The weather was cold and drizzly last weekend and it was perfect for baking a cake.But I ran out of eggs and even condensed milk to bake an eggless cake.The only thing I got was a tin of milkpowder which I had bought to make angel burfi.So I googled and found the recipe for eggless milkpowder cake from&lt;a href="http://divyascookbook.blogspot.com/2011/02/eggless-marble-cake.html" target="_blank"&gt; Divya's blog &lt;/a&gt;.She had made a marble cake.But I made it just plain and slightly adapted the recipe.It was moist,fluffy and delicious.&lt;br /&gt;

&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
All purpose flour - 1 1/2 cup&lt;br /&gt;
&lt;br /&gt;
Milk powder - 4 TBSP&lt;br /&gt;
&lt;br /&gt;
Baking powder -2 tsp&lt;br /&gt;
&lt;br /&gt;
Baking Soda -1/2 tsp&lt;br /&gt;
&lt;br /&gt;
Melted Butter-1/2 cup&lt;br /&gt;
&lt;br /&gt;
Sugar - 3/4 cup&lt;br /&gt;
&lt;br /&gt;
Milk - 1 cup&lt;br /&gt;
&lt;br /&gt;
VAnilla extract - 1tsp&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Preheat the oven to 330deg F.&lt;br /&gt;
&lt;br /&gt;
Grease a round cake pan and dust with some flour.Sift together flour,baking powder,baking soda,milkpowder.&lt;br /&gt;

In a bowl cream the butter and sugar and add the vanilla extract.Add 
the dry ingredients.Then add milk gradually and mix a little bit.&lt;br /&gt;

I had lots of bananas sitting on my counter top.I wanted to bake banana bread,but a healthier and guilt-free version.So when i was searching for a low fat banana bread recipe,I stumbled upon this recipe in &lt;a href="http://about.com/"&gt;about.com&lt;/a&gt;.It had no butter,and the amount of sugar used is almost half compared to other recipes and best of all whole wheat flour is substituted for half of all purpose flour.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
All purpose flour - 1 cup&lt;br /&gt;
&lt;br /&gt;
Whole wheat flour - 1 cup&lt;br /&gt;
&lt;br /&gt;
Baking soda - 3/4 tsp&lt;br /&gt;
 &lt;br /&gt;
Salt-a pinch&lt;br /&gt;
&lt;br /&gt;
brown sugar-1/2 cup packed firmly&lt;br /&gt;
&lt;br /&gt;
Corn/Canola oil - 1/4 cup&lt;br /&gt;
&lt;br /&gt;
Vanilla essence -1 tsp&lt;br /&gt;
&lt;br /&gt;
Buttermilk - 1/2 cup&lt;br /&gt;
(I made my own butter milk by mixing 1/2 cup of milk with 1 1/2 TBSP of lemon and allowed it to stand for 5 minutes.Then it can be used in the place of regular butter milk)&lt;br /&gt;
&lt;br /&gt;
Bananas - 2 mashed&lt;br /&gt;
&lt;br /&gt;
Egg - 1 at room temperature&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&amp;nbsp;&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Preheat oven to 350 degrees F. Coat an 8 1/2 inch x 4 1/2 inch loaf pan with nonstick cooking spray. &lt;br /&gt;
Whisk flour, baking soda and salt together in a large bowl. Stir in brown sugar.&lt;br /&gt;
&lt;br /&gt;

 In a medium bowl, combine oil, egg, buttermilk and vanilla extract. Add
 these ingredients to the dry ingredients. Stir in mashed bananas.&lt;br /&gt;
&lt;br /&gt;
Pour batter into the loaf pan and bake in the oven for 50-60 minutes, until a toothpick placed in the center comes out clean.&lt;br /&gt;

