Biscottini alle spezie

Per questi simpatici biscottini ho voluto
utilizzare il profumo rilassante e dolce della cannella
e quello un pò 'frizzante' dello zenzero (che io adoro)
I decori sono un pò improvvisati...già...questi biscottini
sono nati un pò per caso ed è stato divertente passare

perchè proprio Rame di Napoli? in cerca di un pò di informazioni....ho scoperto che in realtànon si sa di preciso la provenienza del loro nome..ma si fanno diverse ipotesi:1- Che un pasticcere di Napoli inventò la ricetta. 2- Durante il Regno Delle due Sicilie ci fu un atto di vassallaggio     della Sicilia nei confronti di Napoli.3- Durante il Regno delle due Sicilie, dopo l'unificazione del Regno di    Napoli con il regno di Sicilia, fu inventata una nuova moneta    che conteneva una lega di rame e così il popolo per festeggiare tale evento,    volle creare un dolce che riproducesse questa moneta.E fu così che fu chiamato Rame di Napoli...Con il tempo questo dolce ha subito delle modifiche..ed io ho realizzato la mia versione senza glutine!&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://2.bp.blogspot.com/-mBE70LiGYjI/TrMW9RLPtoI/AAAAAAAAArQ/11xYrWTTMFg/s1600/rame-di-napoli3.JPG" imageanchor="1" style="margin-left:1em; margin-right:1em"&gt;&lt;img border="0" height="400" width="300" src="http://2.bp.blogspot.com/-mBE70LiGYjI/TrMW9RLPtoI/AAAAAAAAArQ/11xYrWTTMFg/s400/rame-di-napoli4.JPG" /&gt;&lt;/a&gt;&lt;/div&gt;Ingredienti:- 300g di patate lessate- 200g di fecola di patate - 200g di zucchero- 2 uova medie intere- 125 g di burro fuso- 100g di cacao amaro- 1 cucchiaio di miele di acacia- 125ml circa di latte parzialmente scremato- 5g di ammoniaca per dolci- un piz. di sale- 1 cucchiaino scarso di cannella in polvere- 2 chiodi di garofano tritati- vanigliaFrullare le patate con il latte, devono avere una consistenza ''cremosa''.Quindi dosare pian piano il latte e se serve aggiungerne ancora o diminuirlo.Poi impastare insieme in un mixer tutti gli ingredienti, dosare le spezie a vostropiacere, la mia dose è indicativa...poi dipenderà dai vostri gusti!appena ottenuto il composto, che non dovrà essere troppo consistente,riporlo x mezz'ora circa in frigo. Io ho utilizzato una sacca a poche performare le ''rame'' (delle palline schiacciate) nella teglia da forno ricoperta da carta forno. infornare a 180' per 10-15 min. Non di più altrimenti perderanno morbidezza!Appena pronte e raffreddate spalmare sulla superficie un velo di confettura di albicocche o marmellata di arance (come si faceva tradizionalmente)io le ho provate anche con crema di cioccolato e nocciole!poi glassarle con cioccolato fondente al 70%!Per la glassa: -200g di cioccolato fondente al 70%                      -100g di burro  Fonderli insieme e intingere la superficie dei dolcetti,lasciar rassodare e gustare! In più è ricca di vitamina A e C!!!&lt;br /&gt;La mia è una versione un pò light...&lt;br /&gt;&lt;br /&gt;Ingredienti:&lt;br /&gt;&lt;br /&gt;- 500g di zucca&lt;br /&gt;- mezza cipolla piccola&lt;br /&gt;- olio evo&lt;br /&gt;- 1/2 bicchiere di latte fresco parzialmente scremato&lt;br /&gt;  (o anche un pò di più,dipende dalla consistenza &lt;br /&gt;  che volete ottenere)&lt;br /&gt;- sale q.b. &lt;br /&gt;&lt;br /&gt;Tagliare la cipolla e metterla in un tegame con un filino di olio evo,aggiungere la zucca tagliata a pezzetti e far cuocere tutto insieme, se serve aggiungere un pò d'acqua..ogni tanto (ma non troppa altrimenti il tutto risulterebbe  molto acquoso)... mettere un coperchio quasi a fine cottura regolare di sale. Passati i 30 min.formare delle palline&lt;br /&gt;e posizionarle nella teglia da forno (ricoperta di carta forno)&lt;br /&gt;ben distanziate tra loro. Cuocere a 180' preriscaldato x 10 min.