Mt. Marami Traverse: The Unforgettable Hike

My brother and I started our walk at around 3 am from our house to Aguinaldo Hi-way and eventually wait for the organizer and other hikers at McDo Palapala at 4 am for our hike at Mt. Marami in Maragondon.

Marami is the the tagalog word for many or plenty. For me, Mt. Marami stands for maraming lakad, maraming hingal, and maraning cramps, yes... Cramps! It was the first time that my both legs got cramps during a hike and that made our hike extra long, one of our tour guide even carried me (thanks kuya Vin).

We started our trek at around 8:30am and instead of the usually wide, open trail used by hikers, we took the old trail. The old trail is more shaded according to our guide but the amount of time to trek to the summit is just the same as the open trail.

At first, I can't comprehend how come that the trail we're taking is shaded... Just look at the photos above, there are trees but it doesn't give shade or something... haha! We walked like that for about an hour and a half before reaching the first resting area.

After 15-20 minutes, we started trekking again until we reached the Nuestra Señora de la Paz.

We also passed through some rivers... Kayrayag River and Bangkaan River.

There are also many rest areas along the trail. The residents are very welcoming, they are already used to a lot of hikers.

After having our lunch and resting, we continue our way to the summit. And slowly, the trail gets narrower, shadier, and steeper but it is still easy yet... my legs betrayed me.

The assault before the summit is covered with bamboo and after passing the bamboo area, be prepared for some rock climbing.

When at the summit, you can't just help it but feel relieved and happy that you survived the trail and that you had the chance to see a great view.

After taking so many photos at the summit, we headed down took a different trail: the open and wide trail. While walking through that trail, I understood why was the trail going up is more shaded... haha! But the open trail has less steep trails and you can bring your car in certain part of the trail, making your trek time shorter.

Since my legs betrayed, I can't afford walking for so long, moreover walking in an inclined area. So, when we reached the area where cars can park, we ask a local to call a tricycle (100 pesos/person) to fetch us and bring us to the jump-off. Nine of us waited for the tricycle while the rest of the group walked their way to the jump-off.

There's a scarcity of tricycle that day, that is why it took us until the moon says hello before we finally reached the jump-off.

Thank you to Kuya who sells buko (I didn't get kuya's name... my bad) and his family for welcoming me and my brother into their home. Since it's already night, the wind is chilly, and the tricycle took longer fetching us, my brother and I kept warm in their home.

Another mountain conquered, another experience to share, and a lot of memories to keep. I'm thankful for my co-hikers, especially our to our organizer, Ate Nory of Hitch-A-Climb Memory Makers. And I'm also sorry because we were not able to go to Pantihan at Malibiklibik Falls.

Too many things happened to me this 2016. To sum up, my year mainly revolves on my fangirling and it starts with a simple decision to apply as a Krew member of Korean Cultural Center (KCC) in the Philippines. But aside from my fangirling, there are also many places I've been to and there are a lot of people I've met last year. Here are the memories that I'm really thankful for for my awesome 2016.

One thing that I'm thankful for last year is the first article I wrote as a Krew member. I'm not really confident in my writing skills but KCC gave me the chance to share what I can do. I wrote about Korean variety show that people must watch, to read about it click here. So, far this is the only article I wrote as a Krew member, hopefully this year I can contribute a little bit more in writing blogs.

My March was definitely about childhood friends, childhood memories, and extended families. I spend my childhood years, from 7 years old to 11 years old, in Libya and happy to see and catch up with the people from my childhood last year.

My K-Ribbon Selection Experience

K-Ribbon event exhibits cultural products
that possess Korea's unique cultural values

Ever since I became a Korean Cultural Center (KCC) supporter, the exhibit that happened for 7 days was the biggest event I've taken part to. Last November 2-8, Korean Culture and Information Service, in partnership with KCC, held it's K-Ribbon Selection 2016 at the Shangri La Mall. The said event aims to promote South Korea's cultural products through food, fashion, crafts, and contents.

FOOD

Aside from the cultural products being displayed, an open kitchen event was held for 2 days (November 5-6) for the people to get a taste of Korean food. The food offered were Samgyetang, Rice Balls, Honey Garlic Chicken, Bulgogi Sandwhich, and Bibimbap. "Spin N Win" event was being held as well, where visitors can get postcard or seaweed crisps depending on the result they'll get on the roulette.

FASHION

Hanbok is Korea's traditional attire. During the event, various hanbok were displayed from traditional ones to modern ones.

Aside from the displays, people can take a photo wearing a handok at the AR section, were visitors can choose from 8 different attires in a monitor and all they have to do is align their face at the camera and have their photo printed on the spot.

From bowls, plates, to various tea sets, people can view all sorts of handicrafts at the event.

CONTENTS

Through the VR section, people can come across 3 Korean traditional paintings made during the Joseon Dynasty, people need to find the 3 domes and at the ceiling of that dome they can see the paintings. One of the paintings being showed was the "Sun, Moon, and Five Peaks".

What makes this event extra special to me is the time I spend with my co-KCC supporters, no matter how tiring the event is we still get the chance to cheer each other up and have a never ending selfies whenever we can. And I'm glad to have meet new friends through the event, Koreans and Filipinos alike.

Conquered MT. Balagbag and Oriod Falls

After my hike last month, I joined another hiking event last Sunday with my two college friends. It's Jen's first hike and Mavic's second one after our Mt. Gulugod-Baboy hike 2 years ago. So, I think Mt. Balagbag would be great since, according to the organizer it is beginner friendly and the blog reviews about it tells the same.

The trek to Mt. Balabag's summit is so easy, you don't even need a guide. The trail is wide, no buwis buhay whatsoever to go through. But don't underestimate it, no matter how easy the climb is, it still makes your heart and body work double time.

After a quick rest at the summit, we left some of our things at the summit (there are lockers there or if your things won't fit in the locker you can leave it at the house's owner) and headed to Oriod Falls.

If the climb to Mt. Balagbag is walk in the park, the trek to Oriod Falls is the exact opposite... Talk about steep and narrow trail, add to that is the muddy and slippery trail because it rained the day before. We started out smoothly with the wide trail but after 10 minutes of walking, tall grass appears, the trail becomes narrow, the trees started to appear and slowly I started to focus on our safety. I wanted to take lots of photos along the trail but safety is my priority.

I'm very thankful to these people especially Ate Yhan (the organizer) and to the 2 Kuyas who always assist us, the 3 of us (Jen,Mavic, and I) were always behind, we're slower than the rest of the group but no matter what they don't leave us, they stayed with us to ensure we are safe and okay.

If you run out of water, don't worry... There's a water source. I had a lot of water taken from the spring and my stomach didn't act up, so I can say that it is safe to drink :)

I just couldn't let this view fades in my memory, so even if my mind is so consumed with worries about safety, I stopped a few minutes to appreciate this beautiful view and took a photo of it.

