The last two weeks were crazy! No time to blog. I am so blessed to work at a job I love & I enjoy the Designers, I work with. But, sometimes things are craaazzzzy! I have been here almost a year, in March. Unfortunately, my back office cubicle still looks like I just started & a bit generic. I have not put any personal touches on it. My goal this next week is to add some life to my office, at work & at home. Here's my cubbie, before:

Slow Cooker Sunday

2011-01-23T08:00:00.007-06:00

Good morning to you all! Still trying to Rest in Him & taking today off & spending some time with a friend.
Another friend sent me this recipe last night to share with you, from Weight Watchers & I have all the ingredients to make!
I am substituting the beef for turkey & whole wheat pasta for regular! She advised me to only cook it for 4 hours, not 6!
Enjoy!

Slow Cooker Lasagna

Ingredients:

1 pound(s) uncooked lean ground beef (with 7% fat) (I substituted with Turkey)

1 small onion(s), chopped

1 clove(s) (medium) garlic clove(s), minced

28 oz canned crushed tomatoes

15 oz canned tomato sauce

1 tsp table salt

1 tsp dried oregano

1/2 tsp dried basil

1/4 tsp crushed red pepper flakes, or to taste

1 cup(s) part-skim ricotta cheese

1 1/2 cup(s) shredded part-skim mozzarella cheeses, divided

6 item(s) dry lasagna noodles, no-cook

1/2 cup(s) shredded parmesan cheese, strong-flavored like Romano or Parmigiano Reggiano

Instructions:

Heat a large nonstick skillet over medium-high heat. Add beef, onion and garlic; cook, stirring frequently, breaking up meat with a wooden spoon as it cooks, about 5 to 7 minutes. Stir in crushed tomatoes, tomato sauce, salt, oregano, basil and red pepper flakes; simmer 5 minutes to allow flavors to blend.

Meanwhile, in a medium bowl, stir together ricotta cheese and 1 cup of mozzarella cheese.

Spoon 1/3 of beef mixture into a 5-quart slow cooker. Break 3 lasagna sheets in half and arrange over beef mixture; top with half of ricotta mixture. Repeat with another layer and finish with remaining 1/3 of beef mixture.

Cover slow cooker and cook on low setting for 4 hours. Remove cover; turn off heat and season to taste, if desired.

In a small bowl, combine remaining 1/2 cup of mozzarella cheese and Parmesan cheese; sprinkle over beef mixture. Cover and set aside until cheese melts and lasagna firms up, about 10 minutes. Yields 1/6th of dish per serving.

Notes

To boost your vegetable intake, add a can of zucchini in tomato sauce to the meat mixture. You can also add 2 cups of sliced shiitake mushrooms to the beef mixture.

Taste & see that the LORD is good; blessed is the man who takes refuge in him.

Psalm 34: 8

God & Balance

2011-01-22T08:41:00.003-06:00

Life is a little crazy right now. Big Model Home Project is due next week & I need some down time. So, I'm taking the day off from blogging & resting before going to work tonight at WS!
I hope you enjoy your Saturday!
Dena

Is your life in Balance?

Dear Lord,

I thank You for this day.
I thank You for being able to see and hear this morning.
I'm blessed because You are a forgiving God and an understanding God.
You have done so much for me and You continue to bless me.

Forgive me this day for everything I have done, said, or thought that was not pleasing to you.

Please keep me safe from all danger and harm. Help me to start this day with a new attitude and plenty of gratitude. Let me make the best of each and every day to clear my mind so that I can hear from you. Please broaden my mind that I can accept all things. Let me not worry over things I cannot control.

Continue to use me to do Your will. Continue to bless me that I may be a blessing to others. Keep me strong that I may help the weak. Keep me uplifted that I may have words of encouragement for others. I pray for those that are lost and cannot find their way. I pray for those misjudged and misunderstood. And for those who do not know you intimately.

I believe God changed people. I pray for my family. I pray for peace, love, and joy. That all their needs are met in Your honor. There is no problem, situation, or circumstance greater than God.

Amen.- Unknown

Am I now trying to win the approval of men, or of God? Or am I trying to please men? If I were still trying to please men, I would not be a servant of Christ. Galatians 1:10

Thrill of the Hunt Thursday!