Subz Shajahani is a rich,creamy and an aromatic side dish of the Mughlai cuisine.Mughlai cuisine is known for the unique usage of ground spices.The spices are usually fried in little bit of ghee or oil,powdered and then added .No wonder this cuisine is popular in the restaurants.Ive adapted this recipe from Tarla Dalal's website.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;u&gt;For the paste:&lt;/u&gt;&lt;br /&gt;
&lt;br /&gt;
Grated fresh coconut - 4 Tbsp&lt;br /&gt;
 &lt;br /&gt;
Cashewnuts - a handful&lt;br /&gt;
&lt;br /&gt;
Cinnamon - 1 inch piece&lt;br /&gt;
&lt;br /&gt;
Cloves - 3&lt;br /&gt;
&lt;br /&gt;
Cardamom - 2&lt;br /&gt;
&lt;br /&gt;
Bayleaf - 2&lt;br /&gt;
&lt;br /&gt;
Ghee - 2 tsp&lt;br /&gt;
Combine cahsew nuts,coconut,bayleaf,cinnamon and cloves in a mixie and grind into a smoothe paste.&lt;br /&gt;
&lt;br /&gt;
&lt;u&gt;Other ingredients:&lt;/u&gt;&lt;br /&gt;
&lt;br /&gt;
Boiled mixed vegetables - 2 cups(a combination of carrot,beans,peas,potato)&lt;br /&gt;
&lt;br /&gt;
Cumin seeds - 1tsp &lt;br /&gt;
&lt;br /&gt;
Chopped onion - 1 cup&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Finely&amp;nbsp; chopped ginger - 1tsp&lt;br /&gt;
&lt;br /&gt;
Finely chopped garlic - 2 tsp&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Chilli powder - 2 tsp&lt;br /&gt;
&lt;br /&gt;
Kitchen king masala - 1 tsp&lt;br /&gt;
 &lt;br /&gt;
Curd - 2Tbsp&lt;br /&gt;
&lt;br /&gt;
Milk - 1/2 cup&lt;br /&gt;
&lt;br /&gt;
Oil - 4 tbsp &lt;br /&gt;
&lt;br /&gt;
Salt to taste&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;

Heat oil in a pan.When hot add the cumin seeds.When they splutter add the ginger and garlic.Saute for few seconds.Then add the chopped onions and saute for few minutes.&lt;br /&gt;
&lt;br /&gt;
Add the chilli powder,kitchen king masala,boiled vegetables,curd and mix well.&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Finally add the milk,prepared paste,1/4 cup of water and cook for 4 to 5 minutes.Serve hot with roti or rice.&lt;br /&gt;

Homemade popcorn and that too in stove top is always good.I used to buy the microwave popcorn from the store until I read&amp;nbsp; several articles about the harmful effects of the chemical used in artificial butter flavoring.&lt;br /&gt;
&lt;br /&gt;
Making popcorn is not that hard.Once you get the hang of it,you would never go back to the store bought popcorn.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Popcorn kernels - 1/3 cup&lt;br /&gt;
&lt;br /&gt;
Corn oil - 3 Tbsp&lt;br /&gt;
&lt;br /&gt;
Salt as required&lt;br /&gt;
&lt;br /&gt;
Season salt - 1 tsp(You can use seasoning of your choice like cayenne pepper,chat masala,ground pepper.The variations are endless)&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method: &lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Heat the oil in a large in a large pan with lid.Add salt and 3 kernels to the oil.If they start spinning,add the remaining kernels in one layer and turn the heat to medium..Cover the pan with a lid leaving a gap for the steam to escape.Once they start popping,take the pan away from the stove and shake with the lid closed and continue till you hear no more popping.Remove from heat and transfer to another bowl and add your favorite seasoning.&lt;br /&gt;

These brownies are the best brownies Ive baked so far.It was chewy,fudgy and moist too.&lt;br /&gt;
&lt;br /&gt;
This recipe is taken from &lt;a href="http://www.chow.com/recipes/10451-chows-intense-brownies"&gt;chow.com &lt;/a&gt;.This is definitely a keeper.Its more of a brownie for grown-ups as it is not so sweet.&lt;br /&gt;
&lt;br /&gt;
Ingredients:&lt;br /&gt;
&lt;br /&gt;
&lt;div id="ingredients"&gt;
&lt;ul&gt;
&lt;li&gt;Bittersweet chocolate (not unsweetened) - 6 ounces(I used Nestle's semisweet chocolate chips)&lt;/li&gt;
&lt;li&gt;Unsalted butter (1 stick) - 8 tablespoons&lt;/li&gt;
&lt;li&gt; Large eggs, at room temperature - 2&lt;/li&gt;
&lt;li&gt;sugar - 1 cup&lt;/li&gt;
&lt;li&gt;Unsweetened cocoa powder 1 Tablespoon&lt;/li&gt;
&lt;li&gt;Vanilla extract - 1 tsp&lt;/li&gt;
&lt;li&gt;1 teaspoon brewed espresso (optional)(I didn't use it)&lt;/li&gt;
&lt;li&gt;1/4 teaspoon plus 1/8 teaspoon fine salt(I used only a pinch)&lt;/li&gt;
&lt;li&gt;All purpose flour - 1 cup&lt;/li&gt;
&lt;/ul&gt;
Method:&lt;br /&gt;
&lt;br /&gt;
&lt;ol&gt;
&lt;li class="d1"&gt;Heat the oven to 350°F and arrange a rack in the middle. Line an 8-by-8-inch glass baking dish with aluminum foil.&lt;/li&gt;
&lt;li class="d2"&gt;Combine
 the chocolate and butter in a medium saucepan and cook over medium-low 
heat, stirring frequently, until evenly melted. Remove from the heat and
 let cool to room temperature.&lt;/li&gt;
&lt;li class="d3"&gt;Combine the eggs, 
sugar, cocoa powder, vanilla, espresso (if using), and salt in a large 
bowl and briefly stir until just evenly incorporated. Add the cooled 
chocolate and mix until uniform in color. Add the flour and stir until 
just incorporated (no white streaks should remain).&lt;/li&gt;
&lt;li class="d4"&gt;Transfer
 the batter to the prepared baking dish and bake until a tester inserted
 into the center of the brownies comes out with few crumbs clinging and not totally clean like while baking cakes.A nice crust will form on the top and the brownies will start puling away from the sides.It took about 40 minutes for me but the original recipe says to bake for about 25 to 30 
minutes.&amp;nbsp; &lt;/li&gt;
&lt;li class="d4"&gt;Remove from the oven and let cool completely before cutting.&lt;/li&gt;