We also crossed a few streams and a river. Sersiously, I haven't keep tracked of how many streams we have crossed. I'm so tired the whole trek and again, I keep thinking about our safety. So, I only remembered this stream where we rest.

Up until the end, we struggled on going down the falls. Good thing we had it all for ourselves. We were the only group who visited the falls that time :)

We had our lunch at the Falls, we stayed about 1-2 hours there. Others swam all their want while I slept... The trek to the Falls sapped out all the energy in my body, so I decided to just sleep and have my energy back for our climb back to Mt. Balagbag.

On our way back, it rained about 20 minutes before we finally reach MT. Balagbag, that makes the difficulty doubled.

Hiking with only a few hours of sleep and no breakfast, It makes me proud of myself. I was able to survive the difficult trek to the falls although there were times when I thought of giving up and to just stay behind. I had so many things running in my head lately, I usually find myself doing something yet I don't know what and why I'm doing it. It's like my body moves while my mind is blank. My climb to Mt. Balagbag and Oriod Falls, although it left me with so much body aches (haha!), had my brain wires back in track.

Independence Day Climb: Mt. Buntis and Mt. Nagpatong

June 12 marks the Independence Day of the Philippines, thanks to our heroes who fought very hard to achieve it. In celebration of it, my brother and I joined an Independence Day Climb event organized by Peak Summit Trail.

At pass 3 in the morning, my brother and I had our warm-up for the hike by walking from our house to Aguinaldo Highway, since tricycle is not yet available at that time. Off to the Coastal Mall Bus Terminal we headed to meet other participants. Some of the participants had their meeting place in Cubao, after fetching us at the terminal we headed to Maragondon.

After a few minutes of introduction and reminders, we finally started our trek to Mt. Buntis. From the Municipal Hall, we passed by the residential area and the famous Kaingin Hanging Bridge (this is the part I hated the most), thanks to members who is after me when we crossed the bridge, thank you for being patient with me and sorry for the delay.

After passing the bridge, the chill trek along the vast field starts. The peacefulness of the place along with the rich green field and fresh air, makes you exhale the words, "This is the life!"

After what seems like forever, the team rested somewhere under a huge tree. And this also marks that you are near/at the foot of Mt. Buntis.

Trek to muddy trail, rocky trail and stream crossing followed our sweet rest. At this point, the hike is still tolerable, I can still manage my tiredness since the path is still easy. Mt. Buntis, really suits beginner hikers, since approximately 85-90% of the time the path you will take is straight. It's a walk in the park.

A climb wouldn't be complete if there is no assault. Though the assault is short, it will still require you stop, rest, catch your breath, and gather some of your hidden energy before reaching the summit.

Great reward comes after some hardship, that is what I'm reminded of when we reached the summit.

Photo ops, video recording, chit-chat with other participants, and rest while enjoying the view, after all those things, the team decided to descend. We had our lunch after the climb. Some of the participants ate in the van, while my brother and I, along with Kuya Hawon (one of the participants), was invited by one of the residents to eat in their kubo, they even gave us mangoes for dessert. There are a lot of mango trees you can pass by on the way to summit, some of the residents will give you some even without you asking :).

Before heading to Mt. Nagpatong, we visited Museo ng Paglilitis Ni Andres Bonifacio (Bonifacio Trial House). Through the museum, I was able to review the events that sent Andres Bonifacio execution and I was able to know more about her relationship with his wife, Gregoria de Jesus.

Off to Mt. Nagpatong we go after feeding ourselves with history. The used to be trail to the mountain is now closed, since it is already a private property says our guide. So we headed towards Mt. Nagpatong via our van, and we just walk for about more or less 10 minutes to reach the Bonifacio Shrine.

The summit of Mt. Nagpatong is visible as soon as you enter the Shrine. The members who went to the summit said that the climb to the peak is an easy one and the view at the top is beautiful.

While the others climb, most of the team stayed in a hall (since it is raining hard) and had some rest. After the climb, we washed up at the Bonifacio Trial House and head back home. Some of the participants had some merienda at Digman Halo-halo.

It was tiring but it was fun, it's nice to meet people sharing the same interest, whether they are younger or older than you. It's nice to treat yourself with some fresh air and beautiful sights. It's nice to be reminded of the history that is usually forgotten.

Fulfilling Weekend At Nagsasa Cove, Zambales

Going to places I've never been with my friends or visiting familiar places while creating new memories with my family is what I look forward to every summer. More than a month ago, I saw the event post of REACH about the beachineering for a cause in Zambales. What caught my interest in this event is the volunteering part because when I travel I'm always about exploring the beautiful sceneries and the famous/unique food the place has to offer. Exploring the place while sharing with locals and meeting new acquaintances are something that will make my summer getaway a memorable and more fulfilling one.

As early as four in the morning, the REACH team started walking in a dark sandy area in Pundaquit (jump-off site) while carrying our bags full of goods to be donated. We arrived earlier than our schedule so, we waited until the sun rises before we finally had our (more or less) 1-hour boat ride to Nagsasa Cove.

Though the boat ride is quite long, you won't get bored or even feel tired because of the majestic mountains/hills and rock formations you'll pass by. And not to mention, of course, the emerald blue color of the sea.

When we arrived at Nagsasa Cove, each member grabbed and started pitching tents. Afterwards, the team started preparing for the outreach.

After the preparations were done, we gathered the Aeta kids along with their family members and started the outreach by playing some games. The kids we divided into 2 groups, for the younger ones, we played games like point the body part (ilong-ilong-ilong), bubuka ang bulaklak, and open the basket. As for the older kids, the boat is sinking and quiz game were the games being played.

Whether the kids win or not, they will still get a prize, among those prizes are school supplies and stuffed toys.

After the tiring but fun game, the children replenished their energy with the yummy spaghetti, cooked by the REACH team members.

The outreach didn't stop after the feeding program, new and old clothes were given not just to the children but to the adults as well. Relief goods, hygiene supplies, and medicines were also given to adult Aetas.

Our team had lunch after the outreach and then rest while waiting for the sun to come down so that we can enjoy and wash away the summer heat by the clear sea of Nagsasa.

Dipping into the sea while feeding your eyes with great views, it's like hitting two birds in one stone. I'm really amazed by how close the hills/mountains appears, I know it's not good to be envious, but I envy the locals of Nagsasa, they get to see and be surrounded by the wide sea and huge hills/mountains each day.

The hills surrounding the Nagsasa Cove is not just there for your view, there's a part of the hill where you can climb. The hill is a bit hard to climb, there are parts where you can't find a rock to grab on and the trail is quite small that you have to stop and give way for the other climbers who's on their way down (or up).

