Dintre toate restaurantele din Romania pe care am avut ocazia sa le vizitez, pot sa va spun cu mana pe inima ca &lt;a href="http://www.jwsteakhouse.ro/" target="_blank"&gt;JW Steakhouse&lt;/a&gt; de la Marriott (deschis in primavara) m-a impresionat cel mai tare si mi s-a parut by far cel mai bun, absolut toate preparatele de aici fiind exceptionale. In plus, experienta pozitiva a fost accentuata si de simpatica echipa care ne-a invitat si ne-a suportat intrebarile, echipa condusa de Nicu Lică, un executive chef roman foarte tanar si extrem de talentat si dedicat meseriei, lucru cat se poate de imbucurator pentru viitorul culinar al urbei noastre.&lt;br&gt;

Dupa ce am avut ocazia sa ne bagam nasul prin toata bucataria, sa vedem halcile de carne USDA choice quality trecute prin cutit si apoi prin broilerul impresionant si sa admiram din spatele bucatarilor cum se prepara un crab cake sau niste onion rings dementiale, ne-am asezat la masa unde am fost coplesiti de bunatati care mai de care mai spectaculoase, dintre care mie unul mi-a cazut cu tronc o minunata prajitura numita &lt;b&gt;&lt;i&gt;Bettie&amp;#39;s Bread Pudding&lt;/i&gt;&lt;/b&gt;, atat de buna incat m-am alintat cat am putut eu mai bine pe langa Nicu pana l-am facut sa promita ca o sa share with the group reteta cu pricina, promisiune pe care intr-un mod admirabil si-a respectat-o, in ciuda faptului ca se jurase solemn ca &lt;a href="http://www.chefstories.ro/" target="_blank"&gt;la el pe blog&lt;/a&gt; n-o sa publice retete ci doar experiente din viata de chef.&lt;br&gt;

Reuniunea noastra a avut loc la unul dintre cele mai trendy locuri din peisajul bucurestean (cu bune si cu rele), mai precis la restaurantul - lounge Loft de la parterul &lt;a href="http://www.soravia.ro/index.php?id=35"&gt;Metropolis Center&lt;/a&gt; de pe Iancu de Hunedoara (cladirea de caramida rosie de vizavi de Studio Martin, unde se mai afla si Readers Cafe).&lt;br&gt;

Unul dintre paradoxurile comunismului romanesc a fost acela ca in ultima perioada inainte de Revolutie, in majoritatea magazinelor alimentare (sau cel putin in cele din Bucuresti) mai gaseai doar sampanie si creveti vietnamezi, produse care ar fi putut fi considerate de lux la prima vedere. Desigur, sampania era de la Zarea (chiar daca mai scria inca &amp;quot;sampanie&amp;quot; pe eticheta :)) iar crevetii erau de fapt doar o poza pe niste cutii de carton ce contineau niste discuri usor curbate, care semanau cu niste banuti de plastic, banuti ce se expandau intr-un fel de chipso-pufuleti daca erau prajiti in ulei incins.&lt;br&gt;

Acum ca sa fiu sincer, din acest motiv eu am fost convins o lunga perioada de timp ca de fapt crevetii sunt un fel de scoici sau, in orice caz, niste vietati plata, care sunt uscata dupa ce sunt scoase din cochilie si care apoi se umfla in forma initiala in timpul prajirii. :)&lt;br&gt;
&lt;br&gt;
Revenind la postul de fata, probabil ca o sa va intrebati ce mi-a venit cu aceasta reteta, si pe buna dreptate, chipsurile din creveti nefiind, cel putin in forma familiara noua, un deliciu culinar deosebit. Ei bine, aceasta poveste porneste din Bali, unde am descoperit cu surprindere ca acest tip de chips expandat se serveste la greu ca garnitura, si asta chiar si in restaurante prestigioase. Desigur, gustul celor din Bali nu prea avea nicio treaba cu ceea ce stiam eu din copilarie, si asta deoarece, dupa cum am aflat ulterior, acestia erau preparati artizanal, doar cu ingrediente naturale.&lt;br&gt;

Ca mai toate preparatele romanesti, si zacusca isi are originile mai degraba prin vecini decat pe la noi, diferite variante ale acesteia putand fi intalnite in toata zona balcanica, unde poarta diverse nume precum ajvar sau pindur (Serbia), lutenica (Bulgaria) sau biber salçası (Turcia), dar si pe coastele sudice ale Mediteranei, din Israel si Liban pana in Maroc, unde o varianta a zacustii poarta numele de matbucha. Chiar si numele zacustii provine din limba rusa, unde zakuski inseamna aperitive in sens general, similar cu meze in zona orientala.&lt;br&gt;