I tried this MW therattipaal and its very close to the stove top recipe.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Full fat sweetened condensed milk - 1 tin(14oz)&lt;br /&gt;
&lt;br /&gt;
Curd - 2TBSP&lt;br /&gt;
&lt;br /&gt;
Ghee - 2tsp&lt;br /&gt;
&lt;br /&gt;
Cardamom powder - 1/4 tsp&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Procedure:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Mix all the ingredients in a wide,deep Microwave safe bowl.Microwave for 5 minutes.Then stir again and microwave for another 2 minutes.Altogether my cooking time was 13 minutes(5+2+2+2+1).But keep an eye on it because the contents may overflow.When it starts to soldify,add the ghee and cardamom powder and allow to stand for 1 minute.&lt;br /&gt;

&lt;/b&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Whisk together flour,baking powder and salt in a bowl.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;In another bowl beat the sugar and softened butter until it becomes pale and fluffy.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Now add the egg,vanilla to butter-sugar mixture and beat for about 2 minutes.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Finally add the flour mixture and mix until just combined.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;In a parchment paper,roll the dough into a 12 inch log.Wrap it and chill in the refrigerator for 2 hrs.The original recipe calls for chilling the dough for 4 hrs.But mine was firm in about 2 hrs.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Take the dough out and slice into 1/4 inch &amp;nbsp;wide discs.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Place the discs in a parchment-lined tray spacing them about 1 inch apart.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;Bake them for about 12 minutes switching tray positions halfway through baking.The cookies are done when they are light golden around the edges.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: justify;"&gt;&lt;br /&gt;

Its been a long time since&amp;nbsp; I logged on to my blogger account.I was busy with my kids especially my little one.&lt;br /&gt;
&lt;br /&gt;
I tried so many new recipes and even managed to take pictures of them.But really couldn't find time to draft them.And finally here Iam with my easy,guilt-free,nutritious kale chips.&lt;br /&gt;
&lt;br /&gt;
If you are addicted to potato chips(like me)you should definitely try making these which are a healthy alternative to fat laden chips.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Kale - 1 bunch&lt;br /&gt;
&lt;br /&gt;
Extra virgin olive oil - 4tbsp and for spraying the trays&lt;br /&gt;
&lt;br /&gt;
Salt - to taste&lt;br /&gt;
&lt;br /&gt;
Chili powder - according to your spice level&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Pre-heat the oven to 350 deg F.Wash the kale leaves and pat them dry with paper towels.&lt;br /&gt;
&lt;br /&gt;
Rip the kale leaves into bite sized pieces.Mix salt,chillipowder and oil with the kale leaves and arrange them on a greased tray.&lt;br /&gt;
&lt;br /&gt;
Bake them for about 10 to 12 minutes.Rotate the tray after 5 minutes and toss them.&lt;br /&gt;
&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Divide the mixture into the muffin liners.Bake for 17 to 20 minutes.Insert a toothpick into the muffin and if it comes out clean,remove from the oven.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

Marble cake&amp;nbsp;was in my baking to-do list for a long time.It was so easy to make than I thought and I got the swirls reasonably good for the first time:-)&lt;br /&gt;

