Ingredients:

4 Ripe Hass Avocado's
1 lime
4 tbsp fresh cilantro (finely chopped)
1 tbsp fresh garlic
1 medium tomato chopped finely
1 small onion chopped finely

Combine the following ingredients in a large bowl;

Cut Avocado's in half and remove the nut. scoop out avocado meat with a spoon.
Zest one whole lime, after zesting, cut in half and juice
Chop tomato finely
Finely Chop fresh garlic (pre-chopped garlic works great as well)
Finely Chop fresh cilantro
Finely Chop onion

I use a fork to mash the ingredients leaving it somewhat chunky. Mash to your desired consistency.

The Lime Zest and Cilantro bring a ton of fresh flavor to this Gaucamole!
Recipe curtosy of muffintinmom.Ingredients:

1 box white cake mix

1 cup/8oz. Orange Almond Champagne (or Sparkling Wine) The brand I got is made by Wilson Creek, called “Orange Mimosa”.

3 eggs

Directions:

Preheat the oven to 350 degrees

Mix Ingredients in a stand mixer or bowl and pour into a greased bundt pan

Bake at 350 according to the box directions (our oven is finicky and ended up being done at 30 mintues)

Allow to cool, before you add the frosting. If you don’t the heat from the cake will absorb the frosting (not necessarily bad I guess).

Citrus Champagne Frosting

1/4 cup of orange juice

1/4 cup champagne (can omit and sub in more orange juice)

1 lb of powdered sugar (I made mine with about 3/4 of a lb.)

**In a bowl, pour in champagne and OJ, slowly add in the powdered sugar and whisk as you go, mixing it to the desired consistency.

**Pour frosting over cooled bundt cake. Top with chopped almonds if desired.

Ingredients;

4 slices bacon, finely chopped

18 ounce package cream cheese, softened

½ cup freshly grated Parmesan cheese

2 – 4 green onions, thinly sliced (1/4 cup)

1 tablespoon milk

28 ounce package (8 rolls each) refrigerated crescent rolls

1 egg

1 tablespoon water

1 – 2 teaspoons poppy seeds

Fresh chives (optional)

Directions;

1. Preheat oven to 375 degrees F. In a skillet, cook bacon
until crisp; drain. Line a very large baking sheet with parchment paper; set
aside. In a medium bowl, stir together bacon, cream cheese, Parmesan cheese,
green onions, and milk until mixture is nearly smooth; set aside.

2. Unroll and separate crescent rolls into 16 triangles.
Spread each triangle with some of the cream cheese mixture. Roll up from the
wide end of the triangle. Place on prepared baking sheet.

3. In a small bowl, beat egg with water until combined.
Brush crescents with the egg mixture; sprinkle with poppy seeds.

4. Bake about 12 minutes or until puffed and light golden
brown. If desired, garnish with chives. Serve warm.* Makes 16 crescents.

from the test kitchen

Prepare as directed through step 2. Cover and chill on
prepared baking sheet for up to 5 hours. (Or, freeze in a single layer until
firm. Place in a self-sealing plastic freezer bag and freeze for up to 1 month.
To bake, line a baking sheet with parchment paper. Arrange frozen filled
crescents in a single layer on prepared baking sheet.)

To bake chilled or frozen crescents: Preheat oven to 375
degrees F. Bake crescents for 14 to 16 minutes or until golden and heated
through.

*Kitchen Tip:

If you'd like to freeze the baked crescents for later, cool
on wire racks. Freeze in a single layer until firm. Place in a self-sealing
plastic freezer bag and freeze up to 3 months. To reheat crescents, preheat
oven to 350 degrees F. Line a baking sheet with parchment paper. Arrange frozen
baked crescents in a single layer on prepared baking sheet. Bake for 8 minutes.
Tips for haunting your crypt...

These are simply fantastic! I picked these up at Micheal's Craft Store last year, a pack of 8 was around $8 but as we all know Micheal's has fantastic sales and coupons so use em! These lights are super bright and a few will light up a room with an eerie green or red glow, submerse them in your Halloween punch or insert them in the eye sockets of your skeletons!!

Check out the huge spiders below!!! We live in a condominium and decided to hang a few of these creepy creatures on our deck and ceiling.

Love this idea, what to make your ghoulish refreshments glow? Add tonic water as shown at ourbestbites.com. Change out a few of your regular light bulbs for black lights for extra effect. Black lights and other colored light bulbs such as green and red can be found at Walmart, Micheal's and most other hardware stores.

