Here the coffee liquor is initially foamed and then frozen to a temperature of -450 degrees centigrade. Here the frozen granules are subjected to a high vacuum which results in much of the water ice content to be transformed directly into gas (without a liquid stage it would normally undergo) before being returned to room temperature.&lt;br /&gt;&lt;br /&gt;The finished product usually contains between 3 and 5 percent water. The more volatile flavour and aroma compounds extracted at the initial brewing stage are then returned to the dried product just before packing.&lt;br /&gt;&lt;br /&gt;A large quantity of used coffee grounds are produced at a typical freeze dried coffee factory during the process but these are put to good use. They are usually sold on as animal feed, compost or organic fuel.&lt;br /&gt;&lt;br /&gt;Freeze dried coffee is considered to be of superior quality to spray dried coffee which is made by a different process. It is believed that the first plants were found growing wild in the region of Kaffa, where coffee derives its name from. A popular legend tells of a goat herder named Kaldi. The other Monks quickly gathered to see what the commotion was. One Monk swiftly raked the beans from the fire and extinguished the embers by stamping on them. The rich smell of coffee obviously agreed with the Abbot’s nose as he ordered the Monk to place the now crushed beans into a jug and cover it with hot water to preserve their divine goodness. He then took a sip from the jug and sampled the rich and fragrant brew that is coffee. From that day on the Monks vowed to drink coffee daily to keep them awake during the long, nocturnal devotions. &lt;br /&gt;&lt;br /&gt;No one is exactly sure when coffee was discovered. There is evidence to suggest that coffee beans were used to make a primitive ‘energy bar’ before they were actually brewed as a hot drink. Sometime between 575-850AD, a nomadic mountain tribe known as Galla, used to mix ground coffee with ghee. These bars were consumed by the tribe’s warriors to heighten aggression and increase their stamina during battle. To this day, these bars are still eaten in Kaffa and Sidamo (Ethiopia).&lt;br /&gt;Some authorities claim that coffee originated from the Arabian Peninsula rather then Ethiopia, stating that coffee was cultivated in Yemen from around 575AD. An Islamic legend tells of how Sheikh Omar discovered coffee growing wild while living as a recluse near the port of Mocha (Yemen). He is said to have boiled some berries, and discovered the stimulating effect of the infusion, which he administered to the locals who were stricken with a mysterious illness and thus cured them. However it is more likely that coffee spread to Yemen through Sudanese slaves. These slaves are thought to have eaten coffee beans to help them stay alive as they rowed ships across the Red Sea between Africa and Arabian Peninsula. &lt;br /&gt;&lt;br /&gt;Evidence suggests that coffee was probably not enjoyed as a beverage until around the 10th Century. It is at this time that the oldest known documents describing the beverage coffee were written. Two Arabian philosophers: Rhazes (850-922AD), and Avicenna of Bukham (980-1037AD); both refer to a drink called ‘bunchum’, which many believe is coffee.&lt;br /&gt;&lt;br /&gt;As the Quran forbids Muslins from drinking alcohol, the soothing, cheering and stimulating effects of coffee made it a popular substitute in Islamic countries for wine. The first coffeehouses are said to have been established in Mecca (Saudi Arabia). Known as the Kaveh Kanes, they were public places where Muslims could socialise and discuss religious matters.&lt;br /&gt;&lt;br /&gt;The relationship between Islam and coffee has not always run smoothly though. Some Muslims believed coffee was an intoxicant and therefore is banned by Islamic law. In 1511, the governor of Mecca, Khair Beg, saw some worshippers drinking coffee in a mosque as they prepared for a night-long prayer vigil. Angered, he drove them from the mosque and ordered all coffeehouses in Mecca to be closed. This incited the pro-coffee Muslims and a heated debate soon ensued. In this dispute, two unscrupulous Persian doctors, the Hakimani brothers, who were infamous for testifying on the side of the highest bidder, condemned coffee as an unhealthy brew. The doctors had good reason for wanted it banned, for it was popular cure among the depressed patients who would otherwise have paid the doctors to cure them. The matter was only resolved when the Sultan of Cairo, Khair Beg’s superior, intervened, demanding that a drink that was widely enjoyed in Cairo should not have been banned without his permission. Khair Beg soon paid for his insolence, as when in 1512 he was accused of embezzlement; the Sultan sentenced him to death. &lt;br /&gt;&lt;br /&gt;By the late 16th Century, the use of coffee was widespread throughout the Arabia, North Africa and Turkey. The nutritional benefits of coffee were thought to be so great that coffee was considered as important as bread and water. So much so that a law was passed in Turkey making it grounds for divorce if a husband refused his wife coffee. &lt;br /&gt;&lt;br /&gt;Wherever Islam went, coffee was sure to follow. With the expansion of the Ottoman Empire, coffee quickly spread to the Eastern Mediterranean. However, it is believed that no coffee seed sprouted outside Africa or Arabia until 17th Century, as coffee beans exported from the Arabian ports of Mocha and Jidda, were rendered infertile by parching or boiling. Legend has it that this changed when a pilgrim named Baba Budan, smuggled fertile coffee beans out of Mecca, strapped to his stomach. If caffeine bothers your systems or affects you adverse be sure you watch the barista make your beverage. It is okay to ask when they hand you the drink this is decaf right?