Ive taken this recipe from allrecipes.com and made some changes according to the reviews.&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
All purpose Flour - 2 cups&lt;br /&gt;
&lt;br /&gt;
Baking powder - 2 tsp&lt;br /&gt;
&lt;br /&gt;
Salt - 1/4 tsp&lt;br /&gt;
&lt;br /&gt;
Sugar - 1 1/3 cup&lt;br /&gt;
&lt;br /&gt;
Cocoa Powder - 2tbsp&lt;br /&gt;
&lt;br /&gt;
Butter - 1/2 cup(softened at room temperature)&lt;br /&gt;
&lt;br /&gt;
Vanilla -&amp;nbsp;1tsp&lt;br /&gt;
&lt;br /&gt;
Eggs - 2&lt;br /&gt;
&lt;br /&gt;
Milk - 1 cup&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;Method :&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
Grease and flour an 8 inch round pan.&lt;br /&gt;
&lt;br /&gt;
Preheat the oven to 350 deg F.&lt;br /&gt;
&lt;br /&gt;
In a bowl cream the butter and sugar until light and fluffy.Add eggs one by one and beat until fluffy.&lt;br /&gt;
&lt;br /&gt;
Add the vanilla essence.&lt;br /&gt;
&lt;br /&gt;
In another bowl mix the flour,salt,baking powder.&lt;br /&gt;
&lt;br /&gt;
Add a small amount of dry ingredients to the wet ingredients.Gradually add little bit of milk and fold.Alternate between the flour mixture and milk and fold.&lt;br /&gt;
&lt;br /&gt;
Separate into two parts.Mix the cocoa powder with melted butter and add&amp;nbsp; to one part of the flour mixture.&lt;br /&gt;
&lt;br /&gt;

Put one spoon of vanilla mixture in the center of the prepared pan.Now add 1 spoon of cocoa mixture on top of the vanilla mixture.&lt;br /&gt;
&lt;br /&gt;
Alternate between vanilla and cocoa.Finally swirl the top with a knife until you get a marble effect.Do not overdo it because you might lose the definition of either vanilla or cocoa mixture.&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;

Pound cake recipes always calls for sooooo many eggs which makes it so heavy.Though rich and tasty,I always hesitate to bake one fearing the amount of &amp;nbsp;fat .&lt;br /&gt;
But I was pleasantly&amp;nbsp;surprised by this recipe featured in About.com which uses only 2 eggs for pound cake baked in loaf pan.&lt;br /&gt;
It was moist,soft and delicious.&lt;br /&gt;

In a medium bowl cream the butter with sugar until fluffy.Add eggs one at a time and beat well.&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"&gt;In anothe bowl,sift the flour,baking powder and salt.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;

Mix the dry ingredients with the wet ingredients.Add milk little by little and mix gently.Finally add the vanilla essence and mix.&lt;br /&gt;
&lt;br /&gt;
Pour the mixture into the loaf pan.&lt;br /&gt;
&lt;br /&gt;
Bake for about 1 &amp;nbsp;1/4 hrs to 1 1/2 hrs.Start checking your cake after 1 hour.Mine took about 1 hour 20 minutes.&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Bring a large pot of water to boil.Add the pasta,little bit of oil,salt and cook the pasta aldente.Drain in a colander and keep the pasta ready.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;In a pan heat the oil.When hot,add the pepper flakes,garlic.When the garlic turns slightly golden add the onions and cook till translucent.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Then add the capsicum and cook for 2 minutes.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Now add the pasta,salt and toss together.Let it cook for 2 minutes.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Finally add the chopped parsley and garnish with grated cheese if you like.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

My favorite way of eating Nutella is to just eat it with a spoon:)Me and my elder son love nutella ..&lt;br /&gt;
&lt;br /&gt;
For all the nutella lovers out there..World Nutella day is Feb &amp;nbsp;5th...&lt;br /&gt;
So I thought I would make something with this yummy goodness.&lt;br /&gt;
&lt;br /&gt;
I tried to make use of Nutella in my muffins..I swirled nutella on top of some of the muffins and filled in the rest..&lt;br /&gt;
&lt;br /&gt;
Here goes the recipe..&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
All purpose flour - 1 1/2 cup&lt;br /&gt;
&lt;br /&gt;
Baking soda - 1tsp&lt;br /&gt;
&lt;br /&gt;
Baking powder - 1tsp&lt;br /&gt;
&lt;br /&gt;
Sugar - 2/3 cup&lt;br /&gt;
&lt;br /&gt;
Salt - 1/4 tsp&lt;br /&gt;
&lt;br /&gt;
Melted butter - 1/3 cup&lt;br /&gt;
&lt;br /&gt;
Mashed Banana - 4&lt;br /&gt;
&lt;br /&gt;
Vanilla essence - 1 tsp&lt;br /&gt;
&lt;br /&gt;
Chopped walnuts - 1/2 cup&lt;br /&gt;
&lt;br /&gt;
Nutella - 1/2 cup&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Preheat the oven to 360 deg F.&lt;br /&gt;
&lt;br /&gt;
Line the muffin tin with muffin liners.In a medium bowl add the all purpose flour,baking soda,baking powder,salt and mix well.&lt;br /&gt;
&lt;br /&gt;
In another bowl,add the mashed banana,sugar,melted butter,vanilla essence,chopped walnuts and mix well.&lt;br /&gt;
&lt;br /&gt;
Add the dry ingredients into the wet ingredients and mix.The mixture would be lumpy.Don't tend to over mix.&lt;br /&gt;
&lt;br /&gt;
Fill up to 1/2 of the muffin liner.Spread the mixture evenly on the sides so that when you fill the nutella it will not come out through the sides of the muffin.Then add a tablespoon of nutella in the middle.I worked with my finger cuz I felt so easy to indent the nutella.Then fill the muffin up to 3/4 th.&lt;br /&gt;

