Fudgy Chocolate Brownie Cookies

If you fancy fudgy chocolate brownie and also like cookies then the recipe is for you. You never have to choose between a brownies and a cookie again because these brownie cookies are the perfect combination of both. These fudgy brownie cookies have all the gooey, chocolaty flavor of decadent brownies but in a cookie form they are insanely delicious and easy to make, perfect for any holidays even for a get together party.

When you bake brownies as cookies, you get the best of both. Perfectly chewy edges and soft fudge like centre with a crackly top are just perfect to call them the best fudgy brownie.

This recipe doesn't require any mixer or fancy equipment and the combination of white and brown sugar in the recipe add lots of depth to the flavour and chewiness from the molasses in the brown sugar. Also, this recipe doesn't require and leavening agent (any added leavening agent will lessen that fudgy texture of the cookies) so the cookies will be slightly thinner than regular cookies.

INGREDIENTS

Dark chocolate - 100g
Butter - 4tbsp
Sugar - 1/2 cup
Brown sugar - 1/4 cup
Egg - 1 large size
Vanilla essence - 1 tsp
All purpose flour - 1/4 cup
Cocoa powder - 1 tbsp
Salt - 1/8 tsp

INSTRUCTIONS

In simmering water keep a bowl on top (Double boiling method) add dark chocolate and butter.

Mix until completely melt the butter and chocolate.
Let it to cool.

Then in another bowl add sugar, brown sugar, egg vanilla essence.

Beat with a whisk until the mixture is creamy.

Now add the melted chocolate and mix again.

Mix with a whisk.

Then sieve and add all purpose flour, cocoa powder and salt to the bowl.

Gently mix the ingredients.

In a baking tray lined with parchment paper.
Make small ball size dollops.
(Leave enough space between each cookies.)

Bake 10 to 12 minutes on 180*C preheated oven.

Let it cool for 5 minutes.
If you break the cookie you can see fudgy inside.

Rasamalai is a very popular sweet in any South Asian countries. Originally rasamalai made from curd but it also possible to make it with milk powder. It saves a lot of time and tastes very similar to the original one. Also making rosamalai with curd is a bit more completed. This this the recipe if you want to eat rasamalai at home without difficulties. Very few ingredients are required to make this milk powder rasamalai also take very less time. I hope you will like this simple sweet recipe.

INGREDIENTS

Powdered milk - 1 cup
All purpose flour - 1 tsp
Baking powder - 1/2 tsp
Ghee - 1/2 tbsp
Egg - 2 medium size
Milk - 3 cups
Sugar - 1/2 cup
Cardamom powder - 1/2 tsp
Saffron - 1 pinch (optional)
Thickened milk - 1/2 cup
Chopped Pistachios for garnishing

INSTRUCTIONS

In a mixing bowl add powdered milk, flour, baking powder mix all the dry ingredients.
Then add ghee then make it crumbs.

Now add beaten egg little by little and mix until sticky dough.

Cover and keep for 4 to 5 minutes to rest.
After 5 minutes the dough will be non sticky.

Apply some oil on your palm and make small balls.

Keep a pan in medium heat add milk and sugar mix until sugar dissolves.

Now add cardamom powder, saffron mix well.

When the milk simmer add the prepared rasamalai balls to the milk.

Close with a lid and allow it to cook in low flame for 10 minutes or until done.
Rasamalai will be super soft when boiling so make sure not to handle it gently as it could break.
Finally, open the lid add thickened milk and mix gently.

Switch off the flame and let it to cool to room temperature then refrigerate for 2 to 3 hours at least or overnight before serving.
Garnish with chopped Pistachios and serve.