&lt;br /&gt;Non di più! anche se vi sembreranno morbidi..appena freddi prenderanno&lt;br /&gt;consistenza!e  durante la cottura le 'palline' di pasta si dilateranno in forno,&lt;br /&gt;assumendo la classica forma da Cookies!!! &lt;br /&gt;&lt;br /&gt;Gnam! margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 301px;" src="http://1.bp.blogspot.com/-V20PREWbK0E/TdhsrV9VNGI/AAAAAAAAAn4/-21WUpbc0i0/s400/DSCF0260.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5609352827774514274" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredienti (per 4 persone circa):&lt;br /&gt;&lt;br /&gt;-400 gr di riso, &lt;br /&gt;-1 cipollina piccola bianca, &lt;br /&gt;-1 bicchiere di spumante o vino bianco secco, &lt;br /&gt;-1,5L circa di brodo vegetale naturale(io dico assolutamente no al dado!), &lt;br /&gt;-40 gr di burro, &lt;br /&gt;-300 gr di fragole, &lt;br /&gt;-200 ml di panna, &lt;br /&gt;-40 gr di parmigiano&lt;br /&gt;-sale&lt;br /&gt;&lt;br /&gt;Preparazione: &lt;br /&gt;&lt;br /&gt;In una casseruola rosolare la cipollina ben tritata &lt;br /&gt;con 20 gr di burro, aggiungere il riso e fatelo tostare. &lt;br /&gt;Bagnate con il vino, quindi portate a cottura il riso&lt;br /&gt;con il brodo necessario. A metà cottura aggiungere le fragole&lt;br /&gt;e conservarne qualcuna per decorare. Proprio perchè è così che in genere &lt;br /&gt;vengono preparate da quelle parti...&lt;br /&gt;ed io ne sono golosissima! &lt;br /&gt;&lt;br /&gt;Ho letto di varie ricette e sembra che quella&lt;br /&gt;più corretta sia la preparazione con una&lt;br /&gt;specie di pasta brioche...ma queste hanno&lt;br /&gt;un impasto diverso..fatto con lievito istantaneo per dolci&lt;br /&gt;e quindi richiedono un pò meno tempo nella realizzazione!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://4.bp.blogspot.com/-eQl_lYkiN58/TdEvIts2h1I/AAAAAAAAAng/ysjsRxfUjlw/s1600/DSCF0226.JPG"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 301px;" src="http://4.bp.blogspot.com/-eQl_lYkiN58/TdEvIts2h1I/AAAAAAAAAng/ysjsRxfUjlw/s400/DSCF0226.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5607314837806155602" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Passiamo agli ingredienti!&lt;br /&gt;&lt;br /&gt;ingredienti:&lt;br /&gt;&lt;br /&gt;-500g farina 00&lt;br /&gt;-100g di burro fuso (o 125ml di olio di semi)&lt;br /&gt;-2 uova intere&lt;br /&gt;-150g zucchero semolato&lt;br /&gt;-4 cucchiai di latte circa&lt;br /&gt;-1 bustina di lievito vanigliato&lt;br /&gt;-scorza di limone grattugiata&lt;br /&gt;-1 piz. di sale&lt;br /&gt;&lt;br /&gt;Per il ripieno:&lt;br /&gt;&lt;br /&gt;-Crema pasticcera alla vaniglia&lt;br /&gt;&lt;br /&gt;Per la bagna:&lt;br /&gt;&lt;br /&gt;-Alchermes&lt;br /&gt;-Acqua&lt;br /&gt;-Zucchero semolato&lt;br /&gt;&lt;br /&gt;Mettere gli ingredienti in planetaria tutti insieme&lt;br /&gt;tranne il latte e miscelare... verificare la consistenza &lt;br /&gt;che non deve essere troppo molle...ma morbida al punto &lt;br /&gt;giusto da poterla lavorare..ed eventualmente aggiungere&lt;br /&gt;i cucchiai di latte (sono facoltativi)&lt;br /&gt;Formare delle palline,la grandezza deve essere &lt;br /&gt;quasi quanto una noce e riporle su una teglia &lt;br /&gt;ricoperta di carta forno. Infornare a 180'&lt;br /&gt;per circa 10-15 min. a seconda dei vostri forni!