Io non amo l'inverno, ma alcuni prodotti mi permettono di dimenticarmi del freddo grazie alla loro bontà, e ogni anno a gennaio attendo con pazienza l'arrivo del tarocco Siciliano! &lt;br /&gt;
Ne amo il profumo e i colori e ogni giorno ne assaporo il succo da solo o associandolo ad altri ingredienti di stagione, un esempio? Il centrifugato con gli spinaci proposto anche durante il mio ultimo evento, ecco come prepararlo:&lt;br /&gt;
&lt;br /&gt;
per 1 bicchiere da 300ml:&lt;br /&gt;
4-5 arance Tarocco di Sicilia&lt;br /&gt;
una manciata di spinaci&lt;br /&gt;
mezzo o più cm di radice fresca di zenzero&lt;br /&gt;
&lt;br /&gt;
sbucciate le arance "pelando" la buccia arancione e lasciando la parte bianca ricca di fibra solubile.&lt;br /&gt;
tagliate a pezzi l'arancia della dimensione adatta alla vostra centrifuga o al vostro estrattore di succhi.&lt;br /&gt;
Tagliuzzate gli spinaci per evitare ingorghi nell'estrattore.&lt;br /&gt;
Tagliate la quantità di zenzero che desiderate (lo zenzero darò un sapore fresco al succo così ottenuto)&lt;br /&gt;

inserite nella centrifuga prima una parte di arance, poi gli spinaci e lo zenzero e terminate con la seconda parte di arance.&lt;br /&gt;
&lt;br /&gt;
Ora non potete fare altro che gustarvi questa semplice e meravigliosa bontà tutta invernale!&lt;br /&gt;

Oggi sento un grande coinvolgimento da parte di molti, dai curiosi ai golosi passando per gli scettici. Prepareremo e gusteremo maionese, verdure marinate, creme dolci, polpettine,&lt;br /&gt;
torta (crostata o cheese cake).&lt;br /&gt;

Il nemico può essere anche un pezzo di pane, o una fetta di torta, un piatto di riso, o un hamburger, insomma un qualsiasi alimento che ha subito il processo di cottura.&lt;br /&gt;
Ma perché la nostra perfetta macchina di difesa si mette in moto?&lt;br /&gt;
Ad ogni ingestione di tali alimenti, il nostro organismo reagisce con un'iper-produzione di leucociti (detta "leucocitosi"), perché considera "innaturale" e "pericolosa" ogni materia vivente sottoposta a quella radicale trasformazione molecolare che avviene con la cottura.&lt;br /&gt;
Una mela, una carota o qualsiasi altro vegetale o frutto crudo sono invece accettati senza la reazione immunitaria dei globuli bianchi, che provocano ogni volta un enorme dispendio d'energie vitali.&lt;br /&gt;
A fare questa importantissima scoperta fu il Dottor Kouchakoff, medico di Losanna, che, dopo venticinque anni di sperimentazioni su migliaia di persone e su sè stesso, nel 1937 pubblicò il risultato delle sue ricerche nel saggio&amp;nbsp;&lt;i&gt;Nouvelles lois de alimentation humaine, basees sur la leucocytose digestive&lt;/i&gt;.&lt;br /&gt;
Parallelamente a Kouchakoff, il medico italiano C. Lusignani, dell'Università di Parma, nel 1924 aveva già pubblicato un prezioso lavoro sulla leucocitosi digestiva, arrivando a conclusioni simili.&lt;br /&gt;
In effetti, Lusignani si era occupato del meccanismo fisiologico che innesca o sospende la leucocitosi digestiva, dimostrando che le variazioni leucocitarie successive all'ingestione dell'alimento sono dovute a meccanismi nervosi centrali e periferici che, regolando il calibro vasale, determinano, attraverso fenomeni di vasocostrizione o di vasodilatazione, l'aumento o la diminuzione dei leucociti.&lt;br /&gt;
I globuli bianchi, in sostanza, "programmati" per difendere da corpi estranei a noi dannosi, aumentano di numero in caso d'ingestione di cibi cotti.&lt;br /&gt;