No matter how hard it is to climb the hill, it is all worth it because of the beautiful view that greet you. I forgot how many times have I mentioned the word "wow" while letting myself get immersed by the undeniably beautiful sight and for a moment, I almost forgot that I was in the Philippines.

During the night, the team gathered around the bonfire and had conversations (I guess). I was so tired that day that after our dinner, I just let the tent embrace me and had a peaceful sleep despite the heat. But a few minutes before one in the morning, I woke up and instead of sleeping back in the tent, I had a few conversations with my friends under the night sky while lying on the sand, enjoying the shiny stars and waiting for falling and shooting stars. And then, again, I fall asleep (yes, under the night sky) just until the crack of dawn.

On the next day, after saying goodbye to Nagsasa Cove, we visited another island called Talisayen. While the other REACH team members plunged into the sea, some of us enjoy the shade provided by the many tall pine trees of the Cove. The camping ground of Talisayen is a lot bigger than Nagsasa plus it is not as hot as in Nagsasa (thanks to the many trees in the area.)

Back to Pundaquit, some of the members had their last shower and of course we had our final goodbye in Zambales.

I felt a sudden jolt of happiness when I witnessed the kids at Pundaquit having fun.

Simplicity. That's what you should have when you go to Nagsasa Cove, there is no bed, no cell phone signal, no wifi, no electricity (Nagsasa is generated by generator only) there. The heat in Nagsasa is no joke, so aside from simplicity, bring a lot of water, you can buy cold water there but be sure to bring a lot of money, the price of 1 liter of water in Nagsasa is double or triple of the original. And another must bring in Nagsasa is extra food. The Aeta souvenir vendors on the island, if you won't buy any items from them, they will offer you to (at least) swap their items for some food. You can't buy to all the vendors there, so might as well share some of your baon to them, selling souvenirs is their only source of income and it's not everyday that there's travelers visiting their place and not all travelers will buy from them, giving them some of your baon is a already enough for them.

My weekend is indeed a lot more fulfilling by doing something more meaningful, if you, too, want to spend a fulfilling weekend visit the REACH Facebook page and check on their travel-volunteering activities.

How My Teeth Whitens In Less Than A Week

My teeth aren't yellow than they were before, right?

I'm not the type to write a review about a certain product brand since I usually doesn't mind about the brand, as long as the product (no matter what brand it is) provide its purpose I'm fine with it. But here I am writing my review about a toothpaste brand I have been using for more than a month now.

A friend of mine started posting about Nu Skin AP24 Whitening Fluoride Toothpaste on Facebook and my brother was interest and ask me to order. We started using it and the result is amazing... Aside from making my teeth whiter, it also solved my sensitivity to cold drinks/food, which I haven't achieved in other toothpaste that targets sensitive teeth. I usually felt pain on my left lower molars, but after 3 days of using the toothpaste, the pain decrease from 7/10 pain-scale (10 being the highest) to 4/10 and after 7 days, I've felt no pain at all... Now, I can enjoy ice cream and other cold food/drinks (nyom nyom!). The 3rd benefit I got from Nu Skin's AP24 Whitening Fluoride Toothpaste is the longer lasting freshness it leaves my mouth, there was one time when I wasn't able to brush my teeth after having lunch and to my surprise, 4 or 5 hours after eating my mouth still smell and feel fresh like I just finish brushing.

Whitening toothpaste normally contains Peroxide. Peroxide is effective for making teeth whiter but excessive use breaks your tooth enamel (the one that coats the teeth). On the other hand, AP24 use fluoride (instead of peroxide), it whitens teeth while protecting your teeth from cavities.

A tube (110g) of Nu Skin AP24 Whitening Fluoride Toothpaste costs 380php, expensive? Yes, but worth it. A tube lasts 6 - 8 weeks if you use it 2-3 time a day in a pea-size amount. The result may vary depending on how yellow your teeth is, there are some who whitens their teeth in just 2 days, for me it took a week to see minimal result and about a month to have a huge difference from my previous teeth color.

Why don't you try using it and enjoy the many benefits that you can get in just 1 toothpaste!

Pasinaya 2016 and Free Heritage Tour: Appreciating Philippine Art and History

I, together with Mavic and Tetet, planned on joining the free heritage tour around Manila hosted by Royal Posted Heritage Guided Tour. The said tour set its meeting place in the Manila Post Office's lobby between 12:30-1 pm... Since we had a lot of time after attending the 8 am Mass at The Feast, we killed our time appreciating Philippine art at CCP for the 2016 Pasinaya Open House Festival.

Anything that is related to Philippine art, whether it be a painting, drawing, song, dance, play you can see it at the festival. Since we were only killing time, we weren't able to see a lot, we spend more time on viewing paintings, drawings, and crafts.

We tried to watch a play, but the theater was already full. We also tried to watch ballet, but it was already finished when we arrive at the venue, so we just decided to have our lunch and prepare going to the walking tour.

When we arrived at the post office, the tour has already started, but I believe we haven't missed a lot (haha!). It was my first time in the post office and I was amazed by how huge it is, it's old but the interior is quite classy.

After having a quick tour inside the post office, we then proceed to Binondo. Our fist stop is the restaurant where, according to our guide, Rizal, Bonifacio, and the katipuneros used to eat. We're already full enough to eat another meal, but still decided to order to have a taste of what our heroes used to eat. Our initial plan was to order Lumpiang Shanghai since it was Rizal's favorite, but it was already sold out, so we ended up ordering Miki Bihon.

Since it was Chinese New Years Eve, some group performed the dragon dance outside the restaurant and went inside to personally greet everyone.

After filling our stomachs (again), we proceed to other significant places within Binondo. We passed through an alley where various stuff was sold.

We also passed by the Panciteria mentioned on Rizal's El Filibusterismo. Never did I imagine that a place mentioned in a book I once read did exist.

We also visited General Antonio Luna's house located on Urbiztondo Street. It's very saddening to see a hero's house in a really bad state, not to mention that pedicabs parked in front of it. I hope our government can do something about it.

Before seeing General Luna's birth house, we passed by a condominium and our tour guide said that the location of the condominium is the alleged true birth house of General Luna.

We checked for the location where Teodora Alonzo (Rizal's mother) spent her last days. Located at San Fernando Street, once the home of Rizal's mother and his relative is now an apartment/condo building.

When I was still working at a clinic in Binondo, I always see the fountain in the plaza and honestly, I didn't pay much interest about it, but I learned during the tour that the fountain was one of the 2 oldest fountain in the area.

We also went to a Chinese Temple called "Bell Church", located at 8th floor of the Ligaya building (I don't know the exact location). It is said to be frequented by women devotees.

The temple is not huge, but it is spacious and peaceful enough to spend some prayer time.

We also visited various bakeshops and other restaurants which, according to our tour guide offers great various Chinese food. After so many hours of walking and learning we parted with our tour guide and fellow turistas (naks!) and had a few drinks and more girl talk before going home.