Ingredients

Panner coarsely grated - 2 cups
Vegetable oil - 1 ttbsp
Mustard seeds - 1/2 tsp
Onions coarsely cut - 1 cup
Green chili thinly sliced - 1
Red chilli pieces / chili paste - to taste
Crushed ginger - 1 tsp
Crushed garlic - 1 tsp
Turmeric Powder - 1 pinch
Tomato cut in small pieces - 1
Curry leaves - finely chopped
Salt - to taste

METHOD

1. Heat oil in pan add oil and add mustard seeds to it.

2. Fry the cut onions, green chilies, garlic and ginger under medium heat.

3. Once brown, add the cut tomatoes and continue frying for a minute.

4. Add the paneer, curry leaves and salt with red chilli pieces to taste

5. Toss with noodles or serve with bread.

Chicken Nuggets are all time favourite appetizer throughoutthe fast food chain. Especially chicken nuggets are loved by kids a lot. I think because of its size. Although sometimes chicken nuggets a bit controversial because of the chicken meat goes into the nuggets. Normally all the fast food chain tend to use some odd chicken parts and smash them to make chicken nuggets and no one knows about that odd parts. This is why I don't eat chicken nuggets at any fast food chain instead I make them at home with actual chicken meat and spices. This recipe is very simple and doesn't take a long time to cook.

INGREDIENTS

Chicken mince - 500g
Mixed herbs - 1/2 tsp
Egg- 2 medium size
Black pepper - 1/2 tsp
Salt - to taste
Paprika powder - 1/2 tsp
Garlic powder - 1 tsp
Chili powder - 1/2 tsp
Lemon juice - 1 tsp
Flour - 1/2 cup
Bread crumbs - 1/2 cup
Cornflakes - 1/2 cup

INSTRUCTIONS

In a large bowl add chicken mince, mixed herbs, one egg, pepper powder, salt, paprika powder, garlic powder, chilli powder, lemon juice.

Mix well.

Then add salt, pepper powder, paprika powder, garlic powder to the flour and mix.
Set aside.

Crush the Cornflakes.

Then add breadcrumbs to the Cornflakes and mix well.

Add salt and pepper powder to the egg beat well.
Set aside.

Apply some oil to your hands then take small portion of the chicken mix.
And make nuggets shape with the mix.

Then coat in the prepared flour.

Then dip in the egg.

Finally coat in the breadcrumbs and cornflakes.

Keep a frying pan on the flame and add enough oil to deep fry.

Fry the nuggets.

Fry until golden brown.

Serve with bbq sauce or ketchup.

INGREDIENTS

Digestive biscuits -12 pieces
Butter - 5 tbsp (melted)
Milk - 1/2 cup
Agar agar - 1 tbsp
Sugar - 1 cup
Heavy cream - 2 cups
Cream cheese - 2 cups
Semi sweet dark chocolate - 3 tbsp

INSTRUCTIONS

Add digestive biscuits to a zip lock bag and crush them into crumbs.

Transfer the biscuit crumbs to a bowl and add melted butter.
Mix well.

Take a 7 inch spring form cake tin grease with some butter .
Now add the biscuit mixture and spread evenly with spatula.

Then refrigerate for 10 minutes.

Keep a saucepan in medium heat add milk and agar agar.
Mix well.

When the milk starts to thickened add sugar and mix well.

Microwave the heavy cream for 2 minutes.
Then pour the milk mixture to the heavy cream.
Mix well with a whisk.

Now take the cream cheese in a bowl and beat for 1 minute until smooth.

Now add the milk mixture to the cream cheese.
Add the milk mixture little by little and mix .

Now separate the cream 1 cup for 2 bowls.
And 1/2 cup for bowl.
And keep the rest in the bowl.

Melt the dark chocolate.

Then add 1/2 tablespoon of chocolate for 1 cup of cream and mix well.
Then add 1 tablespoon of chocolate for 1 cup of cream and mix well.
Then add 1 tablespoon of chocolate for 1/2 cup of cream and mix well.

1.2 cup Cream with no chocolate.

Now take out the cake tin from the fridge and pour cream mixture.
Spread evenly.

Now pour the light colour chocolate mix.

Then pour the dark colour chocolate mix.

Finally pour the darkest chocolate mix.
Then tap the cake tin 3 time on the table.
Refrigerate for overnight.

