Bring 6 cups water, 1 1/2 cups sugar and 1/4 tsp. salt to a boil in a pan over high heat, stirring occasionally. Remove pan from heat, cover and let stand for 10 minutes. Puree 4 cups chopped watermelon in a blender with 1 cup water. Pour syrup and watermelon puree though a strainer into a pitcher. Stir in 2 cups lemon juice (from about 8 lemons). Serve over ice. Makes 12 servings.

1/2 cup grated Parmesan
1/2 cup plain bread crumbs
1/2 teaspoon onion powder
1 teaspoon dry rubbed sage
2 teaspoons kosher salt
Freshly ground black pepper
1/4 cup chopped parsley leaves
1 pound ground beef round
1 pound ground pork
2 eggs, beaten
2 cloves garlic, minced
1/4 cup vegetable oil
Directions

Preheat the oven to 375 degrees F.

To make the meatballs: In a large bowl, combine the Parmesan, bread crumbs, onion powder, sage, salt, a few grinds of black pepper, to taste, and parsley. Add the ground round, pork, eggs, and garlic and gently combine. Form into 8 equal-sized meatballs.

In a 10-inch saute pan over medium-high heat, add the vegetable oil. When the oil begins to swirl, add the meatballs and sear until light golden on all sides, about 10 minutes. Transfer the pan to the oven and roast until cooked through, 15 minutes.
I've never been able to make my meatballs come out as good as my father-in-laws. He is no longer with us. I think this recipe is close as far as the ingredients. The pork may be the key.

Sicilian Steaks

1 1/2 lb grilling-cut steaks (ribeye, strip, or flat iron)
1/2 teaspoon kosher salt
1/4 teaspoon pepper
3 tablespoons extra-virgin olive oil, divided
2 teaspoons dried Italian seasoning
1/2 cup canned diced tomatoes (drained)
This is a delicious pie. Christel, my office space co-worker, hair dresser and friend shared this recipe for a newsletter I was doing many years ago. The recipe is Axel's and at every food function we had we asked him to make this pie. 3/4 cup chocolate fudge topping, divided
1 graham cracker pie crust
1 tub (8 oz.) Cool Whip Whipped Topping, thawed
1 1/4 cups cold milk
12 whole New Potatoes (or Other Small Round Potatoes)
Rosemary (or Other Herbs Of Choice) To Taste

Preparation Instructions

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.

12 slices of French bread or sourdough bread thin sliced (6 slices cut up into cubes)
2 8oz. pkg of cream cheese
1 cup of blueberries
12 eggs
1/3 cup maple syrup
2 cups milk
1 tablespoon of cinnamon
dash of nutmeg

For the sauce
1 cup of sugar
2 tablespoons of cornstarch
1 cup of water
1 cup of blueberries
1 tablespoon butter

Arrange the bread in a buttered 13 x 9 inch pan; cut the cream cheese into squares and place over bread; sprinkle the blueberries over the cheese; arrange the bread cubes over the top of the blueberries.

In a large bowl mix the eggs, syrup, milk, cinnamon, and nutmeg whisk well pour the mixture over the bread mixture; chill the mixture overnight.

Bake at 350 for about an hour or till it is puffed and golden brown.

Sauce
In a small sauce pan mix the water, sugar, cornstarch over moderately high heat until it is thickened, then add the blueberries. Simmer for about ten minutes or till blueberries burst then pour over French toast.

This recipe comes from my friend and co-worker Sheri O'Neal. It is so good. She made it for a breakfast staff meeting one year. I think we need to have more of those.

Deviled Egg Chicks