&lt;br /&gt;&lt;br /&gt;I am a diabetic but I ordered sugar free right?&lt;br /&gt;&lt;br /&gt;This mistake is not made a lot. But places where you can watch your hot and tasty beverage being made it is a good idea to keep an eye on the barista making your coffee. Most all baristas surveyed said they may have made that mistake before but on rare occasions.&lt;br /&gt;&lt;br /&gt;Your hot beverage is handed to you cold!&lt;br /&gt;&lt;br /&gt;This may seem funny to you but almost all barista's surveyed said they have done this at least once. So when you are expecting a hot beverage to be hot and it's cold it is a different kind of wake up call.&lt;br /&gt;&lt;br /&gt;My drink taste sweet but where the espresso?&lt;br /&gt;&lt;br /&gt;For whatever reason most all baristas admit that on several occasions that they forgot to put the espresso in your beverage. Sure you still may have what is commonly called a steamer (steamed milk and syrup) but it is not the same. The espresso especially the caffeinated version is what many of us need to get to a great start to our day.&lt;br /&gt;&lt;br /&gt;OOPS, the lid popped off and my white shirt is ruined!&lt;br /&gt;&lt;br /&gt;Most all baristas insist they always put the lid on correctly. However I have been in many coffee shops where the lid pops off and coffee splashes all over a white dress or white shirt. This has all the makings of a very bad day.&lt;br /&gt;&lt;br /&gt;My drink does not taste right.&lt;br /&gt;&lt;br /&gt;Many baristas even at the same store makes drinks differently. This occurs even if there are strict guidelines at the store for consistency. A little less white chocolate in a 16oz drink has a totally different taste then a drink with the normal amount.&lt;br /&gt;&lt;br /&gt;Too Strong!&lt;br /&gt;&lt;br /&gt;Some barista put so much espresso in a drink it's like drinking out of a burnt tar pit. This is also caused by cheap, spoiled or over-roasted espresso. Make sure if you do not like how the drink taste to tell the barista.&lt;br /&gt;&lt;br /&gt;Wrong Milk&lt;br /&gt;&lt;br /&gt;The barista know I always order a vanilla soy latte. However today I take a sip and its half and half. This drink is known as a breve latte. It's almost a complete 180 from soy. This also can really set a bad tone for your day.&lt;br /&gt;&lt;br /&gt;What's that in my coffee?&lt;br /&gt;&lt;br /&gt;To me there nothing worse than ordering a brewed coffee to find out that it is full of grinds. This is usually caused when pressure and steamed has caused the filter in the brew basket to flip during the brewing process. Most good barista always check this. Caffeine is commonly used by endurance athletes to permit them to train for longer and aid their recovery afterwards. Scientific studies have also linked it to the prevention of Parkinson’s and Alzheimer’s disease. However, too much caffeine can lead to insomnia, dieresis, gastrointestinal disturbance, arrhythmia, psychomotor agitation and osteoporosis.&lt;br /&gt;&lt;br /&gt;The amount of caffeine in an average cup of coffee (8oz/230ml) varies from between 80 to 150 milligrams. This variation is due to a number of factors. The main difference is caused by where, and from which variety of plant, the coffee beans are harvested from. As caffeine is a natural anti-fungus, coffee plants grown in environments less favourable to the growth of fungal spores contain less caffeine. At high altitudes, the temperature and humidity is such that spores germinate too slowly to have too much of an affect on a coffee plant. So generally speaking, the higher the altitude a bean is grown at the lower its caffeine content. Also Arabica beans typically have half the amount of caffeine when compared to Robusta beans.&lt;br /&gt;&lt;br /&gt;The roasting process alters the amount of caffeine in a coffee bean. A common misconception is that the darker the roast level the lower the caffeine content. However this is not really the case as caffeine changes very little during the roasting process. Caffeine has a very stable structure with a boiling point above 315°C, well above roasting temperatures which rarely exceed 245°C. Nevertheless a small amount of caffeine is lost due to sublimation, where a substance changes directly from a solid state to a gaseous one. A bean loses weight, mostly due to water evaporation, causing the level of caffeine by weight to increase. According to research, it is harmless to have one or two cups every day. However, those who exceed this can endure the negative effects such as headaches, difficulty sleeping, irregular heartbeat, muscle tension and nausea. A simple formula for your daily water intake, for every 50lbs of weight you should be drinking a litre of water per day!&lt;br /&gt;&lt;br /&gt;- Avoid ALL other types of fluid intake PERIOD.&lt;br /&gt;&lt;br /&gt;- Get into a habit of having a full litre and half bottle of water on your desk in the morning and make sure it is finished by lunch, then start again for the afternoon&lt;br /&gt;&lt;br /&gt;- And if fat loss is your primary goal, then taking a serious look at your alcohol intake should be your first assignment.&lt;br /&gt;&lt;br /&gt;- Drop the alcohol completely from today for 21 days and your body will shed inches like you wouldn't believe!&lt;br /&gt;&lt;br /&gt;Once you are getting the water intake your body needs to function properly, your sporting performances will see an improvement, and you will certainly stay more alert through your normal working day too.&lt;br /&gt;&lt;br /&gt;Benefits of adequate fluid intake include massively improved skin condition, the way your body eliminates waste will be improved.
