Il burro chiarificato non è altro che la parte grassa del burro, tolta  l’acqua e proteine. In Francia viene chiamato “beurre noisette”, mentre in India  il suo nome è “ghee”
Il burro chiarificato dovrebbe essere privo di lattosio, oltre che di  caseina,quindi è molto utile per gli intolleranti.

Impastare bene aggiungendo l'acqua un po' alla volta. Formare una palla, avvolgerla nella pellicola e mettere in frigo almeno 5 ore.
Trascorso questo tempo, tirare fuori l'impasto dal frigo e preparare il panetto per

Abbiamo detto che per sostituire i grassi, del tutto o in parte, possiamo farci aiutare dalla frutta.

 Una meraviglia questo pane...tanto che i miei "commensali" ( se sapessero che li ho chiamati così..ahaha!) pensavano fosse un centrotavola non commestibile!!

La ricetta originale è di  "Chef Tess Bakeresse", ma mi sono affidata come al solito alla traduzione di mano di "...profumi e colori..." trovata su "peccati di gola e di amicizia".

 E' un pane molto scenografico ma anche molto molto buono, e nella versione con olio si mantiene anche piuttosto bene!
