Mozilla officially scores a world record

They did it -- Mozilla now holds the world record for the most software downloaded in 24 hours, according to Jamie Panas, press and marketing assistant at Guinness World Records.

Download Day 2008, designated by the Mozilla Foundation on June 17 in celebration of its 10th anniversary, saw the release of Firefox 3, the free Web browser for Linux, Windows, and Mac OS X. An intensive marketing campaign to set the first Guinness World Record of its kind, for the most software downloaded in one day, resulted in more than 8 million copies downloaded in one day, according to Mozilla.

"We had to notify and work with Guinness for the world record. First, Mozilla had to submit a query with Guinness World Records to see if such a record category existed.

The category was approved by the records management team at Guinness. "Guinness World Records approves new categories every week," Panas says. "Some categories are prompted by an external inquiry, as in this case, when Mozilla contacted us, and others are opened by us as a result of our continuous monitoring of the world's news channels and our team of special consultants around the world.

In order for the attempt to be legitimate, experts at Guinness established new guidelines stating each download must be human-initiated. "They [Guinness] have a group of experts knowledgeable about the Web and software who established these guidelines," Colvig says. Mozilla counted only complete downloads and discarded duplicate downloads with the help of a cookie system, according to a press release. Mozilla did not count downloads from Linux distribution repositories, or FTP and BitTorrent downloads. "We are only counting downloads that come directly from our mirror redirection service," Colvig says. However, Guinness would have counted all digital distribution methods if Mozilla had submitted those downloads for the total count. "We would naturally consider HTTP, FTP, and P2P systems as valid delivery methods," Panas says.

To validate the record attempt, Mozilla used Apache to log and monitor downloads. Two judges at Mozilla reviewed the download logs, and signed statements of authentication confirming the download numbers and verifying that the rules established by Guinness were followed, according to Mozilla.

"Their [Mozilla] job is to ensure that the evidence submitted directly supports the number of downloads that they are claiming.

Mozilla surpassed its goal of generating 5 million full downloads of Firefox 3 by more than 3 million. The release of Firefox 2 in October 2006 generated only 1.6 million downloads on its first day, Colvig says.

Firefox saw an increase in market share of about 4% following the release of Firefox 3. At the height of Download Day 2008, Mozilla logged 17,000 downloads per minute, or 283 per second, and saw sustained download rates in excess of 4,000 per minute, according to a blog entry by John Lilly, Mozilla's corporate executive officer. "Firefox's share ended last week [June 20] at 19.17%, according to Net Applications.

Mozilla claims Firefox 3 is two to three times faster than its predecessor and offers more than 15,000 improvements, including a smart location bar, malware protection, and extensive under-the-hood work to improve the speed and performance of the browser.

Honestly, I've never seen so many deals, especially to places that are "high season" in summer. Forty-nine percent are planning to spend less in the months ahead on major personal purchases like a vacation," according to Matt Towson, spokesman for the Discover U.S. Spending Monitor, which surveys a random sampling of 15,000 people about their spending intentions every month.

Towson adds that a month ago, 59 percent of consumers were changing their vacation plans due to high gas prices. As of June 18, that number had grown to 62 percent.

Scientists analyze chocolate genome

U.S. government scientists are launching a five-year project aimed at safeguarding the world's chocolate supply by dissecting the genome of the cocoa bean.

A U.S. Department of Agriculture team based in Miami, funded with more than $10 million from candy company Mars Inc., will analyze the more than 400 million parts of the cocoa genome, a process that could help battle crippling crop diseases and even lead to better-tasting chocolate.

Fungal diseases cost cocoa farmers an estimated $700 million annually.

The analysis will not only identify what traits make cacao trees susceptible, but it will allow scientists -- and candymakers -- to better understand every aspect of cocoa, from its ability to sustain drought to the way it tastes.

The project's backers say the work stands to be a boon to farmers, largely in Africa, who produce about 70 percent of the world's cocoa.

By determining which breeds of cacao trees are most appropriate for a specific locale and most able to fend off disease and drought, farmers could increase crop yields.

Ajay Royyuro, who leads the Computational Biology Center at IBM Research in Yorktown Heights, New York, said the cocoa genome project capitalizes on advances from examining the far more complicated human genome. An IBM team will participate in the cocoa efforts.

"The genome revolution is underway and there is a way in which that revolution can be leveraged to have an economic impact," Royyuro said.

