नालंदा विश्वविद्यालय की स्थापना सन् 5 वीं सदी में हुई थी। यह विश्वविद्यालय तब से लेकर 12 वीं सदी तक विश्वविद्यालयों के रूप में अपना कार्य करता रहा। इस विश्वविद्यालय में बौद्ध धर्म, जैन धर्म, वेदांत, ज्योतिष और गणित जैसे विभिन्न विषयों का अध्ययन किया जाता था।

नालंदा विश्वविद्यालय एक बड़ी विश्वविद्यालय थी जिसमें लगभग 10,000 छात्र थे। यहां के छात्र विभिन्न देशों से आते थे और विभिन्न विषयों का अध्ययन करते थे। नालंदा विश्वविद्यालय के छात्रों में संगीत, नृत्य, कला और साहित्य की शिक्षा भी दी जाती थी।

नालंदा विश्वविद्यालय भारत के बिहार राज्य में स्थित था। इसे विश्व की प्राचीनतम विश्वविद्यालयों में से एक माना जाता है। यह विश्वविद्यालय बौद्ध धर्म के महाविद्वान् अतिशयोक्त और अवबोधन ने स्थापित किया था।

नालंदा विश्वविद्यालय का अध्ययन केंद्र सूर्योदयानी ध्यान केंद्र के रूप में भी जाना जाता था। छात्रों को विभिन्न विषयों के अध्ययन के साथ-साथ ध्यान और अध्यात्म का भी अभ्यास कराया जाता था। इसलिए इस विश्वविद्यालय को एक साम्राज्य की आध्यात्मिक और शैक्षिक राजधानी माना जाता है।

જૂનું મધ ખાઈ શકાય? Can old honey be eaten?

મધ જૂનું કયારેય થતું જ નથી. બે જાતનાં ગુણધર્મો દરેક ખાદ્ય પદાર્થમાં હોય છે.

એક ગુણધર્મ છે hygropobic અને બીજો છે hygroscopic. વાતાવરણમાં જે ભેજ હોય છે એને ખાદ્ય પદાર્થ કાં તો પકડીને પોતાનામાં સમાવી લે છે અથવા બીજા પ્રકારના ખાદ્ય પદાર્થો એ ભેજનો સંપૂર્ણ બહિષ્કાર અને તીરસ્કાર કરે છે. જે ખાદ્યપદાર્થ ભેજનો તિરસ્કાર કરે છે એને ભેજની બીક લાગે છે અથવા ભેજનો ફોબિયા (ડર) છે એમ કહેવાય એને hygropobic કહે છે. જે ખાદ્ય પદાર્થ ભેજને પ્રેમ કરે છે એને hygroscopic કહે છે.

મધ એ સંતુષ્ટ hygroscopic છે. મધમાખી મધ બનાવે ત્યારે લગભગ ૯૦ ટકા ભેજને dehydrated કરીને ઉડાડી દે છે અને મધને જાડું બનાવી નાખે છે. જે પદાર્થમાં પાણી હોય તો એમાં બેકટેરિયા વધે પણ મધમાં પાણી હોય જ નહીં એટલે બેક્ટેરિયાને રહેવા, જમવા અને સુવાનું મળે જ નહીં . ખુલ્લું રાખેલું મધ લગભગ ૧૮ ટકા સુઘી ભેજને અંદર ઘૂસવાની જગ્યા આપે છે ત્યારે થોડું મધ ફક્ત ભેજની સપાટી ઉપર ફૂગ ધારણ કરે છે પણ મધના અણુઓ પર એની અસર થતી નથી. આથી જ મધપૂડામાં અને ચુસ્ત બોટલમાં રાખેલું મધ કયારેય બગડતું નથી અને જૂનું મધ પ્રેમથી ગમે ત્યારે ખાઈ શકાય છે.

