I&#39;ve been gone for a really long time from my blog and you&#39;ll have to forgive me for I have had so many things going on. It&#39;s been a really hectic couple years since I&#39;ve last written anything on here.&lt;br /&gt;&lt;br /&gt;I moved from Sydney to Brisbane. I&#39;ve been working and going to school all at the same time, let alone got married and a baby underway. I know crazy right, I was the one asking &quot;why I should get married?&quot; and &quot;what&#39;s so cute about babies?&quot;. Well I&#39;ll soon get to experience it on my own.&lt;br /&gt;&lt;br /&gt;Life in Brisbane is such a blur. It&#39;s not the same experience as it was when I was living in Sydney. It&#39;s a different kind of atmosphere. Sydney has the culture, the attractions and the vast majority of people. Brisbane on the other hand has culture but its more of a laid back kinda atmosphere. Attractions here are far and wide, you have to travel to the Gold Coast or the Sunshine Coast to basically see anything that is remotely amusing. But I have to give it to living here in Brisbane though, the weather is great year round. It&#39;s warm even in the winter, and during the summer you get a massive tan (I&#39;ve gone black and had this tan for over a year now).&lt;br /&gt;&lt;br /&gt;I&#39;ve found my husband here. Family I never knew I had is here. It&#39;s been a whirl wind of a year, I&#39;m still trying to wrap my head around everything. Brisbane has been good to me in ways that I never knew and yet in a way it has been cruel to me as well. When I&#39;m in Brisbane I think of the days of being in Sydney...basically my single life. Sydney was the last stop in my single life and boy what a fun ride that was. I partied til the wee hours, I didn&#39;t have to think of anyone but myself, I had fun meeting new people and exploring the city...most of all I was carefree.&lt;br /&gt;&lt;br /&gt;My experience in Queensland had me go up the Queensland coast and seen some amazing things. I experienced all this with my husband, the person who took me out to see these amazing places. I was a freshman at Eastern Connecticut State University and it was only 2 1/2 weeks since I started school. On 9/11 I was in my communications lecture waiting for the professor when he came in and asked the students if they&#39;ve seen or heard the news yet. We looked at each other dumbfounded because he had no idea what he was talking about. Then he gave us the news, I can still remember it so vividly, he said &lt;em&gt;&lt;span style=&quot;color:#ffff66;&quot;&gt;&quot;There were planes crashing into the Twin Towers. Go home call your loved ones make sure they&#39;re alright and stay tuned to the news for anything else just in case.&quot;&lt;/span&gt;&lt;/em&gt; We left our lecture in horror of what was happening around us. We could literally see the smoke in the sky from the crashes. The tri-state was in lock down, no one could go in or out of the States around New York. Our cell phone receptions were limited, and when we could get service the servers were busy due to all the panic calls I suppose. Those images of the Towers burning seen all around the world will be forever etched into my mind, it&#39;s an image that you can&#39;t really forget.&lt;br /&gt;&lt;br /&gt;I remember trying to comfort my roommate because she&#39;s from Long Island and her father works in the city. It took her hours to get in touch with her family, believing her father was in the city on that day but from some miracle he wasn&#39;t there. I remember the look on her face when she received that news, relief, but she was scared for all her friends as well that live in the city. That day will always be burned into my memory and as times goes it doesn&#39;t fade when something so horrific, so inhumane, so catastrophic happens. It shook our nation to it&#39;s core.&lt;br /&gt;&lt;span class=&quot;fullpost&quot;&gt;&lt;br /&gt;&lt;br /&gt;As another anniversary of September 11th passes, I reflect on this date every year. I can&#39;t imagine all those people who have lost a loved one in the Towers. My heart goes out to them as they have to relive this date over each year and have to face life knowing how their loved one died, in a &lt;span style=&quot;color:#33ffff;&quot;&gt;&lt;strong&gt;senseless act of terrorism&lt;/strong&gt;&lt;/span&gt;. It&#39;s hard to express the gratitude for all those who helped in trying to save lives within the Towers and those who died trying to save lives. Those are the heart and soul of a nation, those willing to help when there are enormous risks for themselves but do it to help bring someone home to their families. &lt;em&gt;&lt;span style=&quot;color:#ffff66;&quot;&gt;Those heroes of 9/11 will also be remembered for their bravery, and courageous effort&lt;/span&gt;&lt;/em&gt;.&lt;br /&gt;&lt;br /&gt;Our nation has progressed forward with the grief since that sad day. We have risen together as a nation. I know that when I go back to the States that I will make a visit to the monument in dedication of all those who&#39;s lost their lives. It was so fluffy, light and not too sweet that normally would make me spit it out. I was hooked, I had 3 pieces of cake and bought a whole cake to go home with like a fatass I am.