We are finally home after two Thanksgiving dinners. Yes, you read that&amp;nbsp;correctly.&amp;nbsp;We celebated Thanksgiving on Thursday with my family and then Saturday with my husband's family.&amp;nbsp; Honestly, this is not a big deal because the only thing that&amp;nbsp;was the same between the two meals was the turkey.

My mother served homemade pasta with tomato sauce, ham, mash potaotes, sweet potatoes in brown sugar and butter, peas and mushrooms, a stuffed pork loin (which my hubby made), stuffing&amp;nbsp;and corn. I should also mention that she was making food for&amp;nbsp;27 people. &lt;/div&gt;

My mother-in-law served&amp;nbsp;butternut squash lasagna, bourbon pecan sweet potatoes, green beans with shallots and mushrooms, chorizo and chestnut stuffing and brussel sprouts with pancetta. &lt;/div&gt;

I brought the cranberry sauce for both dinners. I experimented with&amp;nbsp;a rhubarb and candied ginger cranberry sauce. Are you wondering where I got rhubarb in November? Well, my husband was trying to stuff a 20 lb turkey in the deep-freeze when he discovered that I had hoarded three ziplock bags full of rhubarb (and 30 Bananas, but that's another story). He promptly dropped them&amp;nbsp;on the counter and said "Do something with this, it's taking up too much space in the&amp;nbsp;freezer." &lt;br /&gt;
&lt;br /&gt;
I quickly googled and found the aforementioned cranberry sauce. I toned down the candied ginger from 1 cup&amp;nbsp;to&amp;nbsp;about 2 tablespoons&amp;nbsp;and both families still thought it had too much ginger. Personally, I loved it. I reduced the sugar because I liked the tartness of both the cranberry sauce and rhubarb. You could reduce the sugar a bit more, it was a little sweet for my taste, and level of ginger is obviously subjective.&amp;nbsp; Regardless, it was definitely delicious and there was none left over at either family meal. &lt;/div&gt;

Have you missed my weekly menus? Well, I have!&amp;nbsp; I feel like we have been so disorganized without a weekly menu. Honestly, we have eaten more boxes of Annie's Mac and Cheese than I care to admit :)&lt;br /&gt;
&lt;br /&gt;
I recently read a Facebook post from a&amp;nbsp;&lt;i&gt;Money Saving Mom &lt;/i&gt;reader that asked how a working mom can plan a menu, coupon, clean the house, save money and spend time with their children and husband. Many of the responders said "You can't do it all." &amp;nbsp;That is so true. &amp;nbsp;You need to pick and choose and then give yourself grace when it doesn't work out.&lt;br /&gt;
&lt;br /&gt;
I have decided to be ok with eating Annie's Mac and Cheese and not planning a menu this last month.&amp;nbsp; Instead, I did a lot of activities with my son and organized the house instead. Sometimes, you gotta pick and choose.&lt;br /&gt;

I can finally breathe again, so I have added menu planning back into the mix. Here is our menu this week:&lt;br /&gt;

&lt;strong&gt;&lt;span style="font-size: large;"&gt;Caldo Verde&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;
&lt;em&gt;(Slightly adapted from&lt;/em&gt;&lt;a href="http://leitesculinaria.com/7580/recipes-portuguese-kale-soup-caldo-verde.html"&gt;&lt;em&gt; Leite's Culinaria&lt;/em&gt;&lt;/a&gt;&lt;em&gt;)&lt;/em&gt;&lt;br /&gt;
&lt;br /&gt;
1 large onion, diced&lt;br /&gt;
4&amp;nbsp;cloves garlic, thinly sliced&lt;br /&gt;
10 ounces &lt;em&gt;chouriço&lt;/em&gt;, diced&lt;br /&gt;
6 medium potatoes, peeled and diced&lt;br /&gt;
4 cups cold  water&lt;br /&gt;
4 cups chicken stock&lt;br /&gt;
1 pound kale chopped&lt;br /&gt;
Salt and  pepper to taste&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;strong&gt;Directions&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;
1. In a large pot, heat the olive oil over medium heat. Add the onions and cook  until they are translucent. Add the garlic and half the chouriço and cook for 2  minutes. Add the potatoes, cover everything with the water, bring to a boil and  lower the heat, simmering until the potatoes are almost done, about 15  minutes.&lt;br /&gt;
&lt;br /&gt;
2. When the soup is cool enough to handle, purée it in the food processor (or use an immersion&amp;nbsp;blender and make this a one pot meal)&amp;nbsp;and  return to the pot. Add the greens, bring everything back to a boil and simmer  for 2 minutes. Season with salt and pepper, ladle into bowls, and garnish with  the remaining cubes of &lt;em&gt;chouriço&lt;/em&gt;.&lt;br /&gt;
&lt;br /&gt;
This soup freezes well. I also threw &lt;a href="http://www.ehow.com/how_2326478_freeze-tomatillos.html"&gt;tomatillos in the freezer&lt;/a&gt; and whipped up some &lt;a href="http://localkitchenblog.com/2009/09/29/chile-verde-base/"&gt;chile verde base&lt;/a&gt; for sometime in the future.&amp;nbsp;Finally, I froze&amp;nbsp;the last&amp;nbsp;few &lt;a href="http://inmykitchengarden.blogspot.com/2008/09/preserving-harvest-how-to-freeze.html"&gt;tomatoes in ziplock bags&lt;/a&gt;. I have never frozen tomatoes before, but I bet they will work great in a chili.&lt;/span&gt;&lt;br /&gt;
&lt;br /&gt;
I even had some time to&amp;nbsp;made a wonderful&lt;a href="http://pebblecrossing.com/blog/2011/01/zuppa-di-porri-e-bietole-leek-and-swiss-chard-soup-2/"&gt; Zuppa di Porri e Bietole&lt;/a&gt; (Leek and Swiss Chard Soup) last week. It was so delicious and super easy to throw together on a week night. I think I am going to make another batch and freeze it before the frost takes the rest of my swiss chard.&lt;br /&gt;