You can also fill the muffin liner upto 3/4 th and then add a tsp of nutella on the top and swirl with a toothpick.&lt;br /&gt;
&lt;br /&gt;
My swirl did not come out that good because nutella was sooo hard to work with..&lt;br /&gt;
&lt;br /&gt;
Bake for about 15 minutes or until the tester when inserted into the middle comes out clean.&lt;br /&gt;
&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;b&gt;Method:&lt;/b&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Heat the oil in a pan.When hot add the mustard seeds.When they splutter,add the dry red chillies and curry leaves.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Then add the mushrooms,turmeric powder.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Saute till the mushrooms start to sweat.Close the lid and cook for about 5 minutes.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Then add the tamarind paste along with a half a cup of water and allow to boil for 5 minutes.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Add the required amount of salt.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Finally add the spice powder,mix and cook for 2 minutes.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

Its been a while since I baked &amp;nbsp;something.I was planning to bake something with nutella&amp;nbsp;,since a jar is just in my pantry being consumed by me a spoonful a day :)which is definitely not good for me but ended up making these.These muffins were moist and fluffy and chocolatey.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
All purpose muffins - 1 3/4 cups&lt;br /&gt;
&lt;br /&gt;
Baking Powder - 2 tsp&lt;br /&gt;
&lt;br /&gt;
Baking soda - 1/2 tsp&lt;br /&gt;
&lt;br /&gt;
Sugar - 3/4 cup&lt;br /&gt;
&lt;br /&gt;
Cocoa powder - 2Tbsp&lt;br /&gt;
&lt;br /&gt;
Semi sweet chocolate chips - 3/4 cup and few for sprinkling on top&lt;br /&gt;
&lt;br /&gt;
Vegetable oil - 1/3 cup&lt;br /&gt;
&lt;br /&gt;
Egg - 1&lt;br /&gt;
&lt;br /&gt;
Milk - 1 cup&lt;br /&gt;
&lt;br /&gt;
Vanilla essence - 2 tsp&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method :&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Preheat the oven to 400 deg F.&lt;br /&gt;
&lt;br /&gt;
Line the muffin tin with liners or spray with a nonstick spray.&lt;br /&gt;
&lt;br /&gt;
In a medium bowl mix the all purpose flour,baking powder,baking soda,cocoa powder,semisweet chocolate chips.&lt;br /&gt;
&lt;br /&gt;
In the 2 cup measuring jar,measure the milk,then oil.Add the egg and vanilla essence.&lt;br /&gt;
&lt;br /&gt;
Mix everything&amp;nbsp;thoroughly.&lt;br /&gt;
&lt;br /&gt;
Add the wet ingredients to the dry ingredients and fold.The mixture will be lumpy.&lt;br /&gt;
&lt;br /&gt;
Fill the muffin liners up to 3/4 th.&lt;br /&gt;
&lt;br /&gt;
Bake for about 20 minutes or until the tester when inserted into the muffin comes out clean.&lt;br /&gt;
&lt;br /&gt;

Since this is my first post of 2011,I wanted to start with a sweet note.I tried this sweet and came out very well.Ive made Mysore pak before.But this is the first time I tried cashew Mysore pak.This is a recipe of Mrs Chitra Viswanathan of Indusladies.Iam amazed by her cooking skills ranging from the traditional Tamil Brahmin recipes to International recipes.She is an inspiration to amateur cooks like me.&lt;br /&gt;
&lt;br /&gt;
When my mom was here last year,she made this mysorepak and it came out perfect.So I mustered my courage to try out this new Mysore pak recipe.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Powdered Cashew - 1 cup&lt;br /&gt;
&lt;br /&gt;
Besan/Gram flour - 1/3 cup&lt;br /&gt;
&lt;br /&gt;
Sugar - 1 3/4 cup&lt;br /&gt;
&lt;br /&gt;
Ghee - 1 cup melted&lt;br /&gt;
&lt;br /&gt;
Water - 2 cups&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Fry the besan in 2 tsp of ghee .Mix the cashew powder and besan in melted ghee and stir till no lumps are found.&lt;br /&gt;
&lt;br /&gt;
Boil the sugar and water to 1 string consistency.That is if you pour the syrup from a ladle,a string appears from the tip of the ladle.&lt;br /&gt;
&lt;br /&gt;
Add the cashew-besan-ghee mixture into the sugar syrup.&lt;br /&gt;
&lt;br /&gt;
Keep on stirring till it becomes a solid mass and it leaves the sides of the pan.&lt;br /&gt;
&lt;br /&gt;

