Dreaming of my wish list...

I am hoping, wishing and praying that this year we buy a house. A house with a yard, two bathrooms and great neighbors. You see we are a single wage earning family. My husband works very hard to provide for us and I stay home with the kids. I always thought I would have gone back to work full-time by now. But things don't always work out how you plan them to be. I work part time or seasonal jobs to make extra money for our fun stuff. But that does not give us much for other things, like a new house. You see we lived in a great community with great neighbors and lots of space for all us. But we moved, to be closer to my husband's work, so that there would be more family time. I don't regret it at all. As a family we have lunch together often. We even had a routine of driving dad to work during the summer. We are not rushed most mornings, we eat together all the time, we are closer by living close to work. It is great. Our apartment is like a resort with a pool, hot tube, gym and places I have not even visited yet. It is really great here. I have a very cosmopolitan apartment. Like the one I thought I would want, if I lived in New York City. Today I find myself wishing I lived in a neighborhood like the one I had in Eastvale. With the neighbor who was always outside and teacher friend down the street. Today I miss my backyard and doing the gardening, while the kids played with the next door neighbor kids. I miss my old house. So I started looking at Rent to Own homes. I found a few in Chicago. Problem is that I live in Southern California. So for now I will jump in the pool to forget about buying a house. What are your hopes and dreams for this year?

Happy Three King's Day - January 6th

Have you seen the the Rosca Pan at the local Mexican Market? Today is January 6th El Dia De Los Tres Reyes or Three Kings Day. It is an important holiday tradition for Mexican's here in California. It is a day that parents give gifts to their children to represent the gifts that Baby Jesus received from the Three King's. So you could say that Christmas continues in the Mexican culture. The bread has a special surprise. Inside there is a small plastic figurine representing baby Jesus. If you get a slice and find the baby Jesus, then you are the person who will host Candelaria or Candlesmas Day party, which happens on February 2nd. February 2nd is the day for a large dinner of homemade tamales and hot chocolate. It is all so much fun to eat the Rosca and celebrate Three King's Day. This year I did not get the baby Jesus. So I am not throwing a party. Let's see what happens next year?

What is February 2nd?

(February 2nd is the 40th day after Christmas and it is believed that Jesus would have been taken to temple. For Catholics it is the "Feast of the Purification of the blessed Virgin also known as the Presentation of the Lord. In the United States it is Groundhog Day. It is the day that marks Winter Solstice and Spring Equinox.)

Where can you find the Rosca Bread?

Most Mexican markets have bakeries that bake fresh breads everyday. Superior, Northgate, El Tapatillo and Cardenas are a few that carry fresh baked goods.

Visiting a local Mexican Market is a great way to explore foods from Latin America without leaving town. Best time to go is early in the morning when everything is fresh and not crowded. Have fun with your field trips.

Rosca De Reyes - Three Kings Bread

Food Network Receipe: Food Network

Ingredients

1 (1/4-ounce) packet active dry yeast
1/4 cup warm water
1/4 cup dried figs, cut into strips, plus more for garnish
1/4 cup candied orange peel, cut into strips, plus more for garnish
1/4 cup candied lemon peel, cut into strips, plus more for garnish
1/4 cup chopped candied cherries, plus more whole for garnish
2 tablespoons light rum
1/4 cup milk
1/4 cup sugar
1/4 cup (1/2 stick) unsalted butter
1 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
1 teaspoon salt
3 1/2 to 4 cups all-purpose flour
3 large eggs, divided
Water

Directions

In a small bowl, combine the yeast and warm water; stir to blend. Let stand until the yeast comes alive and starts to foam, about 5 to 10 minutes.

Put all of the candied fruit in small bowl and drizzle the rum on top. Let stand for 15 minutes to 1 hour to infuse the flavor.

In a small pot, warm the milk over medium heat. Add the sugar, butter, vanilla, cinnamon, and salt.

In a large bowl, mix 3 1/2 cups flour, 2 eggs, yeast mixture, milk mixture, and the rum soaked candied fruits, mixing very well until the dough gathers into a ball. If the dough is too wet, Add additional flour, a little at a time, if needed to form a soft dough. Turn the dough out onto a lightly floured surface and knead until it's smooth and elastic, about 5 minutes. Put the ball of dough back into the bowl and cover with plastic wrap or a kitchen towel and set aside in a warm spot to rise for 1 hour.

Remove the dough from the bowl and knead on a lightly floured surface. Using your palms, roll the dough into a long rope. Shape the coil into a ring, sealing the ends together. Insert a little doll or coin into the bread from the bottom, if desired. Line a baking pan with aluminum foil and coat with nonstick cooking spray. Carefully transfer the dough ring to the prepared baking pan.

Preheat the oven to 350 degrees F.

Beat the remaining egg in a small bowl with 1 tablespoon of water to make an egg wash, and brush the top of the bread. Decoratively garnish the top of the bread with more candied fruit and bake for 35 to 40 minutes until the cake is golden.

Cool on a wire rack before slicing.

Cook's Note: Let your guests know there is a little doll or coin inserted inside.

Phil Collins - Another day in Paradise

I grew-up listening to 80's & 90's music. One of my favorite Artist is Phil Collins. Phil Collins wrote a song that has stuck with me all these years. Every time I hear "Another Day In Paradise" I remember growing up in Los Angeles near downtown. As a child I would have to walk by homeless people to buy groceries, attend church or just get to school. Walking by the homeless people made me want to be a millionaire to help all of them. When ever I could I would give them my candy money. I always hoped that one day they would be helped. I feel that I learned compassion in those early years, by just observing such a terrible situation. Most of all I learned that others have it much worse than I do. Today I heard the song and it reminded me that no matter how hard things get, I live in paradise. I am thankful for my family and my friends. What are you thankful for and who is your Phil Collins? Remember it is just another day in paradise for us.