Dry Ice Cauldron- For this one take a larger plastic black cauldron and (using gloves) place pieces of dry ice along with a cup or two of cool water in the bottom of the cauldron. Then take a smaller black cauldron and place it inside the larger cauldron and fill with your beverage of choice. For extra effect use the submersible led lights shown above for added creepy effect.

These are fantastic, holographic pictures in frame, when you look at them at different angles the image morphs in to a creepy zombie or ghost. I have found these in the past at Micheal's but also at the Dollar Store, if you purchase them from the dollar store you can pop the print out of the inexpensive plastic frame and put them in to your own frames at home.

One of my favorites, perch crows on your front porch rail, your mailbox or your window sills for added ambiance...

Glow Sticks on the front porch steps for Halloween Night!!!

Here are a few other tips and tricks;

Cheesecloth can be purchased at craft stores and Halloween specialty shops, drape it in doorways, over windows or as a tablecloth.

Place Black light bars under couches, tables or in discrete hiding places .

Borrow or buy an automatic fog machine, place it discreetly by the front door to greet guests with a creepy fog when they enter your crypt.

Turn ordinary white candles in to candles mysteriously dripping with blood by lighting a red candle and letting the wax drip on to the white candle and roll down the sides.

Use inexpensive cobwebs and fake spiders to haunt your home.

Happy Haunting!!!

Aside from the thousands...scratch that millions of lunges and sit ups I need to do in the coming months I am also looking for some new healthy and delicious recipes as well as some substitutions to cut down on the calories in some of my favorite recipes found here As you know many of the recipes I feature on the blog have butter, cream and oil as key ingredients (yikes!) but recently I started cooking with Chobani Greek Yogurt and I love it! I found this handy conversion chart and I thought I would share it with you guys! Please send me any healthy and delicious recipes you think we should feature!

Chobani is just one of the many Greek yogurt brands you see popping up at your local supermarket. It just happens to be my favorite but you could use the above conversion chart for most other greek yogurts as well. If you are not yet familiar with the health benefits of Greek Yogurt vs. low fat regular yogurts there are many. Greek Yogurts contains almost double the amount of protein found in regular low fat yogurt, with half the sugar and the same or less calories. It also has a wonderful thick consistency and fills you up big time! The yogurt is not overly sweet and so if you prefer a sweeter yogurt or plan to use it in smoothies or even frozen pops, honey or stevia is a great natural sweetener to try!

Enjoy without guilt!

Important: When adding Chobani to a hot soup or sauce, add Chobani at the end of the cooking process and remove pan from the heat.

Kid's Valentine's Day Party Idea

From the Hostessblog.com

What an adorable idea for a Valentine's Party!

I love every detail of this adorable idea!

You see, Abbys been perfectly content to rule the roost as top dog for a very long time now. So when we brought this little critter home...

Abby was none to happy about it...

Alas, its been 4 weeks now and Charlie has done his very best to try and win Miss Abby over...

That little black ball of fur is Miss Abby pretending to sleep while Charlie tries to snuggle up to her. I think that Abby was fully aware of what this little guy was up to...she just didn't want to admit she kinda liked it.

Its been a long few weeks for all of us. Raising a puppy is much more work then I remember but we sure do love this little guy and I think Abby is starting to fall for him as well

Here's Abby and Charlie in the kitchen, patiently waiting for their turn to lick the bowl.

Ingredients:

1 1/4 cups plus 1 teaspoon confectioners sugar

1 cup (4 ounces) finely ground sliced, blanched almonds

6 tablespoons fresh egg whites (from about 3 extra-large eggs)

Pinch of salt

1/4 cup granulated sugar

Red Food coloring

Raspberry Cream Macaron Filling (see recipe below)

Directions:

To make the macarons: Preheat the oven to 350 degrees. In a medium bowl, whisk together confectioners' sugar and ground almonds. In the bowl of an electric mixer fitted with the whisk attachment, whip egg whites with salt on medium speed until foamy. Increase speed to high and gradually add granulated sugar. Continue to whip until stiff glossy peaks form. Gradually add food coloring until reaching desired color. With a rubber spatula, gently fold in the confectioners' sugar mixture until completely incorporated.

Line baking sheets with parchment paper; set aside. Fit a pastry bag with a 3/8-inch #4 round tip, and fill with batter. Pipe 2-inch disks onto prepared baking sheets, leaving 2 inches between cookies. The batter will spread a little. Let stand at room temperature until dry, and a soft skin forms on the tops of the macarons and the shiny surface turns dull, about 15 minutes.

