第一眼看到书里的图片就被它深深吸引住！&lt;/div&gt;

看到材料家里都有，所以晚餐后就动手做了&lt;/div&gt;

书里面是用挤花的方式来挤面团，我担心面团的形状大小会差很多&lt;/div&gt;

糖粉 &amp;nbsp;70克&lt;/div&gt;

&lt;ol&gt;
&lt;li style="text-align: left;"&gt;牛油糖霜：将材料拌匀，装进挤花袋，备用。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;饼干面团：牛油及幼糖打软，加入蛋白打至光滑，加入面粉拌成团。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;将面团分为每个7克，搓圆后放入纸杯内。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;用手指在面团中间压一个小洞，然后挤入牛油糖霜。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;放入以预热好的烤箱，150度烘烤大约25分钟。（Hesstar 42L）&lt;/li&gt;

糖粉 &amp;nbsp;50克&lt;/div&gt;

蛋黄 &amp;nbsp;1粒&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
玉米粉 &amp;nbsp;120克&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
面粉 &amp;nbsp;20克&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
奶粉 &amp;nbsp;10克&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
&lt;/div&gt;
&lt;ol&gt;
&lt;li&gt;牛油软化，与糖粉一起打发。&lt;/li&gt;
&lt;li&gt;加入蛋黄，搅拌均匀。&lt;/li&gt;
&lt;li&gt;同时倒入粉类，拌匀成软面团。&lt;/li&gt;
&lt;li&gt;使用挤花袋挤出‘S’形在铺了烤纸的烤盘上。&lt;/li&gt;
&lt;li&gt;使用牙签点些红色素做眼睛。&lt;/li&gt;
&lt;li&gt;放入已预热好的烤箱内，150度，烘烤大约15分钟。（Hesstar 42L)&lt;/li&gt;

&lt;li style="text-align: left;"&gt;蛋白霜：蛋白及塔塔粉打至起泡，分三次加入幼糖打至干性发泡。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;蛋白霜分三次与蛋黄糊拌合，使用刮刀。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;取一半面糊与可可粉拌合。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;将两种面糊分别装进两个挤花袋内。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;烤盘铺纸。以45度往左边方向挤入一条原味面糊，接着挤入可可面糊。重复至铺满烤盘底部第一层。接着以45度往右边的方向挤入一条原味面糊，接着挤入可可面糊，重复至完成第二层。第三层又是往左边方向挤面糊，直到全部面糊用完为止。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;放入已预热好的烤箱，150度，烘烤大约40分钟。&lt;/li&gt;

然后叻，看到冰箱里面还有剩大约100克左右的南瓜泥（做&lt;b&gt;&lt;a href="http://hslingkitchen.blogspot.com/2011/12/2011.html"&gt;汤圆&lt;/a&gt;&lt;/b&gt;剩下的）&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
看到南瓜泥没有坏，就敢敢的加进面团里一起搅拌&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
水的部分我是有减少了，不过可能是南瓜泥越打越出水吧？。。&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
面团越打越湿黏，我看到情况不对劲，就边搅拌边加入包粉&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
不知不觉包粉越加越多，可是面团还是很黏手，啊！！！怎么办？&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
是要让它继续接下来的步骤呢？还是丢掉它算了呢？&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
最后还是决定一试，让面团发酵，心想要是等到时间到了它如果没有变大&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
到时候才丢掉它也不迟&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
终于，一个小时后，面团有变双倍大，不过还是很黏手&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
不管了！再加粉，勉强包入咖椰，随便捏一捏收口就排入蒸锅内&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
等到第二次发酵结束后，开火蒸……&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
&lt;br /&gt;&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
时间到！熄火后等待开盖时刻（心里难免会紧张，因为怕包子变老太婆）&lt;/div&gt;

打开盖子，等了一会儿，看到包子没有变皱，心情马上变轻松了&lt;/div&gt;

牛油 &amp;nbsp;50克&lt;/div&gt;

糖粉 &amp;nbsp;60克&lt;/div&gt;

