Hôtels Collection ont dénudé la Bonnotte de Noirmoutier à l’école de cuisine Alain Ducasse. Pour l’occasion, journalistes, représentants de la Coopérative de Noirmoutier et producteurs étaient invités à participer à un cours de cuisine original pour découvrir de manière ludique et interactive les quatre « accords parfaits » imaginés par chaque grand chef. Ainsi, quatre « brigades » atypiques ont secondé les Chefs Cédric Béchade, Lionel Levy, Alexandre Couillon et Arnaud Lallement pour cuisiner la Bonnotte de Noirmoutier. Convivialité et échanges étaient au menu de cet évènement. Tous les participants se sont prêtés au jeu en cuisinant avec passion la Bonnotte de Noirmoutier. A l’issue de ce cours original, chacun a pu ainsi découvrir et savourer la précieuse Primeur grâce à une dégustation de l’ensemble des plats réalisés. La Marine se réunit dans cette salle contemporaine pour qu'un jeune capitaine raconte la pêche à sa manière. Alexandre Couillon est déjà un grand chef. Après avoir été Grand de demain, il aborde les côtes les plus prestigieuses, avec un sens de la pureté et de la ligne droite qui est peu commun chez un chef de 35 ans: coquillages et velouté de petits pois avec un bouillon d'une sensualité et d'une justesse incomparables, lotte cuite tout doucement, asperges vertes et concombre, parfumée délicatement de framboise et bergamote, saint-pierre grillé bigorneaux et pistache étuvée de fenouils et ail des ours, voilà la mer telle que vous ne l'avez jamais vue, dans un environnement propice (le petit port de l'Herbaudière est un bijou) et dans une atmosphère de sages connaisseurs où, des clients comme du service, personne n'en fait trop, s'adaptant à cette philosophie de la sobriété.