Take out the chocalate layered cheesecake from the fridge.
And heat the side of the cake tin using a lighter.

Remove the cake tin and cut into pieces.

Cold milk - 1.5 cup

Chocolate Syrup - 4 tbsp

INSTRUCTIONS

In a small bowl add instant coffee and water.
Mix well.

In a blender jar add milk sugar and blend well.

Then add coffee mixtute, heavy cream, ice cubes, chocolates syrup and ice cream (Homemade Vanilla Ice cream Recipe)
Bled on medium speed for 1

Garnish the coffee glass with chocolate syrup.

Then pour the blend cold coffee.

Garnish the cold coffee with wipped cream or vanilla ice cream.

INGREDIENTS

All Purpose Flour - 1 cup
Sugar - 1 tsp
Cornstarch -1 tbsp
Dried active yeast - 1 tsp
Salt - 1/4 tsp
Luke Warm Water - 3/4 cup

For Syrup

Sugar - 1.5 cup
Water - 1 cup
Cardamom - 3
Lemon juice - 1 tbsp

INSTRUCTIONS

Sieve the all purpose flour to a bowl .
And add sugar, cornstarch, yeast, salt and mix well.

Now add luke warm water little by little until medium consistency batter.

Then cover with a cling film and rest for 1.5 hours until it's raise.

Meanwhile, to make the sugar syrup
Keep a pan in medium high heat and add sugar add water and boil until sugar dissolves.
Now add cardamom and lemon juice boil for 5 more minutes.

After 1.5 hours the mix ready to be fry.

Keep a frying pan on medium flame add enough oil for deep frying.

Wet your hand in water.
Take small balls from the batter then drop it to the oil carefully.
Wet your hand everytime before take the batter.

Fry until golden brown.

After fried the balls add the balls to the sugar syrup right from the oil.
Keep in the sugar syrup For 1 to 2 minutes max.

INGREDIENTS

Vermicelli - 200g
Ghee - 4 tbsp
Desiccated coconut -1/2 cup
Chopped Cashews - 2 to 3 tbsp
Condensed milk - 3/4 cup
Finely chopped Pistachios - 8 to 10 pieces

INSTRUCTIONS

Break vermicelli into small pieces.

Keep a non stick pan on medium heat and add ghee then add vermicelli then roast 4 to 5 minutes .

Then turn the flame to medium low heat and add dessicated coconut and chopped cashews.
Roast 2 more minutes.

Then add condensed milk.
Mix well.

Cook until soft and thick consistency.

Greased a pot with oil or ghee.
Add the Barfi mix to the pot.

Spread evenly.
Let it cool for 30 minutes.

Now cut it into square pieces.

Finally garnish with chopped Pistachios.

INGREDIENTS

Milk Powder - 1 cup
All purpose flour - 2 tbsp
Semolina - 1 tbsp
Baking powder - 1 tsp
Ghee - 1 tbsp
Beaten eggs - 2
Sugar - 2 cups
Water - 2 cups
Cardamom - 3
Saffron - 1 pinch
Lemon - half

INSTRUCTIONS

In a large bowl add milk, all purpose flour, semolina, baking powder mix all the dry ingredients.

Now add ghee mix well with the flour mixture until crumbs.

Then add eggs mix the dough with low pressure. If required add some more water to make soft dough.

Apply some ghee or oil on your palm and make small balls with the dough. (the ball should not be Crack in any side.)

In a pan add sugar, water , cardamom and mix until sugar dissolves and let that to boil for few minutes.

When sugar syrup boil add saffron and mix finally add squeeze the lemon juice to the sugar syrup mix well.

Meanwhile, in a frying pan add oil to fry the balls.

Then add the balls fry until golden brown.

Add the fried balls to the sugar syrup directly from the oil.

Let it to boil in the sugar syrup in medium heat for 5-10 minutes. Cover and cook.

Soft and fluffy Gulab Jamun is ready to serve.