We are back after a wonderful family vacation and much needed blog-cation. Missed me? I missed you guys :)&lt;br /&gt;
&lt;br /&gt;
We were absolutely spoiled by my husband's family for the past two week. We ate decadent and delicious&amp;nbsp;meals with his sister and enjoys late afternoon happy hours with his father. The kids got to play together which is always nice to see and we even got to see Shamu! &amp;nbsp;I hope to share more about our vacation later this week, but for now, we are trying to get back to our normal schedule.&lt;br /&gt;
&lt;br /&gt;
My first task was&amp;nbsp;taking an inventory of deep freezer. Before we went on vacation I stuffed our deep freezer full of garden veggies, so much so, that I could barely close it. My plan for the next two weeks is to use some of it to make room for more that needs to go in. &lt;br /&gt;
&lt;br /&gt;
After that, I planed our menu for this week. I find that having this planned out helps me transition back to work. I hope you have a great rest of the week!&lt;br /&gt;

Happy Monday folks! It was a wonderful and busy weekend. &amp;nbsp;I got in some much needed &lt;a href="http://smainavenue.blogspot.com/2012/07/i-need-soft-kitchen-mat-asap.html"&gt;preserving &lt;/a&gt;and fit in a family afternoon at the baseball field to see the Tri-City Valley Cats. The Summer is flying by so fast, I can't believe July is almost over! &lt;br /&gt;
&lt;br /&gt;
After a two week hiatus of menu planning, we are back! I really can't explain why we did not plan a menu. I just think my husband and I needed a break from thinking :) &amp;nbsp;Also, it has been so incredibly&amp;nbsp;hot in NY, for what seems like forever, we have barely cooked. We ate a lot of garden salad and grilled a bunch of steaks. I heart my grill :-)&lt;br /&gt;

It did not turn out well, so I am back to my&amp;nbsp;&lt;/span&gt;&lt;span style="background-color: white;"&gt;favorite&lt;/span&gt;&lt;span style="background-color: white;"&gt;&amp;nbsp;recipe.&amp;nbsp;&lt;/span&gt;&lt;span style="background-color: white;"&gt;I made 6 loaves...but we could not wait and dug into 1 :)&lt;/span&gt;&lt;/li&gt;

I think I started making the zucchini bread around 10:00 am and was done with everything around 1:30 pm. Yep.That's why I need one, maybe two, of those fancy smanzy kitchen mats! &amp;nbsp;The happy and sad thing is that I am no where near done preserving for the summer.&amp;nbsp;&lt;/div&gt;

&lt;span style="background-color: white;"&gt;While at the garden I met a fellow gardener, Pete, who was quite nice. We exchanged some pleasantries on how our gardens are performing this year. We both happened to be leaving the garden at the same time, when I notice his beautiful bok choy. I have to admit, I was envious. &amp;nbsp;For some reason, Matt and I have not had success with growing bok choy... maybe next year?&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="background-color: white;"&gt;To my surprise he offered it to me. I felt like I couldn't just take it without trading something from my own garden, so I offered two fists full of swiss chard, which happened to be something&amp;nbsp;&lt;/span&gt;&lt;span style="background-color: white;"&gt;he did not grow. &amp;nbsp;There are moments that I wish our garden was in our backyard, but it's instances like this that make the "community" aspect of our garden special. &lt;br /&gt;&lt;/span&gt;&lt;br /&gt;

