirs up the familial ghosts to hook its ugly claim on fate. It whispers, You think you got out free and clear, eh?

Some never pry themselves free. Some simply give in to momentum. Some accept less, willingly, and swell with stoic pride. Some find religion and pray to angels. Some choose work. And some replace love with sentiment. The pale excuse for love. The embroidery of nostalgia and its rose-tinted ribbons, investing in a picture that looks pretty to strangers. It is not perfect, but it looks good.

But that's not love.

Love isn't mediagenic. It's messy and complicated and often the timing sucks. Love asks us to get dirty. To risk authenticity, not sugar-coat its opposite. Love doesn't depend upon perfection. Or what the neighbors think. Love seeds itself in the broken places. It prefers the company of weeds above roses. And love doesn't require being polite, being correct, being right, being the best. Love asks us to hurt. To stretch beyond what is bearable. To feel scared. To lose control. To be ridiculous.

It took me twenty-five years to find it again. That deep, true love. And this time I grabbed it.

And after twenty-five more years, I hold it tight, still.

So dear reader.

On to pilaf!

It's White Bean Chicken Chili Time

Or in other words- this is the 'Football Season May Officially Be Over (I'm from Massachusetts, so. TOM BRADY #12 #GOAT 4Evah) but Chili Season is Definitely Not Over' post.

Still, I confess that even after watching every episode of Friday Night Lights, football retains a certain mystery to yours truly. A few things I know. Tight ends tighten. Running backs are amazing athletes. Quarterbacks have eagle eyes, poise under pressure, great aim (and other fine qualities). And special teams kickers pray to the football gods when called in for a tie breaker with 6 seconds to spare in the final quarter.

Do I sound like I know what I am talking about? I don't. At least, not in depth. I just overheard some sporty banter over gluten-free tuna melts. To which I smiled politely. Listened intently. And reached for a pickle.

Back fields in motion. Quarterback sneak. The Snap. The Blitz. I love the lingo. It's a language alluringly foreign to me. Like, say, algebra. Or for some, postmodern abstract neo-expressionism. Visual chaos executed in angles and arcs and bursts of focus, drive and energy.

Thing is, I get the practiced dance of propulsion. Designing motion from multiple points of view. I get it. In my bones. This is my territory. You're talkin' my language. Value verses tone. Light bumping up against dark. Sharp contrast dissolving into blur. And I appreciate the power of practice, focus, and intention. Negative space divided by a perfect spiral.

Think of the interplay of icing thick paint and oceanic viscosity. The quickening beauty of a layered surface, vibrating with complementary colors. Transparency and opacity. Cool against warm. Unprimed and primed. Lost and found edges. The seduction of action's evidence. The painter's hand. Rugged tooth and clean, smooth paper.

Though it's not all yin yang, a wrestle of opposites.

As in football- and life- painting is a locus of expression, sometimes true and authentic, and sometimes disappointingly off the mark. Like a short field goal. Or an incomplete pass. We try. We sometimes miss. But what matters is- we make the effort. And that is all we can do. We kick the ball. We brush wet paint. We string words into a lyric. We stitch a quilt. We photograph a child's curiosity.

We make chili.

And sometimes?

We get a winner.

And if not?

Tomorrow is another day.

Karina

Try This Easy and Light Kale + Quinoa Salad with Tangerines

Something has frozen over. Or maybe pigs are flying. I actually, um, like kale. After all my mocking, my nose crinkling, my eye rolling. After tweeting disparagingly about the taste of this dark leafy green (I believe the word I used was swampy). Behold. I am converted. I have seen the light.

The turning point? Lacinato kale (also called Tuscan black kale, or dinosaur kale). The long, slender leaves are delightfully un-swamp like. And unlike many good-for-you greens, there is little bitterness to harsh your mellow. Lacinato (like its curly kale cousin) does benefit from massage- especially in silky extra virgin olive oil.

But then Darling- what doesn't?

Those of us wrestling with auto-immune issues benefit the most from kale's generosity in the anti-inflammatory realm. Kale is a goddess-send when it comes to nutrition. Extremely gifted with carotenoids and flavonoids, minerals and vitamins, it is anti-inflammatory and anti-oxidant. Translation?

It's a sexy vegan super food.

Eat it daily and it will help calm inflammation and feed you body and soul. In a clean, vibrant, living way dead junk food never can.

You'll *feel* the difference. Trust me.

Usually we don't frost it but after a moment of not-so-deep reflection, the inspired idea of an apple cider icing got the better of both of us. We beat up a one pound box of powdered sugar with a dab of sweet butter, a splash of natural apple cider and pinches of nutmeg.

Easy, elegant baked eggs for brunch.

This simple egg bake recipe flirts with being a soufflé. She imagines herself in an Anais Nin novel, puffy and voluptuous, trembling on a sunlit, blossom strewn table, about to be devoured by a Henry Miller style character, an unknown writer, all bluster and Brooklyn guff, with a surprising, childlike glint to his laughter.

In a Kerouac novel she imagines herself liquid, a stream of golden beats syncopated in hot opposition to the heart's rhythm, strangely, vertigo defyingly more in tune with how the stars blink- on and off- cradling her humble, unassuming beginnings in feather injected hay, spinning cool and restless past the farmhouse windows lit yellow by a single lamp on the center of a wooden kitchen table strewn with cereal coupons and finger smudged newspaper and coffee cups stained not with lipstick but with infinite tiny cracks, scenting the air with morning that rushes into this author's highway memory like a distant train whistle crooning its tug toward reckless freedom, toward shed dreams and mockingbird awakenings that mimic the familiar just to confuse you, just to keep you anchored, just to clip you from flying in your own, crazy trajectory, your one chance at what might be possible.