Aici la loc de cinste stau mustul si vinul de casa facut de tata (desi culesul sau curatatul strugurilor e deja alta poveste, nu mi-a placut niciodata), zacusca de vinete (si mirosul ala de la mama din casa, de ardei copti si vinete perpelite la flacara), pastrama de oaie cu mamaliguta pripita, dreasa cu branza de burduf si jumari, placinta de dovleac cu scortisoara in foietaj subtire, dar mai ales gombotii cu prune, aceasta minunatie de desert ardelenesc facuti dupa o reteta de familie transmisa peste generatii, reteta pe care am reusit in fine s-o &amp;quot;culeg&amp;quot; de la mama si pe care va invit s-o descoperiti in cele ce urmeaza.&lt;br&gt;

Aceasta inghetata are exact consistenta si cremozitatea unei inghetate pe baza de custard, desi n-are deloc oua in compozitie.&lt;br&gt;

De data asta este vorba despre un sorbet (adica o inghetata fara grasimi) care imbina prospetimea si gustul dulce - acrisor - amarui al grapefruiturilor roz cu gustul inconfundabil, duceag - amarui, de Campari. Practic, acest sorbet este o forma inghetata de Campari Orange si-l puteti pregati atat cu grepfruit roz cat si cu portocale normale sau rosii, rezultatele fiind relativ similare.&lt;br&gt;
&lt;br&gt;
Atunci cand am vazut aceasta reteta &lt;a href="http://www.davidlebovitz.com/2011/04/grapefruit-campari-sorbet/"&gt;la David Lebovitz pe site&lt;/a&gt; m-am prins pe loc ca este solutia perfecta pentru a racori o seara torida de vara, alaturi de o stacana mare de sangria sau o sticla rece de prosecco, si mi-am propus s-o fac cat se poate de repede, si iata ca am reusit, ceea ce va doresc si voua. :)&lt;br&gt;

Reteta de astazi este un frozen yogurt (cunoscut si ca froyo sau frogurt intre prieteni :)) de visine, reteta care are la baza, evident iaurtul.&lt;br&gt;
&lt;br&gt;
Pe scurt, frozen yogurtul este un preparat congelat intrat in familia inghetatelor relativ recent, prin anii &amp;#39;70. Acesta are un continut redus de grasimi, fiind facut din iaurt, fructe si eventual ceva adaos de zahar sau alt indulcitor, si se situeaza undeva intre sorbet (care nu are grasimi de loc) si inghetata (care are grasimi la greu, in principal din smantana dulce si galbenusuri de ou). &lt;br&gt;
Practic, aceasta reteta de inghetata de banane (inspirata de &lt;a href="http://www.thekitchn.com/thekitchn/tips-techniques/stepbystep-instructions-for-oneingredient-ice-cream-097170"&gt;aici&lt;/a&gt;) este atat de simpla incat nu numai ca n-are nevoie de masina de inghetata, dar ea foloseste exclusiv un singur ingredient, fara niciun fel de alt adaos de lapte, frisca, oua sau zahar. In plus, deoarece este facuta exclusiv din banane, ea este cat se poate de sanatoasa, mai ales pentru copii, fiind o alternativa 100% naturala (si 100% vegana, btw :)) la mizeriile din comert, pline de zahar, grasimi saturate, aditivi si alte chestii neplacute omului.&lt;br&gt;

&lt;br&gt;
Deoarece din pacate cei mai multi dintre voi n-aveti inca o masina de inghetata acasa (desi sper ca dupa aceasta saptamana sa remediem macar partial aceasta situatie :)), o sa incep cu niste retete care chiar daca nu necesita congelarea in masina de inghetata, sunt la fel de delicioase precum cele facute cu masina. Practic, daca nu va deranjeaza sa nu aveti acces la o mare parte din familia inghetatelor (precum cele pe baza de custard, gelato, etc, care nu prea ies fara masina), puteti foarte bine sa va jucati cu diverse variatii ale retetei de fata si ale celorlalte din aceeasi categorie.&lt;br&gt;
&lt;br&gt;
Reteta de fata, inspirata &lt;a href="http://www.funandfoodcafe.com/2010/07/strawberry-yogurt-smoothie-frozen-pops.html"&gt;de aici&lt;/a&gt;, este un nou popsicle (adica o inghetata pe bat, pentru cine n-a citit explicatiile &lt;a href="http://crazymothercooker.blogspot.com/2011/06/chocolate-fudge-popsicles-inghetata-de.html"&gt;din postul anterior&lt;/a&gt;), de data asta realizat prin imbinarea a doua mixuri de ingrediente distincte, alese special atat pentru gusturile complementare cat si pentru aspectul vizual (asa zisul swirl, care la inghetatele pe bat din comert e facut profesionist, cu cele doua mixuri impletindu-se intr-o spirala perfecta, dar care e la fel de placut ochiului si in varianta mai rustica, home made, precum cea de fata)&lt;br&gt;

