ok...so...i'm tryin' out this smart phone/blogging thing...not sold on it...don't really like the lighting...HOWEVER...ya gotta see this...i've got this mushroom thing goin' right now and made a dish that rivals my jerk chicken and mashed potatoes with jerk gravy!!...yep...you heard me...rivals!...remember the one pot chicken bake?...well...i pan seared the chicken as usual...but...when it was done i pulled it out of the pan...deglazed the pan with some brandy...put the chicken back in the pan with a GENEROUS amount of baby bella mushrooms...some chicken broth...another splash of brandy...lid on...1 hour later...

voila!

when it was done...took the chicken out...mixed in a little roux to thicken the broth...a little heavy cream...another splash of brandy...

a little pinot grigio...

aaahhhhhh!!...

...braised chicken and mashed potatoes with a brandy mushroom gravy!!...

vikings vs packers for sure!!

so...i'm watching unwrapped last night on the cooking channel...

what?...i've never heard of such a thing...something called drinking chocolate??...melted chocolate chips and milk...they say it's like a liquid candy bar?!...a little rich for me...
now the show was on chocolate...i'm not a huge fan of chocolate other than sprungli...but not one mention of belgium or SPRUNGLI!!!...that ain't right!!!...

now that's chocolate!!...i'd rather DRINK a little cabernet and EAT my chocolate!!...ya gotta love those swiss!!!...fondue and sprungli???...please...

well...i still haven't gone out to get my new camera...i've been a little waayyy under the weather for a couple of 3 days...in my delirium i was dreaming of all the stand bys...you see what topped the list!!;)...

once again...congratulations to henrik on his extraordinary play!...but i have to tell you...last night i had an extraordinary meal!!...went to pf chang's for dinner...WOW!!...i have been there one other time several years ago...i don't know if they got a new chef or what...but...WOW!!...it was the best dish i have EVER had out at a restaurant!!...you must try the mandarin chicken...it was amazing...ok...now...i think i can create some pretty good dishes of my own...like italian dishes...southern dishes...JERK DISHES!!...but there is something about chinese dishes i just can't figure out!...the spices...the sauces...and when i think i've figured it out...some how it's just not the same!!...i don't know...but last nights dish tasted inspired...it had the exact amount of everything...it was a little smokey...the spices...heat...the chicken was cooked perfectly tender...it all just came together...that chef knows what he's doin'!!...i'll just stick to what i know and when i want to have the best mandarin chicken in the world...i'll drop in to pf changs and let him do his thing!!...