2011-01-20T19:00:00.000-06:00

Does anyone watch Hoarders on A&E? I watched an episode last weekend & boy did it scare me. The lady "had" to go to the Thrift Store almost everyday. I thought, oh no!, that's me...but, I try to only go once a week! NAM didn't really have any good bargains this week, but they did have the Mad Men Sectional, I posted here last Thursday, 50% OFF! So, I decided to check out the new Goodwill at West & Beltway 8.
They had several classic leather Coach purses for $10 & under & some Ralph Lauren Ladies' Loafers, but I already had one of the same Coach purses & the shoes. I did find a couple of things, a 18pc. glassware set from France for $4.99. The same set is available at WS Set of 24 for $79.00! I also got a & beautiful butterfly picture for my bedroom, only $3.99. And, a silverplated covered vegetable dish for $1.99 . I promise not to go again...unitl next Thursday! And, only for Blog Postings! TeeHee!

I got 6 Juice Glasses &

I got 6 of Dbl Old Fashions...

Slow Cooker Sunday

2011-01-16T21:30:00.002-06:00

Thursday night, I had a wonderful time at Brennan's 1st Cocktail Party! More on that, later...
We ended up staying for a light dinner & I ordered Chef Danny's Venison & White Bean Cassoulet...yummo!

Brennan's
Venison & White Bean
Cassoulet

It's been a dreary, rainy, yucky weather all weekend. So, it's definitely time to pull out the slow cooker & try to make some of this yummy dish! I searched for an easy & affordable recipe & I came up with a version, adapted from a Williams Sonoma's recipe from Chef Thomas Keller of The French Laundry. I linked their recipe, as well.

Here is my version & it was a great success, if I do say so, myself...& all of the Designers at work, say so, too!

Venison & White Bean Cassoulet

I used a 7 qt. Slow Cooker – 8-9 hours & then reheated. Better the 2nd day!
You could cook in a large 8 qt. Dutch Oven, covered, in the oven at 350 degrees for 1.5 to 2 hours.

Ingredients:

• 4 lb. boneless pork shoulder, cut into 8 pieces and trimmed of excess fat (I used Bone-In Pork Shoulder Chops – 3 of them, cut up into small to medium pieces – after cooking in slow cooker or oven, take out any bones)
• Salt and freshly ground pepper, to taste
• 4 cups coarsely chopped yellow onions (about 3 medium onions)
• 3 Tbsp of Butter
• 2 cups dry white wine, such as Sauvignon Blanc
• 1/4 cup tomato paste
• 1 can (28 oz.) peeled Italian plum tomatoes; I used San Marzano Plum Tomatoes, NOT drained, but
   chopped.
• 2 cups chicken broth - low sodium
• 1 – 32 oz Bag Great Northern beans or other small white beans, drained
( Soaked over night – beware, they do expand)
• 2 links of Pork Venison Sausage( Chappell Hill or Holmes), fully cooked (or smoked chorizo or garlic
sausage links) about 1 1/2 lb. total, each sliced on the diagonal
• 1 garlic head, - about 12 cloves - minced

Directions:

Season the cut up pork generously with salt and pepper; set aside.

In skillet, add 3 Tbsp of butter & sauté onions and 1 tsp. salt & 1 tsp. pepper, stirring occasionally, until golden brown and softened, about 7 minutes.

Add minced garlic and sausage & simmer until sausage browns. Remove from heat & put in Slow Cooker or Dutch Oven.
Add onions, garlic, sausage, tomato paste, tomatoes, broth, 2 cups wine and beans to the Slow Cooker or Dutch Oven.

In same skillet you used for the onions, add the pork chops and brown on both sides, 7 to 8 minutes. Transfer to a Slow Cooker or Dutch Oven. Stir slowly, until all the beans, sausage & pork are under the liquid.

Cook on low in Slow Cooker about 8-9 hours. Or, in an oven at 350, for 2-3 hours & check. Should have some liquid, but not too soupy. It thickens after adding the bread crumbs & refrigeration.

Fold in the 1 cup of seasoned bread crumbs. ( I used Italian Bread Crumbs)

Adjust the seasonings with salt and pepper. (I added McCormick’s Black Pepper/Garlic in a Grinder)

Serve with French Baguette or Garlic Bread.
Serves 8 to 10.

Here's a few pics to get your smell buds going!

Can you smell the onion & garlic?

It's a Tea Party!

2011-01-14T07:30:00.032-06:00

No....not the political kind. The cup at a time, kind.
I just found out it's National Hot Tea Month! It makes sense, it's cold in most of the US, in January.

