Fantabulous Food! Teriyaki Pork and Rice

This is my own personal recipe I have developed over the years. I know it's not rocket science, but it has given me notoriety in my family and everyone is excited when I make it - which is always nice :)

Teriyaki Pork and Rice:

2 lbs of lean pork chops
Teriyaki Sauce (about 1/2 cup or more to taste)
Soy Sauce (about 1/2 cup or more to taste)
2 tbsp honey
1 tbsp garlic salt
2 tsp black pepper
1 cup uncooked white rice

1. Cut any fat off your pork chops as well as you can - also remove the bone if they are still attached. Then slice the pork into bite sized cubes. Place in a bowl with a lid.

2. Pour 1/4 cup teriyaki sauce, 1/4 cup soy sauce, 1 tbsp honey, garlic salt and pepper into bowl with pour. Stir well and press pork down so it is mostly submerged. Cover bowl and place in refrigerator to marinate for at least 30 minutes, preferably 1 hour or more. The longer it marinates, the more tender the pork will be.

3. While pork is marinating, prepare rice according to package instructions. Set aside and keep covered until pork is ready.

4. In a large skillet (preferably with sides), heat 1 tbsp olive oil on med-high. Add marinated pork to skillet and cook until pork is cooked through.

Believe me, the last thing you want to do is eat under cooked pork, so you are better safe than sorry. I like to pull out one of the larger pieces and slice it to make it is cooked completely.

5. Once pork is cooked, reduce heat to medium and add rice. Stir to combine.

6. Add the additional 1/4 cup or teriyaki sauce, 1/4 cup soy sauce, and 1 tbsp honey to the rice mixture. Taste the rice mixture to make sure it is to your liking. I like to add a little more garlic salt and pepper, but it is all a personal choice :)

Your pork and rice is ready to serve :) Sorry I didn't get a plated picture of the meal - we were too busy eating it all. Hopefully you enjoy it as much as we do.

Fantabulous Food! Buffalo Chicken Sandwiches

I found this recipe on Pinterest, so I certainly can't take credit for it; I have added (what I believe are) a few useful tips toward the end :)

Buffalo Chicken Sandwiches

2 - 3 lbs of chicken breasts
Franks Buffalo Wing Sauce
Ranch Dressing Seasoning Packet
2 tbsp Butter

1. Put your chicken in the crock pot on high - you can put the chicken in frozen with no problems. Dump the whole bottle of Frank's Wing Sauce on top of the chicken so it is covered. Then sprinkle the ranch seasoning over top of it all. Cover and cook on high for 2 to 2.5 hours.

2. Once chicken is cooked through, Remove from crock pot and shred completely. Place shredded chicken back in crock pot and stir to mix well with juices. Cover again and continue to cook for another 30 minutes.

3. Add butter and let it melt. Mix until well combined.

The chicken is now ready to serve! If it's a little too hot for you, you can add a little sour cream, cream cheese or mayonnaise to cool it down a bit. Or you can do what I did and spread a Laughing Cow Blue Cheese Flavored Cheese Wedge on the bread before adding the chicken - this was delicious and it really cut the heat :)

Now, if you are like my family, you will end up with a lot of leftover chicken. It is just the two of us and we really didn't want to eat buffalo chicken for days on end - so the obvious choice is to freeze the extra. The problem with freezing it in one big blob is that you will have to defrost the whole amount to eat any of it - leaving you to eat it all at that point. So, here is a trick to freeze the chicken in individual sandwich sized portions :)

Simply take a muffin tin and spray with non-stick cooking spray. Then fill each cup with buffalo chicken, be sure to press down to pack it together.

Now place the pan in the freezer for about 30 minutes or until reasonably frozen. You should be able to pop each portion out without pieces falling off - it will be frozen solid.

Place all of your portions into a freezer bag and seal well. Now you can take out a portion or two without having to defrost the whole batch :)

So, you can enjoy these now or later or both :) They are quite tasty - I recommend you give them a try!