"For us, the fact that Hershey has similar information that every other chocolate company in the world has, that's fine," said Howard-Yana Shapiro, Mars' global director of plant science, in a phone interview from Rome.

Shapiro said he did not expect improvements in yields from research would lead to larger overall cocoa crops.

Virtually no cocoa is produced in the U.S., but the USDA has an interest in the crop because so many domestically produced items -- raisins and almonds, for example -- are important to chocolate.

E.U. ponders response to Iran's 'nuclear letter'

A top European diplomat said he hopes to reply soon to Iran's letter last week spelling out its reaction to an international proposal for the Shiite Muslim nation's controversial nuclear program.

We are still talking among ourselves," said Javier Solana, the E.U.'s foreign policy chief, at an EU-NATO meeting Monday.

Last month, world powers proposed economic and other incentives for Iran if it suspended its uranium enrichment program. On Friday, Iran said it had replied to the proposal, but did not release details.

The proposal was from the foreign ministers of the permanent members of the Security Council -- the U.S., Britain, China, Russia, and France; Germany, which has been involved in nuclear talks; and Solana.

These countries are concerned that Iran aspires to develop nuclear weapons. But Iran says it is interested only in developing nuclear power for energy.

Solana was asked if he was going to meet with top Irani nuclear negotiator Saeed Jalili.

French Foreign Minister Bernard Kouchner said he was familiar with the contents of the Iranian letter only "indirectly" but would receive a copy of it Monday.

Jalili, Iran's top nuclear negotiator, told Solana in a phone call on Friday that Iran's response focused on "common ground between the two sides and a constructive and creative view," according to Iranian news reports.

It is calling for the suspension of new sanctions if Iran takes a six-week break from installing or manufacturing any more centrifuges that enrich uranium.

The E.U. recently placed sanctions including an asset freeze on Iran's Bank Melli and visa bans on some senior officials.

The world powers said in their letter to Iran last month that "formal negotiations can start as soon as Iran's enrichment-related and reprocessing activities are suspended."

Stormy Peters joins the GNOME Foundation as Executive Director

Open source technology luminary Stormy Peters has been appointed executive director of the GNOME Foundation, effective immediately.

The GNOME Foundation is committed to the task of advancing the GNOME desktop for Linux and other Unix-based operating systems. As executive director, Peters will be responsible for marketing GNOME to the public and attracting new corporate sponsors and developers to the GNOME community. Peters says she brings the strength of her relationships with businesses and community members to her new job. "I've worked a lot in the past explaining how the community works to enterprises, explaining how enterprises work to community members and helping them work effectively together."

Peters is no stranger to the GNOME community. She is one of the founding members of the GNOME Foundation Advisory Board and has worked on behalf of the community delivering keynotes at GNOME conferences and talking to people about the desktop throughout the course of her work at Hewlett-Packard as the director of the company's open source efforts, and later as community manager at OpenLogic. Peters says she will remain in an advisory capacity at OpenLogic.

I think people managing dying projects actually felt relief that there was something they could do with their old project that might keep a few loyal customers happy." Peters writes that since then, she's come to realize the value of recycling code from really old projects, such as HP's Tru64 UNIX Advanced File System, recently released as open source code. "[S]ometimes there's really cool technology in old projects that can be used and leveraged in other projects if it's open sourced."

"I plan to work on marketing -- spreading the word of the value of GNOME to end users and industry sponsors -- as well as developing relationships with existing and new sponsors. The GNOME Foundation has lots of great ideas expanding their user base and attracting new sponsors.

Superman/Batman' artist dies at 37

Michael Turner, a comic book artist who drew covers for major titles such as "Superman/Batman," "The Flash" and "Civil War," has died.

Turner died June 27 at a Santa Monica hospital of complications related to cancer, said Vince Hernandez, editor in chief of Aspen MLT, the Santa Monica publishing company Turner founded in 2003. Turner had battled bone cancer for eight years.

Through his company, Turner created online comic adaptations for the NBC series "Heroes" and published his own titles, including the best-selling "Fathom," a deep-sea story about a female superhero.

He also drew covers for large projects such as DC Comics' "Justice League" and Marvel's "Civil War" and was a regular cover artist for "Superman/Batman" and "The Flash."

Ryan Liebowitz, general manager of the Golden Apple Comics store in Los Angeles, said Turner's name was synonymous with special-edition covers that often became collectibles.

Turner was also known for drawing female comic book characters that evoked both innocence and sex appeal and exuded energy.

