The Good, The Bad, and The Ugly Truth
About What You're Eating:

Over the last few weeks I've been doing ample research on various foods that I have increased in my diet throughout the last month; one being high on my priority list was our favorite and popular gluten-free treat; quinoa.

Quinoa has built a lot of hype over the last few years with the popularity of the Paleo diet and even websites such as Pinterest and the latest fitness trend, Crossfit. It's a wonderful source of protein while providing many of the essential amino acids needed, however what are the downfalls of quinoa and why do some of us fall ill after eating it? Continue reading to discover some of my thoughts as to why some of us may have trouble digesting, absorbing its nutrients, as well as processing this seed:

It is as simple as “anti-nutrients” or better known as “saponins.”

Anti nutrients are naturally and synthetically-made chemicals that disrupt the absorption of nutrients when present in our systems, and in quinoas case this is an anti-nutrient called "saponin."

Did you know that quinoa must be washed before it is even able to be sold for human consumption? Did you know that only 62 factories wash quinoa in one of the highest quinoa-producing locations in the world (ie Boliva) prior to exporting to the United States and elsewhere?

Saponin not only is toxic to our systems in large quantities, it is also highly present in its makeup depending on areas where the seed is grown. Quinoa that is grown in America as well as Ecuador is typically less-likely to be highly saponin-filled compared to areas like Bolivia and Peru that may have higher saponin levels due to water quality & filtration techniques. In order to remove the saponin chemical, large amounts of water must be used to cleanse the seed. Without adequate water or in better words, potable water quinoa is unable to be cleaned properly for human consumption. (FYI: Most of quinoa bought in America is imported from other countries.)

Although some quinoa may not cause harm to the majority of people if eaten in small amounts, others may find that their bodies do not process the seed very well, or even fully digest it. Those who struggle with digestive issues such as GERD, IBS, & IBD should eat with caution. In other words limit your intake as eating it in excess will alter nutrient absorption and could potentially cause painful stomach problems. For those of you with digestive problems trust how you feel while listening to your body. Understand the root of where pain is coming from and make a list of foods that could potentially be causing your upsets. Have you eaten something in excess recently? Try food pairing and minimal amounts of anti nutrient foods until symptoms subside.Talk to your doctor, dietitian, or nutritionist about your nutritional findings. It may be something they are unfamiliar with, however speaking to your doctor about any dietary elimination is always a smart choice.

“Most of the available data indicate that these compounds are very poorly absorbed following oral administration to animals and humans.” For those of you suffering with digestive issues, this is a larger struggle for us as it is, regardless of what we are consuming. With this being said, saponins may “not all be created equal,” quite similar to our bodies; not one being exactly the same. While some of us may have no issue absorbing quinoas nutrient-dense and immune-boosting properties, some of us may not be so lucky, which is exactly why I have found it necessary to write an entry on my insight to why I may be feeling sick recently. As BreakingMuscle.com states “ Without a doubt, more research is needed to nail down the function of saponins, especially in regards to their function within the human digestive tract.” In simple terms; listen to your body, educate yourself, and make stronger food choices.

In no way am I an advocate for nixing the quinoa from my own diet, however I am listening to my body and better understanding the root of my struggles with something I am so incredibly passionate about! FOOD! I will now wash my quinoa, limit my consumption and take a better look at labels to see where the seeds are being imported from! Enjoy the knowledge <3

Hi All,

It's been quite some time that I've written on my "blog." At this point I dont know if I would even call it a blog considering I rarely write on it. I'm hoping that changes starting today. My life has changed quite a bit in the last year-- I left the Interior Design world and began culinary school to pursue my dream of becoming a better and more skilled culinarian & chef. Here are some of my most recent thoughts:

In a past class I wrote that I would like to “define a holistic and happy lifestyle through my own study and conclusions through food.” I am attending Johnson and Wales University trying to better understand the industry for myself as well as for others. Food is something that is very personal for me. Practicing a healthy diet for most of my lifetime, I became quite strict with what I put into my body when beginning my first degree a few years ago. I chose health for my happiness because my health proved to dictate my spirits. Diagnosed with various digestive issues, cardiovascular issues, as well as urology issues-- it is not something many want to admit to. At only 25 years old, I never expected every single condition I have to be so heavily manipulated and controlled through food. With the last few years being an uphill battle to better understand my body and what it needs, my aspirations to better understand food have grown into a passion from something I always knew I loved.