હવે મધ જૂનું હોવાં છતાં પણ કેમ ખવાય એની વાત કરું. મધ બહુ તીવ્ર એસિડિક છે. એની pH 2 થી 4.5 ની વચ્ચે હોય છે. મોટાભાગના હાનિકારક બેક્ટેરિયા તટસ્થ અથવા મૂળભૂત વાતાવરણ પસંદ કરે છે, તેથી મધ જેવા એસિડિક વાતાવરણમાં, તેઓ વૃદ્ધિ કે વિકાસ કરી શકતા નથી. મધમાખીઓ એ બહુ મોટી કેમિસ્ટ છે.મધમાખીઓ, મધ બનાવવાની પ્રક્રિયામાં, તેમના પોતાના વિવિધ ઉત્સેચકો પ્મધમાં ભેળવે છે. તેમાંથી એક ગ્લુકોઝ ઓક્સિડેઝ છે, જે હાઇડ્રોજન પેરોક્સાઇડનું ઉત્પાદન કરે છે, જે એક શક્તિશાળી એન્ટિમાઇક્રોબાયલ છે જે સુક્ષ્મસજીવોને વધતા અટકાવે છે. હાઇડ્રોજન પેરોક્સાઇડ જંતુઓને મારવામાં ખૂબ અસરકારક છે. જો કે વૈજ્ઞાનિકો હવે જાણે છે કે અન્ય સંયોજનો પણ મધમાં હોય છે જે પોલિફીનોલ્સ, ફ્લેવોનોઈડ્સ અને મેથાઈલગ્લાયોક્સલ (MGO) તરીકે ઓળખાય છે. આ MGO નું સ્તર જેટલું ઊંચું હોય છે, તેટલું મધ જીવાણુઓને મારવામાં વધુ અસરકારક હોય છે બસ આ MGO ને કારણે વાગેલા અને દાઝેલા ઘા ઉપર પણ મધનો લેપ કરવામાં આવે છે.કોઈ બેકટેરિયા કે વાયરસ કે ફુગની મજાલ નથી કે મધ ઉપર એટેક કરી શકે.મધમાં કાર્બનિક એસિડ, ફિનોલિક સંયોજનો અને ચોક્કસ પેપ્ટાઇડ્સ હોય છે જે મધની એન્ટિમાઇક્રોબાયલ ક્રિયામાં ફાળો આપે છે, તેને મધને વધતા અને બગાડતા અટકાવે છે. આ કારણથી મધ કયારેય જૂનું થતું નથી.

કાચું મધ જેને ફિલ્ટર કર્યું નથી અને અગાઉ ગરમ કર્યુ નથી એવું મધ જૂનું થતું નથી. પ્લાસ્ટિકની બોટલમાં રાખેલું મધ પ્લાસ્ટિકની બોટલ જૂની થઇ જવાથી ખાવું યોગ્ય નથી.

ઘણાં લોકો એમ કહેશે કે મારાં ઘરમાં રાખેલું મધ બગડી ગયું અને જૂનું હોવાથી ખવાય એવું નથી તો એના પણ કારણો છે. જે મધ મધપૂડા ઉપરથી પાક્યા પહેલાં ઉતારી લેવામાં આવે છે એ મધ જૂનું કે નવું ખાવું યોગ્ય નથી. ખુલ્લું રાખેલું જૂનું મધ ખાવું યોગ્ય નથી. કયારેક મઘ ખાંડની જેમ ઘટ્ટ સ્ફટિકનું રૂપ ધારણ કરે છે એનું કારણ મધમાખીએ જે પરાગરજ ફુલ ઉપરથી ચૂસી હોય એને કારણે છે. મધમાં જે શર્કરાનું પ્રમાણ હોય છે એ પરાગરજને કારણે ખાંડના સ્ફ્ટીકમાં ફેરવાય છે. આને ઘણાં લોકો જૂનું મધ તરીકે ઓળખે છે અને ન ખવાય એવું કહે છે તે તદૃન ખોટું છે.ઘણાં લોકો એવું કહેતાં સાંભળ્યા હશે કે સાચું મધ કયારેય જામી જતું નથી. જે મધ જામતું નથી એ ફિલ્ટર કરેલું અને પાસ્ટરાઈઝ કરેલું હોય છે.