Looking at the Field Trips of 2011

This year 2011 has been a year with many new experiences for everyone in my family. Early Spring 2011 my family and I traveled to Central California and had a blast visiting Monterey Bay Aquarium, The Mystery Spot and Dennis the Menace Park. Along the way up and coming home we visited the Missions that are along the California Coast. Each Mission was rich with history and spirit. One mission was so unique it had a secret passage. We accidentally used it. It was closed off to the public, but we had to go to the bathroom and got lost. By accident we found the secret passage. We completely found that experience amazing. Then Summer 2011 came and we spent days at the beach, gardens and parks enjoying the sun and water. The pool in our Irvine Community was not bad either. We did lots of swimming. (I did lots of watching not swimming.) Then as soon as September came it was back to school volunteering and running around driving kids to and from school. In all that crazy family life I added work and blogging. My family and I have had a successful year full of love, compassion, friendship and most of all of memories. My family and I want to wish you a very successful 2012 full of Love, Compassion, Friendship and lots of fun field trip memories. Happy New Year!

Pasadena - New Year 2012

This weekend there will be lots of fun things to do in Southern California. One of the most exciting events is the "Pasadena Tournament of Roses". The event is a parade of beautiful floats decorated with roses, flowers, seeds and herbs that are stories high. Image a building walking down the street decorated with roses. These floats are super tall and amazing works of art that smell rich with floral rose fragrance. In 1890 Pasadena's Valley Hunt Club began the parade to draw people from the East Coast to come to California to see the life without snow and experience paradise. Every year it is celebrated on January 1st except never on Sundays. This year it falls on Sunday therefore it will be celebrated on Monday January 2nd, 2012. It will be broadcasted on Television for the world to see and for those who can not make it to Pasadena. After the parade the floats will be parked for all to view up close.

We will be going after the parade to see all the beautiful floats. We pack a light lunch and wear our most comfortable shoes and take our time walking around. The kids love just getting out and riding the bus that takes us to the floats. They think that taking a bus is cool and fun. The bus is a short ride through Pasadena. We see all the local shops in our route to see the floats. Once off the bus you see people. I won't lie. There is a ton of people of walking and looking at the floats. But because the floats are so fantastic it does not matter how many other millions of people are there as well. Just make sure you wear comfortable shoes.

There are lots of other fun places in Pasadena and surrounding area. Plan ahead and have fun on your next field trip/ travel adventure. Here is my list of must see or experience:

Parks and a Large Sandbox!

Living in Southern California means that you can play and have fun 99% of the time. My family and I enjoy playing outside and getting sun by going to Castle Park aka Northwood Community Park. Another place that you will find me is at the OC Great Park that is a few minutes away. There you can ride a hot air balloon for free and have a picnic. There is also free Carousel rides. Not too far is the beach where you can go watch the waves crash and relax while the kids play in the largest sandbox.

This Spring the OC Great Park will be hosting Free Field Trips for the 1st grade students in Irvine, Tustin and Santa Ana. Please tell your teacher if you live in those cities. It is a great opportunity. Read more...

Every Thursday and Friday from March 15 to June 15, 2012

Cost: FREE, no fee for students to participate
Open to: First-grade classes from Irvine, Santa Ana and Tustin unified school districts.

What is it?
Reporting Live from the Great Park is a STEAM (Science, Technology, Engineering, Arts and Math)-focused program for first graders using “disguised learning” to build knowledge of scientific investigation, physical science, geography, earth science, technology, language and visual arts.
What will the kids do?
Children ride the Great Park Balloon and tour the Farm + Food Lab, conducting fieldwork and experiments, then articulate what they learn by recording a news report at the OCGP-TV Studio. Garden instruction is conducted by the University of California Cooperative Extension Master Gardeners.
How big is the program?
Last year, more than 400 first graders participated in this program and in 2012 the program is being expanded to host 2,000 students from the Irvine, Santa Ana and Tustin unified school districts.
Space is limited and will fill quickly – register today.

For years I have been taking field trips to "Fun Places" with my kids throughout Southern California. In the beginning I did lots of research and word of mouth adventures. In those days I would take a trip and wished I had a book, a website, a resource that would help me with basic questions. Questions like: How much is the whole trip going to cost? Making a Child's Playset Oven idea

Materials you will need:

table saw (or circular saw with a straightedge guide)

jigsaw

miter saw (or handsaw with miter box)

router with a 1/4-inch roundover bit and 3/8-inch rabbeting bit

drill/driver with bits

pneumatic nailer (or hammer with nail set)

1 Build the oven face frame.
a. Use the layout in Figure 7 as a guide to attach the (22) stiles to the (23) rails and to the (24) lower rail using glue and pocket hole screws.

2 Build the oven body assembly.
a. Position the (25) sides flush with the top, bottom, and outside edges of the face frame, and attach using glue and pocket hole screws.
b. Position the (26) top flush with the front of the face frame and the outside edges of the (25) sides as shown in Figure 8, and attach using glue and nails.
c. Position the (27) strong back flush with the bottom and back edges of the (25) sides, and attach using glue and nails.
d. Position the (28) floor flush with the top edge of the (24) lower rail and on top of the (27) strong back, and attach using glue and nails.
e. Position the (29) cleats 1 1/2 inches from the back edges of the (25) sides. The top of the (29) cleats should be 6 1/4 inches above the top of the (28) floor, and attach using glue and nails.
f. Attach the (30) back to the assembly using glue and nails.
g. Position the (31) backsplash centered and flush with the back of the assembly, and attach using glue and pocket hole screws.
h. Using a router fitted with a 1/4-inch roundover bit, roundover the edges of the assembly.