In 1994, the budding artist was hired by Century City-based Top Cow Productions after an editor saw his work at the Comic-Con convention in San Diego.

At Top Cow, Turner co-created "Witchblade," a comic about a voluptuous female detective who fights evil after discovering a mystical glove. The comic went on to make Top Cow's name and set the standard for Turner's future work

Obama helps himself and McCain, too

When is the most recent time a decision by a presidential candidate ended up being good for him and his opponent?

It's a huge help to Sen. John McCain because the GOP candidate has cast himself as the fierce independent who is all about reform, even to the point of opposing President Bush on key initiatives.

By ceding ground on this issue, Obama goes against all the signals he sent for months on the issue of public financing of campaigns.

Obama made the decision in a video message to his supporters, and it didn't take long for the McCain campaign to jump all over the Democrat, decrying the move as the clearest indication that the junior senator from Illinois is not the breath of fresh air that he has portrayed himself to be.

"Today, Barack Obama has revealed himself to be just another typical politician who will do and say whatever is most expedient for Barack Obama," McCain communications director Jill Hazelbaker said in a statement.

Barack Obama has failed that test today, and his reversal of his promise to participate in the public finance system undermines his call for a new type of politics."

Don't be surprised to see McCain make this decision a significant part of his campaign, and he and his surrogates will hammer Obama repeatedly on the one issue that the senior senator from Arizona has made his calling card.

How does this help Obama? Easy: He likely will blow McCain away when it comes to fundraising, giving him a huge advantage in the fall election.

Obama would have been nuts to accept public financing because he would have been able to spend only $85 million. He already has raised nearly $275 million, and he will have the resources to dwarf McCain. No one thought he would be able to raise such vast sums of money, but with 1.5 million donors contributing to his campaign, he has amassed a formidable operation.

Had Obama stuck to his guns and accepted public financing, McCain's team would have lauded him publicly but laughed him off as a naive fool for doing so.

Obama's risky move could tarnish the image he has burnished of being a different kind of politician. Hard-core Democrats will welcome the decision, but independents might have a problem with it.

He's hoping voters will accept his position that the Republican attack machine will blast him with unregulated funds. Obama also hopes that voters will take to his decision not to take funds from Washington lobbyists or political action committees.

Comparing Linux USB flash disk distros

The recent success of the ASUS Eee PC has shown that running Linux from flash memory is now commercially viable in the consumer market. If you don't have an Eee PC, you can still run Linux from a humble USB flash disk, which will hold not only Linux but also your data. Several Linux distributions run from flash; here's how some of them compare.

Some Linux distributions, such as Mandriva Flash, are specially designed to work from flash devices. Some provide installers to get them onto thumb drives, while others can be coerced onto a USB flash drive with some simple modifications. I tested five Linux distributions -- Damn Small Linux (DSL), Puppy Linux, Pendrivelinux, Ubuntu, and Mandriva Flash -- to see how they fare running from a flash disk.

Of the five, only Ubuntu doesn't offer a native method for getting it to run from flash, while Pendrivelinux and Mandriva Flash are designed to run exclusively from flash. The five Linux distributions can be divided into two classes: the small, compact distributions (DSL and Puppy Linux), which are less than 100MB in size, and the full-blown distributions (Mandriva, Pendrivelinux, and Ubuntu).

Small is beautiful

Both DSL and Puppy Linux are small and don't have huge system requirements. DSL can run on a 468DX with only 16MB of RAM, although this feature is of dubious utility because it would be hard to find a 486DX machine that could boot from a USB device. These two distributions aim to be small yet versatile with flexible boot and install options. They're also fast, because they load the whole OS and applications into RAM.

DSL is a 50MB download and boots from a live CD. Once booted, you can install it to a USB drive using the Pendrive install application (Apps -> Tools -> USB-HDD Pendrive). The text-based installer runs in a command window. DSL detected and installed to my flash drive without any problem.

DSL is handy as a recovery tool that enables you to boot a broken machine and copy valuable data from it.

DSL tries to be feature-rich and contains many standard types of applications, such as a music player, a couple of Web browsers, a word processor, and a spreadsheet. With the exception of Firefox, they're all specialized, small applications, but DSL is extendable using the myDSL Extension Browser. With the packages in its community repository you can add some of the more popular software to DSL, including OpenOffice.org.

