In una ciotola mescolate
la farina con il cacao, il lievito, il sale. Mettete il burro a
pezzetti e iniziate a sbriciolarlo con la farina usando la punta
delle dita, poi unite lo zucchero e l&#39;uovo leggermente battuto e dove
avrete sciolto la vanillina. Cercate di amalgamare tutti gli
ingredienti ottenendo un composto sbriciolato. In una ciotola
lavorate lo zucchero con la ricotta e le gocce di cioccolato.
Rivestite con la carta forno una tortiera non troppo bassa di
diametro 24. Versate metà del composto sbriciolato, distribuire
sopra la ricotta aiutandovi con una spatoletta, versare sopra la
ricotta il resto del composto sbriciolato e distribuirlo per bene
cercando di coprire tutta la ricotta. Cuocete a 180° per 35/40
minuti forno statico. Una volta fredda mettetela in un piatto da
portata e spolverizzate con abbondante zucchero a velo.&lt;/div&gt;

la mdp, ma potete farlo tranquillamente anche a mano. Sciogliere il
lievito nel latte tiepido con un cucchiaino di zucchero e lasciarlo
riposare 15 minuti. Mettere nel cestello la farina, lo zucchero, le
uova sbattute, la vanillina e la buccia di limone. Unire anche il
latte con il lievito e avviare il programma impasto, dopo circa 10
minuti unire il burro ammorbidito e il sale. Dopo circa 18 minuti,
prima che la macchina si fermi, unite l&#39;uvetta. Fate lievitare circa
un paio di ore, formare la treccia metterla in una teglia con carta
forno e far lievitare ancora 30 m. Spennellare con latte e cuocere a
180° per circa 30 m forno statico.&lt;/div&gt;

Tagliate le cipolle a
julienne e fatele rosolare in una padella con abbondante olio evo,
giratele spesso per non farle bruciare. Dopo 5/6 minuti unite un po&#39;
di acqua, coprite, abbassate la fiamma e fate cuocere finche le
cipolle saranno morbidissime e l&#39;acqua si sarà completamente
asciugata. In una terrina sbattete le uova, con il parmigiano e la
panna. Versate dentro le cipolle, mettete il sale e il pepe e
mescolate per bene. Ritagliate la pasta sfoglia e rivestite gli
stampini imburrati, mettete con il cucchiaio il composto di cipolle
sopra la sfoglia e cuocete a 200° per 20 minuti. Sono buonissimi

la base di biscotti, livellatela per bene e infine distribuite sulla
superficie la nutella resa fluida mettendola qualche secondo nel
microonde. Con uno stuzzicadente create dei vortici tra la nutella e
la crema, poi ricoprirete con gli altri biscotti tritati
grossolanamente e per ultimo spolverizzate tutta la superficie con il
cocco. Mettetela in frigo per qualche ora prima di servirla, in modo

Pasqua è passata da un bel pezzo ma volevo farvi vedere questo dolce
tipico siciliano che ho fatto appunto per le feste di Pasqua. Mi

margarina fusa. Mescolare bene al fine di far sciogliere il caffè,
unire poi la vanillina e il sale. Unite la farina con il lievito e
amalgamate il tutto, per ultimo unite le gocce di cioccolato. Versate
il composto a cucchiaiate nei pirottini per muffin  senza farli
troppo pieni (con questa dose ne verranno circa 6). Cuocete in forno
statico a 180° per 20/25 minuti.&lt;/div&gt;

l&#39;altra sera ho voluto provare a fare la pasta brisè per fare una
torta salata e l&#39;esperimento è riuscito benissimo. D&#39;ora in poi
anziché acquistarla già pronta me la farò sempre io anche perchè
è davvero più facile di quello che pensavo, l&#39;importante è usare

farina con il sale e il burro tagliato a pezzettini. Lavorate con la
punta delle dita ottenendo un composto sbriciolato, unite poco per
volta l&#39;acqua fino ad ottenere un impasto compatto, elastico e non
appiccicoso. Avvolgete nella pellicola e fate riposare in frigo per 1
ora. Per il ripieno grattugiate le zucchine con la grattugia a fori
grandi per ridurle a fiammifero. In una ciotola lavorate la ricotta
con le uova e il formaggio grattugiato, unite il pepe e la noce
moscata, poi le zucchine e regolate di sale. Stendete la pasta brisè
formando un disco ma tenetene da parte un pezzetto per fare la
griglia di decorazione. Mettetelo dentro una teglia rivestita di
carta forno, bucate il fondo con una forchetta e versateci il
composto di zucchine e ricotta. Con la pasta che avete tenuto da
parte formate delle strisce e disponetele sopra la torta formando una
griglia. Cuocete a 200° per 40 minuti. Servitela tiepida o fredda,
se vi avanza, sappiate che il giorno dopo è ancora più buona.&lt;/div&gt;