&lt;br /&gt;L'importante è che non si devono dorare! &lt;br /&gt;Ma devono rimanere bianche!&lt;br /&gt;Altrimenti diventeranno dei biscotti croccanti &lt;br /&gt;e saranno difficili da svuotare!&lt;br /&gt;Una volta cotte..praticare un foro &lt;br /&gt;e scavare l'interno che successivamente sarà riempito&lt;br /&gt;con della crema pasticcera!&lt;br /&gt;&lt;br /&gt;Non ho dato le dosi della bagna all'alchermes&lt;br /&gt;perchè io ho fatto ad occhio e comunque &lt;br /&gt;penso che sia meglio lasciare al gusto personale.&lt;br /&gt;Io ho semplicemente diluito un bicchiere di alchermes &lt;br /&gt;con dell'acqua...e non ho aggiunto zucchero&lt;br /&gt;poichè servirà per decorare la superficie!&lt;br /&gt;&lt;br /&gt;Quindi! una volta svuotate, riempitele con della &lt;br /&gt;crema pasticcera alla vaniglia o al cioccolato.&lt;br /&gt;unite le due semisfere e bagnatele velocemente con alchermes.&lt;br /&gt;Io vi consiglio di utilizzare 1 pennello e di non esagerare &lt;br /&gt;con la bagna altrimenti tenderanno a rompersi! Ho avuto la possibilità&lt;br /&gt;di imparare un pò di 'tecniche' di &lt;br /&gt;pasticceria...e tra pochi giorni si ritorna&lt;br /&gt;al mare per continuare le mie giornate 'marine'!&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://3.bp.blogspot.com/_4Www4Mjp2DM/TFdBI1PmzMI/AAAAAAAAAlQ/cVeUh9BXkaI/s1600/DSCF0002.JPG"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 400px; height: 300px;" src="http://3.bp.blogspot.com/_4Www4Mjp2DM/TFdBI1PmzMI/AAAAAAAAAlQ/cVeUh9BXkaI/s400/DSCF0002.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5500937089843645634" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Ingredienti:&lt;br /&gt;&lt;br /&gt;- 4 carote medie&lt;br /&gt;- 125g di yogurt magro bianco&lt;br /&gt;- 180g di zucchero di canna&lt;br /&gt;- 280g di farina 00&lt;br /&gt;- 3 uova grandi&lt;br /&gt;- 100ml di olio vegetale o d'oliva delicato&lt;br /&gt;- 1 bustina di lievito per dolci&lt;br /&gt;- un pizzico di sale&lt;br /&gt;- vaniglia&lt;br /&gt;&lt;br /&gt;Tritare finemente le carote.&lt;br /&gt;Miscelare gli ingredienti secchi&lt;br /&gt;in un recipiente, a parte quelli umidi&lt;br /&gt;e versarli a filo sulle polveri...&lt;br /&gt;mescolare...ma non troppo! &lt;br /&gt;Anche se si formano dei piccoli grumi non importa!&lt;br /&gt;Versare l'impasto a cucchiaiate in dei pirottini&lt;br /&gt;ed infornare a 180' (preriscaldato) x 20-25 min.&lt;br /&gt;Io li ho decorati con un batuffolo di yogurt&lt;br /&gt;e delle carotine grattugiate! &lt;br /&gt;Sono molto leggeri!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ps: Come promesso nel mio precedente post...&lt;br /&gt; ecco la ricetta base per il semifreddo:&lt;br /&gt; ( è quella che ho utilizzato io,&lt;br /&gt;  l'ho presa dal sito Alice e vi consiglio di&lt;br /&gt;  visitare il sito..ci sono tante varianti)&lt;br /&gt;&lt;br /&gt;Base semifreddo&lt;br /&gt;&lt;br /&gt;160 g di uova&lt;br /&gt;350 g di zucchero liquido al 70%&lt;br /&gt;100 g di acqua.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Per la base semifreddo con lo sciroppo: in una pentola fate cuocere a 85 C le uova con lo zucchero e l'acqua mescolando continuamente.