Like DSL, Puppy Linux is a small download (less than 100MB) and boots from a live CD. Once you boot the CD, you're up and running with the whole OS and file system loaded into RAM, which means that Puppy isn't always pulling files off the CD. To install to USB flash, use the Puppy universal installer, which can cope with almost any USB flash disk, regardless of whether it's unpartitioned or using the wrong boot flags.

The recently released version 4.0 is a great improvement over its predecessor and using the JWM window manager it offers AbiWord 2.4.6 as a word processor, the Gnumeric 1.7.13 spreadsheet, Sylpheed 2.4.7 for email, and Mozilla SeaMonkey 1.1.8 for Web browsing and other integrated Internet applications. Puppy Linux also has a package manager called PETget that automatically connects to the official Puppy repository and offers additional software to install. Currently the 4.0 repository doesn't offer OpenOffice.org but I was able to install it from the version 3.0 repository.

One possible problem with Puppy Linux is that your data isn't immediately saved to the flash drive. As you're working, the files you create and edit are saved to memory, but that memory copy is only written to the flash disk periodically or during the shutdown process. There is also a Save button on the desktop to force a write to the flash disk. This intermittent saving can leave a window for losing files.

Pendrivelinux

Pendrivelinux is both a Linux distribution for USB flash disks and a comprehensive Web site with lots of articles and information on getting Linux running from a flash disk.

Amongst the articles on the Web site are a couple on installing Pendrivelinux from Linux and from Windows.

The installation process involves downloading a .zip file and then making the USB flash drive bootable (either with a batch file supplied for Windows or by using syslinux on Linux).

I was using Vista, and I had to run the batch file to make the USB flash disk bootable under the Administrator account. If you run it under a normal account, even one that has Administrator rights, the batch file will fail.

Pendrivelinux is comprehensive.

Based on Mandriva 2007.1 (via the folks at MCNLive), it comes with persistent file changes (using a 256MB loop file), KDE 3.5.6, and Firefox 2.0.0.3. It includes support for 3-D desktop effects; with a few clicks, you can get a 3-D cube representation of your virtual desktops, wobbly windows, and transparency.

The lack of OpenOffice.org could be limiting, as KOffice's ability to import and export to popular Microsoft and OpenOffice.org file formats is limited, but otherwise, Pendrivelinux is an excellent USB flash-drive Linux distro that you could use daily.

Ubuntu

Ubuntu doesn't come with an easy way to install it to a USB flash disk, but the Pendrivelinux Web site has an article about how you can shoehorn it onto a flash device. The fairly complicated procedure requires 21 steps. Once it's installed, you have a normal full Ubuntu system. The OS takes 750MB of your flash disk; whatever is remaining is for your files and documents. Because it's Ubuntu, you get a whole host of software, including the latest versions of GNOME, OpenOffice.Org, Firefox, and so on.

There is one problem with Ubuntu on flash, and it isn't really a technical one. Whenever I used it, I felt uneasy because I knew Ubuntu wasn't designed to run from a flash drive. One time, for no apparent reason, the disk would no longer boot, and I was forced to reinstall the operating system.

Mandriva Flash

Mandriva sells a specialized version of its Mandriva Linux One distribution called Mandriva Flash. It is an excellent Linux distribution for running from flash. It costs $69 (or €59), but what you get for your money is a 4GB USB flash disk, one month of Mandriva support, free shipping, and access to a rescue CD should you accidentally crash your USB key.

Mandriva Flash is a complete Linux desktop on a USB key. It comes with KDE 3.5.7, OpenOffice.org 2.2.1, Firefox 2.0.0.8, Skype, and Java 6. Like Pendrivelinux, it comes with the impressive 3-D desktop and a tool to help you import your Windows documents and settings. Using Mandriva Flash is easy, especially if you're already used to Linux. I was able to download Google's Picasa for Linux and install it without any problems. Anything you copy over to the USB key will also be available in Linux the next time you boot it, thanks to the way Mandriva use the flash disk. The first time you boot Mandriva Flash you choose how much space to use for system files and how much is reserved for user files.

The inclusion of essential software like OpenOffice.org makes Mandriva Flash a prime candidate for running Linux from a USB flash disk.

The Google content network now accepts display ads served from qualified third-party vendors. Third-party ad serving has been a longstanding request from top brand AdWords advertisers who use third parties to create and manage their online campaigns.