The tour was tiring and it is not organized as I thought it should be, not to mention the crowded Binondo since it is New Years Eve, but nevertheless I learned something and I get to appreciate the places that I used to see and just passed by. I really hope that the government will do something about restoring or preserving the places that has great historical value and I believe it is not just our government's duty to look after those places, we, as a citizen of the Philippines should also do our part as a Filipino.

My Goal For 2016

My goal for 2016 is to involve myself in things that will make me happy, better, and make me some money (who doesn't need money,anyway?). Let me start with career. I'm already 26 years old and I, believe it or not, still doesn't have a regular job. I graduated in 2011 and was blessed enough to immediately get my license to be a Physical Therapist. Then I started applying but to no luck,I always (as in ALWAYS) ended being a volunteer (or auxiliary) Physical Therapist but nevertheless I still give my 100% to help my patients recover until 2 years ago, I found myself not being happy or motivated with what I'm doing. I found myself battling every morning whether to go to work or not, so I have decided to stop deceiving myself and said goodbye to where I was working. Then, I started making money on my own by being a private PT, instead of the patients going to hospital/clinic to get treatment I went to their homes to give treatment, up to now I still have a patient/s a treat regularly. I may not be totally happy as a PT but I can assure that I'm giving my very best in treating my patients. This year, I'm giving myself one last chance as a PT, I'm currently processing my application overseas and if I'll fail in my application I'd finally say goodbye to PT world and pursue a career in writing. I may not be a good writer now, but I will be... soon. And I'm going to involve myself more on any activities that will help me improve my writing skills this 2016.

My second goal for this year is to become healthy. I tried to become healthy last year, but (again) I messed up. This year, I set a goal of losing 11-15 kilos, I'm aiming for a normal BMI (Body Mass Index). For my height I needed to weigh 41-55 kilos to have normal BMI, achieving 50 kilos below will prevent me from donating blood (you need to be at least 50 kilos to donate), so I decided to be at least between 50-55 kilos. My family already started eating brown rice about 2 years ago and then we also lessen our red meat intake. This year, I aim to stop myself from eating canned goods, chips, and unhealthy drinks and I also want to join in the fun run events with my family.

My third goal is to experience more about the things that I like. Last year, I've traveled quite a lot and I've tried cooking and baking more recipes. This 2016, I want to try mountaineering again, I want to conquer more mountains this year. Also, I want to learn more about (South) Korean culture, I know this isn't a surprise anymore, I love everything about South Korea. Before, when I'm asked which country (aside from the Philippines) I'd like to live I'd answer New Zealand but after watching various Korean variety shows, I now dream of living in South Korea. And I want to travel more with my family this year, we haven't tried travelling outside the Philippines, so I hope we can this year.

This year, I dare to step out of my comfort zone and follow what my heart desires. This year, I dare to conquer my fears. This year, I dare to believe and love myself more.

Hotteok (호떡/Sweet Korean Pancake) for my Sweet Tooth

It's very delicious... Really delicious...

My love for sweet food and Korean food has led me to an idea of trying to make a very popular Korean street food called Hotteok. It is like the Korean version of our Piaya. Hotteok seems hard to make but it isn't. But let me warn you, patience is needed to make this sweet snack.

INGREDIENTS:

Dough:
1/2 c. warm water
1/2 Tbsp. yeast
1/2 Tbsp. sugar
3 c. flour
1 c. milk
1/2 Tbsp. salt

Filling:
1/4 c. brown sugar
1/4 c. white sugar
1/2 tsp. cinnamon powder
2 1/2 Tbsp. peanuts,chopped

PROCEDURE:
1. Make the yeast mixture. Mix warm water, yeast, and sugar. Set aside for approximately 5 minutes to allow yeast to grow.

Make sure the water is warm and not hot.
If it's hot, the yeast will not grow.

2. While waiting for the yeast to grow, sift the flour and salt.
3. Add milk and the yeast mixture to the flour. Mix until well blended.

4. Cover the dough with a plastic or lid and let it rise for 3 hours.

5. Prepare the filling while waiting for the dough to rise. Just mix the brown and white sugar with cinnamon powder and peanuts.

6. After 3 hours, knead the dough. Sprinkle flour on the dough from time to time while kneading to avoid it from sticking in your hands.

After 3 hours, your dough will double its size

7. After kneading,put some oil (or flour) into your palms and grab a handful of dough. Flatten the dough, put a spoonful of the filling and seal the dough.

With this recipe, you can make about 15-18 pieces of Hotteok.

It's hard to make equal sizes of Hotteok. Haha!

8. In a non-stick pan over low heat, place the Hotteok dough and fry one side for about 30 seconds. Flip the dough, flatten it and cook for about a minute. When that side becomes golden brown,flip it again and cook until the other side become golden brown as well.

9. Enjoy your homemade Hotteok!

Easy 김치 볶음밥(Kimchi Bokkeumbap/Kimchi Fried Rice) Recipe

About a month ago my brother bought a jar of kimchi. We had it as a side dish and one time my brother mixed it in his pesto pasta. Today, I tried making kimchi bokkeumbap or kimchi fried rice. This recipe is really simple, all you need is leftover rice and kimchi. That's it! Those two ingredients are enough, but if you want to add pork, beef, ham, or bacon you can do so, just like what I did today, I added hotdog into my kimchi fried rice.

Ingredients:

1/2 c. kimchi (cut into bite-sized portion)
1 1/2 c. leftover rice
2 pcs. jumbo-sized hotdog (cut into small cubes;optional)
2 Tbsp. kimchi juice

Procedure:

1. Saute hotdog for about 2 minutes.

2. Add kimchi and saute for another 2 minutes.

3. Add the rice and cook for another 5 minutes. Also, add the kimchi juice.

4. Top the fried egg on your kimchi bokkeumbap and you're ready to go!

Oops! I kinda ruined the egg.

I didn't add any salt or seasoning because the kimchi's flavor is enough (for me) to make this recipe delicious, but you can add if you want to, it all depends on your taste.

Learning 한국어 (Hangugeo/Korean Language)

I'm into Korean dramas since I was in high school, Korean movies and food after I graduated from college, and this year I've been quite addicted to Korean variety shows and songs which lead me to be more interested in learning their language.

My brother and I decided to enroll in Korean Cultural Center's 3rd term (for this year) for Korean language class, but unfortunately the schedule that we wanted was already full. So, out of my desperation in wanting to learn the language, I decided to study it on my own.

One thing I like about internet is that when you need to know something it's just a click away. So, I used this awesome benefit of the internet for my self-study of Hangugeo. And, here, I list the websites that I'm relying on:

1. Pinterest

This is where I first learn how to write Korean letters (Hangul). There's a photo I pinned that really helped me to easily remember how to write Hangul, especially the consonants. Also, there are a lot of photos about common Korean phrases and words that are written in Hangul with English translation and Romanization,which really helps me.