&lt;br&gt;
Pentru cei care nu sunt familiarizati cu termenul de &lt;a href="http://en.wikipedia.org/wiki/Popsicle"&gt;popsicle&lt;/a&gt;, acesta defineste in mod uzual categoria mai larga de inghetata pe bat, desi practic se refera strict la inghetata pe bat din suc de fructe (mai precis &amp;quot;frozen drink on a stick&amp;quot; :)). Alaturi de popsicle (care, guess what, este un trade mark al Unilever care de-a lungul timpului s-a transformat in numele generic al categoriei, precum Xerox sau Adidas) mai convietuiesc oarecum in umbra si fratii lui pe nume creamsicle (adica inghetata cremoasa pe bat) si fudgesicle (adica inghetata cu o textura apropiata de cea a unui fudge de ciocolata, de care ne vom ocupa in cele ce urmeaza).&lt;br&gt;

&lt;br&gt;
In al doilea rand, simplu fapt ca era vorba despre un test de intoleranta alimentara care s-ar fi putut solda cu rezultate de genul &amp;quot;esti intolerant la gluten, carne sau fructe de mare&amp;quot; mi s-a parut o asa amenintare pentru viata mea de foodie incat eram mai, mai sa zic pas, dar dupa lupte seculare care au durat cam o zi am decis sa-mi iau inima-n dinti si sa trimit o picatura de sange la analiza tocmai in UK, in speranta ca totusi o sa-mi iasa un rezultat ok, sau cel putin nu foarte rau.&lt;br&gt;

Din pacate la noi melcul nu prea are o faima cu care sa se laude ci este mai degraba luat la misto de marea masa a populatiei, alaturi de asa zisii &amp;quot;pui de balta&amp;quot;, un nume de cod de altfel destul de elocvent pentru lipsa noastra de deschidere catre alte surse de proteina animala in afara de cele cu care am fost obisnuiti de mici.&lt;br&gt;
&lt;br&gt;
Daca stau sa ma gandesc bine, probabil ca cea mai impamantenita referinta culturala de la noi referitoare la melci este expresia lui Dorel Visan din filmul &amp;quot;Senatorul Melcilor&amp;quot;, care rabufneste plin de obida provincialului frustrat de ce nu poate sa inteleaga, spunand &amp;quot;&amp;#39;r-ati ai dracu&amp;#39; cu melcii vostri…&amp;quot; :)). Vestea buna este insa ca de ceva vreme se pot gasi melci prin diverse restaurante de la noi (imi vin in minte acum &lt;a href="http://www.escargot.ro/"&gt;Escargot&lt;/a&gt; din Bucuresti, cu nume de altfel predestinat, unde eu inca n-am ajuns, si &lt;a href="http://www.bistrodelarte.ro/"&gt;Bistro de l&amp;#39;Arte&lt;/a&gt; din Brasov, unde am mancat niste melci absolut senzationali).&lt;br&gt;

&lt;br&gt;
Uetliberg este pentru Zürich cam cum este Tampa pentru Brasov, fiind un munte nu foarte inalt, frumos impadurit, cu o antena mare pe el si exact la marginea orasului, asemanarile oprindu-se aici, deoarece a compara un munte din Elvetia, fie el si mai micut, cu unul de la noi e ca si cum ai compara un ceas elvetian cu un desteptator facut la uzinele Precizia :)).  Zona in sine este considerata plamanul orasului, accesul cu autovehicule (in afara de cele de marfa, cu program strict) fiind restrictionat, publicul avand insa la dispozitie un tren electric elegant, cu program de metrou.&lt;br&gt;
&lt;br&gt;
Din pacate, dupa cum puteti vedea in pozele de mai jos, vremea n-a tinut cu noi si in loc sa vedem o minunata panorama a orasului am vazut norii de aproape si ploaia transformandu-se in zapada sub ochii nostri.&lt;br&gt;