Third-party ad serving will introduce a greater variety of advertising into the Google content network, increase the inventory of quality display ads competing to show on AdSense publisher sites, and offer more engaging ads for end users. In the long run, we believe the increased inventory and ad competition will result in increased revenue for many AdSense publishers.

Rest assured that ad quality on the content network will remain one of our highest priorities.
How to control third-party ads shown on your site
The same ad management features for Google ads also apply to third-party ads. You can use the Ad Review Center to filter specific placement-targeted ads from appearing on your site. Following the success of video units in a number of international locations, we're excited to announce the launch of video units for English-language websites in Australia. In addition, video units are now available to publishers who are located in Japan or who have Japanese-language websites. If you're not already familiar, video units are embedded, customizable video players which both enrich sites with relevant video content and enable publishers to earn extra revenue. Relevant and non-intrusive companion and text ads accompany the video content.

With this new launch, you can show videos from our YouTube content partners on your site. Restaurant guides review restaurants, often ranking them or providing information for consumer decisions (type of food, handicap accessibility, facilities, etc). In 12th century Hanzhou (mentioned above as the location of the first restaurant,) signs could often be found posted in the city square listing the restaurants in the area and local customer's opinions of the quality of their food. This was an occasion for bribery and even violence.^{[citation needed]} Today, restaurant review is carried out in a more civilized manner. One of the most famous contemporary guides, in Western Europe, is the Michelin series of guides which accord from 1 to 3 stars to restaurants they perceive to be of high culinary merit. Restaurants with stars in the Michelin guide are formal, expensive establishments; in general the more stars awarded, the higher the prices. In the United States, the Mobil Travel Guides and the AAA rate restaurants on a similar 1 to 5 star (Mobil) or diamond (AAA) scale. Three, four, and five star/diamond ratings are roughly equivalent to the Michelin one, two, and three star ratings while one and two star ratings typically indicate more casual places to eat. In 2005, Michelin released a New York City guide, its first for the United States. The popular Zagat Survey compiles individuals' comments about restaurants but does not pass an "official" critical assessment. The Good Food Guide, published by the Fairfax Newspaper Group in Australia, is the Australian guide listing the best places to eat. Chefs Hats are awarded for outstanding restaurants and range from one hat through three hats. The Good Food Guide also incorporates guides to bars, cafes and providers.

Nearly all major American newspapers employ restaurant critics and publish online dining guides for the cities they serve. A few papers maintain a reputation for thorough and thoughtful review of restaurants to the standard of the good published guides, but others provide more of a listings service.

More recently Internet sites have started up that publish both food critic reviews and popular reviews by the general public. This is a growing area and the market is still immature with no sites yet gaining dominant public or critical support. Several are gaining traction including, Zagat.com, chowhound.com, and Fodors.com. Their major competition comes from bloggers and search engines since search engines often favor active bloggers over large somewhat static websites.

One interesting twist is Menuism.com, they review the dishes rather than the restaurant. Many of these sites also offer discount coupons and maps.

Due to a controversy over oils and grease, restaurants are required by United States law that oils' contents must be animal free, or otherwise state so on the menu. There has also been more talk about restaurants either frying or using the same oils and grease on certain food due to cases of allergic reaction to certain minerals or other substances of the food. While most restaurants are not forced to do this by law, they are required to state so on their menu.^{[citation needed]}

Depending on local customs and the establishment, restaurants may or may not serve alcohol. Restaurants are often prohibited from selling alcohol without a meal by alcohol sale laws; such sale is considered to be activity for bars, which are meant to have more severe restrictions. Some restaurants are licensed to serve alcohol ("fully licensed"), and/or permit customers to "bring your own" alcohol (BYO / BYOB). In some places restaurant licenses may restrict service to beer, or wine and beer.

Restaurants range from unpretentious lunching or dining places catering to people working nearby, with simple food served in simple settings at low prices, to expensive establishments serving refined food and wines in a formal setting. In the former case, customers usually wear casual clothing. In the latter case, depending on culture and local traditions, customers might wear semi-casual, semi-formal, or even in rare cases formal wear.

Typically, customers sit at tables, their orders are taken by a waiter, who brings the food when it is ready, and the customers pay the bill before leaving. In finer restaurants there will be a host or hostess or even a maître d'hôtel to welcome customers and to seat them. Other staff waiting on customers include busboys and sommeliers.

