My spaghetti sauce was made from the tomatoes we grew last summer. I cooked them down with onions mushroom green bell pepper salt pepper garlic italian seasoning and froze the sauce in tupperware containers.  When I am ready to make spaghetti sauce I take a container from the freezer and defrost it then place it on the stove and simmer it slowly and for a long time.  I add homemade meatballs and hot sausage and cook it all day long.  If it is too thin I add some tomato paste.  For the zucchini strips I just slice the zucchini into skinny strips and let them cook for 3 minutes in boiling water.  Not a bad dinner and not to many carbs that I can figure. I am thinking maybe 7 carbs for the entire meal. So I am thinking that if I have to be accountable to someone perhaps writing in this blog will help.  So today I had a an Atkins advantage bar for breakfast with a couple cups of coffee and for a mid morning snack I had 3 slices of deli meat.  For lunch I had a helping of 8 layer salad for lunch. Dinner was zucchini strips with spaghetti sauce.