2. TenguGo Hangul Android App

There are many apps available, but this particular app really works well with me. This helps me to practice and remember (even more) about Hangul. Also, through this app I was able to learn about some rules about reading or pronouncing Korean words. What I actually like about this app is the quizzes after each lesson which, I think, is very helpful.

3. YouTube

It's easy to remember or to learn something if you see and hear it, that is why I also use YouTube for my self-study. There are a lot of videos teaching you how to read and write Hangul, my favorite videos were from HanNa한나, 99Korean, KoreanClass101(also check their website here),and my favorite videos are from sweetandtastyTV(visit her website as well here).

4. How to study Korean website

Anything you want and need to learn about Korean words, numbers, phrases, grammar, pronunciations, etc. you'll learn it here. They have several lessons which are divided into six units (starting from learning how to read up to advanced Korean grammar). So, better check their website if you really wanted to learn Hangugeo.

Right now, I'm studying at least 3-5 words/phrases a day... I practice writing and reading it over and over and when I'm confident about it, I, then try to write all the words/phrases I've learned from the earlier days to see if I still remember them. I still make mistakes because I'm still confused in the pronunciation of some letters,like the lettersㅐ(ae) and ㅔ(e) which both are read as "e", but I believe that one of these days I'll be able to speak Hangugeo better and be able to watch their dramas and films without a need for subtitles. If that happens that will be 대박 (daebak,meaning big win/great success/awesome)!

Things To Do In Bicol

When I first set foot in Bicol last 2009, I’m already happy to witness the perfect cone of the Mayon Volcano, wander at one of the beaches in Cam Sur, and to be in CWC but when I visited the place again last week I have discovered that there’s more to explore in Bicol.

When we visit Bicol, there's only one place where we feel at home and that would be at Pier one 39 Spring and Beach Resort. The resort is situated at Brgy. Sto. Niño, Sagñay, Camarines Sur. The people at the resort, especially the owners are very accommodating. For more info about the place, visit their Facebook page here.

This is where we usually stay.

They have a pool where the water came from the spring and the sea. They drain their pool every night, so you can be sure that the pool is clean every single day.

Here are the things I did with my (extended) family in Bicol:

1. Stroll along the beach of Sagñay

From Pier one 39 Resort we walked (the original plan was to jog) up to the Nato port. And what did we do at the port? Have a lot of photo ops!

Not into walking or jogging? No problem! Grab your bike and feel the sea breeze.

2. Fly a kite and build sand castles at the beach

You can seldom (or maybe never) fly a kite in Manila, so take advantage of being in a windy place.

Also, kids won't mind getting dirty playing with sands it's only during summer they get to experience it!

3. Trek to Coyao-yao Falls

Most commonly known as the Sibaguan Falls, it is located (obviously) at Sibaguan in Sagñay. If you've seen the Mother Falls at Baler, you can say that Coyao-Yao Falls is the smaller version of it.

There's no one to collect the fee when we went, so it's free for us ;)

You need to trek for about 30 minutes to reach the falls. Easy-peasy, right?

There were some locals harvesting coconuts, so it's a bit of a struggle in this part.

Don't be alarmed (or be disappointed) when you this, it's not the falls. But when you see this, you can be sure that you're a few minutes away from Coyao-Yao Falls.

4. Explore the islands in Caramoan

On our 2nd day in Bicol, we drove for about 3-4 hours on a curvy road to explore the popular location of Survivor. The wind was strong when we arrive, so we took our lunch first and waited for a couple of hours for the wind to calm before starting our Survivor experience.

Our tour guide said the Caramoan consists of at least 30 islands, if it's true, then we already visited 3 of them. The first island we visited is the Matukad Island. Among the 3 islands we explored, this one is my favorite. The combination of clear, blue water and fine, white sand is superb!

Matukad Island is known for the lagoon that holds the mystical Milk Fish but before seeing the lagoon, you need to climb a very challenging rock formation.

Our visit to the island wouldn't be complete a group picture!

We're supposed to visit 4 islands, but before reaching the 4th one we requested to go back to Matukad Island and there we swam until we get tired.

The second island we visited is the Lahus (or Lahos). I find this island quite cool because it has 2 shore lines. The first shore line is where the boat dock and the second one is seen on the other side where tourists usually enjoy the view.

There is also a rock formation on Lahus Island, I saw a foreigner climb this one, so I tried it as well. The rock formation here is more spiky than the first rock formation we climb at Matukad Island.

I'm really careful not to sit on the rocks on my way down because it might reap my leggings. I had some small scratches on my palms after climbing.

Err, the struggle is real

The last island we visited is a good site for snorkeling. Actually, you don't need to snorkel to see the corals and other sea creatures, the water is crystal clear that you can see it just by peeking while you're on the boat.

Just like the first 2 islands we've seen, there is also a remarkable rock formation in Cagbanilad Island.

And, of course, we grab the chance of having a great group picture on this remarkable rock.

5. Visit the largest statue of Mama Mary

Before heading back to Sagñay, we dropped by the Shrine of Our Lady of the Most Holy Rosary, also found in Caramoan.

Before seeing the largest statue of Mama Mary in the country, you need to take 500+ steps. The stairs are well cemented but the height of the stairs are not equal, you'll be surprised to take higher strides then lower in the next stair you stepped on.

6. Quick trek to the Miraculous Medal Hill

Before reaching the Hill, you will pass by the Consocep Mountain Resort where, I was told, you will find the Consosep Falls. We first admire the beauty of Bicol at the ruins before trekking the hill.

It was already drizzling when the photo above was taken and then there comes the rain. We waited for maybe 10-15 minutes for it to stop before trekking to the Miraculous Medal.

7. Meet and greet with the deers in Ocampo

After our soulful trip to the Miraculous Hill, we drove to the Deer Farm. We have taken the wrong road, so we spent about an hour or so to get on the right one. Thanks to the helpful locals, we could have spent more time maneuvering on the wrong way without them.

No entrance fee or registration fee is collected at the farm. There's no time limit as well, just follow farm's simple rules and you're off to enjoy the company of the deers. Warning to the kikay ones, the deer poops are everywhere!

8. Remember Christ’s passion at Kawa-Kawa Hill in Legazpi

Stations of the Cross are common during the Lenten season among Catholics, but it doesn't have to be Holy Week for us to remember the passion of Christ. What the Kawa-Kawa Hill offers are gigantic sculptures that present the 14 Stations of the Cross, from the Last Supper up to the Resurrection of Christ.

The pathway in between stations is not a joke, it's as if you are also experiencing the sufferings of Jesus while taking the path.