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style=&quot;color:#66cccc;&quot;&gt;But here is a recipe for the Pavlova Cake&lt;/span&gt;&lt;/strong&gt;:&lt;span class=&quot;fullpost&quot;&gt;&lt;br /&gt;&lt;br /&gt;PAVLOVA CAKE:&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;3 egg whites&lt;br /&gt;1 g salt&lt;br /&gt;200 g white sugar&lt;br /&gt;8 g cornstarch&lt;br /&gt;5 ml lemon juice&lt;br /&gt;295 ml heavy whipping cream&lt;br /&gt;60 g confectioners&#39; sugar&lt;br /&gt;355 g fresh strawberries&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;1. Preheat oven to 300 degrees F (150 degrees C). Line a sheet pan with parchment paper. Draw a 9 inch circle on the parchment. An easy way to do this is to draw around the outside of a 9 inch pan with a pencil.&lt;br /&gt;&lt;br /&gt;2. In a large bowl, beat egg whites on high speed until soft peaks form. Add 3/4 cup of the sugar gradually, while continuing to whip. Make sure sugar is completely dissolved. Mix together the remaining 1/4 cup sugar with the cornstarch; lightly fold into meringue with lemon juice.&lt;br /&gt;&lt;br /&gt;3. Spread a layer of meringue to fit circle on parchment, approximately 1/4 inch thick. With remainder of mixture, pipe or spoon swirls around the edges to form a shallow bowl shape.&lt;br /&gt;&lt;br /&gt;4. Bake at 300 degrees F (150 degrees C) for 1 hour. Turn off oven, but leave meringue in oven for an additional 30 minutes. With my looks people categorize me as Chinese automatically of course and think my English is either poor to none. They speak Chinese all the time. When I mean all the time, it&#39;s constantly, all I hear in the house is Chinese all day long. It seems like it&#39;s such a big city from what others say like East Sydney, Paddington, Surry Hills, Darling Harbour and so on. Well let me tell you it is a big enough city that you can get lost in. You&#39;ll turn the corner and BAM!!!...you&#39;re like where the hell am I??? Yeah so as you can see I&#39;ve done this a couple of times in the beginning, I know blonde moments right lol. &lt;br /&gt;&lt;br /&gt;I swear everyone is like basically here in Sydney. If you want to see the Chinese, Japanese, Germans, Thais, Laotians, and so forth it&#39;s no problem. Walk down any street in Sydney and you&#39;ll see like 5 different nationalities within a 2 minute walk. &lt;br /&gt;&lt;br /&gt;If you&#39;re ever in Sydney you&#39;ll have to walk down Oxford Ave., Elizabeth St. and Pitt St. Those are where the shopping is at. Elizabeth St. is more of the posh boutiques with all the higher end qualities. Pitt St. is a variety of different stores. You can find basically anything on Pitt St. Oh let me tell you about Oxford Ave...this has to be one of the most eccentric streeets yet. They have gay pride flags hanging everywhere and it&#39;s quite awesome. People here are more open to being out and about with their partners without being persecuted.&lt;span class=&quot;fullpost&quot;&gt;&lt;br /&gt;&lt;br /&gt;It&#39;s just as busy or maybe even busier than everyone thinks it is. When people think of Sydney what do they think of? Beaches right? Well there&#39;s much more to Sydney than the beaches. Well I also stopped by the local market on the way to kayak and seen this...I felt I had to step up and let these guys know that their actions wasn&#39;t something to take pictures of and that they should respect the family&#39;s spirit house and not mock it nor take disrespectful pictures amongst it. I also asked them how they would feel if I took goofy pictures on their family&#39;s grave site? I don&#39;t think they would like it much if I were to do that. Like I&#39;ve said before I&#39;ve been travelling so freaking much that I have no idea what time zone I&#39;m in or what I did in the last city I was in. I&#39;ve been seeing in the news and in newspapers that villages are wiped out, families are seperated or in the worst of it gone, lives are distroyed. There&#39;s no consistent supply of food for the remaining survivors and they have to stay in monastaries, fields...well basically anywhere that they can fit lets just say it like that.&lt;br /&gt;&lt;br /&gt;I know that countries around the world want to help out with the relief effort. There are aide workers standing by in nearby Thailand ready and willing to go into the country to help with the cleanup, medical efforts, supplies and so on. Seems like the military in Burma is keeping a tight grip on the situation and not opening up to relief efforts from anyone. They want to handle it themselves. &lt;em&gt;&lt;span style=&quot;color:#33ccff;&quot;&gt;Come on now a big relief effort like that by yourself??? Who are you kidding?&lt;/span&gt;&lt;/em&gt;&lt;span class=&quot;fullpost&quot;&gt;&lt;br /&gt;&lt;br /&gt;I know that the situation in Burma and the political aspect of it is very sensitive for people. I just don&#39;t get the idea of them trying to handle this disaster themselves. There&#39;s bodies in the middle of the streets just floating and decomposing giving off stench and possibly harming others that have survived. Everyone needs some kind of help, it&#39;s simply impossible to handle this alone. People are starving and you want to confiscate the food supply that is coming in from other countries to help and pass it out yourselves. How many people are starving and how are you going to distribute to everyone? Get it through your heads that these survivors need medical attention, they need food, they need to be &lt;strong&gt;&lt;span style=&quot;color:#ffff00;&quot;&gt;HELPED!!!