Restaurants often specialize in certain types of food or present a certain unifying, and often entertaining, theme. For example, there are seafood restaurants, vegetarian restaurants or ethnic restaurants. Generally speaking, restaurants selling "local" food are simply called restaurants, while restaurants selling food of foreign origin are called accordingly, for example, a Chinese restaurant and a French restaurant.

In the West, while inns and taverns were known from antiquity, these were establishments aimed at travellers, and in general locals would rarely eat there. Restaurants, as businesses dedicated to the serving of food, and where specific dishes are ordered by the guest and generally prepared according to this order, emerged only in the 18th century. According to the Guinness Book of Records, the Sobrino de Botin in Madrid, Spain is the oldest restaurant in existence today. It opened in 1725. An independent claim of the world's oldest restaurant is by Stiftskeller St. Peter in Salzburg that has been in existence since 803 AD, since the time of emperor Charlemagne.

The term restaurant (from the French restaurer, to restore) first appeared in the 16th century, meaning "a food which restores", and referred specifically to a rich, highly flavoured soup. It was first applied to an eating establishment in around 1765 founded by a Parisian soup-seller named Boulanger. The first restaurant in the form that became standard (customers sitting down with individual portions at individual tables, selecting food from menus, during fixed opening hours) was the Grand Taverne de Londres (the "Great Tavern of London"), founded in Paris in 1782 by a man named Antoine Beauvilliers, a leading culinary writer and gastronomic authority[5] who achieved a reputation as a successful restaurateur. He later wrote what became a standard cookbook, L'Art du cuisinier (1814).

Restaurants became commonplace in France after the French Revolution broke up catering guilds and forced the aristocracy to flee, leaving a retinue of servants with the skills to cook excellent food; whilst at the same time numerous provincials arrived in Paris with no family to cook for them. Restaurants were the means by which these two could be brought together — and the French tradition of dining out was born.

A leading restaurant of the Napoleonic era was the Véry, which was lavishly decorated and boasted a menu with extensive choices of soups, fish and meat dishes, and scores of side dishes. Balzac often dined there.[citation needed] Although absorbed by a neighbouring business in 1869, the resulting establishment Le Grand Véfour is still in business.

The restaurant described by Britannica as the most illustrious of all those in Paris in the 19th century was the Café Anglais (the "English coffee-shop") on the Boulevard des Italiens, showing for a second time the high regard that Parisians evidently had for London, England, and the English — at least when it came to naming their restaurants.

Restaurants then spread rapidly across the world, with the first in the United States (Jullien's Restarator) opening in Boston in 1794. Most however continued on the standard approach of providing a shared meal on the table to which customers would then help themselves (Service à la française, commonly called "family style" restaurants), something which encouraged them to eat rather quickly. Another formal style of dining, where waiters carry platters of food around the table and diners serve themselves, is known as Service à la russe, as it is said to have been introduced to France by the Russian Prince Kurakin in the 1810s, from where it spread rapidly to England and beyond. The familiar pattern of service where customers are given a plate with the food already arranged on it is called "American Service," though it surely did not originate in America.

Food catering establishments which may be described as restaurants were known since the 11th century in Kaifeng, China's northern capital during the first half of the Song Dynasty (960–1279). With a population of over 1 million people, a culture of hospitality and a paper currency, Kaifeng was ripe for the development of restaurants. Probably growing out of the tea houses and taverns that catered to travellers, Kaifeng's restaurants blossomed into an industry catering to locals as well as people from other regions of China.

[1] Stephen H. West argues that there was a direct correlation between the growth of restaurant businesses and institutions of theatrical stage drama, gambling, and prostitution which serviced the burgeoning merchant middle class during the Song.

[2] Restaurants catered to different styles of cuisine, price brackets, and religious requirements. Even within a single restaurant much choice was available, and people ordered what entree they wanted from written menus. [1] An account from 1275 writes of Hangzhou, the capital city for the last half of the dynasty:

"The people of Hangzhou are very difficult to please. Hundreds of orders are given on all sides: this person wants something hot, another something cold, a third something tepid, a fourth something chilled; one wants cooked food, another raw, another chooses roast, another grill".

[3] The restaurants in Hangzhou also catered to many northern Chinese who had fled south from Kaifeng during the Jurchen invasion of the 1120s, while it is also known that many restaurants were run by families formerly from Kaifeng.

[4] Ma Yu Ching's Bucket Chicken House was established in Kaifeng in 1153 AD during the Jurchen-controlled Jin Dynasty (though documentation does not exist to prove continuous service) and is still serving up meals today.
