La
sugestia verişoarei mele am pregătit împreună, după reţeta ei, macrou afumat. Mai
exact spus, noi am pregătit peştele iar mătuşa mea l-a afumat la fum cald, de
fag. Reţeta este foarte simplă, ceea ce-mi lipseşte acasă, la Bucureşti este o
curte în care să pun o afumătoare.

Macroul,
afumat aşa, artizanal, este deosebit de bun, nici nu se compară cu cel

 De câteva zile mă aflu la mama, în nordul Moldovei. La cei 80 de ani ai săi
este foarte vioaie şi zilnic  coboară
cele 2 etaje plus un parter înalt să meargă la cele câteva găini şi un cocoş pe
care le are în curtea fostei noastre case (pe care i-au demolat-o în anii 80). Dacă
găinuţele sunt cuminţi şi mai fac şi câte un ouşor, cocoşul, deşi foarte frumos

Zahărul
se caramelizează, se adaugă apa şi se lasă pe foc până s-a diyolvat tot
zahărul. Se lasă să se răcorească şi se adaugă mierea. Făina se cerne împreună

750 g brânză de vaci

250 g brânză de oi

1 l lapte acru

2 linguri cu făină de grâu

Preparare:

Într-un lighienaş se pun cele 5 ouă. 



Se adaugă smântâna




şi mălaiul şi se amestecă bine.



Se pune brânza şi se amestecă din nou. Dacă rămân
bucăţele nu este nici o nenorocire. Oricum, la copt brânza se va topi.

Şi
anul acesta mi-am petrecut sărbătorile de iarna tot la Suceviţa, ajutându-mi
copii să pregătească meniul de Revelion pentru 19 persoane, dintre care 5 copii.

1 kg de coji şi cotoare de gutui (rămase de la dulceaţă, gem sau plăcintă)

Câte 1 kg de zahăr pentru  fiecare litru de zeamă în care au fiert fructele

Ulei pentru prăjit

100 g seminţe de susan

pătrunjel verde

sare, piper 


Preparare:


Cartofiişi morcovul se curăţă de coajă şi se pun la foc cu sare, piper şi cele douălinguri de unt.




Când sunt fierţi, se scot din apă şi se pasează cu o furculiţă sau cu instrumentul pentru piure, dar  nu se transformă in piure

2-3 legături de pătrunjel proaspăt

2-3 roşii

O ceşcuţă de bulgur (grâu sfărâmat, de la magazinele
arăbeşti)

O ceapă (roşie, de preferat)

Zeama de la ½ de lămâie

O lingură de ulei de măsline

O frunză de mentă

Sare şi piper 


Preparare:




Roşiile spălate se taie pătrate cu latura de circa 1 cm.





 Se
pun într-un vas iar deasupra se toarnă ceşcuţa cu bulgur.

Se amestecă cele două feluri de făină şi se cern în vasul

Un morcov

O ceapă mare sau 2 mici

100 ml suc de roşii

¼ kg de costiţă

2 bucăţi de cârnaţi afumaţi

Sare, piper, 2 foi de dafn

Preparare:

Se spală fasolea şi se fierbe. Între timp, se taie
costiţa bucăţi iar cârnaţii felii. Se pun să se prăjească puţin, apoi se adaugă
ceapa tăiată mărunt. Când s-a muiat puţn se adaugă morcovul tăiat bucăţele
mici,

La noi în familie, ca şi în altele din nordul Moldovei, când
eram eu copil (adică acum vreo 40 şi mai mulţi ani), mâncarea rece se pregătea
pentru Crăciun, de obicei cu carne de raţă, de gâscă sau de iepure de câmp. 


Ingrediente:


2-3 bucăţi de limbă de porc

4-5 cepe mărişoare

2 bucăţi de praz

Un pumn de măsline

2 linguri de ulei

3-4 linguri pastă de roşii

Un pahar de vin alb sec