I started drinking hot tea in college, while I worked pt. time at "I Can't Believe It's Not Yogurt". It was next door to The Kaffee Klastch in College Station. It was a ghost town, during Christmas break. Since business was slow, we would visit with each others shops & "trade samples".
It was love at first sip! I ended up buying a good teakettle, cups, teapot, loose tea & tea strainer & even a tea cozy! I guess they loved our yogurt, too!
Throughout the years, I have thrown many Bridal & Baby Shower Teas & I miss them! Most of my friends are married now & children are grown & there doesn't seem to be much time...to have a quaint little Tea Party. So, I've decided to throw a Tea Party & you're invited.
So, pour your favorite tea in your best cup, sit & enjoy a spot of tea with me! No hat & gloves required!

Soup, it's what's for lunch!

Italian Wedding Soup
Large Double-Handled Soup Bowls - Williams Sonoma

Italian Wedding Soup Recipe ~ from Williams Sonoma Kitchen

Ingredients:

2 1/2 quarts low-sodium chicken broth

2 cups water

4 carrots, cut into 1/2-inch dice

1/2 Tbs. plus 1 tsp. minced garlic

1 bunch kale, stems removed, leaves cut into thin strips

1 lb. ground pork

1 small yellow onion, minced

1/2 cup grated Parmigiano-Reggiano cheese, plus more for serving

2 eggs, lightly beaten

1/2 cup fresh bread crumbs

1/2 tsp. salt, plus more, to taste

1/2 tsp. pepper, plus more, to taste

2 Tbs. vegetable oil

1 can (15 oz.) white beans, drained

Directions:

In a 5-quart Dutch oven over medium-high heat, combine the broth, water, carrots, the 1/2 Tbs. garlic and the kale. Bring to a boil, reduce the heat to low and simmer until the carrots are tender, 30 to 40 minutes.

Meanwhile, in a large bowl, combine the ground pork, onion, the 1/2 cup cheese, the eggs, bread crumbs, the 1 tsp. garlic, the 1/2 tsp. salt and 1/2 tsp. pepper. Mix briefly with your hands. Form the mixture into 1-inch balls and place on a plate.

In an skillet set on medium-high heat, warm the oil. Working in batches, add the meatballs and cook until browned, about 5 minutes per side. Transfer to a paper towel-lined plate.

Add the meatballs and the white beans to the soup and simmer until the meatballs are cooked through, about 15 minutes. Adjust the seasonings with salt and pepper. Ladle the soup into warmed bowls and serve immediately. "Or take to work!!" Pass grated cheese at the table. Serves 10.
Freezes well, too!

"I SPY"...In the Movies

2011-01-11T22:35:00.045-06:00

You have to check this website out: Set Decorators Society of America

I love this website! It gives me tons of info about my favorite movies' & television shows' set decor.
I remember watching Home Alone, when I was a Store Manager for The Bombay Company, in the 1990's. Our District Mgr. did a team building dinner & a movie. We watched the movie & had to play "I SPY". We had to spot as many items as we could, that were used from the company. Prizes were involved, so we had to pay attention, to the details, not the movie.
All these years of watching movies & I thought I was strange. But, now I know I'm not the only one looking the at bookshelves, cabinets, countertops & trying to see how they accessorized. It's like sneaking a peek into the character's everyday lives. How they live, where they shop, what they read, wear & how they decorate! Thank goodness for VCR's & DVR's!
Sometimes the sets are more interesting to me, than the movie, itself. If I end of loving them both, I have to buy the DVD & watch the movie & play "I SPY". Also, check out IMDb, for more info on your favorite shows & movies.

2011-01-10T06:00:00.045-06:00

We have over a week of 2011, under our belts! How's your belt, looser or tighter? Hopefully, not quiet as tight! How many resolutions did you make? I made a few of the same ones I make every year:

Take better care of myself: More sleep, workout, learn to say no to every event!
Spend quality time with family & friends! Visit parents more often. Invite friends over for brunch, dinner or movie night, etc...
Spend less & use what I have - i.e....home furnishings, kitchen pantry, etc...only buy the ingredients that I'm going to cook that week.
Organize & edit every closet, drawer, nook & cranny of my townhome!

I pledge all these things, on this blog, so hold me to them!

#1 has to happen first & so far, so good this first week. Pants are a little less snug!
#4 has to happen, at least in the kitchen, before #2 can happen.
In August, I started with my breakfast room/pantry. Since I don't use this space as intended, I wanted it to become part of the kitchen, kinda like a Butler's Pantry.
Here is what my kitchen & breakfast room looked like when I bought my townhome:

Breakfast/Pantry
Before
Sliding doors are gone & French Doors are installed!