3 Build the oven door.
a. Cut the (33) door 1 inch wider and 1 inch taller than the opening for the oven.
b. Cut a rounded rectangle 12 inches wide and 5 inches tall, with a 1-inch radius at each corner, 3 1/4 inches down from the top edge and centered on the width. (See Figure 9.)
c. Using a router fitted with a 3/8-inch rabbeting bit, cut a 3/8-inch-wide x 1/4-inch-deep rabbet on the back of the (33) door.
d. Square the corners of the rabbet using a chisel.
e. Test-fit the acrylic sheet in the opening.
f. Drill a hole in each corner of the acrylic sheet for the lath screws. (Note: Securely sandwich the acrylic sheet between two pieces of wood when drilling the holes to help avoid splitting the acrylic sheet.
g. Using a router fitted with a 1/4-inch roundover, roundover all edges of the (33) door.

4 Build the oven drawer.
a. Assemble the drawer by attaching the (34) drawer sides to the (35) drawer ends using glue and nails. (See Figure 10.) Note: The drawer size may need to be adjusted according to the drawer slide manufacturer’s instructions.
b. Attach the (36) drawer bottom to the drawer assembly using glue and nails.
c. Install the drawer and drawer slide per the manufacturer’s instructions.
d. Using a router fitted with a 1/4-inch roundover bit, roundover all edges of the (37) drawer face.
e. Attach the (37) drawer face to the drawer assembly by driving screws from the inside of the assembly and into the back of the (37) drawer face.

5 Complete the oven assembly.
a. Fill all voids in the plywood edges and any nail holes. Sand, prime, and paint the oven door, drawer, and body assembly.
b. Cut the wire shelving to length, add end protectors to the ends of the shelving, and install at the (29) cleats.
c. Attach a 6-inch pull to the (33) door. Attach the (33) door to the body assembly using hinges. Attach a 6-inch pull to the (37) drawer face.
d. Paint the wall protectors black, peel off the backing, and attach as shown in Figure 10.
e. Attach the adapters for the knobs to the (31) backsplash using pocket hole screws without drilling pocket holes. (Note: Do not overtighten the screws to allow the knobs to rotate.)
f. Place the knobs onto the adapters.
g. Check the entire project for any sharp edges or protruding fasteners, and adjust as necessary to eliminate these areas.
h. Attach nail-on furniture glides to the bottom of the assembly.
i. Attach door bumpers to the inside of the door and drawer.

Finding a great T-shirt or undershirt is a hard to do. Finding one that fits and doesn’t feel so heavy under the rest of my winter wear is even harder. But, I found one!!!! I was lucky enough to be invited to try Down East Basics located at the Irvine Spectrum. I had passed it many times before and was too afraid to go in, considering that it seemed expensive and way out of my budget. When I actually step into the store I was so glad that I had a chance to try and discover that they have reasonable prices on their women's and girl's clothing. I found so many things that I had to have in my closet. One of them was their basic Tee's (T-shirt) I use them under my winter wear as the foundation to my layering. The Basic Tees at Down East Basics is soft with a touch of Spandex. It lightly tucks your tummy in and forces you to stand up straight, without feeling uncomfortable. The moment I tried on the Tee I realized I had to have them in every color they had. Good thing they were running a sale the day I went.

Besides the most comfortable Tee's I also found dresses that were soft, light and in very classic styles. Most of the clothing at Down East Basics was classic and timeless. All of their Cardigans were timeless and very classic in style. They could be worn with slacks or jeans and still have that tailored look. The clothing at Down East Basics has soft and gently touches of ruffles, lace, and other nice embellishments. All embellishments placed on the clothing in moderation bring back old Hollywood memories-not something that is overly done but something that looks casual yet still remaining classic. Down East Basics is a boutique-esque women and girls’ clothing store with an affordable price tag. I recommend that you try and stop by and look for yourself. Just try on a few things and find out for yourself the quality of the clothes. Some bonuses are that there are no long lines or a large uncomfortable department store feel, just nice employees who are there to help with your experience. Down East Basics is a place where can go with your friends and have a great time shopping, rather than standing in a long lines this holiday. Traditions, Hope and Miracles.

The holidays are here and the days are moving fast. Every year at Christmas time I visit my childhood church. I love the church I grew up in and all the memories it holds. The church is "La Placita Olvera" or it's formal name is "La Iglesia Nuestra Señora Reina de los Angeles" (Our Lady Queen of Los Angeles). It is located on 535 North Main Street in Downtown Los Angeles. The church itself is known for people coming to seek miracles and hope in loss causes. Across from the church is "Olvera Street" a plaza with many vendors. In the plaza you can find all things from the Mexican culture. There is candy, candles, clothing, shoes and restaurants. The shops bring a taste of Mexico without you leaving the country. If you walk around you can hear Mariachi bands playing in the restaurants.

For me it all brings back great memories of my mom and dad. Spending time at "La Placita Olvera" brings me happiness, because it reminds me of all the fun times I had with my parents at our church. It also reminds me of the traditions that my mom and dad handed me. "La Placita Olvera" is a spiritual place where I can leave my worries and all my fears and hand them over to God. Visiting "La Placita Olvera" gives me peace and comfort.

I consider "La Placita Olvera" a holy place, because here no one is turned away. Everyone is welcomed to come in and worship. Most people come to light a candle and request a miracle. The request for miracles is visible everywhere you go within the church. You see pictures, gifts, flowers and candles in every corner with the hope that a miracle may be granted. "La Placita Olvera" is tangible, visible church that has stood for helping the most needed. If you find yourself in need of a miracle you may want to come and light a candle at "La Placita Olvera" to lift your spirit and your hopes.

"La Placita Olvera" is very unique in that the Mexican culture and the Catholic culture come together here. Right across the street is a plaza filled with vendors selling Mexican Art, handmade Mexican clothing, leather sandals, leather handbags and more. It is a Mexican culture marketplace filled with sights, sounds and smells of Mexico. My favorite is the food and the art pieces.