Aside from the life size statues, you will also enjoy the place's beautiful views.

9. Say hello to Butanding in Sorsogon

We went straight to Sorsogon after our knee-jerking journey in Kawa-Kawa Hill. Our main agenda there is to see some Whale Sharks or Butanding among Filipinos. We arrived at the place a few hours before night time so we just spent our time wandering around the place because you can only see the Butanding during day time.

The following day, we headed to Sorsogon's tourist center (open as early as 7am) to register and rent a boat. After registration,you have to watch a video regarding the do's and don'ts about Whale Shark interaction and a few information about Butandings.

The boat rental costs 3500php for 6 persons inclusive of tour guide, the registration costs 100php for Filipinos and 300php for foreigners. They are strict of limiting 6 tourists per boat for safety purposes. Some tourists who travel alone wait in front of the tourist center for other tourists who will ride the boat that are below the maximum number of persons. In our case, we had Charlie (from Luxembourg) joined our group.

Since I'm not a good swimmer, my only plan, at first, is to just watch the Butanding from our boat, but like what our tour guide said, once you're in the sea you'd just want to plunge into the sea to have that close encounter with the Butanding. And most of the time, you wouldn't see the Whale Sharks from above, you really need to go beneath the sea.

After spending 2 hours at the sea, we all deserve to have a scrumptious lunch.

10. Enjoy sunset in Sorsogon

Like what I've said, we arrived in Sorsogon a few hours before night time, we haven't seen the Whale Sharks immediately, but we're still blessed to have a time appreciating a lovely sunset.

When in Sorsogon, be sure to check in at Vitton Beach Resort. Their room rates, in my opinion, are very affordable for a very comfortable stay and an awesome view.

11. Buy pasalubong in Cagsawa

After our overnight stay in Sorsogon, we went to Cagsawa to buy some pasalubong. You can transfer from one pasalubong center to the other in this area, it is situated just outside the Cagsawa Ruins.

For the second time, I enjoyed my visit to Bicol. Again, thank you Tita Mabel, Tita Nene, Tito Mar, and Angelo for another unforgettable summer vacation!

Sagada Saga Part III: I Love You, Goodbye Sagada!

Day 3 (March 29,2015)

At 7am we say goodbye to Sagada but our journey didn't stop there because we still had our side trip to Baguio! We first had our brunch at Mia's Muffin House in Bauko, Mountain Province. Their carrot cake is a must-try, so grab some when you're there!

Next, we headed to the Highest Point located at Cattubo, Atok, Benguet. The place is about 7,400 feet above sea level.

After enjoying the view at the highest point and after having so many photo ops, we tried strawberry picking and hoard vegetables in La Trinidad, Benguet.

Our tour ended at the location of the teleserye Forevermore. One of the reasons why I'm super excited about our Sagada trip is because of our side trip to La Presa. Yeah, I won't deny that I'm a fan of Forevermore... Super fan to be exact (haha!)

My Sagada trip is absolutely fulfilling despite the fact that it was fully tiring. I'm very thankful that I'm able to explore an awesome place with an equally awesome people. I'm very much grateful for Pilipinas Roadtrip for the memorable and hassle free trip and not to forget, of course, the competitive driver suitable for the competitive guests (haha!), Kuya Kuneho!

Sagada Saga Part II: Our Tadhana in Sagada

Day 2 (March 28,2015)

Breakfast is very important, especially when you're about to do something that is very challenging. What's the best energy booster? Sandwich and Sagada's lemon pie!

We weren't able to make a reservation the night before
so when we went there the only available food is their lemon pie

The first activity on our second day is the trek to Bomod-ok Falls (aka Big Falls). Again, I didn't expect that the track would be that long. The first part of the trail has been the unending stairs, just kidding! It has an ending, of course, but it is really (as in really) long, but the good part about it is that is it cemented (yippee!).

Don't worry... They will provide it.

The second part of the trail is the rice terraces, again, there's a cemented path between the terraces for you to walk but still be careful because the path is not wide enough, you might slip and say hello to the mud.

in it so that we will still be refreshed when we trek back

After half an hour of enjoying the beauty of the majestic falls, we decided to start ascending. On our way up, instead of taking the same trail when we descended our tour guide, Nanay Liza, suggested that we take another route. She said that this route is a bit farther, but much easier because we wouldn't have to ascend on the cemented stairs.

When we reach the main road, we loaded ourselves on a jeepney that will bring us to where our van is waiting. Riding on a jeepney is a common thing for me, but riding on the roof of it is a totally new experience! It was buwis buhay, but it was totally fun!

At around 3pm, we had our lunch at the Misty Lodge. Of all the restaurants we've tried this one is my favorite, it feels very homey.

After lavishing our meal, we headed to the Pottery House.

Lake Danum is famous for sunset viewing, but when we visited the lake it was drizzling, so we weren't able to say goodbye to Mr. Sun yet the lake itself is so astonishing that you shouldn't miss visiting it.

From the very calm and peaceful Lake Danum, we visited a place that calms our mind and gives peace to our hearts: Church of St. Mary the Virgin.

When you visit a place, it's mandatory to buy some pasalubong. So, off to the souvenir shops we go! After visiting different souvenir shops (which offers pretty much the same items, haha!) we headed to Salt and Pepper for our dinner. The food they offer are so-so but I wouldn't forget this place. Why? Because there we found our tadhana (LOL!)

Since we were bitin on our blueberry cheesecake at Salt and Pepper we went to Strawberry Cafe for a mouthwatering yoghurt.

Sagada Saga Part I: Hello Sagada!

Even before watching the movie "That Thing Called... Tadhana" I already wanted to visit Sagada and my urgency to visit the place reached its peak after watching it. With my colleagues, we were able to get a Sagada tour package with a side trip to La Presa (Oh yes! It is the location of the teleserye Forevermore) at Pilipinas Roadtrip.

Day 1 ( March 27,2015)

After some photo ops at Banaue, off to Sagada we go! Sagada is just a small town in Mountain Province. A small town that requires 12 hours of journey (from Manila) along curvy roads.

Our first stop... Sagada Weaving. You can watch the weavers do their thing but you can't take any photos. There's nothing much to see here actually but it is always amazing to see how a certain product is made.

After checking in at Umatan's Lodge, getting some rest and changing our outfits we headed to see the ever famous Hanging Coffins.

Going to the Hanging Coffins is not easy. You have to trek down a very steep and very rocky trail which, of course, I didn't expect.

Just to see those coffins I don't think it is reasonable go through a lot of hardships, but the scenic views while going there is really admirable, so you should visit it too but I suggest not putting it on your top list.