&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;These are your country people, regardless of how you think that they&#39;re not important they are actually what makes the country. If you&#39;re in a position of power you should think of the people that you are in power of and their lives not just your political quest for control. Take care of your people, give them hope that you as a country will triumph this horrible catastrophe together. Do not just smash what little hope they have and not allow the help that they need and everyone knows it. It&#39;s not like the aide workers are going to go into the country and overthrow your military. Everyone just wants to help contrary to what you may think.&lt;br /&gt;&lt;br /&gt;My heart goes out to all the survivors and victims. I guess this is kind of a sore spot for me because I am part Burmese and my grandfather was from there. Come on now who in their right mind wouldn&#39;t have compassion for what these people have gone through. Some people have lost children, parents, sisters, brothers and even in some cases their entire family all together. I know if I were in their shoes I would be devastated and would want some kind of help and hope that there will be some kind of future to rebuild and not want to be gone like the rest of my family.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style=&quot;color:#ffff00;&quot;&gt;Here is my plea for Burma (Myanmar): Please let the rest of the world help in the recovery effort. A 15 year old boy, Lawrence King had asked a classmate that was a boy to be his Valentine. Lawrence King was killed by a shot to the head by one of his classmates. This is a junior high school that this happened at.&lt;br /&gt;&lt;br /&gt;Personally I am digusted that this has happened to such a young boy. &lt;em&gt;&lt;span style=&quot;color:#ffff00;&quot;&gt;Why should he be killed for being who he is? Are we that ignorant in 2008 that we can&#39;t open our minds to different things? It&#39;s a great thing to want to adopt a child that needs a loving home. I&#39;ve no idea what kind of advice she wanted from me since I&#39;ve never adopted before or even close to wanting a child. I&#39;ve been seeing celebrities adopting from Asia the last couple of years. I&#39;ve mostly seen and heard about &lt;span style=&quot;color:#ffff33;&quot;&gt;Angelina Jolie&lt;/span&gt; adopting from Cambodia and Vietnam. There have also been stars adopting from China. I know that there is a huge demand for overseas adoption especially from China, there&#39;s like a waiting list that you have to be on for some time. But what about the other Asian countries that we don&#39;t hear about? Are adoptions available there for foreigners? Well here&#39;s the rundown.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;&lt;span style=&quot;color:#33ccff;&quot;&gt;Vietnam&lt;/span&gt;:&lt;/em&gt;&lt;/strong&gt; As you already know that Vietnam has just opened adoption to foreigners within the last couple of years again. As far as I know, you are able to adopt from Vietnam even if you&#39;re single. You can&#39;t adopt as a couple if you&#39;re just boyfriend/girlfriend (like Angelina Jolie). Normally there is a bigger demand for girls so the waiting could be longer than for boys. Most of these kids have special needs that need to be tended to. Adoption in Vietnam costs between $9,000 - $12,000 depending on the agency you choose. Vietnam is the place everyone wants to adopt from now.&lt;br /&gt;&lt;span class=&quot;fullpost&quot;&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;&lt;span style=&quot;color:#33ccff;&quot;&gt;Cambodia&lt;/span&gt;: &lt;/em&gt;&lt;/strong&gt;Well we know that Angelina Jolie adopted her first child Maddox from Cambodia and put the country on the map. Not a lot of us knew that we were able to adopt from Cambodia (well at least I wasn&#39;t aware of that news). To adopt from Cambodia you have to be a married couple within the age of 25-55 and if you&#39;re not married then you have to be 40-50 years of age. So anyone younger than 25 try Vietnam cause you won&#39;t have a chance in Cambodia. All the paperwork is basically the same, you still have to do the homestudy and file paperwork from your home country and the adoption country.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;&lt;span style=&quot;color:#33ccff;&quot;&gt;Thailand&lt;/span&gt;:&lt;/em&gt;&lt;/strong&gt; Alright you&#39;re able to adopt from Thailand. You can be single to adopt but at least 25 yrs. old and you have to be at least 15 years older than the child that you plan to adopt. Of course you have to file the paperworks and all that fun stuff. There&#39;s not a lot of adoptions from Thailand. In 2006 only 56 Immigrant Visas were issued, down from 2005 which issued 72.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;&lt;span style=&quot;color:#33ccff;&quot;&gt;Laos&lt;/span&gt;: &lt;/em&gt;&lt;/strong&gt;The Lao government has suspended all adoption to foreigners of any Lao children. There&#39;s no orphanages or government responsible so it&#39;s not really clear who they can categorize as &quot;orphans&quot;. So if you want a Laotian child your best bet would be an orphan from Thailand or neighboring countries because you will not get a child from Laos (my parents learned that early on).&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;em&gt;&lt;span style=&quot;color:#33ccff;&quot;&gt;China&lt;/span&gt;:&lt;/em&gt;&lt;/strong&gt; Ok China is the major place for adoptions. Mostly girls are in the orphanages and they are in demand. But be warned you&#39;ll be on the waiting list for a long time.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;I&#39;m not exactly sure about the other Asian countries so if anyone has any info for me to pass along to my coworker please feel free to leave some.