Spinach - 2 cups washed thoroughly and chopped&lt;br /&gt;
&lt;br /&gt;
Boiled toor dal - 1/2 cup&lt;br /&gt;
&lt;br /&gt;
Ginger - 2 tsp grated&lt;br /&gt;
&lt;br /&gt;
Turmeric - 1/4 tsp&lt;br /&gt;
&lt;br /&gt;
Green chillies - 2 chopped&lt;br /&gt;
&lt;br /&gt;
Dry red chillies - 2 broken&lt;br /&gt;
&lt;br /&gt;
Bay leaf - 2&lt;br /&gt;
&lt;br /&gt;
Cloves - 3&lt;br /&gt;
&lt;br /&gt;
Cumin seeds - 1tsp&lt;br /&gt;
&lt;br /&gt;
Asafoetida - a pinch&lt;br /&gt;
&lt;br /&gt;
Salt to taste&lt;br /&gt;
&lt;br /&gt;
Oil &amp;nbsp;- 1 tsp&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Procedure:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Pressure cook spinach in 3 cups of water along with toor dal,ginger,green chillies,turmeric,and required amount of salt for 3 whistles.&lt;br /&gt;
&lt;br /&gt;
In a pan heat the oil.When hot,add cumin seeds.When it splutters,add bay leaf,cloves,broken red chillies and asafoetida.&lt;br /&gt;
&lt;br /&gt;
Add the tempering to the spinach/dal mixture and simmer for 5 minutes.&lt;br /&gt;
&lt;br /&gt;

This is the first time I have tried my hand in candy making.It was a snap to make.Got this recipe from Joy of Baking website.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Sweetened Condensed Milk - 1 can(14 oz)&lt;br /&gt;
&lt;br /&gt;
Nestle semisweet chocolate chips - 1 bag(12 oz)&lt;br /&gt;
&lt;br /&gt;
Butter - 2 Tbsp&lt;br /&gt;
&lt;br /&gt;
Vanilla essence - 2tsp&lt;br /&gt;
&lt;br /&gt;
Walnuts - 1 cup&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Line the bottom and sides of a &amp;nbsp;8 baking pan with parchment paper or aluminium foil leaving extra foil on the sides hanging down.&lt;br /&gt;
&lt;br /&gt;
Pre-heat the oven to 350 degrees F.Place the walnuts in a cookie sheet and toast for about 8 minutes,&lt;br /&gt;
When cool,chop them roughly.&lt;br /&gt;
&lt;br /&gt;
Combine the condensed milk,semisweet chocolate chip,butter in a stainless steel bowl and place over a saucepan of simmering water.Stir the mixture until the chocolate melts and the mixture becomes smooth.&lt;br /&gt;
&lt;br /&gt;
Remove from heat and stir in the vanilla essence and walnuts.&lt;br /&gt;

Spread the mixture into the prepared pan.Cover with foil and refrigerate till it becomes cool enough.&lt;br /&gt;