Sagada is famous for their caves. They say that it is the reason why you visit the place and that your Sagada experience won't be complete without seeing it. You have 2 options when it comes to caving: 1) Normal caving (Php 125), wherein you'll do spelunking either in Sumaguing Cave or Lumiang Cave and 2) Cave Connection (Php 400), wherein you'll enter in Lumiang Cave and exit at Sumaguing Cave.

Spelunking is for the one's with a brave heart, when you try it, be sure you're ready physically, mentally, and emotionally. I know I wouldn't try spelunking (I'm not ready yet) but the day before we went I changed my mind, I packed my spelunking attire and I'm a bit (just a bit) ready to try it! But after our visit to the hanging coffins, my legs are already exhausted and I don't think they can handle another overtiring activity. So, while some our friends test their limits by spelunking at Sumaguing Cave, the 6 of us enjoyed the beauty of Sumaguing and Lumiang Cave just by staying at the mouth of both caves.

Instead of the usual Christmas celebration, we have decided to hold an outreach program at Hospicio de San Jose but the place (and the other orphanages we called) was already fully booked when we ask for a schedule. So, our supposedly Christmas outreach turned into pre-valentine's outreach.

Our original plan was to have a program (with games and production numbers) but the kids (grades 1-6) are only available from 4 pm-5 pm (during weekdays) because some of them are in school until 4pm and their dinner starts at 5 pm, so we just gave our valentines gifts and distributed the dinner. Aside from the loot bags loaded with necessities we also gave biscuits, cupcakes, milks, chocolate drinks, juices, and items for their grooming.

We started the event with a prayer and when Tetet (host of the event) asked who will lead the prayer the all the kids raised their hands very willingly and happily volunteering themselves.

We thought we wouldn't see the kids have their dinner because when Sarah inquired they told that we can only distribute the gifts and dinner, but that day the staffs allowed us to stay a little longer and have some quality time with the children.

Reminders from Pope Francis

Pope Francis' 5-day visit in the Philippines left us a lot of reminders through his speeches and homilies. And here, I listed some quotes that dug deep into my soul which left me thinking how well I've been as a Christian.

"You must make time each day for prayer... if we do not pray, we will not know the most important thing of all: God’s will for us." (Meeting with the Families at MOA Arena; January 16,2015)

"What's my purpose?" and "What is God's will for me?" Two questions that I couldn't find any answer. To be honest, I envy those who, at a young age, already know what they want, who already discovered their calling. Well, I guess, I should pray more and wait a little longer knowing that one day I'll find the answers to these questions.

"Do not hide your faith, do not hide Jesus, but carry him into the world and offer the witness of your family life!" (Meeting with the Families at MOA Arena; January 16,2015)

I've been exposed to serving the church since I was 7 years old. I've been an altar server, a choir member, and I've been part of Catholic organizations. I attend mass, read the Bible, and pray the rosary. But, through all these years, have I really carry Jesus into the world?

It's true. It is easier to love than allowing yourself to be loved. I love myself, I really do, but I don't think I deserve somebody else's love. Most of the time, I'm taken aback by the kindness of others towards me. Maybe it's time to learn how to receive God's love through others.

Leaving my pockets empty is not a problem. What hesitates me from emptying them is that I'm not quite sure if the person on the receiving end will put it into good use. There are those who take advantage of the Filipino's generosity, for example: a person asks a little help for the payment of their mother's wake/burial and then came the following week, the same person asking help for the payment of their father's/sister's/brother's wake/burial (I bet bus commuters are familiar with this scene.) Should I empty my pockets to these people?

I usually have a hard time answering when ask about my talent. Although I've been a choir member for many years, I don't think I'm good at singing. Although I've won a couple of times in declamation contests in my younger years, I don't think I'm good at speaking. Although I've been able to write a few articles when I joined the journalism club in my elementary and high school years, I don't think I'm good at writing. I think that I am not qualified. I think I am not good. I think I am unworthy. But after Pope Francis reminds me that I am a child of God, I've realized that that alone is enough reason for me to be overqualified, to be the best and to be worthy of all the blessings I have.

When at home (which is most of the time), I just lay on our sofa, hold my tablet and play or surf the net, when the tablet's dead I'll turn the TV on and watch. I do have dreams, I do have plans but because of distractions I forget about them. I know... I shouldn't blame my tablet or the TV. It's my fault... From now on, I'll make use of every opportunity I have to achieve my dreams with my God-given gifts.

1. Meet Mitch Albom ( February 22, 2014)

This is one of the highlights of my 2014. Thanks to National Bookstore for bringing Mitch Albom in the Philippines! And I hope to see him again. :)

2. Meet Gretchen Ho (March 5, 2014)

I'm not an active person but I love watching basketball and volleyball. And Gretchen Ho, a former volleyball player of Ateneo Blue Lady Eagles, is my favorite player. I'm really happy to see her in person when I watched a game with my friend Sarah.

3. Try mountain climbing (May 3, 2014)

I haven't climb again after my first hike but definitely this 2015 I plan of conquering more mountains! To read about my mountain climbing experience click here.

4. Attend Hillsong's concert (June 11, 2014)

At first, I thought I won't be able to watch Hillsong's concert last year because when I checked for their tickets online it was already sold out. Good thing a colleague sold his 3 general admission tickets because someone gave him a VIP ticket. So, I went to the concert with my friend Carla and Mavic and we really had a blast hearing the band live!

6. Learn how to cook

I only rely on cook books, blogs and YouTube if I wanted to try a particular dish, so I'm not sure if I should cross this out in my bucket list. After a year of doing my best to learn how to cook, I'm still not good at it but I can make some pretty good dish. Well I don't have to be a good cook, as long as I can make something that is edible that's fine with me.

Here are some of the recipes I've tried:

1. Pininyahang Manok

3. Tuna Dukbokki

4. Omurice

There are other recipes that I've tried but I wasn't able to post it.

This 2015 I believe that I'll be crossing out more than 6 from my bucket list!

Usually it's my dad or my uncle who cooks our breakfast, but yesterday I woke up with no one else to do it but me. So with left-over rice and my love for Korean food, I instantly knew what I'd cook... Omurice!

I know... It doesn't look appetizing but it tastes good.
Seriously... it tastes good.

Aside from the left-over rice (about 1 1/2 cup), I grab 1 onion, 2 hot dogs, ketchup (about 2 tbsps.), and 4 eggs for this recipe. This dish is a no-brainer, just mix everything, except for the eggs, and you're good!

Saute the onion and hot dogs.
You can add vegetables like carrots, peas, or any vegetables you like.
You can also use ham instead of hot dogs, it's really up to you.

After a minute or two add the rice

Add the ketchup.
Fold it until well blended and set it aside.
I divided it into 2 portions: for me and for my brother.

You need 2 eggs for each serving.

After beating the eggs, off to the pan it goes!

When the bottom side of the egg is set, place 1 part of your rice.

Flip the sides of your scrambled egg to cover the rice.