Bake, with the door of the oven slightly ajar, until the surface of the macarons is completely dry, about 15 minutes. Remove baking sheet to a wire rack and let the macarons cool completely on the baking sheet. Gently peel off the parchment. Their tops are easily crushed, so take care when removing the macarons from the parchment. Use Heart cookie cutter to cut in to desired shape. Use immediately or store in an airtight container, refrigerated for up to 2 days or frozen for up to 1 month.

To fill the macarons: Fill a pastry bag with the filling. Turn macarons so their flat bottoms face up. On half of them, pipe about 1 teaspoon filling. Add fruit to the perimeter of the macaron. Sandwich these with the remaining macarons, flat-side down, pressing slightly to spread the filling to the edges. Refrigerate until firm, about 1 hour.

Raspberry Cream Macaron Filling:

Ingredients:

8 oz. frozen raspberries, thawed

3 tbsp. granulated sugar

1½ tbsp. cornstarch

½ tsp. lemon juice

2 cups heavy whipping cream

Directions for Filling:

To make the filling, drain the thawed raspberries, reserving the liquid in a liquid measuring cup. Add enough water to equal ½ cup plus 2 tablespoons. In a small saucepan over medium-high heat, combine the liquid, sugar, cornstarch and lemon juice. Mix well. Heat, stirring occasionally, until the mixture boils and thickens. Remove from the heat and allow to cool completely. Stir the raspberries into the cooled mixture. (Depending on the texture of the filling you want, you can smash the berries or leave them chunky. You can also strain through a mesh sieve to remove the seeds if desired.) Transfer to the refrigerator to chill the filling. It will thicken as it cools. Meanwhile whip heavy whipping cream until stiff peaks begin to form, combine raspberry mixture and follow instructions above.

Note: Raspberries can be substituted with strawberries.

Krispy Kreme Copycat Recipe

Wait...hold up!

Raspberry pastry cream (recipe follows)

Butter crust (recipe follows)

3 cups mixed fresh berries (blueberries, raspberries, and/or thinly sliced strawberries)

Directions:

To assemble tart, pour pastry cream into baked crust in a smooth, even layer. Top with berries.

Raspberry pastry cream Directions:

In a 1 1/2- to 2-quart pan, mix 1/2 cup sugar with 2 tablespoons cornstarch, 3 tablespoons flour, and a pinch salt. Whisk in 2 1/2 cups whole milk, then add 1 large egg and 2 large egg yolks. Whisk until smooth. Place over high heat and stir constantly with a wooden spoon until mixture boils and becomes quite thick, 4 to 6 minutes. Remove from heat and stir in 1 tablespoon raspberry-flavored liqueur, such as Chambord, and 1 1/2 tablespoons unsalted butter. Pour mixture through a strainer into a medium bowl; set bowl in ice water and stir often until pastry cream is cool, about 12 minutes. Keep chilled.

Butter crust Directions:

Preheat oven to 300°. In a food processor or a bowl, combine 1 1/3 cups all-purpose flour, 1/4 cup sugar, and 1/4 teaspoon salt. Add 8 tablespoons (1/2 cup) chilled unsalted butter, cut into small cubes; whirl (or rub with your fingers) until fine crumbs form. Add 1 large egg yolk; whirl (or mix with a fork) until dough holds together. Firmly press the dough into bottom and up sides of a 10-inch tart pan with removable rim. Bake until golden, 25 to 30 minutes; let cool.

Tip: There is no real rhyme or reason to how your place your berries on the pie, just arrange them in a pattern to your liking!

Note: you can also make single servings by pressing the crust in to a large muffin pan. Then simply follow directions for assembly as above!

Transfer half the marshmallows into another pot and keep both on low heat until the marshmallow/butter mixture is completely melted.

Then add in your food coloring of choice. I did a separate color in each pot. If you only want one color, you won’t have to separate the marshmallows.

Next, add 3 cups of Rice Krispies to each pot and stir until well mixed. Remove from heat.

For the next step, you’ll probably need to butter up your hands. Fill the plastic egg molds with the Rice Krispie Treat mixture and close the eggs. Once all of the eggs are filled, place them in the fridge for about 30 minutes so they can harden into their egg shapes. Once they are done, you can take them out of their eggs and voila!

At this point you can choose to add candy to the outside of the egg. I used Skittles for mine, but Rice Krispies Treats act as a nice mold and you can do just about anything to them.

I found these WAY more fun than the usual dyed eggs. If you wanted to get really creative you could try putting one color in half of the egg mold and another color in the other half. I actually made two batches so I could do four different colors. Hope everyone has a Happy Easter!

Easter Basket Cupcakes