Al contrario, il nostro organismo reagisce con un rilassamento delle pareti vasali (e una conseguente diminuzione dei globuli bianchi, o leucopenia) in caso d'ingestione di cibo crudo, non considerato dannoso dall'"intelligenza del corpo".&lt;br /&gt;
Come dice il prof. Businco, dell'Università di Roma, "la&amp;nbsp;&lt;b&gt;vita è cruda&lt;/b&gt;, perché tutti i processi biologici si svolgono in ambiente naturale, nei limiti della temperatura alla quale le cellule e i tessuti svolgono le loro attività vitali".&lt;br /&gt;
Il corpo sa riconoscere ancora perfettamente, dopo alcuni millenni di "deviazione alimentare", i cibi "vivi" (quelli che gli consentono di mantenere integro il suo capitale di "vitalità") da quelli "morti".&lt;br /&gt;
"Vivi" sono gli alimenti crudi, che conservano intatto il loro corredo di "fattori vitali": vitamine, proteine, sali minerali, enzimi, ormoni, essenze volatili, antiossidanti naturali, biostimoline, complessi antibiotici, ecc. Alimenti "morti", invece, non sono solo i cadaveri di altri animali, ma anche le verdure, la frutta e i cereali cotti. Tutti i cibi (fatti di materia organica, come noi), se sottoposti ad elevate temperature (come quelle che usiamo per friggere, arrostire, bollire, ecc.) subiscono trasformazioni chimiche irreversibili.&lt;br /&gt;
Le proteine, ad esempio, hanno un decadimento del loro valore biologico, dovuto alla distruzione parziale (e a volte totale) degli aminoacidi essenziali. La bollitura, in particolare, provoca l'idrolizzazione dei composti proteici e la susseguente dispersione nel mezzo liquido. Se poi la cottura avviene mediante arrostimento o tostatura, le proteine si denaturano, producendo sostanze tossiche da piroscissione, alcune delle quali notoriamente cancerogene (il benzopirene, il benzoantracene, il perilene, ecc.). Attenti dunque al famigerato barbecue e al caffè (i cui grani, prima di essere macinati, sono tostati).&lt;br /&gt;
Altre "vittime eccellenti" della cottura-killer sono le vitamine, che ad alte temperature vengono per la maggior parte denaturate o distrutte irrimediabilmente.&lt;br /&gt;
La clorofilla, linfa vitale delle piante verdi, subisce invece la degradazione a feofitina, di colore bruniccio, assolutamente inutilizzabile dall'organismo.&lt;br /&gt;
Cuocere non significa quindi rendere più digeribile un alimento, perché, come abbiamo visto, durante questo processo i composti proteici iniziano a flocculare già a 60 gradi e finiscono per coagulare del tutto a temperature maggiori, essendo inattaccabili dai succhi gastrici.&lt;br /&gt;
Ma, allora, i presunti vantaggi della cottura? Ad un attento esame, non ce ne sono. È pur vero che gli alimenti cotti si prestano di più a manipolazioni e all'aggiunta di condimenti "ricchi" o speziati (proprio perché hanno perso il loro sapore iniziale), ma ciò travalica dalle giuste necessità nutrizionali e appartiene al campo di quelle "distorsioni del gusto", indotte dalla "civilizzazione".&lt;br /&gt;