Kitchen/Laundry

They took the stove before I moved in!

Stage 1 ~ Reorganizing
Wilbur is covering his eyes! Get me outta this place!

Stage 2 ~ Bookcases
My Kitchen Library

Stage 3 ~ Island
Wilbur loves his new home!

I love being able to move the island over to the kitchen area, as added counter space, while cooking. The other side of the island flips up, with enough room to pull up 2 bar stools. My dream is to have a marble countertop for the island, for baking! I have moved things around again & purged the pantry. Starting on the kitchen cabinets this week, so I will post updates, later this week!
Hope to have you all over for dinner soon! ;-)
Have a great day!

Slow Cooker Sunday!

2011-01-09T23:51:00.002-06:00

Are you ready for some cold weather? Just thought I would share the recipe for the Turkey Chili, I made last night! Hope you all have a wonderful week!

Turkey Chili

Ingredients

1 tablespoon vegetable oil
1 pound lean ground turkey (can substitute with ground chicken, too!)
2 (10.75 ounce) cans low sodium tomato soup
1 can diced tomatoes, drained
2 (15 ounce) cans kidney beans, drained
1 (15 ounce) can black beans, drained
1 (15 ounce) can whole kernel corn, drained(optional)
1/2 medium onion, chopped
2 tablespoons chili powder
1 teaspoon red pepper flakes
1/2 tablespoon garlic powder
1/2 tablespoon ground cumin
1 pinch ground black pepper
1 pinch ground allspice
salt to taste

Directions

In a skillet, heat oil over medium heat. Cook turkey in until evenly brown; drain.
Coat the inside of a slow cooker with cooking spray. Mix turkey, tomato soup, kidney beans, black beans, corn & onion. Add chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice & salt.
Cover & cook 8 hours on Low or 4 hours on High.
Great served with a dollop of light sour cream & cornbread!

Freezes well, too! Enjoy & stay warm!

Plan B, sometimes C

2011-01-08T09:53:00.003-06:00

Have you ever made plans to do something & it just didn't work out like you planned?
Dinner plans, kitchen remodel, conversations, etc... Of course, we all have!

I had been looking forward to watching the Cotton Bowl -A&M-LSU game last night, with some old friends, that live out Hwy290. Friday night + Houston wrecks & traffic = Plan B. I was unable to get to the Football Party, but I ended up joining my dear friend Sandra. We had a great time, despite the final score of the game, at "Next Door". It's the bar & lounge area, literally next door to one of my faves, Hungry's. Same owners, same patio, merged staff! The outdoor space has evolved into the "neighborhood lounge area". The food & atmosphere are great! They have 2 large screen TVs outside & live music, in between sports games. They do an awesome weekend Brunch, too! I also love it, because it's in my back yard! Sometimes, we have to punt Plan A & go with B! Deb & David, I owe you a Plan C...an adaptation of Plan A!

Since the weather in Houston is supposed to get rainy & colder this week, I thought I would share some great outdoor spaces. I hope all your weekend plans go as expected & you get to enjoy the sunshine while it lasts!
Blessings~Dena

Favorite Things Friday! A Great Kitchen & Williams Sonoma

2011-01-07T06:00:00.286-06:00

When I saw this article online at Elle Decor, I had to read it!
The first line of the article reads:

"Some people have a thing for shoes;

I have a thing for kitchens." ~ Celia Tejada

She had me at the first line! Don't get me wrong, I love shoes, clothes, accessories, but I heart KITCHENS!! No wonder she is a design guru for WS! We share the belief that white dishes keep things looking clean & more organized. Plus, I like to use accents of color with salad plates, napkins & tablecloths, as the seasons change...or my mood!
I love to cook & entertain. And, I work pt-time at Williams Sonoma. Therefore, I need a bigger kitchen. LOL! But, my kitchen cannot get any bigger in my townhouse. I have lived with it for 3 yrs to see what works & doesn't work. I've gotten rid of things I don't use & turned my Entry Closet into my downstairs Butler's Pantry. This is where I house my waffle maker, ice cream maker, speciality cake pans, etc... I've kept a "Design To Do" notebook for about 21 yrs. I usually start a new one every January. It has tabs for every room in my house. Under the Kitchen Tab, the list includes all the things I have to do on a Daily, Weekly & Monthly basis. There is also a Dream Tab. This is where money is no object. There's a list of things I need to buy or have done, sketches of my dream floor plan. Then, I reevaluate what I can do myself, without having to hire someone. The rest, I try to figure out, in more budget friendly ways to make it happen, a little at a time.

