One of our favorite things to do is cook for each other on our nights in. This dish has become a frequent repeat as it is so easy to do yet the payoff is huge. My Red Curry Cornish hen is simply delicious! I use a small chicken and combine just five other easy to get ingredients to make this dish. It is a perfect meal for two to four people. Saint Lucia is truly one of the most magical places on earth! I know that I may be a bit biased, being from the island and all that, but it is simply a beautiful place. Richard and I spent a week there recently mainly to visit family in the north of the island and we also went to Soufriere in the south. We stayed at the exceptional Boucan By Hotel Chocolat located on the cocoa plantation, The Rabot Estate.