蛋白 &amp;nbsp;35克&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
面粉 &amp;nbsp;50克&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
&lt;/div&gt;
&lt;ol&gt;
&lt;li&gt;烤盘铺上防沾烘培布备用，预热烤箱150度。&lt;/li&gt;
&lt;li&gt;牛油及糖粉搅拌均匀，无需打发。&lt;/li&gt;
&lt;li&gt;分三次加入蛋白，使用打蛋器拌匀即可。&lt;/li&gt;
&lt;li&gt;拌入过筛的面粉，不要过度搅拌。&lt;/li&gt;
&lt;li&gt;将面糊装进挤花袋，挤出一条条的面糊在烤盘上。（不要挤太密，因为烘烤时面糊会自然摊开成椭圆形的片状）&lt;/li&gt;
&lt;li&gt;放入烤箱，烘烤大约15分钟或至边缘金黄色即可。&lt;/li&gt;

请大家吃最近风靡烘培界的面包，这面包果然名不虚传，味道很棒！&lt;/div&gt;
&lt;br /&gt;
&lt;br /&gt;
高筋面粉 &amp;nbsp;300克&lt;br /&gt;
即溶酵母 &amp;nbsp;1小匙&lt;br /&gt;
幼糖 &amp;nbsp;45克&lt;br /&gt;
鸡蛋 &amp;nbsp;1颗&lt;br /&gt;
盐 &amp;nbsp;1/4小匙&lt;br /&gt;
芝士粉 &amp;nbsp;2大匙&lt;br /&gt;
鲜奶 &amp;nbsp;120克&lt;br /&gt;
牛油 &amp;nbsp;45克&lt;br /&gt;
&lt;br /&gt;
&lt;ol&gt;
&lt;li&gt;全部材料（除了鲜奶及牛油）倒入搅拌缸内，中速搅拌，在搅拌过程中慢慢添加鲜奶。&lt;/li&gt;
&lt;li&gt;搅拌至均匀无颗粒又不粘手的面团。&lt;/li&gt;
&lt;li&gt;加入牛油，继续搅拌至可拉出薄膜。&lt;/li&gt;
&lt;li&gt;滚圆，放入盆内，盖上保鲜膜，发酵60分钟。&lt;/li&gt;
&lt;li&gt;倒出面团，用手压出多余的空气，滚圆后休面15分钟。&lt;/li&gt;
&lt;li&gt;使用擀面棍将面团擀成大约一公分厚度的面皮。&lt;/li&gt;
&lt;li&gt;接着分割为小方块，排入已抹油的烤盘上。&lt;/li&gt;
&lt;li&gt;放入烤箱内做最后发酵40分钟。&lt;/li&gt;
&lt;li&gt;取出烤盘，预热烤箱150度。&lt;/li&gt;
&lt;li&gt;烤箱预热后，放入烤盘，烘烤大约15分钟或至面包表面金黄色即可。（Hesstar 42L）&lt;/li&gt;

清水 &amp;nbsp;3大匙&lt;br /&gt;
Cream Cheese &amp;nbsp;250克&lt;br /&gt;
动物性鲜奶油 &amp;nbsp;250克&lt;br /&gt;
炼乳 &amp;nbsp;3大匙&lt;br /&gt;
Saltcheese饼干 &amp;nbsp;1包&lt;br /&gt;
&lt;br /&gt;
Cheddar Cheese刨丝，洒面用&lt;br /&gt;
&lt;br /&gt;
&lt;ol&gt;
&lt;li&gt;方形烤盘铺上锡纸，备用。&lt;/li&gt;
&lt;li&gt;准备一个小碗，倒入清水，接着用洒的方式将吉利丁粉倒入。再以隔水加热的方式加热至吉利丁完全溶解，停止加热。备用。&lt;/li&gt;
&lt;li&gt;室内软化cream cheese，使用搅拌机打至软绵，接着倒入鲜奶油继续打至均匀。&lt;/li&gt;
&lt;li&gt;加入炼乳打匀后加入溶化后的吉利丁，拌匀。&lt;/li&gt;
&lt;li&gt;排一层饼干在烤盘底部，倒一层芝士糊，再排一层饼干，再倒一层芝士糊，一共4层饼干，4层芝士糊。铺平。&lt;/li&gt;
&lt;li&gt;烤盘表面盖上锡纸，放入冰箱冷藏隔夜。&lt;/li&gt;
&lt;li&gt;取出，撒上cheddar cheese丝，切块后享用。&lt;/li&gt;