Dopo aver rivelato cosa succede nel nostro organismo ogni qualvolta ingeriamo un cibo cotto (di qualsiasi natura, vegetale o animale) e perché gli alimenti crudi debbano considerarsi "vivi" (in altre parole depositari di tutto il corredo vitaminico, proteico, enzimatico, ecc.), mentre quelli sottoposti a cottura sono ritenuti "morti", siccome subiscono trasformazioni chimiche irreversibili che, oltre ad impoverirli sul piano bionutrizionale, in alcuni casi generano sostanze cancerogene, bisogna ora aggiungere un dato sicuramente rilevante, il fatto, in pratica, che l'uomo, sebbene faccia cuocere i suoi alimenti da alcune decine di migliaia d'anni (mentre per milioni d'anni è stato "crudista") non ha sviluppato altresì alcun adattamento anatomofisiologico all'alimento cotto, che continua ad essere rifiutato dall'organismo mediante l'azione di rigetto detta "leucocitosi digestiva" (cioè iper-produzione di globuli bianchi).&lt;br /&gt;
Ad oltre settanta anni da questa scoperta, fondamentale per capire come si comporta il nostro corpo in caso d'alimentazione innaturale, si continua a far di tutto per non divulgarla, con un silenzio che ha premiato i giganti multinazionali dell'alimentazione precotta, in scatola, "sofisticata" e colorata.&lt;br /&gt;
L'uomo è l'unico animale che sottopone a cottura i cibi, erodendo così il suo capitale energetico (poiché, la leucocitosi rappresenta un elevato dispendio di vitalità) e obbligando il proprio organismo ad un doppio sforzo per ritrasformare in materia vivente ciò che lui stesso ha distrutto con l'elevata temperatura.&lt;br /&gt;
È stato calcolato - dall'ingegnere francese Andrè Simoneton - che le radiazioni emesse dal corpo di una persona sana si aggirano, in media, sui 6.500 Angstrom, mentre in condizioni di malattia o di cattiva alimentazione scendono sicuramente di sotto a tale livello.&lt;br /&gt;
Gli alimenti possono pertanto dividersi in tre principali categorie: l) alimenti "morti" - cibi cotti o conservati, margarina, pasticceria industriale, alcool, liquori, zucchero - che hanno radiazioni nulle o pressoché nulle; 2) alimenti "inferiori" - carne, salumi, uova non fresche, latte bollito (quello "industriale" che beviamo oggi), caffè, tè, cioccolato, marmellate, formaggi, pane bianco - che hanno radiazioni inferiori a 3.000 Angstrom; 3) alimenti "superiori" o "sani" - frutta fresca, cruda e matura, e verdura cruda e fresca, che hanno radiazioni molto elevate, tra gli 8.000 e i 10.000 Angstrom.&lt;br /&gt;
L'alimento vegetale "vivo" (cioè crudo), fresco e maturato sotto l'azione dei raggi solari, è, infatti, il punto d'arrivo di una serie di processi di concentrazione di tutte quelle energie che lo hanno dapprima generato, poi fatto crescere e infine portato a maturazione. Tali energie, ovviamente, si liberano e vengono poi assimilate dal nostro organismo ogni qual volta mastichiamo e ingeriamo un frutto o un vegetale crudo: dall'energia alla materia e dalla materia all'energia, semplicemente.&lt;br /&gt;
Viene da chiedersi, ora, come mai l'uomo abbia abbandonato ad un certo punto della sua preistoria l'alimentazione a lui fisiologicamente adatto, quella vegetariana e crudista, e si sia dato alla cottura indiscriminata dei cibi, iniziando con la carne e passando poi a tutti gli altri.&lt;br /&gt;
Ragioni di forza maggiore, pare, obbligarono i nostri progenitori a cambiare dieta.&lt;br /&gt;
I paleoantropologi concordano nel ritenere che la Terra, durante la preistoria dell'uomo, soffrì enormi sconvolgimenti climatici e geologici, i quali trasformarono profondamente gli ecosistemi del pianeta. Glaciazioni, interglaciazioni, periodi d'eccessivo inaridimento o d'insolita piovosità alterarono i biomi vegetali da cui l'uomo traeva il proprio nutrimento.&lt;br /&gt;