Then switch off and serve cool or with ice cream

Ginger & Garlic paste - 1 tsp
Chopped Onions - 1/2 cup
Green chilies - 2 big size
Chopped coriander - 3 tbsp
Smashed potatoes - 3 big size
All purpose flour - 1/2 cup
Corn Starch - 1/4 cup
Egg -1 small size
Breadcrumbs - 1/2 cup
Egg - 2

INSTRUCTIONS

In a food processor add chicken, salt, pepper, garam masala, coriander powder, red chilli powder, cumin powder, ginger and garlic paste, chopped onions, green chilies and coriander leaves.

Grind to a fine paste.

Then transfer the chicken mixture to a bowl.
Then add potatoes, egg (1) and all purpose flour.
Add the flour gradually.
Mix well.

Beat the eggs.
Dust a tray with all purpose flour.

Take medium portion of the chicken mixture and make 1/2 inch thick chicken patty.
Then keep it in the dusted tray.

Now make holes on the middle of the chickeb patty using any cutter.

Then dip in the egg.

Then coat with the breadcrumbs.

Keep the chicken doughnuton fridge for 30 minutes before fry.

Add enough oil to a frying pan to deep fry.

Fry chicken Donut until golden brown.
Serve with tomato ketchup.

INGREDIENTS

Red Lentils - 1 cup
Olive oil - 2 tbsp
Butter - 2 tbsp
Chopped Onions - 1 medium size
Garlic - 3 cloves (sliced)
Potato - 1 big size
Carrot - 1 big size
Tomato - 1 medium size (Chopped)
Salt - 1/2 tsp
Black pepper - 1/2 tsp
Red chilli powder - 1/2 tsp
Cumin powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Vegetable stock - 4 cups
Lemon juice - 2 tbsp

INSTRUCTIONS

Add the red Lentils to a bowl and water.
Wash and strain.

Keep a pan on medium heat add olive oil, butter, onions, garlic fry until translucent.

Then add potatoes and carrots cook for 6 to 8 minutes.

Now add tomatoes and cook until soft.

Also add salt, pepper powder, chili powder, cumin powder, turmeric powder, mix well.

Then add red lentils and mix with the spices.

Now add vegetable stock (add more if you need) bring it to a boil.

Partially cover and simmer for 20 minutes over low heat.

Then open the lid and blend with a hand blender until smooth.

Finally squeeze the lemon mix well and switch off the flame.

Transfer to a soup bowl.

Garnish with coriander leaves if you needed and serve hot.

Crispy Potato Tacos

Potato Cheese Quesadilla

INGREDIENTS

Potatoes - 6 small size
Cooking oil - 1 tbsp
Chopped Onions - 4 tbsp
Red bell pepper - 4 tbsp
Green bell pepper - 4 tbsp
Salt - 1/4 tsp
Red chilli powder - 1/2 tsp
Cumin powder - 1/2 tsp
Black pepper powder - 1/4 tsp
Mozzarella Cheese - 4 tbsp
Chopped coriander leaves - 1 tbsp
Tortilla - 20 cm
Pizza sauce - 1 tbsp
Mixed cheese -:1 tbsp

INSTRUCTIONS

Boil the potatoes until tender.

Mash the potatoes.

Keep a pan in medium heat then add oil, onions and bell pepper sauté for 4 to 5 minutes.

Then add salt, pepper powder, chilli powder, cumin powder mix well.

Add sautéed veggies to the mashed potatoes and mix everything well.
Also add salt 1/4 tsp and black pepper powder 1/4 for taste.

Add mozzarella cheese and coriander leaves and mix well.

Take the tortilla bread and spread the pizza sauce. (Homemade Pizza Sauce Recipe)

Now add the mixed cheese for one side of the tortilla bread.

Keep the prepared potato masala on the chesse.

And again topped with mixed cheese.

Close the tacos from the other side and press down.

Now keep a pan in medium low heat add oil keep the the tacos and fry.

Fry for about 2 minutes each side or until golden brown.

Cut into halves and serve with any sauce.

Cheesy inside.