My tradition of visiting a place of hope and miracles gets me looking forward to the New Year. The New Year brings the hope of new beginnings and the promise of great adventures. Las Posadas runs on Olvera Street from December 16 to 24. The children's piñata breaking and entertainment begin at 6 p.m. Processions starting at the Avila Adobe at 7:30 p.m.

Las Posadas on Olvera Street

Las Posada is the name given to the traditional way of celebrating Christmas in the

villages and homes of Mexico and other Latin American countries. This celebration of

the holiday season is presented by the Merchants of Olvera Street for nine nights

beginning December 16th and ending on Christmas Eve, December 24th.

In Spanish, Las Posadas means “the inns” or “shelters.” The journey of Joseph and

Mary to Bethlehem is depicted each night in a candlelight procession, led by the

Merchants of Olvera Street. Each night the procession stops at a different shop, or puesto

on the street serving as the posada or inn where the group asks for shelter.

The procession starts from the historic Avila Adobe and winds its way around Olvera

Street with the merchants leading singing traditional hymns and holiday songs in

English and Spanish. Free champurrado and pan dulce is served after the procession

as well as a piñata for the little one to enjoy.

Many of the founding Merchant families continue to preserve this wonderful event,

sharing the joy of the season with their children and grandchildren. We warmly invite

you to make our tradition a part of your own Christmas celebration and we thank you

for joining us and being a part of one of Los Angeles oldest and Christmas events.

A Complete Stranger Helped Me

Elle, Brigitta and Me!

For years I have been part of online moms groups. I mainly began to follow them after my hospital stay while I was pregnant. Throughout the years I used it as a "Dear Abby" format. I would answer other moms questions or suggest ideas. More and More I used the online group to find things to do and get discounts. I was really convinced that there was no one out there listening to what I was typing. As I was going through a difficult moment of regretting my new address move, I reached out to my online moms group. Announcing that to find my true calling and re-inventing my career I had decided to start a blog. I reached out to all the moms in the group looking for a positive response. Immediately the owner of the moms group deleted my post and sent me an email. I call it a rejection email. She had stated that it was against group policy to promote your blog. New to blogging I was confused as to why she would be against it. I felt in one moment so embarrassed and small. I had been a loyal member and now I needed a hand to find my calling. It felt incredibly hard and painful. I realized I needed to stop being embarrassed and remove myself from the group. I wrote a good-bye email and in that moment I erased years of group participation. I felt very sad to say good-bye to such an interesting group.

What happen next was not expected. The next day I had opened my email and noticed several emails from moms in the group. They all expressed their sadness to see me go. Moms I had never exchanged emails with or knew personally. Some of them made suggestions to apologize to the group organizer. It all was so great. Hearing from other moms meant that they had been there the whole time listening to me. It brought me to tears. I was really moved by their kind acts.
The first person to email me was Brigitta Schumacher-Bradley, she was very kind with her words. Telling me to hang in there and push on. She encouraged me to continue with my blog and not let negative comments get in the way. At least that is what I remember. As I pushed on month after month of getting past the fear of being read. Brigitta Schumacher-Bradley sent me an invitation to a blogger event in August to attend a blogger event at the Aquarium of the Pacific. It was another small act of kindness by forwarding me an invitation to a blogger event that helped me to continue with writing the blog. She has been an angel to me. Brigitta's encouragement and small acts of kindness have changed me. In a moment of despair I needed a kind word, a gentle push and encouragement. A complete stranger who saw my words on an a message board and replied made all the difference to me.

I was very lucky to meet Brigitta in person this summer at OC blogger Bash. She was kind, soft spoken and very friendly. Brigitta Schumacher-Bradley who is with MOMSLA has been an inspiration of kindness. A stranger who believed I could and helped me push fear to the side. I am writing this post to tell her how much it meant that she took the time to help me.

Brigitta thank you for being so kind and sharing your invitation with me. It made a world of difference in my life and my family's life. May you find kind people to help you with you dreams. Know that you have a friend in me always. Thank you, Alma

A Candy Makers Witness

Did you know whay the candy cane has those stripes and how it got it's shape?

A candy maker wanted to make a candy that would be a witness of his faith, so he made the Christmas Candy Cane. He incorporated several symbols of the birth, ministry, and death of Jesus Christ.

He began with a stick of pure white hard candy. White to symbolize the Virgin Birth and sinless nature of Jesus; and hard to symbolize the Solid Rock, the foundation of the Church, and the firmness of the promises of God.

The candy maker made the candy in the form of a "J" to represent the precious name of Jesus, who came to earth as the Savior of all mankind. It could also represent the staff of the Good Shepherd with which He reaches down into the ditches of the world to lift out the fallen lambs, who, like all sheep have gone astray.

Thinking that the candy was somewhat plain, the candy maker stained it with several small red stripes representing the stripes Jesus received when He was beaten before His Crucifixion; the stripes that the Bible says we are healed by. The large red stripe is for the blood shed by Christ on the cross that mankind would have the promise of eternal life.

As time passed the candy became known simply as a candy cane. It is now a standard decoration we see at Christmas time, but not nearly carrying the meaning that was originally intended. But the meaning is still there to those who have "eyes to see." Perhaps this story of the origin of the "candy cane" will help you to witness the wonder of God's Gift at this blessed time of the year.

Candy Cane Making Field Trip

Field Trip Mom

Today I took my kids to a very special place, Logan's Candy shop. It is located in Ontario, Ca. The shop is located on "B" Street in a quiet neighborhood. My friend Rachel her two kids, my friend Paula and her son plus my two sons arrived at 5pm for the candy demonstration. We joined my MOMS club who had booked this field trip. As we waited outside the big window we began to see that it would be a sweet experience. In the crowd was lots of little faces waiting to see the magic of the candy-maker. When the demonstration began I completely forgot to record video. I began to turn into a child and fell into a child like state of wondering what it would be to taste a freshly made candy cane. I had been here before, but the idea of eating something so organic(wink wink) felt magical. There the candy-maker began to work his magic of boiling, mixing, pulling, cutting and bending sugar. In an instant I was acting like a child. Walking back and forth trying to see what the candy-maker was creating. I turned to my friend and told her that it sucked to be short. This was one of those times I wanted to be 6 feet tall. I wanted taller shoes, so I could see every detail of the candy making process. As you will see I struggled to get great pictures of the event. Sorry for the terrible condition of the pictures.

