Meatball Casserole

Ingredients:

1 tbsp. olive oil
1 large onion, diced
1 large bell pepper, diced
2- 4 oz. or 1 8 oz. can sliced mushrooms
1 jar pasta sauce
1 can diced tomatoes
1 can mushroom soup
25-30 frozen Italian meatballs
1 lg box whole wheat penne pasta
Parmesan cheese
1 8oz. pkg. shredded mozzarella cheese

Directions:

Spray pan with cooking spray. Heat oil in pan. Saute onions, peppers, and mushrooms until onions are clear and peppers are softened. Add meatballs, tomatoes, pasta sauce, and soup. Sprinkle Italian seasoning over sauce. While sauce is cooking cook pasta according to directions on the box, and drain.. Pour drained pasta in 9x13 casserole dish. Then, pour sauce over the pasta and stir gently. Sprinkle with Parmesan cheese and mozzarella cheese. Cover dish with foil sprayed with cooking spray. Bake at 325 degrees for 30 minutes or until the dish is thoroughly heated and cheese is melted.

Mixed Fruit Smoothie

I had some fruit at home that was getting ripe so I used it to make this fruit smoothie. Then I took part of it out and added veggies to it to make my green drink. I was also thinking that I could use part of it to make a mixed fruit bread, like banana nut bread, but with other fruits. It tastes almost like applesauce, but has other fruits in it as well. If you think of other ways you could use this combination for baking please share them. I know some people add applesauce in their brownies in place of part of the oil. I don't see why you couldn't use this in the same way. The kids will like it too.

Ingredients:

1 can crushed pineapple, in it's own juice
**you could use fresh pineapple
4 or 5 small bananas, peeled
2 pears, peeled
2 apples, peeled

Directions:

I always try to start with the ingredient that has the most liquid so it helps the blender work better, so in this recipe I started with the pineapple. I gradually added the other fruit and blended after each addition. This makes a blender full. Refrigerate.

Cheesy Chicken Fajita Casserole

I have this recipe in the oven cooking right now as I am typing this post. It looks so delicious. It is colorful with the red of the tomatoes and the green of the arugula. I am trying to eat more fruits and vegetables so I also added onion and mushrooms.

Ingredients:

12 oz. box macaroni
1 tbsp. olive oil
1 onion, chopped
2 4-oz. cans sliced mushrooms
or 8-oz. fresh sliced mushrooms
2 jars alfredo sauce
**I used roasted red pepper
8-12 oz. cheese
1 pkg. bacon, cooked crisp and crumbled
1 pt. grape tomatoes, quartered
2 cups baby arugula, chopped
1 pkg. chicken southwest strips. chopped

Directions:

Heat olive oil in a large frying pan, briefly. Add chopped onion and saute until clear. Cook macaroni according to package directions. Add chicken to frying pan and heat until heated through, then chop into bite size pieces, add mushrooms, tomatoes, and arugula. Drain pasta and add alfredo sauce, bacon, half the cheese, and the chicken mixture. Salt and pepper to taste. Spray a 9x13 casserole dish with cooking spray. Put casserole mixture into dish and top with remaining cheese. Cover with aluminum foil sprayed with cooking spray. Bake at 375 degrees for 30 minutes or until heated through.

**If you are trying to cut calories and eat healthy you can use low fat cheese, turkey bacon, and whole wheat pasta.

Fruit and Yogurt Compote

I have been trying to eat more raw fruits and vegetables so this morning I made this recipe for breakfast. Between the natural sweetness of the fruit, the creaminess of the yogurt, and the crunchiness of the granola, it made a delicious combination.

Ingredients:

1 cup Greek non-fat yogurt
1 cup crushed pineapple, in own juice
1 banana, sliced
10 strawberries, quartered
3/4 cup granola cereal
**I used Cascadian Farms Organic
Fruit and Nut Granola

Directions:

Mix together the Greek yogurt and fruit. It may make more than you want to eat in one serving so I would suggest you wait and top it with the granola when you are ready to eat it, that way it will be crunchy..