&lt;br&gt;
Din pacate, la vremea respectiva n-am putut onora invitatia, dar din fericire aceasta s-a repetat si exact acum doua saptamani am avut ocazia sa testez pe viu al doilea episod din seria de cooking classes de la Crowne Plaza, episod in care simpaticul chef (de origine indiana, dar cu aer sud american, dupa cum puteti vedea in poza de mai jos :)) ne-a aratat ce se poate face cu sparanghelul in diversele lui forme (baby, green sau white).&lt;br&gt;

&lt;/div&gt;&lt;div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;"&gt;Acum ca am terminat cu cenusa-n freza, sa trecem si la episodul doi din excursia noastra culinara la Zürich, episod care este si cel mai consistent dintre cele trei (da, mai urmeaza inca un episod dupa cel de fata, hopefully next week, nu peste inca o luna :)). &lt;br&gt;
Asa dar, fara sa mai pierdem vremea cu introducerea, ca e primavara deja si poate vreti sa va plimbati prin parc in loc sa stati cu ochiul lipit de calculator, iata si cei patru pasi care va despart de cea mai delicioasa rata crocanta pe care ati mancat-o vreodata.&lt;br&gt;
&lt;br&gt;
&lt;b&gt;Pasul 1: &lt;/b&gt;&lt;br&gt;
- dati o fuga pana la Dragonul Rosu (atentie ca se inchide la 14:00, chinezii sunt matinali rau) si cumparati de la bacania chinezeasca (cea de la etajul 1 al pavilionului 1, cel cu geamuri, aflat in prima jumatate a complexului, pe dreapta, vizavi de complexul modern care se vede peste linia de tren) o punga de rata dezosata, pre-rumenita cu arome chinezesti si apoi congelata (48 lei punga de 650g, care contine doua jumatati dezosate de rata rumenita)&lt;br&gt;

Pe scurt, acum vreo doua saptamani, pe vremea cand inca ne mai alergau pinguinii pe strada si ne crapau mainile de frig de la joaca cu racleta pe parbrizul inghetat, am fost invitat Lowe PR (acum &lt;a href="http://www.golinharris.ro/"&gt;GolinHarris&lt;/a&gt;) si &lt;a href="http://www.electrolux.ro/"&gt;Electrolux&lt;/a&gt; la o sesiune de cooking in grup la &lt;a href="http://www.clubcortina.ro/"&gt;clubul Cortina din Corbeanca&lt;/a&gt;, alaturi de my fellow food bloggers &lt;a href="http://leblogpiquant.blogspot.com/2011/02/electrolux-cooking-party-club-cortina.html"&gt;Elena&lt;/a&gt; si &lt;a href="http://placerisimple.wordpress.com/2011/03/02/electrolux-cooking-night-cortina/"&gt;Mihai&lt;/a&gt;. Stiind de aceasta experienta de la &lt;a href="http://easypeasy.ro/2010/12/o-seara-cozy-la-cortina/"&gt;Cookie&lt;/a&gt; si de la &lt;a href="http://bucatarsubacoperire.blogspot.com/2010/12/cooking-session-la-cortina.html"&gt;Lavinia&lt;/a&gt;, am acceptat imediat, fiind convins ca o sa fie o aventura foarte distractiva si interesanta, si, evident, nu m-am inselat.&lt;br&gt;

Briefly, pe langa gramada de treaba de la birou s-a suprapus o plecare la Londra (tot cu treaba, dar treaba s-a imbinat placut cu o serie de experiente culinare minunate despre care o sa va povestesc soon), dupa care urmeaza una la Zurich in weekendul care vine (again, o nirvana culinara, dupa cum arata programul :)) si in fine, mult asteptata vacanta din Bali de la sfarsitul lunii, asa ca am foarte putin timp la dispozitie in perioada asta.&lt;br /&gt;
&lt;br /&gt;
Anyway, in loc stati si sa asteptati sa-mi fac eu timp de postat, mai bine dati un click pe imaginea de mai jos si ma onorati cu un vot la RoBlogFest 2011, unde concurez la categoria Blog Culinar, alaturi de multi prieteni dragi (desigur, pana n-o sa se treaca la jurizare pe categoria asta, niciunul dintre noi n-o sa castige in fata OTV-ului culinar, dar macar ne distram si noi un pic :))&lt;br /&gt;

