It may contain pieces of shellfish, pork, beef or chicken. Oriental fish sauce - or nam pla - imparts a characteristic flavour. It is made by layering fresh anchovies and salt in wooden barrels and leaving them to ferment. Fish sauce and lime leaves are obtainable from oriental stores.&lt;br /&gt;
&lt;br /&gt;

&lt;br /&gt;
1.25 litres (2 pints/ 5 cups) fish &lt;br /&gt;
&lt;br /&gt;
3 lime leaues (fresh or frozen) &lt;br /&gt;
&lt;br /&gt;
1 stalk lemon grass, crushed &lt;br /&gt;
&lt;br /&gt;
1 -2 chillies &lt;br /&gt;
&lt;br /&gt;
250g(8oz) squid, cleaned and cut into rings &lt;br /&gt;
&lt;br /&gt;
2 cloves garlic, chopped stock &lt;br /&gt;
&lt;br /&gt;
2 tablespoons fish sauce&lt;br /&gt;
&lt;br /&gt;
185g (6oz) peeled prawns&lt;br /&gt;
&lt;br /&gt;
juice of 1 lime&lt;br /&gt;
&lt;br /&gt;
salt to taste &lt;br /&gt;
&lt;br /&gt;
1 tablespoon chopped coriander leaves&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
1. Put the fish stock, lime leaves and lemon grass in a pan and bring to the boil. Cover and simmer gently for 5 minutes.&lt;br /&gt;
&lt;br /&gt;
2. Cut the chillies into rings, discarding the seeds unless you want a fiery hot soup! Add the chilly rings to the pan with the squid, garlic and fish sauce and cook for a further 10 minutes.&lt;br /&gt;
&lt;br /&gt;
3. Add the prawns and heat through, then stir in the lime juice and salt.&lt;br /&gt;
&lt;br /&gt;
4. Pour into individual bowls and sprinkle with the coriander. Tumis bawang putih sampai kekuningan, masukkan udang dan cumi aduk sampai berubah warna.&lt;br /&gt;

- sepotong kencur &lt;br /&gt;
- 3 sdm air asam&lt;br /&gt;
- 2 cabe merah &lt;br /&gt;
- 2 sdm gula merah&lt;br /&gt;
- 1 1/2 sdt garam&lt;br /&gt;
- 5 buah cabe rawit kecil&lt;br /&gt;

Cara membuat&lt;br /&gt;
&lt;br /&gt;
1. Ulek kacang tanah yang telah di goreng bersama bawang putih, daun jeruk, kencur, cabe rawit dan cabe.&lt;br /&gt;
2. Setelah halus masukkan air asam, gula dan garam. Aduk rata.&lt;br /&gt;
3. Tambahkan air panas kedalam bumbu pecel.&lt;br /&gt;
4. Sajikan. * + 2 teaspoons cornstarch 2 teaspoons water to thicken &lt;br /&gt;
&lt;br /&gt;
* 2 tablespoons margarine for sauteing &lt;br /&gt;
&lt;br /&gt;
&lt;b&gt;How to Make: &lt;/b&gt;&lt;br /&gt;
&lt;br /&gt;
&lt;br /&gt;
1. Saute garlic, onions, and ginger until fragrant. Add the chicken. Stir until the color changes. &lt;br /&gt;
&lt;br /&gt;
2. Add the mushroom and paprika. Stir until wilted. &lt;br /&gt;
&lt;br /&gt;
3. Enter the broccoli. stir until the color changes. &lt;br /&gt;
&lt;br /&gt;
4. Season oyster sauce, pepper powder, salt and sugar and stir well. &lt;br /&gt;
&lt;br /&gt;
5. Pour the water. Cook until cooked. Enter the sesame oil and angciu. Mix well. &lt;br /&gt;

6. Thicken with cornstarch solution. Cook until bubbling.&lt;br /&gt;

■tambahkan saus tiram - kecap manis - kecap ikan dan air secukupnya (nyemek2)&lt;br /&gt;
■setelah matang beri campuran tepung sagu dan air, campur ke-masakan hingga kaku&lt;br /&gt;
■sisihkan&lt;br /&gt;

■rebus sisa2 tulang ayam dengan api kecil&lt;br /&gt;

Angkat dan biarkan sampai suam-suam kuku.&lt;br /&gt;
2. Kocok kuning telur ayam, gula pasir dan garam sampai berwarna&lt;br /&gt;
putih, lalu masukkan campuran agar-agar sedikit demi sedikit sambil&lt;br /&gt;
tetap dikocok dengan mixer. Masukkan campuran agar-agar ke dalam&lt;br /&gt;
putih telur yang telah dikocok kaku, lalu aduk rata.&lt;br /&gt;
3. Siapkan cetakan puding yang telah dibasahi dengan air. Masukkan&lt;br /&gt;
adonan agar-agar lalu dinginkan sampai mengeras. Keluarkan puding&lt;br /&gt;

    * 2 large red chilli&lt;br /&gt;
    * 8 pieces red chili sauce&lt;br /&gt;
    * 2 teaspoons shrimp paste cooked&lt;br /&gt;
    * Salt to taste&lt;br /&gt;
    * 1 tomato mengkal, sliced&lt;br /&gt;
    * 1 teaspoon lemon juice&lt;br /&gt;
    * Basil to taste&lt;br /&gt;

   1. Use a mortar and pestle and mortar, coarse chili ulek large, chili sauce, shrimp paste, and salt. Add the lemon and mengkal tomato slices and stir well.&lt;br /&gt;

Bring to a boil, then reduce heat to low and simmer for 20 minutes. Discard water and cool beef until it can be handled. Slice beef as thin as possible, then cut into 2-inch squares. Let drain in a colander for about 10 minutes before drying with paper towels.&lt;/p&gt; &lt;p&gt;Heat 4 tbs. oil in a 12-inch skillet set over medium-high heat. Add beef slices and fry for 5 minutes, or until beef is brown and dry. Remove and set aside.&lt;/p&gt; &lt;p&gt;Heat remaining 3 tbs. oil in same skillet. Fry onions and garlic for 3 minutes. Add chili paste, salt and tomatoes. Cook for 5 mins. more. Heat very little oil in a frying pan and make an omelette with half the beaten eggs. Turn out on a plate to cool.  Repeat process with remaining eggs. When cool, put one omelette on top of the other, roll up and cut into thin strips.&lt;br /&gt;Shell and devein prawns, cut beef into fine strips. Chop onions roughly and put in a blender container with garlic and trasi. Cover and blend to a paste. (If blender is not available, finely chop onions and crush garlic. Dissolve trasi in a little hot water. Combine these three ingredients.) Heat 3 tablespoons of oil in a large frying pan or wok and fry the blended ingredients until cooked. Add prawns and meat to pan and fry, stirring constantly, until they are cooked. Add 2 tablespoons more oil and when hot stir in the rice and spring onions, tossing and mixing until very hot.