Salad in a Glass - Green Drink

Some of my friends have been juicing, so I decided I would give it a try. I picked up some fruits and vegetables at the grocery store this past weekend and made this green drink for breakfast this morning. I thought I would record the ingredients for myself and share them with you in case you would like to try it. Because of all the fruits and vegetables it is healthy for you and since it is blended up it is easier for your body to digest.

I ended up making a whole blender full so I could put it in the refrigerator and have it to drink when I got hungry. If you don't want to make that much you can always do half of the recipe. I was a little skeptical about how it would taste, but the fruit helps sweeten the drink so it tastes good. Have you ever made green drinks? If so, leave a comment and share with us what some of your favorite ingredients are.

Ingredients:
1 cup plain Greek yogurt
2 bananas
2 cup crushed pineapple (use fresh if you have it)
2 cucumbers
2 stalks celery
2 handfuls of grape tomatoes
4 kale leaves

Directions:
I started with the yogurt and fruit so I would have some liquid to blend up all the vegetables with and just kept adding and blending until it was all blended together and the taste suited me. I cut the vegetables into pieces so they wouldn't be as hard to blend. Add as much fruit as you need to suit your taste. Here's to your health.

Tropical Sunrise Smoothie

I like having this smoothie for breakfast. In fact I am having it as I type this post. But, I have also had it on a hot summer afternoon. It is refreshing.

1/2 cup milk
1/2 cup orange juice
1/2 cup crushed pineapple
1 banana
1 scoop protein powder (if desired)
Ice (if desired)

Put all ingredients in the blender and blend.

Creamy Mushroom Pasta Sauce

1 lb. ground beef
1 tsp. salt
Few dashes pepper
1 tsp. Italian seasoning
1 onion, diced
1 tsp. olive oil
1 tsp. minced garlic
1 can diced tomatoes
2-4 oz. cans sliced mushrooms
1 can cream of mushroom soup
1 can tomato sauce
1 jar pasta sauce
*I used a pasta sauce with mushrooms as well.

Brown hamburger, chop, and drain. Season beef with salt, pepper, and Italian seasoning. Add diced onions and olive oil cook until clear. Add remaining ingredients and simmer on low for 30 minutes or longer. Serve over cooked pasta.

Creamy Crunchy Banana Nut Bread

I have this banana nut bread in the oven right now. It smells so good and I can't wait to have a piece of it with my coffee.

Ingredients:

1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 1/4 cups white sugar
3 Tablespoons brown sugar
2 eggs
3 ripe bananas (mashed)
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 1/2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup walnuts, coarsely chopped

Directions:

Sift together flour, baking powder, and soda; in a separate bowl and set aside.

In mixing bowl, cream the butter and cream cheese together. Gradually add both sugars and continue beating until light and fluffy.
Add eggs one at a time, beating well after each addition.
Stir in the mashed bananas, cinnamon, nutmeg, vanilla, and walnuts..
Add flour mixture; mix until batter is just moist.
Divide 1/2 the batter into two greased and floured 8x4 inch loaf pans.
Bake at 350 degrees for 45-55 minutes, or until an inserted toothpick comes out clean.

Hamburger Corn Casserole

Hamburger Corn Casserole

This is a good recipe for the crowd. I usually make a double recipe when I have my whole family over for dinner. I like having green beans as a side dish with this casserole.

Ingredients:

1 lb. hamburger, browned, drained, chopped
2 tsp. salt
pepper
1 onion, chopped
8 oz. pasta
*I use either elbow noodles or rotini noodles
1 can cream of mushroom soup
1 can cream of chicken soup
1 can whole kernal corn, drained
8 oz. sour cream
4 oz. cheese (if desired)
4-6 slices of bread cubed
1/2 stick butter, melted

Directions:

Brown hamburger, chop and drain. Salt and pepper hamburger with 1 tsp. salt and a few dashes of pepper. Chop onions and add to hamburger and saute until onions are translucent. While onions are cooking boil water add 1 tsp. salt to water and cook pasta according to package directions. Don't overcook. Drain noodles, Mix hamburger mixture, pasta, soups, corn, cheese, and sour cream together. Place in a casserole dish sprayed with cooking spray. Cube bread and spread over top of casserole drizzle with melted butter. Bake at 350 degrees 30 minutes or until heated thoroughly.

