Hot Chocolate

Ingredients:

2 tsp brown sugar

1 tsp unsweeten cocoa powder

1 cup milk (soy)

Method in pictures:

In a mug, add 2tsp sugars (or according to taste)

Add 1 tsp cocoa powder.

Pour warm milk.


Mix well.

Add in microwave for 1 min.

Serve hot.

Enjoy.

Making of Roti

Ingredients:

2 cup White flour (optional)*

2 cup wheat flour (optional)*

Hot water

Oil

*Can use either white flour or wheat flour or both

Method:

Sift plain and wheat flour together.

Add hot water in the center.

Mix well with hand. mix for 10-15 min till smooth

Lastly add some oil and let it sit for approx. 2 hours.

Make medium size balls.

Sprinkle some dry flour

Roll with the rolling pin to make it flat.

Make round shape (close enough :3)

In a heated pan or round griddle put some oil, and add the flatten dough

spread some oil equally on both sides.
When slightly raised and golden colored means it's ready.
Serve hot.

Banana Milkshake

Ingredients:

1 ripe banana

2 cup milk (soy or almond)

5 ice cubes

Method in pictures:

Add ice cubes in a juicer.

Then add peeled and roughly cut banana.

Add milk


Blend for 30 seconds. Serve chilled.

Note: you can add sugar if you want.

Ingredients:

2 Ripe Bananas

2 Spoon vanilla ice cream

1/4 Tsp Vanilla

5-6 Ice Cubes

1 Cup milk (soy/almond)

1-2 Tsp Sugar

Method:

Gather some ice cubes ( i used 6 cubes)

1. put ice cubes in a blender


2. Add vanilla ice cream

3. Add sugar

4. Add bananas cut in pieces

5. Add vanilla.

6. Add milk

7. Blend for 3-4 mins or till all is well mixed.

It should look thick and nice

Serve chilled

Jackfruit Jelly

Ingredients:

1 packet agar agar powder

100ml milk (soy/almond)

200g sugar ( i used 175g)

water

250g ripe fresh jackfruit

Method in pictures:

Start by weighing 250g fresh jackfruits

Put them in a blender with 500ml water

It should become a fine paste.
keep aside

in another bowl put 500ml water to boil

Add sugars, and let dissolve.


Add agar agar power and let boil for 2 mins

After 2 mins add the pureed jackfruits.
mix well till mixture boils

Then add milk

Let it boil

Pour the mixture in a mould

Put in the refrigerator to cool down

After 30 mins, remove from refrigerator and unmold

Serve chilled

Coconut chutney

Ingredients:

1 coconut

some fresh mints

2 dry red chillies (according to taste)

2 garlics

1 1/2 spoon Tamarind sauce

salt

Method in pictures:

Wash coconuts well

Roughly cut them

Combine 2 gloves, 2 dry chillies and some mint

take 1 and a half spoon of tamarind, and remove the seeds with the help of 1/2 cup of water.
Add all ingredients in a blender and mix well

It should look like a paste, add salt and serve

Pâte de piment - Chilli paste

Ingredients:

1/2 kg green chillies

2 medium lemons

2 Garlics

2 tsp salt

1/2 cup sugar

White vinegar

Oil

Method in pictures:

wash properly and soak chillies in 3/4 cup of white vinegar for 2-3 hours.

Cut lemons into cubes while removing the seeds.

Cut garlic into two, add with chillies and lemons.

Put in grinding machine along with another 1/4 cup of white vinegar.

After grinding it should look like a paste

In a pan add a little oil

Add the chilli mixture in the hot oil, add sugar and salt. mix well

Keep stirring for 10-15 till little dried up.

Let cool down and serve.

Beetroot salad

Ingredients:

5 medium size beetroots

5 mdium size carrots

5 medium size potatoes

1/4 broccoli

onions

pepper

vinegar

salt

Method in pictures:

Wash the vegetables well

Add them in a steamer and steam for 10-15 min, till soften

last one min add the broccoli

Remove and let the vegetables cool down

If left for more then one mins look what happens to the broccoli!

After they are cooled down, peel them

Peel all

Start by chopping one carrot

Add the chopped carrots on the top of broccoli

Then cut one potato then add over carrots

Followed by chopped beetroot.
repeat the process till all vegetables are cut

In a small bowl add finely chopped onions, pepper, salt, and vinegar.
mix well

Add the vinaigrette to salad. mix well

Serve.

Pizza dough

Ingredients :

600g plain flour

1 pkt instant yeast

1 cup warm water

1tsp salt

1tsp caster sugar

1 tsp olive oil

Methods:

Mix yeast in warm water and let mixture sit for 15-20 mins

In a bowl, sift flour, add olive oil and salt. mix well

Slowly add in the yeast mixture.

Make a smooth dough.

Cover with a damp towel in a warm place for 3-4 hours.

Ingredients:

1 litre milk (soy/almond)

1 lemon juice/ vinegar

vanilla

almonds

grated coconut

Methods in pictures:

Start by bringing the milk to boil

As the milk starts rising poor in the lemon juice or vinegar, and switch off the gas

Poor the liquid in a cloth

squeeze it well, the water and milk is separated.
Let this drained for 30 min, till all water is separated.