Although food is not the only culprit in a battle of overall happiness, for someone with digestive issues-- personally it has shown to be my largest ‘guilty party’ of feeling well and eating well. The average culinary student goes to school to learn the art of cooking for the popular belief that we are all obsessed with food and cant imagine doing anything else. That much is true for myself. I am fully and utterly enthralled by food, however this burning obsession is perceived in a different way then most. Yes; I have come to culinary school to refine my skills as well as learn more about food and nutrition however, I see food as an artform as it has greatly developed into one during this journey. Firstly, I am an artist, and secondly I am a chef. Pairing these two worlds as one seems effortless in my book. Food motivates me and I hope to one day share the way I see it to help others draw their own conclusions to better formulate a healthier life and a happier body.

Hello All!
As many of you know, I have been working extremely hard to finish this 1920's mahogany table. I've done some research on the table which is a table from a company based out in Illinois which was responsible for much of furniture manufacturing in the 1920's. I am still searching to find the value of the table currently but I would assume based off of the damage it will not be as valuable as a piece that has held up its original wood.

Here are a few shots of the piece prior, during, and after I took a hand sander, belt sander, and wood chisel to it the last three days. I am giving my hands a break for the next few days and will work on other projects. Enjoy!

As my project comes closer to a physical form I figured I'd share two photos that may help others better understand the project.

How can we view an item in a way that it has not been viewed before. Can we adapt an item to restore its beauty instead of discarding it? We perceive objects through what we know, not what we see. This project will showcase the beauty in a singular recycled resource. These images show the objects blurred to showcase the above statement: What is the beauty that we see in an unknown object. We are taught to find specific things beautiful based off of what we are told instead of looking at what it truly is in its physical form. As the project comes closer to completion I will un-blur the object a certain percentage each stage of the project. This will show what one sees without knowing what it truly is....

Comment below if you think you know what the object is!

This week I worked to complete two old-school brass lamps that I paid $14.00 for a local thrift store along with three vintage mid-century modern chairs. (The maker is unknown.)

The lyrics from Macklemore's "Thrift Shop" song keep replaying in my head after working on these thrifty finds! Here are some images of the finds:

(Check back soon to see the updated version)

Above: Vintage Mid-Century Modern chair bottom.

Above: My $7.00 find at the thrift store.

Above: Heavy sanding has begun. Ugly bottom edge no more!

Above: Thrift shop branding= sticker and wax price tags!

Above:

Coating myself in piles of dust, wood shavings, dirt, and inhaling too much spray paint for ones own good, I began adding in darker hues to my skull & antler painting...

Aside from my refurbished lamps, stool, and chairs; I worked to complete a large painting of antlers and a skull with heavy colored smoke in the foreground. These are individual panels created with acrylic paint, charcoal pencil, colored pencil, black marker, and gold leafing. Check back soon to see updates! Have a great weekend everyone!!

Hi all!

It has been quite a while since my last post. I recently moved for a job as an interior designer/ interior architecture position! Life has been crazy but today is my first day back with a day that was left to just breath and catch up on all that has been pushed aside. Staying on track is hard but planning makes my long work weeks much easier. With hours ranging from 9am to as late as 10:30 food prep for the week is key along with morning workouts! Tonight I'd like to share some recipes I have shown via Instagram over the last few months! If interested in the recipes please comment of follow me at @deebossy!

YUMMY!

IT'S WEDNESDAY,

which means its time for a few new recipes

and some delicious pictures!

Veggie + Burger + Veggie

A simple way to up your veggie intake and down your carb intake with this Burger without a bun!

What you'll need:

Carrots

Zucchini

Onion

Tomato

Chick Peas

Black Beans

Hot Sauce

Low Sodium Soy Sauce

Flour or Wondra

Ms. Dash Herb & Onion

Ms. Dash Extra Spicy

Ketchup

Chia Seeds

Salt

Pepper

Pepper Flakes

Chili Powder

2 Eggs

Olive Oil Spray

Cut & Mix together 4 or 5 small carrots, 1 large zuccini, one medium onion to prepare to be cooked at 300 in the oven. (You can also puree these like I did prior to cooking and completely mess your entire kitchen up with a messy mash consistency you begin to bake with.) I'd highly recommend cooking the veggies FIRST!

After baking put into food processor.

Next: Add in the black beans, 1 small tomato, canned chick peas drained, 2 tablespoons soy sauce & eggs.

After pureed, add a bit of hot sauce, Mrs Dash Herb & Onion, Extra Spicy, Chia seeds, Pepper, Pepper Flakes, Chili Powder, and Cumin. Also, add in flour to thicken up the veggie burgers.