This is how my first serving looked like. I kinda burned the egg and it was too small to cover the rice.

Oh well, there's always room for improvement and it shows on the second serving. Haha!

By the looks of it, I know I wasn't born to be a cook but what's important, I think, is that I tried.

Trip to Maginhawa Street

Maginhawa Street in Teacher’s Village Quezon City is heaven for food lovers. With all sorts of restaurants located in the area, it has been part of every food trippers’ bucket list. Out of the many food stores in Maginhawa, I’m able to try 4 restos with my brother and HS friends yesterday even though it’s raining.

APPETIZER

Since my brother is craving for some steak, our first stop was the Empire Steak, but the place was still close (it opens at 12 noon) when we arrive (sorry for him) and so, we look for another shop and decided to look for one that offers coffee because it was pretty cold due to the rain. And then, we found Friuli Trattoria. There we ordered coffee (of course) and pizza.

Simple Tip: Maginhawa is a pretty long street. Know which restaurants you wanted to visit and as much as possible know their exact location. A Worth Having Haircut

If Ice Bucket Challenge is for ALS (Amyotrophic Lateral Sclerosis), then haircut challenge is for... Cancer. Yesterday, Matrix Philippines held a life-changing event at SM North EDSA called "8-inch Cut for Cancer Challenge". The challenge asked women to donate at least 8 inches of their hair for the benefit of Filipino cancer kids.

At first I was hesitant to join, not because I don't want to donate or cut my hair but because I don't know how short my hair would become after the challenge. I already have a short hair (about an inch below the shoulder) to start with, so if 8 inches will be deducted from it, I thought (I just thought) I'll be more likely close to being bald (kinda exaggerated but it's what I thought). I don't really mind being bald, but a somewhat bald female physical therapist is unsightly to the patients. But because I really wanted to do the challenge, I grabbed a tape measure and see how long is 8 inches in my hair and when I saw that I'd still be pleasant looking to my patients, I immediately told Peng (my highschool barkada who invited me) that I'll take part in the said event.

At the event, you'll get a free haircut (wow, right?) by the hairdressers of David's Salon (double wow, right?) and you can make some bracelets to be given to the children while waiting for your number to be called or after you do the challenge (triple wow! haha!).

Usually, when I had a haircut it's only because of two things: 1) I want a new look, and 2) It's freaking hot in the Philippines and I'm so tired tying my hair! It's always like that, I want a new haircut just for myself. But with this challenge, I've found a new reason for getting a new haircut. And with this realization, I was reminded of quote by Ralph Waldo Emerson, "The purpose of life is not to be happy. It is to be useful, to be honorable, to be compassionate, to have it make some difference that you have lived and lived well."

Tuna Dukbokki at Home

When you crave for Korean food and you don't have enough budget to eat in a Korean restaurant, you'll be forced to cook your own Korean food just to satisfy your craving.

For our breakfast today, I prepared one of the popular street food in Korea... Dukbokki (Spicy Rice Cake)! This super easy to make dish will surely spice up your day!

Ingredients:

250 g Rice Cakes

1 can (150 g) Tuna

1 1/2 Tbsp. Gochujang (chili paste)

1 1/4 c. Shrimp stock (1 shrimp cubes dissolved in water)

1 pc. Onion, chopped

3 cloves Garlic, minced

1/2 Tbsp. Sugar

Procedure:

Soak rice cakes to soften.

Saute onion, garlic, and tuna.

Pour in shrimp stock, sugar, gochujang, and rice cakes. Stir from time to time while waiting for the sauce to thicken.

You can now eat the Tuna Dukbokki! You can serve it with sliced spring onion or sesame seeds.

I'm Learning How To Cook!

When I was in grade 6, I (with my teacher or guardian) was always the representative of our school in cooking contests. In high school, I’d actively participate in our cooking lessons in Home Economics. But my heart was not into cooking, so I grew up loving foods but not putting too much effort into cooking.

But since I’m in my mid-20’s I made a conscious decision to learn how to cook. I’d search for recipes online, read cook books or watch cooking shows and then try cooking out the recipes. I’ve decided to cook for my family at least once a week and try posting the recipes and my cooking experience here (haha! Actually, I’ve started 2 weeks ago, my 1^st recipe was the Pininyahang Manok, for the recipe click here). I made this decision as a gift for myself!

Last Saturday, I made 2 dishes. First is the Coca Cola Chicken and the second one is a dessert called BanaNut Truffles.

Coca Cola Chicken

Ingredients:

1kg Chicken cut into serving portion

¼ c. Soy Sauce

2 tbsp. Oyster Sauce

3 pcs. Gaclic, minced

¼ c. Banana Ketchup

500 mL. Coca Cola

Pinch of ground pepper

Procedure:

Marinate the chicken with soy sauce, oyster sauce, garlic, and pepper for 30 minutes or more.

In a pan, mix the marinated chicken (including the sauce used for marinating) with the ketchup and coca cola and bring it to a boil.

Just add the ketchup

Of course, don't forget to add the Coca Cola

Wait until the sauce thickens and the Coca Cola Chicken is ready to serve! That easy, eh?

BanaNut Truffles

Ingredients:

1 pack crushed grahams

5 pcs. overripe bananas

¼ c. sugar

2 tbsp. nuts, chopped

Procedure:

Mash the bananas.

Mix the bananas, crushed grahams, sugar, and nuts. Refrigerate for an hour.

This is how it looks like after mixing the ingredients.

Oh! Thanks to my dear brother for mixing it for me! Haha!

After an hour,form the mixture into balls and sprinkle or cover it with your favorite toppings. I used cocoa powder as a topping. Refrigerate for an hour or more before serving.

The recipe makes about 25-30 pieces of truffles
depending on how big you make each piece.

A Twist to Pininyahang Manok

I love pineapple but mixing it in a viand is a no-no for me, but today I tried to make my own version of Pininyahang Manok.

Here's what you need:

1 kg chicken cut into serving portion

5 cloves garlic minced

1 pc. medium onion sliced

1 large can pineapple chunks

2 pcs. medium carrots wedged

5 pcs. small potatoes wedged

1 small can of liver spread

1/2 pack of cheddar cheese grated

Procedure:

Marinate chicken in pineapple juice (from the can of pineapple chunks) for 30 minutes/ more.

Saute onion and garlic in a little oil, then add chicken, cover and let simmer for 10 minutes.

Add pineapple juice (which was used for marination), pineapple chunks, carrots, potatoes, liver spread, and grated cheese. Let simmer until potatoes are soft. Add seasoning (I used Namnam) to taste.

Viola! You can now serve the Pininyahang Manok!

I'm not a good cook. I've tried to cook viands a lot of times but most of the time 'twas epic fail. But today is different, this Pinanyahang Manok recipe is havey! That's why I'm posting it. Haha!