When I found this recipe in the newsletter of Tarla Dalal,I was so sure that Iam gonna try this.It is &amp;nbsp;a combination of vegetables in a spicy gravy.The spices are not store bought,but freshly ground.That tempted me to give it a try.This is a real comfort food for the harsh wintry nights.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Boiled mixed vegetables - 2 cups(carrots,potatoes,beans,peas,baby corn,cauliflower)&lt;br /&gt;
&lt;br /&gt;
Paneer - 1/2 cup cubed or tofu&lt;br /&gt;
&lt;br /&gt;
Tomatoes - 2 medium chopped into small pieces&lt;br /&gt;
&lt;br /&gt;
Corn flour - 1/2 tsp mixed with 2Tbsp of milk&lt;br /&gt;
&lt;br /&gt;
Salt to taste&lt;br /&gt;
&lt;br /&gt;
Oil - 4 tbsp&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;To be ground into a paste:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Onion - 1 medium&lt;br /&gt;
&lt;br /&gt;
Thick Poha - 2 tablespoon Soak in water for 5 minutes.Drain and then grind with other ingredients&lt;br /&gt;
&lt;br /&gt;
Coriander seeds - 4tsp&lt;br /&gt;
&lt;br /&gt;
Black pepper - 5 or 6&lt;br /&gt;
&lt;br /&gt;
Cumin seeds - 2tsp&lt;br /&gt;
&lt;br /&gt;
Dry red chillies - 5&lt;br /&gt;
&lt;br /&gt;
Poppy seeds - 1tsp&lt;br /&gt;
&lt;br /&gt;
Cloves - 2&lt;br /&gt;
&lt;br /&gt;
Cinnamon - 2 inch piece&lt;br /&gt;
&lt;br /&gt;
Garlic - 2 or 3 pods&lt;br /&gt;
&lt;br /&gt;
Ginger - 2tsp grated&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
Heat oil in a skillet.When hot,add the ground paste and saute till raw smell goes off.&lt;br /&gt;
&lt;br /&gt;
Add the chopped tomatoes and saute till the tomatoes are pulpy.&lt;br /&gt;
&lt;br /&gt;
Then add the boiled vegetables,paneer,required amount of salt and 1/2 cup of water.Simmer for 2 minutes.&lt;br /&gt;
&lt;br /&gt;
Now add cornflour mixed with water and simmer for another 5 minutes.&lt;br /&gt;
&lt;br /&gt;

&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Add the melted butter.Add water little by little and knead into a smooth dough.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Heat oil in a deep pan over medium heat.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Place the thenkuzhal disc(the one which has three small holes) in the press.Fill about three-quarters of dough into the press.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Hold the press&amp;nbsp;over the oil and squeeze the press in circular motion.Cook one side till it is slightly brown and turn the other side and cook for a few more minutes until both sides are golden brown in color.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;
&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;Remove from the oil and drain in a paper towel.Store when they are cool in an air-tight container.&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: left;"&gt;&lt;br /&gt;

This is a recipe of Mrs.Revathy Shanmugam,a great culinary expert of Tamilnadu.&lt;br /&gt;
It reminded me of the coriander rice which is served in Saravana Bhavan restaurant .The aroma of the pulao was appetising.&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
Basmathi rice - 2 cups washed and soaked in water for 15 minutes&lt;br /&gt;
&lt;br /&gt;
Onion - 1 finely chopped&lt;br /&gt;
&lt;br /&gt;
Ghee - 2 tbsp&lt;br /&gt;
&lt;br /&gt;
Oil - 2tbsp&lt;br /&gt;
&lt;br /&gt;
Fennel seeds - 1 tsp&lt;br /&gt;
&lt;br /&gt;
Cumin seeds - 1 tsp&lt;br /&gt;
&lt;br /&gt;
Bay leaf - 1&lt;br /&gt;
&lt;br /&gt;
Salt to taste&lt;br /&gt;
&lt;br /&gt;
Water -&amp;nbsp; 3 cups&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;To be ground into a smooth paste :&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
Coriander leaves - a big bunch washed thoroughly with the stalks removed&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
Coconut - a small piece&lt;br /&gt;
&lt;br /&gt;
Ginger - 2 tsp grated&lt;br /&gt;
&lt;br /&gt;
Garlic - 2 cloves&lt;br /&gt;
&lt;br /&gt;
Green chillies - 4&lt;br /&gt;
&lt;br /&gt;
Cinnamon - 1 inch piece&lt;br /&gt;
&lt;br /&gt;
Cloves - 4&lt;br /&gt;
&lt;br /&gt;
Star Anise - 2&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;Method :&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
Heat oil and ghee in a skillet.When hot add the fennel seeds,cumin seeds and bay leaf.&lt;br /&gt;
Then add the finely chopped onions.&lt;br /&gt;
&lt;br /&gt;
When the onions turn slightly brown,add the ground paste and saute till the raw smell goes off.&lt;br /&gt;
&lt;br /&gt;
Now add the basmathi rice and saute for 2 minutes.Add required amount of salt and water.Wait till the water starts to boil.Transfer the contents into a rice cooker and cook till done.&lt;br /&gt;
&lt;br /&gt;
Alternately cook in a pressure cooker and cook for 1 whistle.&lt;br /&gt;
&lt;br /&gt;

&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
1 1/2 cups all-purpose flour&lt;br /&gt;
&lt;br /&gt;
1 teaspoon baking soda&lt;br /&gt;
&lt;br /&gt;
1 teaspoon baking powder&lt;br /&gt;
&lt;br /&gt;
1/2 teaspoon salt&lt;br /&gt;
&lt;br /&gt;
4&amp;nbsp;bananas, mashed&lt;br /&gt;
&lt;br /&gt;
3/4 cup white sugar&lt;br /&gt;
&lt;br /&gt;
1/3 cup butter, melted&lt;br /&gt;
&lt;br /&gt;
&lt;strong&gt;For the crumb topping:&lt;/strong&gt;&lt;br /&gt;
&lt;br /&gt;
1/3 cup packed brown sugar&lt;br /&gt;
&lt;br /&gt;
2 tablespoons all-purpose flour&lt;br /&gt;