Prep metal baking sheet for veggie mash with wax paper and place veggie mash into bun-sized circles. Cover veggie mash with another piece of wax paper and put into freezer until somewhat formed. Do not let these freeze or your burgers will not cook the way they need to. Grill patties on the stovetop & get ready to sandwich your burger.

For my burger I used Korte Meat's burgers & placed some spinach, ketchup and sheared carrots right on in there! Let me say for a veggie & meat lover this was amazing!

Veggie Mash:

The only reason I made this was because I was craving "mashed potatoes" but needed to up my veggies and cut out some carbs!

I found that this is exactly what I made for the above recipe but I did not add black beans & added corn & Unsweetened Coconut Milk to it for extra sweetness!

Once again, you will need everything listed on the previous recipe minus the black beans. Also, dont forget the canned corn & Coconut Milk!

Cook everything the same exact way but puree this until desired consistency to use as either "mashed veggies" or in the following instance, veggie spread for sandwiches!

What you'll need for 2nd image below:

Lettuce

Spinach

Veggie Mash

Avocado

Deli Chicken

Low Fat Sprinkle Cheese

I create these recipes based off of what I think will taste good, however I would not recommend
putting parmesan cheese on this recipe. The taste of the sweet mashed veggies does not pair well
with the taste of parmesan! (Just something to remember!)

EXCUSE THIS HORRIBLE IMAGE I TOOK WITH MY PHONE,

however this was one of the most amazing lettuce wraps I have ever had!

Add "Veggie Mash" into your favorite sandwich or in this case, a sandwich made of deli chicken, low fat sprinkle cheese, spinach & avocado!

Yum, Yum, Yum!

ENJOY!

Welcome to Material Mondays on the Artistic Cotyledon!

[Materials that appear beautiful in their own solitude.]

Once again Mondays will focus on:

I'd like to find images that inspire & create a different view of a single material, whether it be an actual material or a surface patina. How can we manipulate one material or surface to create a larger impact whether it be in decorating, photography, design, architecture, or installation. My goal is to find images that speak to each of these disciplines and hope to find a different viewpoint in my visual world.

It's Workout Wednesdays!

I've been pushing myself incredibly hard in the gym recently. I started training with a WBFF Pro to make it even more challenging. My friends have been asking me, why this sudden interest in working out so regularly and training the way that I do? I've always loved fitness but never really got into it until this year. Pushing myself in many aspects of my life (not only fitness) have made the last few months some of the most positive and happy months I've had. I'm focused, determined, and enjoying every moment of it. Training with a pro is wonderful but knowing that I can do it after this is all over is what will keep me going. I guess I'm testing myself to see if I can actually conquer what my mind believes and says I can physically do.

One large change for me: Eating a TON of meals! I am a big eater but to up my proteins and have a "meal" instead of being a certified grazer has been a major adjustment for me! Onto the yummy meals...

Cilantro Lime Chicken Salad:

What you will need:

-Chicken

-Chia Seeds

-Mixed Greens

-Salsa

-Mixed Mexican Lowfat Cheese

-Eggs

-Mrs Dash Fiesta Lime Seasoning

-Avocado

-Olive Oil Spray

-Lime

Prepare Eggs by boiling. Grill chicken on the stovetop with a few sprays of olive oil and Mrs. Dash Fiesta Lime Seasoning. Grill until cooked!

The rest is quite simple. Chop. Chop. Chop and mix together for a delicious simple meal! YUM!

ENJOY!

Typically, Saturdays will not be dedicated to FOOD but I figured I'd share this delicious treat/is it really a treat, drink!

A week ago I shared a few of the people I follow on Instagram. Bradley Martyn was one of them. Today I am also sharing this with him while entering a contest for the best treat meal! I'll let everyone decide if this is truly a treat meal, or just another healthy concoction made by a healthy food lover!

Before we get to the drink & recipe:

Who says a non alocholic drink cant be served in a martini glass? A large part of why we cheat is because of the cravings we've stayed away all week. We crave the chocolately goodness and sweet tasting treats. Why not avoid a full "cheat meal" and have fun with cooking by experimenting with healthy and nutritious foods! Theres no real reason to cheat when you know what youre doing in the kitchen. Have fun with it & get creative!

Mint Chocolate Protein Shake:

Fool your chocoholic, martini-loving friends with this sinfully saturday non-alcoholic, high protein drink! They'll ask you: "What kind of alcohol is in here? I cant even taste it!"

