Hevin 的馬卡龍念念不忘，不像自己作的會有點黏牙，而且酥軟又有脆皮。把市立圖書館的馬卡龍書全借回來研究。

郭建昌的 "法式烘焙" 時尚甜點一書中，提到了馬卡龍的作法是用義式蛋白霜去作，Kanae Kobayashi 也提供的義式蛋白霜的馬卡龍，這和一般印象中用法式蛋白相當不同。同時，Google 了一下，發現倫敦妞仔這位在藍帶學廚藝的小姐也是用義式蛋白來作。她還熱心的回答如何擠出一樣大小的馬卡龍，在她的 blog 還提到了  Pierre Hermes 的配方，經過對照，比例和郭建昌書上的一致。

今天就拿這個配方來作，但把巧克力的部份改成了可可粉，餡料使用小林書上的芝麻奶油醬，用這兩天從新光三越迎回來的新歡 CUISINART 攪扮拌，把奶油、杏仁膏和黑芝麻粉一起打，這真是美味的馬卡龍!

Google 了一下，果然很多 Crumble 的 receipt，基本上就是拿蘋果切丁，加糖燉軟，上頭以奶油切丁加低筋麵粉，用打指搓一搓，再撒上去，進爐高溫烘烤就完成了。這實在是簡單的美味，上頭的 crumble 鬆脆，底層的蘋果切丁綿密，又能去化在凍箱中快過期的蘋果。

這個國王餅的吃法也很重要，先依人數切好等份。找出年紀最小的人要躲在桌子底下，依序點名分配切好的國王餅。接下來重點來了，吃到一半時其中有一塊內有含個陶磁娃娃，吃到這塊的人有權在今天的賓客中選擇自己的心儀對像。





到歐洲來一定要多吃酥皮的東西，因為在歐盟的規定中，反式脂肪是不合規的，所以不怕吃到反式脂肪這樣的東西。

住在法國的同學說 La Pizzetta 是全巴黎最好吃的 Pizza 店，但要到 7 點半才開店，這天只好餓到晚上 7 點半準時來，我們是進門的第一個客人，接下來 10 分鐘不知那兒冒出來的一堆人，馬上把座位座滿，而且一堆人在買外帶!

點了兩個 Pizza ，三個人都吃不完，打包帶回家吃。

同學大力推薦的義式餐廳，有多義式呢? 我問了下有沒有英文 Menu，老闆說只有法文和義大利文，沒英文，只好亂點一通了。既然是正統義式，一定要吃提拉米穌，老婆說不知何時在台灣才能吃到這麼好吃的提拉米穌，看來只有等我研發出來囉!

出發前去台北市圖借了一堆書，把好吃的地點都輸入到 Google Map 中，再預載巴黎的地圖，這樣好吃好玩的景點都在手機了。在巴黎只要用 GPS 就能到處走。這天從艾菲爾鐵塔下來，肚子好餓，看了一下手機，附近有個 Cafe Constant 就去吃了，回來 Google 了一下，原來是安朵書中有介紹。

老闆在巴黎餐飲界頗有名氣的主廚 Christian Constant ，以前是協和廣場旁知名飯店 Hôtel Crillon 的主廚，也因為這樣，這間裝潢簡單的餐廳，供應的食物看起來很精緻，但價格卻很合理。
基本上 Menu 全看不懂，還好隔壁桌剛好有台灣來的，直接中文翻驛，太讚了!

 我們找了家在地人多的咖啡店，座下來。巴黎的咖啡座很有趣，所有的椅子都面向街道，而且露天座人多到爆，裏頭的人就少得可憐!

兩個女生中間突起的鐵櫃就是地下祕密基地的入口。


吃完飯向下走就是紅磨坊，前面有個大出風口，很多人在上頭玩大風吹的遊戲。

台南孔廟對面有三家很有特色的咖啡店：窄門、小說和 Bus-7。窄門有趣的在於入口在防火巷內，防火巷又很窄，所以太胖的人是進不去的，內部的建築又是老屋，所以很多人都會來拍拍照片。小說是草祭二手書店的同系列產品，所以店內店滿了書香味。至於 Bus-7，好像是教會的咖啡店，每次經過都人山人海。



上回和台南的大老到小說去，東西很有味道，但整個店內就只有我們這一桌。這回去台南，沒想到小說休耕了，我們改到窄門去，一樣只有我們一桌，其他桌都空空的。出來看看 Bus 7 ，滿滿的人，看來沒有神的所在是差很多的。

想到最近朋友去聽金融趨勢，結論是金融業接下來大調整，35歲以下要快轉職，45 以下要快找事業第二春，45 以上該退就退，回家種田。但看來連有品質的咖啡店都休耕，日子實在難作。