Hard boiled Egg - 1
Finely chopped onions - 3 tbsp
Chopped Dill pickles - 1 tbsp
Mayonnaise - 5 tbsp (Homemade Mayonnaise)
Chopped coriander - 1 tbsp
Lemon juice - 1 tbsp
Salt - 1/4 tsp
Black pepper - 1/4 tsp
Shrimp - 300g (deveined and washed)
Salt - 1/4 tsp
Black pepper - 1/4 tsp
Red chilli powder - 1/4 tsp
Ginger and garlic paste - 1/2 tsp
All purpose flour - 1/2 cup
Bread crumbs - 1/2 cup
Egg - 1

INSTRUCTIONS

Smash the egg into crumbs.

Then to the add onions, dill pickle, mayonnaise (Homemade Mayonnaise Recipe)
Chopped coriander, lemon juice, salt, pepper

Mix well and set aside.

Then put deep cuts in the shrimp.

Then gently press down the shrimp from the other side.

Now marinate the shrimp with salt, pepper, Chilli powder and ginger and garlic paste.

Beat the egg.

Now take a shrimp and coat with flour.

Then dip in the egg.

Finally coat with breadcrumbs.

Keep a frying pan in high heat and add enough oil for deep frying.

Fry the shrimps until golden brown.

Take out from the oil.

Serve with prepared Tatar sauce.

Bake 12 to 15 minutes at 180*C preheated oven.

Take a parchment paper and dust some icing sugar to prevent sticking.

Remove the parchment paper on the cake.

Then keep the cake on the dusted parchment paper then dust some icing sugar top of the cake too.

Roll, roll, roll.

After fully rolled, let it completely cool to room temperature.

In a large bowl add whipping cream beat.
Then add sugar beat until stiff peaks form.

Take the rolled cake and apply the cream on the cake.

Spread evenly.

Then aging roll the cake

Also cover with the parchment paper.

Refrigerate for 2 hours to set completely.

Cut off the sides.

Use the remaining whipping cream to decorate.

Perfect Lemon Bars

This lemon bars with a buttery shortbread crust at the bottom and silky smooth yet sweet lemon curd filling on the top are the best. These luscious lemon bars have the perfect balance between sweet and sour. They are very pretty to look at and very delicious at the same time. A little dusting of icing sugar makes them look more attractive. These lemon squares can be a nice and colourful addition to a cookie platter and they are always a hit.

INGREDIENTS

For the shortbread crust

Salted butter - 1/2 cup (Room temperature)
All purpose flour - 1 cup
Icing sugar - 1/4 cup
Vanilla essence - 1/2 tsp

For the lemon curd filling

Egg - 3 large size
Sugar -1 cup
All purpose flour - 3 tbsp
Lemon juice - 4 tbsp (fresh)
Lemon zest - 2 tsp (grated)

INSTRUCTIONS

First preheat your oven to 170*C (325*F).
Then grease a 7*7 inch baking tin with softened butter or oil and lined with parchment paper, set aside.

Now to make shortBread base take butter , all purpose flour, icing sugar, vanilla essence in a bowl.

Then combine everything using spoon or simply using your hand until the dough forms a ball.

Now part the shortbread dough into the lined baking tin.

Make sure it's nicely leveled and the sides are closed properly.

Then prick the crust all over with a fork so it doesn't rise up while baking

Bake the shortbread crust into your oven 170*C preheated oven for about 20 minutes or until its slightly brown on the edges.

Meanwhile, in another bowl combine eggs, sugar, all purpose flour, lemon juice and lemon zest then mix well.

Take out the crust from the oven and fill with the lemon filling you just prepared.

Bake again for 25 to 30 minutes or until set.
Once it's baked perfectly, there should be jiggling on top and a thin crackle crust will form on the top.

Allow it to cool completely to room temperature.
Then refrigerate for at least 2 to 3 hours or overnight before serving.

Cut into small pieces square., dip your knife into hit water after each cut if you like to get a clean cut evert time.

Dust with some icing sugar and enjoy.

You can store your lemon bars in an air tight box in the refrigerator for 4 to 5 days.