After a little while we were escorted inside to see the rest of the demonstration, which included tasting the product. Jerry the candy maker, made fresh candy canes for us to purchase and take home. We also received candy cane samples that were hot and tasty. I wondered if I could microwave my store boxed candy canes to get the same results? Since driving 45 miles again seemed a little extreme for fresh candy canes. The tour was over very quickly after the candy tasting began. Soon I found myself with kids asking for more candy canes. My kids were very gentle in asking... "Mom buy me this bag of candy." Mom can we by more candy canes?" We bought a few candy canes to share with friends and family. The drive was worth it. My kids had a great time getting together with friends and tasting freshly made handmade candy canes. Everyone should try it at least once. Can't go then take a look at the video I found on YouTube for you. (I did not take good video, because I was busy eating candy canes. Sorry.)

Let's begin with saying "Thank You"!

I want to say thank you to everyone who has read my blog. I hope that my writing has inspired you and touched you. My hope is to challenge you to do more and love more. What you did not know was that every post was written with fear. I was fearful no one would read my posts. As of today "Field Trip Mom" has received over 9000 views on this blog. So I am very thankful for everyone who has read my posts made it such a success. Thank you!!!

What makes me so Thankful this holiday season:

The luckiest girl is me! I am married to a wonderful man who supports my Lucille Ball hair-brain ideas and does not complain. I am thankful for him and for his love. He loves me unconditional and with all his heart. Tim, I hope you know I love you with all my heart too!

The luckiest mom in the world is me! My oldest son told me the other day he loves his life. He gave me a hug and said he always loves to go places. My youngest son tells me I am the most beautiful mommy. I won the lottery when it comes to having a fun and loving family. Love my kids to the end of the Universe and back.

I have the best friends a girl could ever have in the world. Although I can't name all that inspire me, Araceli, Brenda, Cathy, Janiece, Letty, Paula, Rachel, Senida, Susan, Violeta and Mrs.Hui have believed in me and have encourage my hair-brain ideas. These ladies are only a few of many great people that are in my life. They love me just the way I am with all my faults. Great people who have shown me unconditional love. I am thankful for having them in my life.

In the end I am thankful for all the things I did not get, because things happen for a reason. Thank you God for all your blessings and all your gifts.

In the Middle of the Night....

In the middle of the night when all my work is done, I get a free moment. I am usually the most creative, because everyone has been taken care of for the day. Sometimes I write a little poetry. It brings me back to when I first began to love writing. I would like to share with you something I wrote:

I often wonder what you will be when you grow-up
I wonder how you will look and what you will do when you are a man
I wonder if you will remember all the fun field trips we shared
I wonder if you will love paper and pencils just the way I do
I wonder if I showed you enough love and kindness
I wonder if you feel protected and adored

In the middle of the night, when everything is quiet, I often think how lucky I am to have such a loving family. Then morning comes and my day begins. Rushing to get ready, to eat, to leave, to make it on time. Everyone needs to get to school and work. That is when crazy takes over.

This week I have been trying to figure out how to balance family + work. It has been a very busy week with lots of commitments and lots of traffic to battle. I am enjoying the friendships at work and the interaction with professionals. It is all so unreal right now for me. Trying to go from stay at home mom to working mom needs a little getting use to. I only wish I had a magic wand to do all the other things like washing dishes, cleaning the toilet, washing clothes, ironing, groceries and watering the plants. In the meantime, since I don't have a magic wand, I will use motivational quotes to get me through the new changes.

What is a succulent? The best known succulents are cacti (family: Cactaceae). Virtually all cacti are succulents, but not all succulents are cacti. There is a significant difference between succulents that evolved in Africa and those that evolved in the Americas, the New World plants called cacti all have spines. No succulent plants arising in the Old World have spines although, through parallel evolution, there are similar species in the Old World that closely resemble species in the new world that do have spines. The functional nature of the shapes evolved independently in each hemisphere, even though the specific structures may differ. The spines of cacti arose from leaf structures. This process may be confused with convergent evolution that occurs in species that are related more closely.

Succulent plants store water in their leaves, stems, and also in roots. I have a true love for plants. My favorite is succulents. I grow them in pots and arrange them to look very decorative. My dream is to someday have a large garden to plant lots and lots of beautiful succulents. In the meantime, I enjoy the small amount of plants I have in my house. Taking pictures of things I love instead of collecting them to clutter my house has helped. I keep a photo journal of succulents around town and on my field trips. Here is what I have found:

Succulents require little attention and little water. You can make them into wreaths or just be creative with how you use them.

My new friend....

The other day, I got the opportunity to have a “ME” day and visited Deborah DeMarco. She is a skin guru and gives the most amazing facials. When I sat down to meet with her, we went over my skin care regime. I noticed that she was very passionate about her work. She really took the time to get to know my problem areas and my needs. It was really a lite and easy conversation and I was comfortable talking to her about how I have neglected my skin. I was honest with her and explained that my skin had not been treated well over the years. She so understood and rushed me back to get started on my facial.

I lay in a soft robe on her table listening to Enya. The environment was so relaxing that I wanted to fall asleep. I was so relaxed and comfortable from the smell of forest wood like scents which created an image of being in a grassy countryside. I did not fall asleep for the fear of snoring. She came in with a hot towel that rested on my face loosening the dirt off my face. This was followed by gently cleaning of the skin and application of oils that smelled very earthy. She gave me a gentle face massage which was heaven. I am sure there was more done to me but the soothing aromas, relaxing sounds and gentle massage that I am sure I have forgotten being in peace. It was the best facial I have had in a long time.