After 30 min it will become kind of a dough.

Mix the dough well, add some vanilla and some powdered milk if its too watery.

With the hand take some dough and make small balls.

get approx 10 medium size balls

In another pan, boil some milk, add vanilla and sugar.

Cut some almonds

Grate some fresh coconuts

Add them to the mixture and let boil in low heat for 20-25 min.
Serve chilled

Fresh Tomato soup

Ingredients:

4 medium size fresh tomatoes

1 sp of pureed tomatoes

3 large basil leaves

1tsp of garlic and ginger paste

1tsp butter

1/4 onions

water

salt

Methods in pictures:

Start by washing tomatoes properly

Cut the tomatoes and onions in cubes

In a pan add some butter and put in medium flame

After the butter has melted add the onions

When onions are lightly transparent add tomatoes and the puree


Add water till it covers all tomatoes. Let it cook for 15 mins.

Remove from the heat and let them cool down

After it has completely cooled down, add in a blender and blend it till pureed

Pour in a soup bowl, add salt and pepper according to taste

Use fresh basil

Add basil to the mixture and serve

Takkar - Sweet Tamarind sauce

Takkar is a sweet, sour and spicy tamarind sauce made from dry tamarinds. It is mainly used as a dessert, mostly seen in Hindus's weddings after the ti-puri feast.

Ingredients:

1 packet of dry concentrated tamarind

1 kg brown sugar

1/2 tbsp of aniseed (gros anis)

1/2 tbsp pf powdered aniseed (gros anis)

1/2 tbsp of cinnamon powder

1/2 cardamom

1 ripe tomato

4 almonds

2 dry red chillies

1 big pinneable

some peanuts

some water

some raisins

1tsp oil

Methods in pictures:

Start by opening one packet of concentrated tamarind.

Add some water so as to remove all the seeds

Mix well to obtain a liquid paste

Separate the seeds and all fibers from it.

Tamarind sauce without the seeds.
it should not be very watery but just enough to remove the seeds easily


Meanwhile cut a ripe pineapple. Follow the steps here How to cut a pineapple

Divide the pineapple in 3 parts, then each parts in two

Take one part and finely grate it

It should look like this


Prepare all the spices that is, red chillies, almonds, aniseed, powdered cinnamon, powdered cardamom, powdered aniseed and raisins.

In a kadai put one tsp oil

When the oil is hot add the tomato

After 2 mins add all spices and stir well.

When the tomato has melted a little add the tamarind sauce

Let it cook for 2 mins

Take one packet brown sugar

Add nearly all sugars (can leave some in the packet itself)

Add the chopped pinneple.

Roast some peanuts

Roughly grind the peanuts.

Add them to the mixture and stir well

Do stir from time to time as the paste will rise

from time to time do check the consistency, it should not be liquid not too sticky, should be in between.


Finally after 30 mins, got its perfect consistency. Let cool. When it cools down it become more sticky, so should be careful not to overcook the paste..

Keep refrigerated
Serve chilled with moderation.

Ingredients:

1 fresh green mango

3 green chillies

salt

Method in pictures:

The 3 main ingredients

Gather 3 green chillies and salt

Crush them in a traditional way or whwhichever suitable way

It should become a paste


Collect them from the 'roche-cari'. keep aside

Just grate the mangoes finely

How to:

Choose a beautiful fresh mango from the tree

Wash it properly

Place the mango on a chopping board
with the help of a sharp knife cute the upper side

Hold the mango firmly in one hand and using a peeler remove the green skin

It should look like this. the naked mango with the peels


Use a grater, and just grate the mango as wish (optional) Or simply cut it with a knife

Gateau patate - Sweet potato cake

Divali is approaching and the traditional cake should not be missed.

Ingredients:

The dough:

250g flour

500g (approx) sweet potato

Cardamom

Big anise (gros lani)

baking powder

food color

Coconut filling:

150 g fresh coconut or dessicated coconut (fresh coconut is the best)

1tsp vanilla essence

Some raisins

75g white sugar

Method in pictures:

Boil the sweet potatoes till soft and let drain

Peel them

With the help of a fork mash them

Should look well mashed

Add anis and cardamom

Then add flour

Add little food color and baking powder

Mix well with hands till smooth dough is made.

Make small doughs and let it sit for 15-20 mins

Meanwhile, prepare the coconut filling.

Add dry raisins and vanilla


Add white sugar. mix well and leave aside

After 15-20 min the dough is very soft

In a soft table, spread some dry flour

Keep one of the flour ball, and flatten using a rolling pin

Flatten the dough, do not worry about the shape.
The dough should be neither too thick nor too thin

Use a small stainless steel bowl if no particular cookie cutter available.

Make a round shape in the flatten dough

Make the maximum circles.

Remove the outer parts and keep the perfect circles only

Take a spoonful of the coconut filling and place on the flour circles.

Close the circle by bringing both sides together

It should look like a semi circle

Press the opening sides with a fork.
If it does not stick or close, press with fingers first then make the fork mark

Should look something like that

Repeat the process, gather a few before preceding to next step.