&lt;br&gt;
De data asta locul de pierzanie a fost &lt;a href="http://www.theark-events.ro/restaurant/"&gt;restaurantul de la The Ark&lt;/a&gt;, unde am avut ocazia sa testam pe viu (apparently &lt;a href="http://metropotam.ro/Unde-iesim/2011/02/art4501120245-Restaurant-The-Ark/"&gt;in paralel cu Metropotamii&lt;/a&gt;, fara sa stim unii de altii :)) noul meniu tip bistro, meniu organizat de prietenii de la &lt;a href="http://www.thecaterer.ro/"&gt;The Caterer&lt;/a&gt; impreuna cu un chef nou, proaspat sosit tocmai de la Loft, care se pare ca este ultima fita de carciuma de pe piata (unde am fost, am admirat designul, dar n-am avut ocazia sa ma si imprietenesc cu meniul, deoarece am ajuns acolo doar cu ocazia unui eveniment privat).&lt;br&gt;
&lt;br&gt;
Fata de data trecuta le-am pierdut (cu mare tristete...) pe &lt;a href="http://easypeasy.ro/"&gt;Ana&lt;/a&gt; (pe motiv de advanced baby on board :)) si pe &lt;a href="http://chatdechocolat.eu/"&gt;Bianca&lt;/a&gt; (pe motiv de plecat inapoi in Elvetia, ceea ce ne dorim si noua :)), dar am recuperat-o pe &lt;a href="http://www.foodiefamily.ro/"&gt;Monica&lt;/a&gt; si am cunoscut-o (in fine!) pe &lt;a href="http://zanaeficientei.wordpress.com/"&gt;Smaranda&lt;/a&gt;, singura zana cu acte in regula din blogosfera culinara :). In rest, the usual crew, cu &lt;a href="http://chez.mazilique.ro/"&gt;Mazi&lt;/a&gt;, &lt;a href="http://wineandknives.blogspot.com/"&gt;Madalin&lt;/a&gt; (plus his better half, Corina), &lt;a href="http://leblogpiquant.blogspot.com/"&gt;Elena&lt;/a&gt; (plus her hubby, Alex, pe final) si cu voia Dvs, ultimul pe lista, subsemnatul (minus ochelarii de care m-am despartit de curand, sper eu, pentru totdeauna, dupa cum puteti vedea in poza de mai jos :)).&lt;br&gt;

&lt;br&gt;
Desi ar putea parea un desert specific romanesc, laptele de pasare (weird name, btw :)) are echivalente atat in bucataria franceza (unde este cunoscut drept &lt;i&gt;œufs a la neige&lt;/i&gt;) cat si in cea anglo saxona (unde se numeste&lt;i&gt; &lt;/i&gt;&lt;a href="http://en.wikipedia.org/wiki/Floating_island_(dessert)"&gt;&lt;i&gt;floating island&lt;/i&gt;&lt;/a&gt;). Practic, acest desert consta intr-un &lt;a href="http://en.wikipedia.org/wiki/Meringue"&gt;meringue&lt;/a&gt; (spuma tare de albusuri de oua batute cu zahar si cu un agent de coagulare precum creme of tartar sau amidon) fiert in apa sau lapte indulcit, apoi servit rece, cu &lt;a href="http://en.wikipedia.org/wiki/Cr%C3%A8me_anglaise"&gt;crème anglaise&lt;/a&gt; (crema de ou si vanilie).&lt;br&gt;
&lt;br&gt;
Daca laptele de pasare vi se pare cumva complicat de facut, ei bine aflati ca va inselati, el fiind de fapt pe cat de simplu, pe atat de rapid de pregatit, rezultatul fiind un desert aromat, usor (are mai mult aer si arome decat calorii :)) si cat se poate de delicios. Reteta care urmeaza este luata de &lt;a href="http://arhivafleurdesel.blogspot.com/2010/01/oeufs-la-neige-or-my-childhood-in-pot.html"&gt;aici&lt;/a&gt; si merge pe varianta fiertului spumei de ou in apa, nu in lapte, acesta din urma avand marele defect de a da in foc sau de a se afuma exact cand ti-e lumea mai draga (don&amp;#39;t worry, rezultatul final al versiunii de fata este foarte asemenator cu cel obtinut prin metoda traditionala).&lt;br&gt;