After she was complete, I was given water and Almonds to rehydrate my skin. Deborah completed an analysis of my skin, she gave me a map of my problem areas and what areas needed additional attention. She was very caring and gave me a list of things I should never put on my face. They include lanolin, S.D. alcohol, artificial color, artificial fragrances and isopropyl myristate and she explained why.

I left with a map of my skin and a new face. My face is so soft and looks fresh after visiting Deborah DeMarco. I was very happy to have this new look so much that I am trying to get my friends to go to her for our next girls day out. If you get a chance to have some "Me" time, I highly suggest that you schedule your appointment with her.

Did you hear what happen in Anaheim?

Did you hear that on October 9th, 2011 all the Orange County Bloggers were invited to the amazing city of Anaheim to attend a bash? It was hosted in the long standing Anaheim Convention Center. My husband and I both attended this exclusive Blogger Bash hosted by Anaheim Orange County Visitor & Convention Bureau and Moms LA.

From the moment you entered the bash you felt transported to another time, as the nights’ theme was the 60’s Mad Men. In the 1950s and 1960s, the advertising industry was based on Madison Avenue in New York City. In fact, “Madison Avenue” used to be slang for “the ad industry.” Madison/ad men was contracted into “mad men” (no women, of course) by the mad men themselves. My how times have changed. The event was full of fun conversations and lots of great creative people. This was the event of the year to attend for OC Bloggers, the new era of mad (wo)men and some men. I found myself thinking about life in the 60's all night. In every corner of the room, there was an item that reminded you of the 1960's. There were cars, movies and fashions on display creating a vibrant visual display. Visions of Hollywood royalty, Audrey Hepburn and Lucille Ball, were exuded by all of the beautiful women dressed to impress for the evenings gala. The 60’s offered change and new adventures however fast-forwarding to 2011, blogging is the new adventure for making a change with electronic advertising.

As I left the OC Blogger Bash, I realized Orange County is a wonderful place to live and visit because of the people who make it into a community. Orange County has embraced bloggers and is making them an integral part of their business community. This was evident when the AOCVCB shared their pictures of the new “Grand Plaza” that is being completed in 2012. The Grand Plaza will line the street from the convention center past the Hilton. The plaza will have a running river through it as well as meeting and dining places allowing for business and entertainment to cultivate and flourish. Additionally, we were given a preview of the new Cars Land attraction at Disneyland. Story boards of the new Cars Land were displayed showing the magnificent detail that Disney is placing into the new play area. The attractions in Cars Land will be completed in 2012.

As an OC Blogger I feel that Orange County is the perfect place to live and work because it has a community feel. We all work together to provide information and successes allowing for greater growth and prosperity. This was evident by the exhilarating event hosted for us bloggers. There are so many opportunities for bloggers/writers as executives from major corporations came out to participate in the evenings’ event.

I wish to take the time to thank the following persons and companies for their generosity and time out to recognize the writers of the future. Farm Adventures with Grandma and Grandpa (Knott's Berry Farm that is!)

Ever since I was a kid, I can remember driving past and on a few occasions going to Knott’s Berry Farm. There are so many fond memories that bring back excitement and joy when thinking back. From the “E Ticket rides” to the “Western Stunt Show”, panning for gold and the famous Mrs. Knott’s Chicken Dinners, great memories come from these words. Although Knott’s in the 1970’s and 1980’s was far different than it is today, however, it still has that great fun feeling. Knott’s Berry Farm has had a very long history, starting out as a very simple business concept and emerging into America’s first amusement park. Now, I know what you are thinking…Knott’s isn’t for small children and Grandparents with all of those speedy roller coasters and huge dropping devices! That could not be further from the truth….Knott’s Berry Farm allows Grandparents to re-live their youth and enjoy memories with their Grandchildren. Sit back and enjoy the rides.

Our Adventure to Knott’s Berry Farm

Last week, my parents came into town from Fargo, ND to visit with their Grandchildren. My Dad, remembering how we kids loved Knott’s wanted to take our kids for their first trip to the park! Honestly, I think he was excited himself to go remembering all of the fun times our family had in the 70’s and 80’s attending the park. Not sure if he was looking forward to the trip for himself or for the Grand kids alike!!! I took the day off work simply to help them with the boys. The aches and pains Grandmas and Grandpas have don’t cooperate with the excitement and quick legs of 7 and 4 year old boys.

We arrived to the park and discovered that a small, soft sided cooler was allowed in the park for water and juice boxes. When we walked in, we were greeted by photographers wishing to capture us, excited for the day and allowing us to collect a memory photo later in the day. We dashed off to Camp Snoopy and Grandma quickly jumped on several rides with the boys. They were so excited to have them there, especially since it was my kids’ first visit to Knott’s Berry Farm.

Next we headed through the Old Ghost Town and straight to the Calico Mine Rider and the Timber Mountain Log Ride. These were our family favorites when I was a kid and it brought back many conversations and memories that we shared with my boys. Grandma and Grandpa were having a great time, talking with the boys, teasing them and playing in the park. Soon, we found ourselves playing some of the carnival games and my youngest won his first stuffed animal throwing a ping pong ball into a bowl floating in a water pond. It was a proud moment for Grandpa! Next, my oldest and I played a game of chance tossing small balls onto a board with colored circle cut outs. He won himself an “Angry Bird” stuffed animal.

Grandma was ready to visit the old fashion candy shop and the boys were attached to Grandma’s hip like they had been glued to her. We walked the complete park, hopping on the Merry Go Round, the Fiesta Village rides, and more Camp Snoopy rides. We finished our day in the Old Ghost Town looking at all of the wears for sell.