Durante l'ultima glaciazione, avvenuta tra i 200.000 e i 120.000 anni fa nel periodo dell'Era Quaternaria chiamato Pleistocene, i ghiacci avanzarono tanto che gran parte delle foreste eurasiatiche furono distrutte. L'Africa, nel frattempo, era flagellata da intensissime precipitazioni, seguite poi da un periodo d'eccessivo inaridimento del clima, che fece scomparire gran parte delle foreste.&lt;br /&gt;
La savana, gialla, assolata, semi arida, prese in molte zone il posto dell'intricato e ombroso ammasso vegetale che aveva fino allora ospitato e nutrito l'uomo.&lt;br /&gt;
&lt;br /&gt;
Da "scimmia d'ombra" - come dice il prof. Marcello Comel, illustre clinico e scienziato dell'Università di Pisa - "vissuta per milioni d'anni sugli alberi ... [l'uomo] vagò per altri milioni d'anni nella savana". E che nutrimento poteva trovare nella savana?&lt;br /&gt;
Da "scimmia d'ombra" - come dice il prof. Marcello Comel, illustre clinico e scienziato dell'università di Pisa - "vissuta per milioni d'anni sugli alberi...[l'uomo] vagò per altri milioni d'anni nella savana". E che nutrimento poteva trovare nella savana?&lt;br /&gt;
Prevalentemente i frutti secchi, piccoli e duri delle graminacee spontanee (soprattutto frumento e orzo), che crescono negli spazi aperti, e necessitano di luce solare diretta.&lt;br /&gt;
Alla dieta a base di graminacee, insufficiente dal punto di vista nutritivo, l'uomo aggiunse ciò che gli offriva il nuovo habitat, e cioè la carne degli animali della savana.&lt;br /&gt;
Non avendo le caratteristiche anatomofisiologiche del granivoro, né tantomeno del carnivoro, l'uomo, per rendere commestibile il cereale e il cadavere di altri animali, dovette ricorrere alla cottura, che in seguito fu estesa, inspiegabilmente, a tutti gli altri alimenti.&lt;br /&gt;
L'alimentazione granivora e carnivora rappresenta dunque una vera e propria "deviazione fagica" non dettata da una scelta, ma da uno stato di pura necessità che non offriva alternative.&lt;br /&gt;
Contravvenendo agli istinti alimentari biologicamente connaturati con la propria specie, l'uomo dette inizio alla sua degradazione e degenerazione fisiopsichica, i cui disastrosi effetti sono, oggi più che mai, evidenti. Contrariamente a quanto si pensa, infatti, l'uomo non è diventato "più sano, più alto, più forte" da quando (circa 10.000 anni fa) ha cominciato a dedicarsi all'agricoltura. Tutt'altro.&lt;br /&gt;
La paleopatologia, una disciplina relativamente nuova che studia le malattie di cui soffrivano i nostri antenati, sta sovvertendo molti luoghi comuni. Ad esempio quelli che riguardano la statura: gli scheletri degli uomini preistorici vissuti in Grecia e in Turchia verso la fine dell'era glaciale erano alti in media 175 centimetri, mentre 5.000 anni fa (dopo l'adozione dell'agricoltura) la statura era scesa a 160 cm.&lt;br /&gt;
E inoltre ogni cultura ricorda i propri "Matusalemme" e i propri "Noé", gli ultracentenari degli albori del mondo, cioè quando l'uomo era ancora "fruttariano" e "crudista".&lt;br /&gt;
Oggigiorno, non più la necessità di procacciarsi il cibo, ma errate abitudini, pregiudizi dietetici, e, soprattutto, la schiacciante pressione dell'industria alimentare - con tutti i suoi condizionamenti pubblicitari - fanno sì che l'uomo, non più guidato dall'istinto (ormai perduto), stenti a ritrovare razionalmente la strada della corretta alimentazione crudista.&lt;br /&gt;