per impastare ho usato la
mdp con il programma impasto ma potete farlo tranquillamente anche a
mano anche se ci vuole un po&#39; di olio di gomito. Sciogliere il
lievito nel latte tiepido con un cucchiaino di zucchero, lasciate
riposare finchè si forma la schiumetta in superficie. Versate il
latte nella farina, poi uova, zucchero, aromi, burro morbido e per
ultimo il sale. Stessa sequenza se usate l&#39;impastatrice come ho fatto
io. Fate lievitare per circa 2 ore, poi stendete a rettangolo,
spargete le gocce di cioccolato, arrotolate dal lato più lungo e
tagliate delle fette spesse 2 dita. Disponetele a fiore dentro una
teglia con carta forno, coprite con un telo e fate lievitare ancora 1
ora. Spennellate con latte e cuocete a 180° forno statico per 30/35

lavorare a crema il burro
morbido con lo zucchero, unire l&#39;uovo, la vanillina, il sale e il
caffè solubile. Mescolate la farina con il cacao e il lievito e
unitela poco per volta al composto di burro e uova. Vi consiglio da
questo momento in poi di impastare con le mani, per ultimo aggiungete
le gocce di cioccolato. Coprite l&#39;impasto con pellicola e mettete in
frigo almeno 1 ora e 30 minuti. Dopo mettete lo zucchero a velo in un
piatto, prendete piccole quantità di impasto formate una pallina
grande come una noce e rotolatela nello zucchero. Disponetele in una
placca rivestita di carta forno ben distanziate tra loro per durante
la cottura crescono. Cuocete a 180° forno statico per 10/15 minuti.&lt;/div&gt;

tornate nel mio blog. Qualche giorno fa avevo voglia di un pan
brioche leggero da  poter consumare sia con il dolce che con il
salato e senza troppi grassi e così, visto che avevo in frigo un

Io per impastare ho usato
la mdp, altrimenti disponete la farina a fontana aggiungete nel mezzo
il lievito sciolto nel latte tiepido con lo zucchero e iniziate ad
impastare, unite la ricotta e per ultimo il sale. Fate lievitare per
un paio di ore, poi fate 14/16 palline, dipende da quanto le volete
grandi, e disponetele in una teglia foderata con carta forno. Fate
lievitare ancora 1 ora, poi spennellate con latte, spolverizzate con
zucchero semolato (solo per la versione dolce) e cuocete a 180° per
35/40 minuti, forno statico.&lt;/div&gt;

prima di tutto prepariamo
la base, sciogliamo il burro e tritiamo i biscotti. In una scodella
mescoliamo insieme burro, biscotti e zucchero. Versiamo il composto
in una tortiera rivestita di carta di forno e distribuiamolo per bene
con un cucchiaio pressando bene il composto con il dorso del
cucchiaio stesso. Mettere nel freezer per 30 minuti. Ora prepariamo
la farcia: sciogliere il cioccolato e unire il caffè solubile, poi
montare per qualche minuto ricotta e formaggio cremoso, unire le uova
uno per volta. Infine unire lo zucchero e poi il cacao. Per ultimo
unire il cioccolato fuso. Versare la crema sulla base e cuocere a
180° per circa 50/60 minuti (statico). Consumare ben fredda meglio
ancora il giorno dopo soprattutto se la tenete in frigo.&lt;/div&gt;

io per impastare ho usato
il programma impasto della mdp ma potete farlo anche a mano anche se 
ci vuole olio di gomito. Per prima cosa scaldate un pochino il latte,
mettete il lievito e il miele e fate sciogliere per bene. Nel
cestello mettere le farine, lo zucchero, le uova sbattute, la
vanillina e infine il latte con il lievito. Azionate la macchina e
quando l&#39;impasto comincia a incordarsi unite il burro ammorbidito
poco per volta, infine il sale. Lasciate lievitare fino al raddoppio
dopodichè fate le brioche: una pallina più grande e una pallina più
piccola che dovrete mettere al centro facendola aderire bene. A me
sono venute circa 8 brioche. Disponetele in una teglia con carta
forno e fate lievitare nel forno spento ma tiepido per un&#39;altra
oretta, poi spennellate con un tuorlo sbattuto con un goccio di latte
e cuocete a 180° (forno statico) per 15/20 minuti dipende dal vostro
forno.&lt;/div&gt;

l&#39;uovo con lo zucchero, mettete il latte e poi poco per volta la
farina e mescolate bene in modo che non ci siano grumi. Mettete la
buccia di limone e il sale, infine il lievito. Un consiglio: se la
pastella vi sembra troppo densa unite un goccio di latte se troppo
liquida aggiungete un po&#39; di farina e magari un po&#39; di zucchero.
Ricordatevi che deve essere un pastella molto densa. Infine unite le
mele grattugiate e mescolate per bene. Friggete a cucchiate a piccole
dosi altrimenti si bruciano fuori e dentro restano crude. Olio
inizialmente a fiamma alta poi a fiamma bassa e costante. Disponetele