What you'll need:

-An extremely pretty martini, whine, or pilsner glass to showcase your yummy drink.

-Cocoa powder

-Walden Farms- calorie free, sugar free, and fat free chocolate syrup

-Chocolate Whey Isolate Protein

-Fresh or Frozen Spinach (I prefer fresh spinach)

-Ice

-Unsweetened Coconut Milk

-Mint Extract

-Coconut Extract

Mix all ingredients into a blender until you get the consistency you enjoy. I did not measure anything to create this recipe except two drops of coconut & mint extract. The rest I simply was wingin' it! Enjoy & remember healthy & nutritious cooking is fun & 100% delicious if you know what you're doing!

Watch out for next Wednesdays post. A lot of yummies coming your way! :-)

ENJOY!

Workout Wednesdays: First Post Yummies!

2012-09-11T21:01:00.000-07:00

Welcome to Workout Wednesdays on The Artistic Cotyledon!

I have been working out like a crazy person recently and have fully enjoyed it. Working out has become an artform for me as well. Its allowed me to see and make change in a positive way. I've slowly begun to see myself become a person of routine (or somewhat of a routine.) I've seen changes in my body in such a short amount of time when planning my workouts werent even a part of this "routine." This in itself has confirmed its an artform for some people, to be able to be the controller of those sculpted abs and enormous biceps! I cant imagine what changes I will see when I start to plan out all of my exercises! Just as I sculpt my artwork with a pen, program, or brush, I'm begining to sculpt my body and will continue to do so while sculpting my world in a positive way. Origionally I started this blog with art/architecture/interior design/ fashion/ and "all things obserd" to be my focus. I have slashed this idea because just as it states what a cotyledon is, it is the significant makeup of the embryo within the seed of a plant used for germination. "Cotyledon represents the user and the process in which we grow through our experiences, interests, and talents based off of how we utilize our power to be our complete best." I am choosing to look at this as a way that I am sculpting my artistic world by being well rounded and a healthier person based off of my interests or creating that "significant makeup." Not only will I challenge myself by improving my plans, I will also try to improve my photography skills in the process by showcasing my recipes that I will begin sharing. I've chosen to focus mainly on food and exercises as well as motivational fitness athletes for Wednesdays.

Starting very soon I will be training with Colleen Gallagher, a WBFF Bikini Pro. I am so very excited to see what changes I can make, and how much she will challenge me, and how much I will challenge myself in the process. I will become a part of a team called "Team KNOCKOUT" which acts as a support and motivational group to girls who are training. A lot of changes are about to happen! Find more about Colleen and her programs at:

^^^^^^^^^^^^

I wanted to share a quote from a girl I follow on Instagram by the name of Bella Falconi @bellafalconi_fitness who wrote:

"I'm not training for a 5k. I'm not preparing for a competition. I'm not trying to set a new record. I'm not trying to impress you. I'm saving my life and myself esteem by being healthy, exercising and believing in myself."

-She is so dedicated and so very positive. HUGE inspiration, not just for her insane physique, but her positive attitude which is even more insane! Awesome!

First Recipe for Artistic Cotyledon Workout Wednesdays!

Vanilla Apple Pie Protein Parfait with Greek Yogurt:

By far one of the best parfaits I've ever made!!

What you will need:

Three Apples

Vanilla Extract

Carmel Extract

Cinnamon Extract

Truvia (or favorite sweetener)

Cinnamon

Nutmeg

I cant Believe its not butter

Walnuts

Vanilla Whey Isolate Protein Powder

PLAIN Greek Yogurt

Lowfat & Low Sugar Granola (below 6g sugar)

**Please note: Nutmeg, I Cant Believe It's Not Butter, Walnuts, Protein, Yogurt and Granola not Pictured!

First, cut apples into small pieces and place into a mixing bowel.

Add a few dashes of: Vanilla extract, Cinnamon, Nutmeg, along with Carmel & Cinnamon Extract(if you have it.)

Next: Add two/three packets of Truvia and one scoop of Vanilla Whey Isolate Protein. Add a handful of crushed walnuts as well as a spoonful of I Can't Believe It's Not Butter.

Mix together until butter has softened. Place in a cooking tray while heating the oven to 300. Cook until apples are to the consistency you enjoy. I prefer them to be a tad bit crunchy for my parfait.

Once the "pie" has cooked place ingredients into a bowel with Plain Greek Yogurt. Sprinkle with low fat/low sugar granola as well as nutmeg or cinnamon if desired.