It was a great day, my kids were exhausted, Grandma and Grandpa were satisfied and I was proud of the moments we got to share together! It was a great day. Thank you Knott’s for the past memories, providing my parents with more great times and for the fun my kids had at your park. I know we will be back soon!!!!

The History behind Knott’s Berry Farm

All historical information is credited to the Knott’s Berry Farm website at www.knotts.com.

The year was 1920 when Walter and Cordelia Knott moved to the then-sleepy community of Buena Park, Calif. to farm 20 acres of rented land. Today, that land is part of 160-acre Knott's Berry Farm, America's first theme park and the 12th most-visited amusement park in the country. And, while the Knott Family no longer owns the venerable attraction, the Knott spirit of hard work and down-home hospitality lives on in new owner Cedar Fair, L.P., who acquired Knott's Berry Farm in December 1997.

The Knotts' first winter on the Farm was unseasonably cold and much of their first crop was ruined by frost. But relying on his ability to make the most of what he had, Walter initiated his practice of selling directly to grocers, thus eliminating costly middlemen, and was able to realize a small profit.

Walter's keen eye for sound enterprise and his dogged determination to succeed were attributes which became evident early in his boyhood years and remained solid through his life and career. His father died when he was six and by the time he was nine, Walter was raising vegetables on vacant lots, selling the produce in the morning before school and delivering newspapers in the evenings to help supplement the family income.

In 1927, Knott bought ten acres of land. The Depression hit a year later and land prices dropped. While maintaining the original payments, Walter bought an additional ten acres at the lower price and spent the last of the family's savings to build an adobe structure that became the Farm's first permanent building.

Ready for occupancy in 1928, the building was 80 feet long and housed a tea-room, berry market and nursery where berry plants were sold. By now, the Knotts had four children - son Russell and daughters Virginia, Toni and Marion - and, working together, they formed a family bond that prevailed throughout the years.

It was not until the 1930s that Walter became associated with the "boysenberry" which would become the family trademark. Nearby, Anaheim Parks Superintendent Rudolph Boysen had experimented with a new strain of berry but the plants kept dying on the vine. Walter took the scraggly plants, nurtured them to health and named the new berry - a cross between a loganberry, red raspberry and blackberry - after its originator. Today, all boysenberries in the world can trace their roots to Knott's Berry Farm.

As another means of staving off Depression hardships, Cordelia began selling jams and jellies made from Walter's berries. These were soon followed by home-baked pies, hot biscuits and sandwiches. Then, on a night in June 1934, Cordelia served eight fried chicken dinners on her wedding china - for the all-inclusive price of 65 cents each - and the world's largest chicken dinner restaurant was born. Today, the Chicken Dinner Restaurant seats more than 900 guests at a time, serves more than 1. 5 million guests each year, and is the largest full-service restaurant that serves chicken as its main course.

The success of the chicken dinners was immediate and by 1940 the restaurant was serving as many as 4,000 dinners on Sunday evenings. To give waiting customers something to do and to pay homage to the pioneering spirit of his grandparents and his love of the Old West, Walter developed Ghost Town, eventually the first of Knott's Berry Farm's six themed areas. Over the years, Mrs. Knott's Chicken Dinner Restaurant has hosted thousands of celebrities and VIPs, including: Elizabeth Taylor, Connie Stevens, Lucy Arnez, Donnie and Marie Osmond, John Wayne, Harriet Nelson, Burt Reynolds, Jane Russell, Natalie Wood, Charles Bronson, Amos and Andy, Eddie Fisher, Jonathan Winters, Chuck Norris, and many more…

The first structure was the Gold Trails Hotel, which had originally been constructed in Prescott, Ariz. in 1868. Adhering to authenticity, Walter brought in other buildings from deserted ghost towns and Knott's Ghost Town as it exists today emerged. Additions were made as the years passed.

In the 1960s, the Calico Mine Ride and Timber Mountain Log Ride were added and Knott's built its second themed area: Fiesta Village, a tribute to California's early Spanish heritage. The third themed area opened in 1975 - Roaring 20s (re themed in 1996 into The Boardwalk) - featuring the Corkscrew, the world's first looping coaster.

In 1983, Knott's debuted a first in the amusement park industry with its six-acre Camp Snoopy, the world's first theme park "land" designed specifically for kids. Wild Water Wilderness, a four-acre outdoor river wilderness area featuring the whitewater rafting ride Bigfoot Rapids, was added in 1988, followed by Indian Trails in 1993.

It was also the Knotts' decision to build the country's only brick-by-brick replica of Independence Hall, complete with an exact replica of the Liberty Bell, as a free-admission educational resources for Farm guests and Orange County residents.

Cordelia Knott died in 1974 at the age of 84 and Walter Knott continued to live on the Farm he loved until his death in 1981 - a week before his 92nd birthday. The Knott Family maintained operation of Knott's Berry Farm until its friendly acquisition by Cedar Fair, L.P. in December 1997.

In keeping with Walter and Cordelia's original goals, Knott's Berry Farm continues to combine quality, wholesome family entertainment with nostalgia and history. Cedar Fair is currently expanding Knott's Berry Farm with the most new rides, shows and attractions in the park's history, while maintaining those simpler features that continue to make it "The Theme Park Californians Call Home®."

The Modern Adventures

No matter if you are 4, 24, 44 or 74, Knott’s has you covered. Knott’s Berry Farm has something for everyone. Children of all ages can enjoy rides and entertainment at Camp Snoopy, a Knott’s Berry Farm icon since 1983. Grandparents, listen up! This is a great opportunity to enjoy some good old fashion fun with your Grandchildren. Jump on the Rocky Road Truckin’ Company and enjoy your extended family driving you around in the big rig of your choice. Ride the waves with the little ones on Lucy’s Tug Boat or skateboard with Snoopy on the Joe Cool’s Gr8 Sk8! Some rides in Camp Snoopy have size limitations however Grandparents, sit back, take a break and snap some memorable photos of your little ones huge smiles while they enjoy these attractions.