Black pepper - 1/2 tsp
Chill flakes - 1/2 tsp
Sugar - 1 tbsp
Basil - 6 to 7 leaves
Heavy cream - 1/2 cup

INSTRUCTIONS

Keep a pan in medium heat add olive oil, butter, onions sauté for about 5 to 6 minutes.

Then add garlic sauté.

Now add Canned crushed tomatoes and cook well.

Also add vegetable stock.

Now add salt, black pepper, Chilli flakes, sugar, basil leaves mix well and bring it to a boil.

Partially cover and simmer for 10 minutes over low heat.

Remove the basil leaves.
Blend until smooth using a hand blender.

Now add heavy cream mix well.

Transfer the tomato soup to a soup bowl and garnish with black pepper, basil leaves and with cream.

Chicken Stir Fry

This chicken stir fry is almost as simple as it gets. It begins with a few cubed chicken breast., even though chicken thighs work well. I like to begin with the chicken when I'm making a mix fry since s they brown, they make a layer of flavour withinv the skillet. When the veggies get added, they pickup a few of that flavour and after that create their own. It is these layer that donate so much depth of this easy formula and after that it's time for the sauce.

INGREDIENTS

Chicken breast - 500g
Salt - 1 tsp
Black pepper - 1/2 tsp
Minced garlic - 1 tsp
Mince ginger - 1 tsp
Dark soy sauce - 1 tbsp
Cornstarch - 1 tbsp
Water - 1/2 cup
Soy sauce - 4 tbsp
White vinegar - 1 tbsp
Tomato ketchup - 2 tbsp
Honey - 2 tbsp
Cornflour - 2 tbsp
Cooking oil - - 3 tbsp
Grated ginger - 2 tsp
Grated garlic - 2 tsp
Chill flakes - 1 tsp
Onion - 1 medium size
Green bell pepper - 1 medium size
Red bell pepper - 1 medium size

INSTRUCTIONS

Cut the chicken into small pieces.

Then add salt, pepper powder, minced ginger, minced garlic, dark soy sauce and cornstarch.

Mix well and marinate the chicken for 30 minutes.

For the stir fry sauce. In a small bowl add water, soy sauce, vinegar, ketchup, honey , corn flour.
Mix everything well without any lumps. Keep aside.

Keep a pan in medium high heat add oil also add the marinated chicken and cook 4 to 5 minutes.

Then take out from the pan and keep aside.

In the same pan add 1 tbsp oil cooking oil , grated ginger and garlic, chili flakes cook for 30 seconds.

Then add onions, red and green bell pepper cook for 4 to 5 minutes.
Also add salt to taste.

Now add the prepared sauce mixture and cook for another 2 to 3 minutes.

Now add the fried chicken to the sauce cook for 1 more minute.

Switch off the flame and transfer to a plate then serve.

INGREDIENTS

For Marination

Pomfret Fish - 1 kg
Red chilli powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Salt - to taste
Lemon - 2 tbsp

Oil - 1/2 cup
Onion - 1.5 cup
Green chilies - 5 small size
Salt - to taste
Red chilli powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Coriander leaves - 2 tbsp

INSTRUCTIONS

Clean the fish well and put cuts on the fish.
Then pat dry the excess water in the fish using a tissue paper.

In a small ball add Chili powder, turmeric powder, salt, lemon mix well until paste.

Apply the spice mix on the fish and keep aside to marinate for 1 hour.

In a frying pan in medium heat add oil.
After oil gets heat fry the fish.

Fry the fish 5 minutes on each side or until golden brown.
Transfer the fried fish to a plate and keep aside.

In the same pan with oil add onions sauté well.

Close with the lid and cook for 5 minutes on medium heat.

After onions are brown in colour add green chilies, salt, chili powder, turmeric powder cook well.

Then keep aside the masala on the pan then keep the fried fish on the other side of the pan.

Cover the fish with onion masala.

Close with the lid and cook for about 5 minutes on medium heat.