无糖豆奶 &amp;nbsp;250毫升&lt;br /&gt;
鸡粉 &amp;nbsp;1/2小匙&lt;br /&gt;
粟粉 &amp;nbsp;1/2小匙，加水1小匙（混合）&lt;br /&gt;
&lt;br /&gt;
&lt;ol&gt;
&lt;li&gt;准备好蒸锅，锅内水煮滚，放入方形铝箔模。&lt;/li&gt;
&lt;li&gt;蛋液及鸡粉一起打散。&lt;/li&gt;
&lt;li&gt;豆奶与粟粉水混合。&lt;/li&gt;
&lt;li&gt;蛋液及豆奶混合均匀后直接过滤到模子内。&lt;/li&gt;
&lt;li&gt;中小火蒸20分钟。熄火，待凉后放入冰箱隔夜。&lt;/li&gt;
&lt;li&gt;撕开模子，将蛋豆腐切块，沾上粟粉，放入油锅中炸至金黄色，捞起沥油。&lt;/li&gt;
&lt;li&gt;可沾美奶滋或是辣椒酱食用。&lt;/li&gt;

还是没有做到有尖角的吐司，有点沮丧……&lt;/div&gt;

不晓得是不是鸡蛋太多还是鲜奶加多了的关系，打出来的面团很粘手&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
有了手粉还是很难滚圆，做后使出我的杀手锏才将面团给搞定！&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
这个杀手锏就是---&amp;gt;植物油&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
看到那超级粘手的面团，没办法一直加粉，怕影响成品&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
结果在滚圆及整形的步骤，我在双手抹了少许的植物油&lt;/div&gt;
&lt;div style="text-align: center;"&gt;
面团马上不粘手了，哈哈哈哈……&lt;/div&gt;

不过双手抹油的小撇步不适合用在打算包内馅的面团&lt;/div&gt;

因为要是收口处沾到油的话，等下就很难捏紧那个收口处了，会开口笑。。。&lt;/div&gt;

即溶酵母 &amp;nbsp;2小匙&lt;/div&gt;

幼糖 &amp;nbsp;20克&lt;/div&gt;

盐 &amp;nbsp;1/2小匙&lt;/div&gt;

鸡蛋 &amp;nbsp;2个&lt;/div&gt;

鲜奶 &amp;nbsp;300毫升&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
含盐牛油 &amp;nbsp;30克&lt;/div&gt;
&lt;div style="text-align: left;"&gt;
&lt;/div&gt;
&lt;ul&gt;
&lt;li&gt;全部材料（除了鲜奶及牛油）倒进搅拌缸内。&lt;/li&gt;
&lt;li&gt;慢速搅拌，边加入鲜奶直到搅拌为无粉粒状态又不粘手的面团后停止加入剩余的鲜奶。&lt;/li&gt;
&lt;li&gt;加入牛油，使用中速搅拌至可拉出薄膜。&lt;/li&gt;
&lt;li&gt;滚圆，盖上保鲜膜，发酵60分钟。&lt;/li&gt;
&lt;li&gt;取出面团，压出多余的空气，分割4份后滚圆。&lt;/li&gt;
&lt;li&gt;休息15分钟。&lt;/li&gt;
&lt;li&gt;将面团擀成长条状，卷起后排入已抹油的吐司盒内。&lt;/li&gt;
&lt;li&gt;用保鲜膜盖好，发酵60分钟或至九分满。&lt;/li&gt;
&lt;li&gt;盖上盖子。&lt;/li&gt;
&lt;li&gt;放入已预热好的烤箱，200度，烘烤大约45分钟。（Hesstar 42L）&lt;/li&gt;
&lt;li&gt;出炉后马上脱模，放在铁架上待凉。&lt;/li&gt;

&lt;li style="text-align: left;"&gt;用保鲜纸盖好，放入冰箱冷冻5个小时。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;取出后先用汤匙稍微刮松，接着使用电动搅拌机以中速打至变成双倍的份量。&lt;/li&gt;
&lt;li style="text-align: left;"&gt;倒入有盖的容器内，加盖后后冷冻隔夜或至凝固即可。&lt;/li&gt;