In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.&lt;br /&gt;

Primavera means "season of spring" in Italian.This dish usually is packed with vegetables which are available in spring.But any vegetable can be added to the pasta.The vegetables should not become &amp;nbsp;soggy but should retain the crispy texture while cooking.There are so many versions of this recipe.A common recipe uses heavy cream and butter.Since I wanted it be light and healthy,I skipped adding those.&lt;br /&gt;

This is my kid's favorite lunch box dish.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Rotini Pasta - 1 pound&lt;br /&gt;
&lt;br /&gt;
Tomatoes - 1&lt;br /&gt;
&lt;br /&gt;
Zucchini - 1 sliced&lt;br /&gt;
&lt;br /&gt;
Carrots - 2 &amp;nbsp; cut into 1 inch pieces&lt;br /&gt;
&lt;br /&gt;
Broccoli &amp;nbsp;florets - 8&lt;br /&gt;
&lt;br /&gt;
Onion - 1 chopped&lt;br /&gt;
&lt;br /&gt;
Garlic - 3 pods minced&lt;br /&gt;
&lt;br /&gt;
Green bell pepper - cut into thin strips&lt;br /&gt;
&lt;br /&gt;
Marinara Sauce - 1 cup&lt;br /&gt;
&lt;br /&gt;
Oil - 4 Tbsp&lt;br /&gt;
&lt;br /&gt;
Pepper powder - 2 tsp&lt;br /&gt;
&lt;br /&gt;
Salt to taste&lt;br /&gt;
&lt;br /&gt;
Grated Parmesan cheese - 2 tbsp optional&lt;br /&gt;
&lt;br /&gt;
Even vegetables like peas,eggplant can be added.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Bring a large pot of salted water to boil.Add the pasta and and cook for 10 to 12 minutes or until al dente.&lt;br /&gt;
Drain them in a colander.&lt;br /&gt;
&lt;br /&gt;
Heat oil in a pan and add the garlic.Then add the onion and saute till translucent.&lt;br /&gt;
&lt;br /&gt;
Then add the green pepper,zucchini,carrot and saute for 5 minutes.&lt;br /&gt;
&lt;br /&gt;
Now add the pepper powder.Add the marinara sauce and 1/2 cup of water and allow it to boil for 2 minutes.&lt;br /&gt;
&lt;br /&gt;
Now add&amp;nbsp;the pasta ,required amount&amp;nbsp;of salt.&lt;br /&gt;
&lt;br /&gt;
Sprinkle &amp;nbsp;Parmesan cheese if you prefer.&lt;br /&gt;
&lt;br /&gt;

This is a recipe of Menurani Chellam who is very popular in Tamil cuisine.&lt;br /&gt;
I like the way she explains in detail all the recipes.She is an expert even &amp;nbsp;in International cooking.She hosts the show called Arusuvai Neram.This was featured in an episode.&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Ingredients:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Ridge gourd - 4&lt;br /&gt;
&lt;br /&gt;
Boiled toor dal - 1 cup&lt;br /&gt;
&lt;br /&gt;
Green chillies - 4&lt;br /&gt;
&lt;br /&gt;
Ginger - 2 tsp grated&lt;br /&gt;
&lt;br /&gt;
Lemon - 1&lt;br /&gt;
&lt;br /&gt;
Mustard seeds - 1 tsp&lt;br /&gt;
&lt;br /&gt;
Sal to taste&lt;br /&gt;
&lt;br /&gt;
Oil - 1 tbsp&lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;Method:&lt;/b&gt;&lt;br /&gt;
&lt;b&gt;&lt;br /&gt;
&lt;/b&gt;&lt;br /&gt;
Wash,peel and cut the ridge gourd into 1 inch pieces.Cook them in a pan filled with water to which little bit of&amp;nbsp;salt and turmeric powder is added.&lt;br /&gt;
&lt;br /&gt;
In a pan,mix the cooked toor dal and ridge gourd,required amount of salt and 1/2 cup of water.Allow it to boil for 3 minutes.&lt;br /&gt;
&lt;br /&gt;
In another pan heat the oil.Add mustard seeds.When it splutters,add the green chillies and ginger.Transfer them to the ridge gourd.Extract the juice of a lemon and mix with the masiyal.&lt;br /&gt;
&lt;br /&gt;
Serve with rice.&lt;br /&gt;