per prima cosa bisogna
lasciare in ammollo per 2 giorni il baccalà tagliato a pezzettoni
(non troppo grossi) almeno che non acquistate quello già dissalato
allora basta tenerlo a bagno solo qualche ora. Prendete ogni pezzo
spremetelo bene con le mani per togliere l&#39;acqua in eccesso e poi
asciugatelo per bene con la carta da cucina. In farinate il pesce e
friggetelo in una padella con abbondante olio di semi. Fatelo dorare
bene da ogni lato e mettetelo in un piatto con la carta per fritti.
Nel frattempo preparate il sugo: in tegame basso ma abbastanza largo
mettete 5/6 cucchiai di olio evo e due spicchi d&#39;aglio schiacciati.
Appena sfrigola unite il pomodoro e fate cuocere per 15 minuti a
fuoco basso e con un coperchio, se tende ad asciugarsi unite un
goccio di acqua. A fine cottura unite le olive e dopo un paio di
minuti spegnete. Non salate mi raccomando, il pesce è già
abbastanza salato, togliete gli spicchi di aglio. Mettete nel tegame
del pomodoro, i pezzi di baccalà che avete fritto e cercate di
mescolarlo delicatamente con il sugo in modo che se ne impregni bene.
Coprite con il coperchio e accedente la fiamma al minimo e lasciate
insaporire il pesce giusto un paio di minuti. Spegnete lasciate
riposare una decina di minuti e servite.

mandorle, il lievito e un pizzico di sale. Quando avrete ottenuto un
composto sbriciolato unite lo zucchero, l&#39;uovo e la vanillina.
Formate una palla, avvolgetela nella pellicola e fate riposare in
frigo 20 minuti. Rivestite una tortiera con la carta forno (di
diametro 26), stendete la frolla e sistematela nella teglia,
bucherellate il fondo e mettetela nel forno già caldo a 180° per 5
minuti. Nel frattempo prepariamo la farcia al cocco: mescoliamo gli
albumi (non montati), il cocco e lo zucchero cercando di ottenere un
composto ben amalgamato. Tiriamo fuori la crostata e spalmiamo
uniformemente la nutella, non sarà difficile perchè la crema di
nocciole a contatto con il calore della crostata diventerà fluida.
Coprite la nutella con il composto al cocco cercando di stenderlo per
bene. Rimettete in forno e fate cuocere per altri 30 minuti. Quando
la crostata sarà quasi fredda decorate con gocce di cioccolato.&lt;/div&gt;

quindi ecco qua questa splendida e buonissima pagnotta che ho
preparato l&#39;altra sera. Forse non vi sembrerò molto modesta visto

potete impastare sia a
mano che con l&#39;impastatrice, io ho usato la mdp programma impasto. In
una ciotola mettete le farine e il lievito madre, versate l&#39;acqua
(dove avrete sciolto il malto) un po&#39; alla volta e iniziate ad
impastare. Unite il sale e finite di aggiungere l&#39;acqua necessaria
per ottenere un composto morbido ed elastico. Copritelo con un panno
umido o pellicola e fate lievitare tutta la notte in un ambiente
tiepido. Calcolate almeno 12 ore ma può variare in base alla
temperatura esterna. Quando è pronto dategli la forma che preferite,
io ho fatto una treccia a 2 cilindri che ho poi sistemato a
chiocciola dentro una teglia rivestita di carta forno. Fate lievitare
ancora fino a quando la pagnotta avrà raggiunto il bordo della
teglia. Spruzzate con acqua la superficie e distribuite i semi di
sesamo che potete sostituire con quelli di papavero, zucca o lino. O
anche niente se preferite, ma io amo molto il sesamo. Cuocete a 200°
con forno statico per 35/40 minuti dipende dal forno. Consumatela
fredda è più buona.&lt;/div&gt;

mdp, programma impasto completo con un&#39;ulteriore lievitazione di 1
ora. Ovviamente potete impastare tutto a mano così: sciogliete il
ldb nel latte leggermente tiepido con un cucchiaio di zucchero. In
una ciotola mettete le farine, unite il latte con il lievito e
iniziate ad impastare, poi lo zucchero, uovo, vanillina, buccia di
limone e sale. Quando l&#39;impasto comincia ad essere incordato unite il
burro morbido e lavorare a lungo finchè la pasta sarà morbida e
liscia. Fate lievitare fino al raddoppio nel forno tiepido ma spento.
Stendete la pasta a rettangolo su di un piano infarinato, con una
spatola da cucina distribuite la marmellata o la cioccolata
uniformemente lasciando 2 cm dal bordo. Arrotolate il rettangolo
dalla parte più lunga e formate la chiocciola. Disponetela su una
teglia rivestita di carta forno e fate lievitare ancora 1 ora nel
forno spento ma appena scaldato. Spennellate con latte o tuorlo
d&#39;uovo e cuocete a 190° per 25/30 min con forno statico.&lt;/div&gt;