Honestly, you have no excuse to not take your kids on these memorable adventures. Knott’s offers a full line of electric scooters, wheel chairs and wagons for rent to ensure tired legs can make it through the day and into the night. Located just beyond the entrance gates, walk to the left into the Old Ghost Town and you will find the rentals on the left hand side. Easy to rent and return. My dad is 67 and has loved Knott’s Berry Farm since he was a youth in the Navy. His hips bother him if he walks too far so we rented him a wheel chair. He was able to enjoy the park, the rides and his Grandchildren with very minimal discomfort and got to enjoy the fruits of his hard work over the years as I pushed him around the park. It was a win for everyone!

Oh, but you are thinking, “Well, I’m 50 ish, and I just can’t be zipping around at 82 MPH in Xcelerator!” Don’t worry, Knott’s still has many of the rides you remember as a kid including the Calico Mine Ride and the Timber Mountain Log Ride just to name a few.

Today, Knott’s Berry Farm still holds its tried and true base business foundation with Mrs. Knott’s Chicken Restaurant and Virginia’s Gift Shop however many new places have been included to keep the excitement fresh and alive. LA and world famous Pink’s Hot Dogs and TGI Fridays are on site to help feed hungry patrons.

In addition to the Old Ghost Town and Fiesta Village of yesteryear, Knott’s Berry Farm has added several new roller coasters for fans of all ages. Kids 48” in most cases and 54” in other situations; can ride these roaring adventures. Check the website for more details on height restrictions.

Riley's Apple Farm Adventure

We visited the Apple Orchards in Oak Glen, California. The day of the field trip the weather was not too hot or too cold just perfect. Packed snacks and a light lunch and made the (2) hour trip with my two little boys. The adventure began almost as soon as we crossed the first county line. Hungry and needing to go to the bathroom we made a stop in Riverside County. When we finished our meal and restroom stop we jumped back in the car and rushed to Riley’s Farm inOak Glen(Yucaipa, CA). We were meeting up with my moms group up in the apple orchard for a fun day of apple picking and apple eating.

On the way there I encourage my boys to look out the window and tell me what they saw. Making fun games out of reading road signs and giving directions. I gave a few instructions on how to find the signs and how to read them. My idea was to cover maps, roads and apple education all in one day. Of course, I made it into a fun game with music and dance (light movement). The dance was more like moving your upper body to the song.

As we drove through the cities, the boys would point out funny signs or things that were different. Closer to Beaumont, suddenly, I heard my boys say,” Mom look at those trucks? There are a lot of them on the road! They look like the ones in the movies?” I looked over and there were several Military Humvee driving down the freeway. (It broke my heart to see the young faces inside those Humvees. It gave me a lump in my throat.) I decided to be brave and tell my boys about war? (Something I did not want to discuss.) I explained that not everyone likes Americans, so we have soldiers to protect us. The military Humvee carry very brave soldiers, who fight for our freedoms. America needs them; otherwise without them we could not go on these field trips or any other fun adventures. I asked that they wave to the soldiers and wish them well. We said a little prayer and off we drove past them. (The Humvees were not driving very fast.)

We finally got to our destination and headed up the mountain using my phones GPS. A few miles into the drive up the mountain, my cell services starts to fade. We turned to the old Thomas Map guide for the rest of the way (always carry one). Up a curved road to Riley’s Apple Farm we went. No phone service meant I had no address or contact information. So I stopped at the first place that said Riley’s Farm.

It was so beautiful from the parking lot. The clean air, the trees, the waterfalls and all the trees that surrounded the farm. We walked up to the farm lawn there we saw people doing a civil war reenactment. It was really educational. I then realized that this was not the tour I had signed up to attended with my boys and the moms group. I went into the office and asked about where my group was stationed. They were not able to tell me, because they did not keep a list of the groups at all the different Riley Farms tours. The lady behind the counter told me that Riley’s owned several farms. She told me to start up the road and try the next one over. We all got back in the car and headed up to the next farm. I still did not have cell service, so calling anyone in my moms group was out of the question. As we drove to the next farm we saw the moms from our group and were excited. We quickly parked the car and jumped into our farm tour.

At the farm the kids learned many things. One of them was how to make rope and smooth out the loose threads. Second they got on a hayride to visit the apple trees and pumpkin patch. Third the driver narrated while we were on the hayride. He would pointing to the apple trees and their history. Sharing stories about the farms water system and how they cared for the apple trees. He also shared how they pruned the apple trees for easy picking. As we drove through the apple orchard listening to the history and how to care for apple trees, a little stream of water seemed to flow throughout the apple orchard, which reminded me of the Little House on Prairie. Our final stop was feeding the mama pig that had just given birth to her babies. The driver feed her a fresh apple from one of the trees. All the kids loved watching the pig family. After the hayride tour was over, we headed over to lunch.

The picnic tables on Riley’s ApplenFarm was next to a wall of raspberry bushes. Large trees hangover as canopies to the picnic tables. In the distance you could see the sun trying to share its rays of light. In the background you could heard the stream of water traveling throughout the farm. We all sat and ate lunch under these wonderful conditions. After lunch, the kids played finding rocks, leaves and sticks to use as toys. When playing was over we headed back to the apple orchard to do our apple picking. For only $2.55 per pound you can pick your very own fresh apples. We did! Each child got a bag and off we went to pick apples in the apple orchard.

Walking up and down the apple trees made them thirsty and tired. So we paid for our apples and headed home. As the kids said good-bye to Riley’s farm our feet started to feel tired. Both kids fell asleep the minute I began to drive off. On the way home there would be no dancing or singing. The only sound I heard from the back was snoring. The time flew by and it seemed to take only a few moments and the whole trip took about (7) hours. Where does time go when you have fun?
