Since my hubby dear Mrinal reaches home pretty late (being in advertising industry, it's pretty natural), I make it a point to cook the dinner post 10 pm. But at times, the laziness takes over and by the time its past nine pm, I do not feel like cooking a full course meal.

Methi Gajar Green Pulao recipe - Quantity ideal for 2 people:

Ingredients:

1 tsp pure ghee
1/2 tsp cumin seeds
2-3 cloves 
1 medium onion, chopped

My mom is diabetic and I don't like the idea of us all eating sweets during Diwali while shemanages with some snacks. Not that she loves sweets and will take any opportunity to indulge, she is very particular about not having sweets.

So I tried out Rava (Sooji /Semolina) Laddus without sugar. I used little jaggery instead and the dry fruits make up for the rest of the sweet flavour.

Diwali is the occasion when we consume too many sweets. And then, we look out to munch some salty, spicy snacks. The snack that best complements laddoos and karanji is Moong Dal Samosa. Few Cashewnuts and Almonds (if you prefer)

I tried making Kalakand (Malai Burfi) using Gits instant mix. Since my folks are not very fond of dairy sweets, I added fresh grated coconut and cardamom powder to the mix and it turned out to be really delicious! Oh yes, and I also added some orange colour to the preparation so that it doesn't look too much of a dairy product. If you wish, you can replace wheat flour with maida (refined flour). There are three parts to the preparation of Modak – FILLING, DOUGH and FRYING.

Grated coconut – 2 spoons
Mawa (khoya) – 250 grams (if you don’t like / get khoya, you can avoid it but increase the amount of coconut to 4 spoons)
Cashewnuts – finely chopped
Raisins/ kishmish
Green cardamom – powdered – 1 pinch
Sugar – powdered – 1 1/2 cups

While most people hate khichdi, some really love it. I know of some friends who prefer to order dal khichdi from a restaurant instead of a biryani or paneer+tandoori roti combination. After all, like dals, khichdis can be of various types, consistencies and flavours. And when they are served hot with a dollop of pure ghee, khichdis are truly heavenly!