ENJOY!

Possibly Pair With:

Tea with Steamed Cinnamon & Nutmeg Coconut Milk:

What you will need:

Breakfast Tea (decaf or regular)

Vanilla Extract

Cinnamon Extract

Truvia (or favorite sweetener)

Cinnamon

Nutmeg

So Delicious Unsweetened Coconut Milk

First: Bring Coconut Milk to a boil.

-Add in a dash of Vanilla Extract as well as Cinnamon Extract.

-Add in teabag.

(remove teabag after tea has dispersed)

-Froth milk with wisk to create "latte" consistency or bubbling effect.

-Pour and serve, but not before adding a dash of truvia, nutmeg as well as cinnamon. I prefer quite a bit of Nutmeg to spice it up.

ENJOY!

New Day = New Attitude.

Lets start fresh with this post....

With Labor Day Weekend ending today, and the work week soon to follow it amazes me how fast the summer has gone. I've talked a big talk with where I thought I would be by now. Spending my Labor Day weekend with friends in NYC I thought to myself why am I not here right now? Why did I take a job in a town I knew I didnt want to end up? I questioned a lot this weekend and found myself upset with what I've done with the last 6 months. I almost felt sorry for myself originally but then realized I was more angry than upset. I am not where I want to be because I have not pushed myself to that point. I've pushed for what I want, but not ALL of what I want.

After thinking a lot the last few days I've realized its not fair to be angry with myself. I know in time I will get everything that I want, as long as I go after it all and have a plan. My goals have changed, and the deadline I thought I wanted has also changed. My interests have changed and my story has changed. Today starts the day I'm going to refuse to see this summer as a failure. I've worked full time in my field, with wonderful & kind people who have made me view things in a more positive way. I've discovered my love of fitness and rediscovered how much the fine arts calm me and sculpt my abilities in the fine arts as well as interior design and architecture. I'll see this summer as the relaxation before I've fully commit to what I want. No more excuses, just aim for your goal and get it. Today I commit to it. Here it is in writing.

Recently my instagram feed has been cluttered by fitness posts and body builders that have inspired me in more ways than you can imagine. I've followed some of these people purely from aesthetics at first, and then discovered a story behind it all. So many of them are some of the most determined people I have ever read about. Its not about their six pack abs, its not about how many GNC advertisements they grace, its about their amazing duty to themselves to succeed purely because they LOVE what they do. Yes, I read their instagram posts and gawk at their images, but their passion and commitment are simply amazing. Self control is a hard thing to come by but its a goal I'm determined to achieve. Although my goal is not to have 6 pack abs (even though that'd be okay with me if it did happen) I want to commit to self control and achieve what I've been searching for, for so long.

"If you want to fly, you have to give up the sh** that holds you down."

"If you do not go after what you want you'll never have it."

Figuring I'd be sluggish waking up today, as I went to bed at 3am, I surprised myself to wake up around 9:45. It is now an hour later and I am on my second cup of coffee relaxing on my couch with my back pressed up against my furry gray pillows, with the fire blazing, and the candles lit. Today is going to be a good Sunday (of course with lots of productivity.)

My continuous obsession with Pinterest is undying as I seem to take an interest in the people that post these remarkable images. It would only make sense that you come across people that all have a similar background to yourself. The places they work=simply amazing, and the pictures they post seem to tell a story, or at least I know mine do. I always think of the quote that a designer said when criticizing another design; "it looks like a rainbow threw up in the room." Although I'm not speaking of color so much, I do kind of look at my pinterest as an unfolding invitation to peer into everything that I'm obsessed with. Before it was just something that I created based off of the titles that everyone has "My Wedding" "For the home" while I create boards that state "Cyber tech rust" "Color Impact" and "Brand that Shiii." Its more or less a virtual exposure to my soul and everything that I desire to become, create, and learn more about. :-)

8:54 and I'm about to go back to weaving bike tires. I've kept up with my etsy account all day in hopes to make it more profitable, which its lacked for the entire time that its been set up. My friend text me this morning to help me with the titles/layout of my items. She changed one of my listings which actually made a huge difference in the way it was viewed. I tried to market it better today and with all that I did I actually got some feedback. I have some crazy&awesome friends in my life. Certain people messaged me to tell me how much they liked things and even gave me some advice seeing that I was new to the site. It still shocks me every day how many kind and generous people there are still out there. Gotta keep surrounding myself with people like that.

Awesome.

Goodnight!