ઇજિપ્તમાં પિરામિડમાં તુતનખામુનની કબરમાંથી મળેલા ખજાનામાં મધની એક બરણી મળી હતી જે સાડા ત્રણ હજાર વર્ષ જૂનું મઘ હતું જેને હોવર્ડ કાર્ટર નામનાં પુરાતત્વવિદ અને એની ટીમે આ મધ ચાખ્યું હતું અને એ મધ જરાય બગડ્યું નહોતું. આ ત્રણ હજાર વર્ષ જૂની શોધ સાબિત કરે છે કે મધ જ્યારે યોગ્ય રીતે સંગ્રહિત થાય છે ત્યારે તેની ગુણવત્તા બગડ્યા વિના હજારો વર્ષો સુધી એમની એમ રહે છે.

मैं जब पैदा हुई तो मुझसे बाप रूठ गया , ख़ानदान रूठ गया , जैसे तैसे चलना सीखा , फिर बोलना सीखा , फिर जैसे तैसे बड़ी हुई , स्कूल जाना शुरू किया , मेरी शिक्षा पर भी उंगलियां उठनी शुरू हुईं , स्कूल के लिए साइकिल से जब निकलती थी तो रास्ते में मनचले बाइक से पीछा करना शुरू कर देते थे , जो जी में आए कहते थे , बेहद गंदे और अश्लील शब्दों का प्रयोग कर मेरे ना चाहते हुए भी मुझे पुकारते थे , जैसे मैं उनकी जागीर हूँ । क्लास में जाती तो टीचर की गन्दी निगाह मेरे तन के अंगों पर पड़ती , उसकी भी अश्लील और ओछी हरकतें सहनी पड़ती । फिर कॉलेज का दौर शुरू हुआ , बस में सफ़र करती तो , मनचले किसी न किसी बहाने से मेरे जिस्म के अंगों पर स्पर्श करते , ब्रेक लगती तो मेरे ऊपर आ जाते , मैं अकेली , सहमी हुई सी बेबस लड़की , कुछ न कर पाती थी । कॉलेज के अंदर का माहौल स्कूल से भी ज़्यादा गंदा और अश्लील था , फिर शाम को जब कोचिंग से निकलती , तो मेरे बाप की उम्र के लोग मुझे खा जाने वाली नज़र से देखते , मुझे उस समाज में डर लगने लगा था , जहाँ पर स्त्री को देवी कहा जाता है । दिल में एक ख़ौफ़ होता था कि न जाने मेरे साथ कब और क्या हो जाए , मैं सहमी हुई सी घबराई हुई सी चुपचाप निकल जाती थी । जब शादी का वक़्त आया तो माँ बाप ने भी बोझ समझ कर विदा कर दिया , कुछ वक़्त ससुराल में बिताने के बाद पति का प्यार ख़त्म हो गया , मैं उनके लिए केवल उनकी हवस को शांत करने का सामान बन चुकी थी , सास-ससुर का दुर्व्यवहार , जहेज़ के ताने सहती रही । जब बच्चे हुए तो सारी जवानी अपने पति के लिए और बच्चों के पालन पोषण में कुर्बान कर दिया । और  ज़िन्दगी का आख़री पड़ाव आया , जब आँखों में रौशनी ना रही , तो सोचा की अपने बच्चों के साए में जीवन काट लूंगी , लेकिन ऐसा न हुआ , बच्चों ने भी वृद्धाश्रम ( Old Home ) छोड़ दिया , अब जब अपने बच्चों की याद आती है तो कंपते हुए हाँथ आसमान की तरफ उठा कर बच्चों की ख़ुशी और सलामती के लिए दुआ कर , बिलख कर रो के अपना मन हल्का कर लेती हूँ । मैं एक बेटी थी , पत्नी थी , बहू थी , माँ भी थी , परंतु मुझे जीवन के किसी भी पड़ाव पर सम्मान न मिल सका । इस जीवन और इस समाज से बस इतना ही सीखा मैंने , इतना आसान नहीं है एक औरत होना ।

When she had children, she sacrificed her whole youth for her husband and for raising the children. And the last stage of life came, when there was no light in my eyes, I thought that I would spend my life in the shadow of my children, but this did not happen, the children also left the old home, and now when I miss my children. So raising trembling hands towards the sky, praying for the happiness and safety of the children, I lighten my heart by crying bitterly.