Then again.

Maybe she's just an egg recipe.

With attitude.

Karina xo

<normal>

</normal>

Or- you name it.

For right now, though, I'm thinking a blueberry muffin morning might be the perfect start to my day. This day.

The recipe here is vegan- but if you prefer using eggs, darling, beaten eggs will work perfectly well in this favorite recipe (just use fresh free-range eggs in place of the egg replacer).

Stay true blue this week, everyone- be well, be safe, make this week delicious.

Karina xox

Double Chocolate Yum. Bakery style cookies.
I have a new cookie recipe to share today. A cocoa infused cookie studded with semi-sweet chocolate chips. A cookie that tastes like a brownie- if a brownie was slightly crispy and crunchy on the outside, and chewy soft on the inside.

You could say, it's a brownie with a cookie texture.

Egg-free and vegan.

Be well!

Karina

xo

And it has never failed us. We must have baked hundreds of these brownies. I'm so not kidding.

So why mess around and experiment with success, you might, quite logically, ask? Well. I cannot come up with a definitive philosophy behind my impulse to try something new. All I can say is, It's my nature.

And that's good news for brownie lovers everywhere. Because these fudgy-good gems are easy to make. No xanthan gum or weird ingredients. Irish Soda Bread Inspired Buns. Or rolls! Whatever. They're delicious.

Spring is starting to sprout. I just know it. Despite the frigid fingers of wind that unwrap your scarf and sneak down your spine. Despite the tawny, snow nourished grass that twists between wind blown twigs and scattered crows pecking at patches of silvered oak leaves at the edge of the winter swept woods. Despite the wild clouds and juniper pollen laced gusts of wind--- warmth is on the way. Green is coming. Daffodils dance in yellow unison. I spied some yesterday- swaying all jaunty and hopeful in the spring smelling air.

So Happy Spring it is, dear hearts!

And to tempt you into celebrating this Easter weekend, here is an Irish soda bread inspired bun-roll recipe to try. Bun, roll, mini-bread- whatever you call these tender tea worthy babies, one thing is for sure. They're delicious.

If you are more inclined to bake a loaf rather than buns, see these Irish Soda Breads for inspiration.

Ah, flourless chocolate cake. The perfect luxurious dessert.

Forgive the hyperbole. But I just can't help it. This is rich, silky chocolate deliciousness on a plate. And such an easy recipe, especially if you use a food processor to do the work. Serve this to non-gluten-free folks with no apologies. None. Zip. Nada. And for gluten-free folks? Hand out seconds (we deserve it, don't we?).

And the best part is- the recipe is inherently gluten-free and wheat-free. Always has been. No substitutions. No funny stuff.

This is the same flourless chocolate cake I've been making for decades. It never contained flour. The only thing I've tweaked post-celiac diagnosis is adding more coffee and vanilla. Just because.

As Spring is beginning to unveil her colorful beauty, why not celebrate with this tried and true dessert- a reader favorite on Gluten-Free Goddess.

And PS: See below why I make this recipe in a food processor- thanks to Bobby Flay.

Happy SPRING!

Karina xo

Jump to recipe>

Lemony Gluten-Free Pasta with Grilled Asparagus

Light + Lemony Gluten-Free Pasta for Spring with Grilled Asparagus

To speak about something as prosaic as pasta salad seems downright ho-hum. I mean. It's just a pasta salad. It's something I tossed together with stuff I had on hand. I hadn't planned on it. I didn't spend days contemplating the ins and outs and quirks of gluten-free penne. In fact, if I'm being unabashedly honest here I rarely think about food at all.

Until I'm hungry.

Until those familiar, nagging pangs begin gnawing their pesky little way into my consciousness, distracting me from my preferred, visual nomenclature- which rarely includes anything edible.

I daydream about painting in the Rockies, the plight of bees, and walking low tide on Brewster Flats. I notice the temperature of light and the curve of negative space against a jar of old spoons. I think about expectations and illusions and perceptions. I ponder where my soul is taking me, tugging at me to pay attention to my life, inviting me through dreams and the random snippets of music or ideas or theories that skitter and skate and ripple the mental stream I wade in day after day, to consider time itself- if I believe in it- sliding by in a cool constant flow of now.

I rarely eat breakfast. I often forget lunch. And dinner time always surprises me. As if each day takes figuring out all over again how to (****ing) live (to paraphrase the Deadwood Zen master David Milch).

This doesn't mean I don't appreciate good food.

Or that I hate to cook (well, some days I am less than enthusiastic).

I loathe junk food and processed food. I can't take credit for this- it's simply the way I'm built, the way my body so pointedly rejects any easy, packaged fix.

Even before I discovered gluten intolerance and FODMAPs I knew on some instinctual level that in order to keep this body of mine healthy and strong for the here and now I have to pay it some attention.

I know I have to eat.

And eat consciously.

And so I find myself rummaging in the little white painted cupboard that is my pantry.

And I find a box of gluten-free penne.

In the fridge I locate a fistful of spring asparagus.

One lemon.

A few sprigs of dill, marjoram, parsley and mint.

The rest is history.

Now in my belly.

Fuel for instigating thoughts of rebirth, fragility, and the particular pink that is ranunculus.