Then flip to the other side then sprinkle the coriander leaves close with the lid cook another 5 minutes.

Serve hot with lemon.

Eggless Milk Pudding

INGREDIENTS

Milk - 1/2 cup
Condensed milk - 1/2 cup
Hanged yogurt - 1/2 cup
Cardamom powder - 1/2 tsp
Cornflour or cornstarch - 1/2 tbsp
Saffron - 1 pinch (optional)

INSTRUCTIONS

In a bowl condensed milk and corn flour then mix well using a whisk.

Then add hanged yogurt mix again.

Now add milk and cardamom powder mix well.

In a heat resistant box , pour the pudding mixture.

Then dust some cardamom powder and saffron on top.

Cover the box with the lid.

In the steaming pan cover the bottom with parchment paper or kitchen towel .

Then carefully place the pudding box .

Then pour hot water fill upto the box half full.

Close the pan with the lid.
Close the hole on the lid if there is any .

Check the pudding with a knife, insert a knife to the pudding if the knife cone out clean then the milk pudding is done cooking.
Take out the box from pan.
Then cut into pieces after reach room temperature.

Carefully and slowly take out the pudding pieces using a spatula.
Serve and enjoy the milk pudding.

Naan bread is one of the common bread throughout the whole south Asian with any kind of curry, a perfect naan is a goldmine of taste. Although naan bread is very common, it is early cooked at home. Just because it requires a tandoor to make a naan. But nowadays people started to cook it at home with any alternative to the tandoor. Even it is possible to cook it in your typical gas stove. In this post, I have tried to show you the best and simple way of cooking a perfect naan roti.

INGREDIENTS

All purpose flour - 2 cups
Plain yogurt -1 /2 cup
Salt - to taste
Sugar - 1 tsp
Baking soda - 1/2 tsp
Oil - 2 tbsp
Water
Butter - 1 tsp (optional)

INSTRUCTIONS

In a large mixing bowl add all purpose flour, baking soda, sugar, salt mix all the dry ingredients.

Then add oil mix and make it to crumbs.

Now add yogurt mix well.
While mixing add water little by little until make semi soft dough.

Apply some oil to the dough and cover amd keep a aside for 2 to 3 hours.

Take the dough and again knead the dough for another 10 minutes.

Divide the dough into balls.

Take one ball dust some flour on the surface and the dough.

Then spread the dough to less than 1/4 inch thick.

Apply some water on one side of the naan dough.

Heat the tawa (compulsorily don't use a non stick tawa) on medium heat.
Put water side naan over tawa .

Once the naan start bubbling and dough start drying , turn the tawa over flames keeping about 2 inch way from the flame to cook the naan from top.

NOTE: Yes naan will stick to tawa and will not fall of, this the reason you can not use nonstick skillet.

Once naan browned to your satisfaction.

Remove from the tawa.

Spread the butter all over the naan.
Place on a plate and cover with a cloth to keep warm until serving.

Chicken Biriyani

INGREDIENTS

Basmati Rice - 1/2 Kg
Chicken - 1 kg
Oil -1/2 cup
Chopped Onions - 1.5 cup
Salt - 1/2 tsp
Grated ginger & Garlic - 2 tbsp
Yogurt - 1/2 cup
Tomatoes - 2 cups
Biriyani masala - 1 packet
Hot water - 5 cups
Green chilies - 6 pieces
Rose water - 2 tsp

INSTRUCTIONS

Soak the basmati rice for 15 to 20 minutes.

Keep a pan in medium high heat add oil (You can also use ghee instead of oil or ghee 1/4 cup and oil 1/4 cup.)
Then add onions and salt sauté the onions until golden brown colour.

Then add ginger and garlic sauté for 3 minutes.

Add yogurt and mix well.

Now add tomatoes mix well and close with a lid to cook well.

Also add biriyani masala mix well.

Now add little amount of water and cook until simmer.

Cook until oil separates.

Now add the chicken mix well with the gravy.
Close with lid and let the chicken cook for 80%.

Strain the water of soaked rice.