Hamburger Hash

This is an old recipe my Mama used to make for us when we were growing up. I decided to make it for dinner tonight and thought I would share it with you. I am serving it with Red Lobster cheddar bay biscuits. This makes a whole pot full. Which is probably 8-12 servings depending on how much each person eats.

2 lbs. hamburger, browned
2 onions, chopped
6-8 baking potatoes, diced
Water
Ketchup
1 tsp. Worcestershire sauce

Brown hamburger and drain. Add chopped onions and saute until clear. Chop potatoes and cover with water. Bring to a boil, then simmer until potatoes are well done and broth thickens. Add ketchup to taste, enough to make the broth pink. Add Worcestershire sauce. Simmer until ready to eat. Sir occasionally.

Mexican Chicken Soup

I made this tonight and my crew loved it. In fact they ate seconds. I liked it because it was easy. Basically you just open the cans, put it in the pot and simmer for a while. It is one of those pantry dinners. I made a double recipe which makes a big pot full, but you can cut it in half if you need a smaller amount. I fed six with a little bit left over.

2- 13oz cans chicken
2 cans black beans
2 cans corn or mexicorn
2 cans rotel tomatoes
2 cans chicken broth
1 pkg taco seasoning mix

Put it all in the pot bring to a boil and simmer until ready to eat. Serve with grated cheese, sour cream and tostitos.

Baked Potato Soup

This is a great recipe to make with left over baked potatoes. If you are having a meal that includes baked potatoes make extra then a day or two later you can make this soup for dinner or you can start with baking the potatoes first.

3 large baking potatoes, baked, cooled, chopped
1 onion, chopped
2 tbsp. butter, melted in pan
1 can evaporated milk
*I used skim
1 1/2 cups milk
8 oz. grated cheddar cheese
8 oz. sour cream
1/2 to 1 lb bacon cooked, cooled and crumbled

If you haven't already bake potatoes until done, cool and chop. I like to bake my bacon on a cookie sheet in the oven. Spray the cookie sheet with cooking spray, lay bacon single file on cookie sheet. Bake at 350 degrees 15-20 minutes. For this recipe I like to get the bacon good a crispy, but don't overcook it. While bacon is cooking, saute onion in melted butter over low heat until translucent. Put lid on pan to help keep moist and keep onions from burning. Chop potatoes and add after onion is clear. Add evaporated milk and milk. Cook on low heat until milk and potatoes are heated through about 20-30 minutes. Make sure to keep on low heat and stir occasionally to keep from sticking and from curdling the milk. Do not cook on high. Add cheese, stir til melted. Add sour cream and cook a few more minutes to bring heat back up. Add crumbled bacon last. Stir all together and serve, If you have leftovers and wish to reheat it, it would be best to heat it on the stove over low heat as the microwave gets it too hot and causes the milk to curdle.

Chicken Tender Salad

Chicken Tender Salad

I had this salad for lunch today and enjoyed it while sitting on my front porch watching the butterflies flit around. I love watching God's creation. I also made this salad for the family over the weekend. When I do big salads like this for my family for a meal I like to set up a salad bar and put all the fixings in different containers and let everybody fix it the way they like it, that way I don't have to remember who likes what.

Romaine Lettuce, chopped
Grape Tomatoes, cut in half
Cucumbers, diced
Seedless Grapes, cut in half
Chicken Tenders, baked & cut in bitesize pieces
*In the frozen food section
Cheddar Cheese, grated
Bell Pepper, chopped
McCormick Salad Toppins or Bacon bits, sprinkled on top
Honey Mustard Dressing
*I used Ken's Steak House Lite, but you can use what you prefer

I don't have exact measurements for you, but I did use 2 chicken tenders per person, so that will help you figure out how many you need depending on how many servings you are making. It makes a great meal since you have the meat, vegetables, and fruit in it and it is pretty quick to make as you can prepare the veggies while the chicken is baking.