Examples:

Weekly - Purge the fridge & freezer
Monthly - Wipe down cabinets
Dream Tab - Marble Countertop for Island & Black Honed Granite for Base Cabinets

Still a few more things I want to do in the future, but a girl can always dream...3" White Carrara Marble Countertops...aaahhhh! At least on my little island!
What does your Dream Kitchen look like?

2 of my other "Favorite Things" today, Texas A&M & football!! Aggies are playing LSU in the Cotton Bowl tonight! BTHO LSU!! Gig'em Ags! WHOOP!

Have a Blessed day~

Wallpaper...it's BACK!

2011-01-05T19:00:00.006-06:00

I know you may not want to hear this, but "It's BACK!"
Wallpaper that is. In a huge way!
Anytime I see or hear Waverly, my minds wanders to Green & White Ivy & coordinating Balloon Shades in Stripes! I remember lugging books to clients houses back in the 90's & thinking, this will never go out of style. It went on a short hiatus & now it is making a new statement.
Metallics, textures, colors & BOLD!! Check out some of my favorites.
This ain't your Momma's wallpaper, anymore!
Would love to hear your comments on the Comeback Kid!

Fabulous Fireplaces

2011-01-04T19:21:00.009-06:00

The weather is constantly changing in Houston. One day it is 70 degrees & humid, dry & in the 40's, the next! Tonight it is raining, with the sound of thunder & flashes of lightning. Wishing I had brought some firewood in the house this morning....

Stay dry & warm!

You're Gonna Make It After All!

2011-01-03T13:59:00.002-06:00

I've always wanted to throw my hat up in the air, Like Mary Richards!
Not, "throw in the towel"! Young professional, finally on her own! Well, maybe not quiet so young now, but finally ready to blog!

I have been reading some wonderful blogs the past couple of years. Some on cooking, baking, decorating & design, politics & one friend's "rantings"! I have thoroughly enjoyed escaping into other's lives & perspectives. I always thought, I want to do that, but, time passes by & it's January 2011!

So, with the crisp weather in the Houston air...the time has come...my first Blog Entry for a new year!!

Ok, back to Mary Richards. I grew up watching The Mary Tyler Moore Show. I wanted to be Mary. I wanted her cozy apartment. The problem, I was still in elementary school. I was constantly turning one of my large bedroom closets into office space or a kitchen. My Mom was used to waking up to find our living room & dining room rearranged. I loved "space planning" even when I didn't know what it meant. I did learn at an early age to be creative & make spaces & objects function, double duty. I remember finding furniture next to our apt. dumpster or along side the road & would want bring it home & Mom would have to say no!

Well, fast forward to High School. I was the only girl in my Drafting Classes...who needs Home Economics?
I wanted to be an Architect/Designer! I was fortunate to have great teachers who believed in me & encouraged me to enter in a local design competition, my junior year. It was with Finger's Furniture & I had to design my bedroom with a budget of $800.00. Of course, being the young Designer I already was, I procrastinated until the last night to do the project. My 1st of many all-nighters! You had to do a "Story Board", space planning diagram & a short essay. I won 1st place!! I was awarded an $800 Gift Certificate to spend in the store. I bought the most incredible piece of furniture I could find. It has been used as a dresser, an office armoire & an entertainment armoire, back to using it as a my dresser. I still love 31 yrs later! My senior yr. I entered again, but was not allowed to win 1st place, so I won 2nd place. This time, I won $400 & bought my first sofa!

When I had my first apartment at A&M, my roommates did not need to bring any furniture. I had enough for a 2 bedroom place. I was forever, rescuing chairs, tables & lamps from the side of the road & would hit garage sales on Saturday mornings, when my friends would still be sleeping in. Still love to hit resale shops & an occasional dumpster dive in my neighborhood...thank goodness, most things are not in a real dumpster!

God has been amazing with the gifts & talents He gave me. I take no credit for any successes I have had, only the failures. But, His Grace has allowed me to "Make It, Afterall"! I get to work as a Designer & get paid to do what I love to do!

So, with all that said....this blog is strictly for me to express my passions ("rants"), about whatever inspires me & if you just happen to read it, I hope you laugh a little & stir up some creative juices of your own!

Blessings for a very Happy 2011~
Dena