Open the lid and give a mix then take out the chicken from the gravy.

Add the rice to the gravy and mix.

Then add hot water mix well also add 1/2 tsp Salt of your taste.

Now add the chicken pieces mix well.

Add green chilies close with the lid until rice cook well.

Open the lid and mix well.

Finally add rose water and close with the lid for 1 minute and serve.

Serve hot and enjoy.

Boiled potatoes - 4 small size
Cumin - 1/2 tsp
Grated ginger - 1 tsp

Chopped tomatoes - 1 small size
Green chilies - 2 Chopped
Chopped Onions - 1
Coriander leaves - 1 tbsp Chopped
Besan sev - 2 tbsp
Lemon juice - 1/2 lemon
Oil - 1 tbsp
Coriander powder - 1/2 tsp
Tarmarind sauce -

INSTRUCTIONS

Cut the boiled potatoes into small cubes.
Keep a pan in medium heat and add oil and also add the potatoes.

Fry the potatoes until golden brown approximately 4 to 5 minutes.
Then transfer the potatoes to a bowl.

In the same pan add cumin fry for 5 seconds.

Then add ginger and green chilli fry for few seconds. .

Add chopped tomatoes then cook for 2 minutes.

Now add salt , cumin powder, coriander powder, chilli powder mix well.

Cook until the tomatoes are soft and smash.

Transfer the masala to the fried potatoes.

Mix well.
Then transfer to a plate.

Then topped with onions, green chilies, coriander leaves, chaat masala, beans sev , lemon juice and tamarind sauce.

Enjoy your snack time with Masala Aloo Chaat.

Spicy Chicken Roast

INGREDIENTS

For Spice Powder

Cardamom - 15 to 16 pieces
Cinnamon stick - 2 pieces
Whole black pepper - 1/2 tsp
Black cumin seeds - 2 tsp
Cloves - 6 to 7 pieces
Black cardamom - 1 piece
Nutmeg - 1 small size
Mace - 1 big size

For Cashew Paste

Fried onions - 1 /2 cup
Yogurt - 1/2 cup
Soaked cashews - 20 to 25 pieces

For Gravy

Chicken - 1.5 kg
Salt - 1 tsp
Turmeric Powder - 1/4 tsp
Oil - 1/2 cup
Onion paste - 1/2 cup
Ginger and garlic paste - 1 heaped tbsp
Bay leaf - 1 piece
Green chilies - 6 to 7 pieces
Coriander powder - 1 tsp
Red chilli powder - 1 tsp
Turmeric Powder - 1/4 tsp
Water - 1/4 cup
Salt - 1/2 tsp
Milk - 1/2 cup
Water - 1/2 cup
Dried plums - 5 to 6
Green chilies - 5 to 6 pieces
Rose water - 1 tbsp
Ghee - 1 tbsp
Fried onions - 1 tbsp

INSTRUCTIONS

Dry roast the Cardamom, Cinnamon stick, Whole black pepper, Black cumin seeds, Cloves, Black cardamom , Nutmeg, Mace
Then grind it into fine powder.

In a grinder jar add fried onions, yogurt, and cashews.
Grind into a paste.

Put regular cuts in chicken.
Then add salt , turmeric powder mix well.
Set side.

Keep a pan in medium high heat and add oil .
Fry the chicken until half cook.

Then remove from the pan keep a aside.

In the same pan add onion paste and ginger and garlic paste.
Fry for 2 minutes.

Then add bay leaf, green chilies and the roasted masala (half amount of the prepared spice powder.)

Now add coriander powder, red chilli powder, turmeric powder.

Also add the grind paste (whole amount made before.)
Cook well.

Add water cook for 5 minutes on low heat.

After oil separates add salt to your taste and also add the fried chicken pieces and mix well with the gravy.

Now add milk and water mix well.

Close with a lid cook.

Finally add dried plums, green chilies, rose water.

Also add ghee and fried onions.

Close with the lid and cook for another 5 minutes on low heat.

Now tasty spicy chicken roast is ready to serve.