This is a super&amp;nbsp;&lt;span style="background-color: white;"&gt;easy to make and takes almost no time at all. &lt;/span&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
1 pound of&amp;nbsp;&lt;span style="background-color: white;"&gt;spaghetti&lt;/span&gt;&lt;br /&gt;
1 - 2 cups of mixed veggies (We toss whatever we have in the fridge that needs to be used up)&lt;br /&gt;
1/2 cup peanut butter&lt;br /&gt;
1/4 cup soy sauce&lt;br /&gt;
1/3 cup warm water&lt;br /&gt;
2 tablespoons fresh grated ginger&lt;br /&gt;
2 tablespoons rice wine vinegar&lt;br /&gt;
2 medium garlic cloves&lt;br /&gt;
2 teaspoons sesame oil&lt;br /&gt;
2 teaspoons honey&lt;br /&gt;
1 teaspoon red pepper flakes (more if you like it spicy)&lt;br /&gt;
&lt;br /&gt;
&lt;span style="font-size: large;"&gt;&lt;b&gt;Preparation&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="background-color: white;"&gt;1. Saute veggies in a couple tablespoons sesame oil. (You could also add the veggies to the pasta water after you boil the pasta, but I like the flavor the veggies get from being sauteed) &lt;/span&gt;&lt;br /&gt;
&lt;span style="background-color: white;"&gt;2. Cook pasta.&lt;/span&gt;&lt;br /&gt;
&lt;span style="background-color: white;"&gt;3. Blend all other the ingredients to make the sauce.&lt;/span&gt;&lt;br /&gt;
&lt;span style="background-color: white;"&gt;4. Add veggies to pasta and mix the sauce over everything.&amp;nbsp;&lt;/span&gt;&lt;br /&gt;

&lt;span style="background-color: white;"&gt;I have to admit, we've been 
recently flying by the seat of our pants in regards to menu planning and
 what we have been eating. &amp;nbsp;My husband has been warning me for the last 
two weeks that we were running low on food, but since I never bothered 
to check, I chose to ignore his advice. &amp;nbsp;So finally, after looking in 
the freezer and seeing the bottom, I realized my husband was right...we 
in fact needed food. &lt;/span&gt;&lt;span style="background-color: white;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;
&lt;span style="background-color: white;"&gt;That was a sign for me to get 
cracking and start filling it up again. I spent my two days off making 
ravioli using spinach from our garden, throwing pizza dough in the bread
 machine, baking English muffin loafs and stocking the fridge and 
freezer with groceries after doing 1 round of shopping (with another 
coming in a day or so). &amp;nbsp;We added fuel to the fire by going strawberry 
and rhubarb picking last Thursday, which forced myself to make a 
strawberry jam and rhubarb chutney, which both came out pretty darn 
tasty. &amp;nbsp;&lt;/span&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;span style="background-color: white;"&gt;After many hours of cooking, I finally feel "caught up" and&lt;/span&gt;&amp;nbsp;am thankful that I have the evening to myself and a fridge full of food. {Insert sigh}&lt;br /&gt;
&lt;br /&gt;
As you will see below, our garden is out-producing us in salad. Oh, how I can't wait for some diversity :)&lt;br /&gt;

When we were preparing the community garden plot we thought we were dealing with wild onions, but when Matt saw the garlic scapes growing he realized that we were in fact dealing with wild garlic. Sadly the garlic was all bunched together which does not make for healthy bulbs of garlic. Hence Matt pulling out two large bunches and leaving them on the counter for me. What I liked most about this canning project was that I was able to can just one jar and put one jar in the fridge.&amp;nbsp; It took me about 1/2 hour from start to finish. &lt;/div&gt;

I have read many money saving blogs where folks have found really cheap milk at their grocery store this way. I had never been so lucky, until recently. I got both containers of organic milk for $1.23. I saved over $7.25.&lt;br /&gt;

Granted they were expiring within two days, but you know as well as I do that the milk will not expire on the date listed on the carton. But honestly, I was willing to take the chance of it spoiling for $1.23. 1/2 tsp salt&lt;br /&gt;
2 tablespoons sugar (I substitute honey sometimes)&lt;br /&gt;
3 teaspoons baking powder&lt;br /&gt;
11/2 cup milk&lt;br /&gt;

&lt;ol&gt;
&lt;li&gt;Cook waffles according to recipe directions. Allow the waffles to cool completely on a cookie sheet.&amp;nbsp; (I put parchment paper between the layers).&lt;/li&gt;
&lt;li&gt;Place the cooled waffles on the baking sheet making sure that they do not touch each other..&lt;/li&gt;
&lt;li&gt;Place the baking sheet into the freezer. Allow the waffles to freeze for at least 6 hours.&lt;/li&gt;
&lt;li&gt;Once the waffles are completely frozen, stack them in a zip top freezer bag or freezer-safe container.&lt;/li&gt;
&lt;li&gt;Use a marker or tape label to add the date to your storage container. &lt;/li&gt;