In a large pan, heat some oil for deep frying

When the oil is hot, one by one let the dough in

Let them fry till golden brown

Fry both sides


Remove and let drain. They are ready to eat now :) Happy Divali :D

Put a rounded shape dough on it.

Roll with the rolling pin to make it flat.

Make the dough flat, no matter which shape :-}

Add some oil and spread thoroughly.

Fold one part i.e the upper side bringing it in the middle.

The lower part joining the upper side.

The left side in the middle

The left side joining the left side.

It should be in a square shape. Let the square dough sit for 30 mins
meanwhile make the other rough doughs in square.

After 30 min, take the square dough and flatten it.

It should make a round shape this time. Don't worry if it isn'tperfectly round

In a heated pan or round griddle put some oil, and add the flatten dough

The dough will become puffy.

Turn around, when light brown.


Remove when both side is lightly brown. With the hand just tap both side.

Serve hot.

Weetabix with papaya and kiwi.

1 ripe papaya

How to:

Choose a ripe papaya from a papaya tree.
or select a good papaya form the market.
Rinse the papaya

Place the papaya in a chopping board and with a sharp knife peel it.
Be careful not to mash it with the fingers.

Cut the whole papaya into two.
scrap out the seeds with the help of a spoon

It should look clean.

Then slice the papaya into wedges. be careful as a ripe papaya is really soft.

Cut in cubes.

Add some lemon juice and eat..

Those small cubes can be added in fruits salads.

Cassava Pudding - Pouding de Manioc / Poudine de Manioc

Dessicated coconut

Method in pictures:

Some uprooted fresh cassava

Peel the hard skin. Wash well with water.

Roughly chop them.

Put them in grinder with some water.

It should become a fine paste.

Add half cup sugar and 1 tsp vanilla. Mix well.

Put in a recipient, let cook at very low flame for 30 mins.

Or cook using bain-marie method.

It should look transparent or yellowish and sticky.

Poor the mixture in an stainless steel plate. spread everywhere

Add dessicated coconut.
Put in refrigerator, serve chill.

Okra salad

Okra or lady fingers are available everywhere in Mauritius. The only way we use to eat okras was fry okras! There are many other ways of eating it, including steamed or boil okras.

Ingredients needed:

Drain.

Green tea with lemon

Green tea is known for various heath benefits, including weight loss. It is reputed for increasing metabolism which is very good for losing weight. I drink a hot cup of green tea early morning, and the rest i keep sipping the whole day. To be frank the taste isn't that good, but been drinking it for almost two years and have no problems in drinking it as it is.

4 packet of green tea

1,5 liter water

Pineapple and vegetable salad

1 medium pineapple

1/2 cabbage

1 carrot

1/4 cucumber

For the seasoning:

7 leaves of mint

2 spoon vinegar

1 spoon olive oil

Method:

Cut a pinneapple

Take 1/4 cabbage

Shred it finely.

Take a carrot.

Remove the root and the stem. (Tails and head)

Hold the carrot like this.

Always cut the carrots away from your body and make sure your fingers are not in the way.

Clean all sides.

Grate the carrots.

Grated carrots.

Add grated carrots in bowl.

3 different layers, with 3 different colors.

Take a cucumber.

cut 1/4 of it.

Peel it with a peeler.

Shred the cucumber

Make any forms.

Combine the cucumber with other ingredients in the bowl.

Filled bowl.

Take a fresh lettuce.

Wash lettuce leaves.

Place lettuce leaves on a plate.

Add the prepared ingredients on it.
Serve with dressing.

Ingredients:

3 cup powdered milk

2 cup flour

1 tbs baking soda

20ml milk

2 spoon clarified butter (Ghee)

cardamom

cinnamon

2 cup sugar

1/2 liter water

oil for frying

Method in pictures:

Start by making a syrup. add sugar, water cardamom and cinnamon. let boil for 12-15 min.

sift flour, add milk and baking powder. mix well.

My one cup is this cup, approximately 100g

Add clarified butter. mix well

Meanwhile roast some cardamom and cinnamon.

We'll use one the inner parts of the cardamom and only small piece of cinnamon.

Grind them

Sift the mixture in the paste. The other unsifted parts are put in sugar syrups.

Add milk to form a dough

It should become a smooth dough. Cover and let it sit for 15-20 min.

Take a little dough, make small balls.

Eurm my sister being playful with the balls.

The balls should look like this. The black spots are the cinnamon and cardamon.

In a pan, add oil and shallow fry the balls.

Remove after golden brown.

Add in syrup, do not leave in the syrup itself else it will melt.

Serve chill.

Method:

Meanwhile roast, grind and sift cinnamon and cardamon powder. add them to the mixture. mix well
Gradually add milk to make a soft dough. work the dough for 4-5 mins and then cover and let sit for 15- 20 mins.
After 20 mins, take a few dough in the hand and make small balls.
In a frying pan, add oil and swallow fry at medium heat. remove when golden brown.
after removing dip the fried balls in the syrup, remove as soon as all sides are well covered with the syrup.
Serve chill.

Note:

Using cardamon and cinnamon flavors is optional. Use them if you like them.
