Homemade Tomato Soup Recipe

We tried this recipe for homemade tomato soup and it was delicious! Once again I'm left to believe that everything homemade is better!

Homemade Tomato Soup

1 can (15 oz.) stewed tomatoes (or you can use four fresh tomatoes)

1 can (8 oz.) tomato sauce

1 can (11 oz.) tomato soup

1 can water (add 2 cans for thinner soup)

1 cup cream

1/2 cup butter or one square

1 Tbsp. basil leaves (fresh or dried)

Blend stewed tomatoes, tomato sauce, water and tomato soup in a blender. Pour mixture into a medium saucepan and bring to a boil. Add cream, butter and basil. Heat through, but be sure.to NOT let it boil. Serve with homemade grilled cheese sandwiches. We made our sandwiches with deilcious homemade wholewheat bread! Mother's Day Poems "Lullaby" Candy Bar Pocket

Light and Fluffy Whole Wheat Bread

If you like a light and fluffy whole wheat recipe, you will

love this version. To make the bread heartier you can add

oatmeal, flax seed and nuts. If you do add these extras

don't add as much flour. This bread is so yummy. It

never lasts long at our house!

Light and Fluffy Whole Wheat Bread

3 cups warm water
2 tbsp. Yeast

1/3 cup honey

3 tbsp. dough enhancer or wheat gluten (optional) makes your bread lighter

5 cups white wheat flour (you can use red wheat for a stronger wheat taste)

3 tbsp. butter, melted

1/3 cup honey

1 tbsp. salt

3 ½ cups whole wheat flour

2 tbsp. butter, melted

In a bread mixer, sprinkle yeast over warm water. Sprinkle 1 tbsp. sugar over yeast. Add 1/3 cup honey, and 5 cups of flour and mix until blended. Cover with a dish towel and let sit until big and bubbly for about 30 minutes.

Add dough enhancer, melted butter, salt, 1/3 cup honey and flour one cup at a time. Add flour until the dough pulls away from the sides of the bowl. Do not add too much flour, or your bread will be tough. Knead for 10 minutes. Transfer dough to a buttered bowl. Butter dough so that it does not dry out. Cover dough and place in a warm place. Let rise until double in bulk or to the top of the bowl. When making wheat bread do not let it rise too much.

Punch dough down and divide into 3 balls. Form balls into loaves of bread and place in greased 9x5 inch loaf pans. Cover pans with a cloth and let rise in a warm place until 1” above pan. Bake at 350 degrees for 30 to 40 minutes. butter, remove from pans and let cool. Fresh bread right out of the oven s hard to resist.

Creamy White Lasagna

Lasagna is a favorite in our family but I was kind of getting sick of plain old meat and tomato sauce lasagna so I thought I'd spice things up a bit... This creamy white lasagna hit the spot! It's super rich, cheesy and delicious, and it's a great way to sneak in some extra veggies!

Creamy White Lasagna

9 Lasagna Noodles

1/2 cup butter

1/2 onion (chopped)

2 cloves garlic (minced)

1/2 cups flour

1 teaspoon salt

2 cups Chicken Broth

1 1/2 cups milk

4 cups Mozzarella cheese

1 cup grated Parmesan

1 teaspoon Basil

1 teaspoon Oregano

1/2 teaspoon pepper

1 cup Ricotta Cheese

2 cups cooked, cubed chicken

large handful of baby spinach (chopped)

1 1/2 cups broccoli (broken into smaller florlets and steamed covered in microwave for two minutes)

Sundried Tomatoes (optional)

1 handful of chopped fresh parsley

I used oven-ready lasagna noodles but I still set them to soak in water as I prepared everything else (if you don't let them soak they will absorb more of your sauce).

In a large sauce pan melt the butter while you chop your onions/garlic. Brown the onions and garlic in the butter, and then add the flour to form a roux. Stir until mixed well (will be thick). Add a teaspoon of salt. While continuing to stir over medium high heat, slowly add in your chicken broth and milk. Pour slowly so that the mixture does not get lumpy, and continue to stir until the mixture thickens again. Add in about half of the Mozzarella cheese (I just eyeball things like cheese...I put in a couple handfuls) and half a cup of the grated Parmesan (save the rest for later). Once the cheese has melted and the mixture is consistent, season with basil, oregano, and pepper.

Cover the bottom of a casserole dish with a thin layer of the sauce, and then layer three lasagna noodles. Mix the chicken and the Ricotta cheese together. I prepared my chicken following my Chicken Tacos recipe to give it some flavor, but you could probably just use chunk chicken from a can if you wanted to make it super easy. Spread ALL of the chicken/Ricotta mixture over the noodles and then spread a big spoonful of the sauce over it. Sprinkle with some cheese. My husband isn't a huge fan of cheese and found this recipe to be too cheesy (he mainly didn't care for the Ricotta--which could have been omitted if you just slathered a little extra of the cheese sauce over the chicken)-follow your own cheese instincts here. Top with three lasagna noodles. Spread your spinach and broccoli. I wish I would have had Sun-dried Tomatoes because it would have been super yummy to throw some of those in there too. Cover with half of the remaining sauce. Add final three noodles, cover with the rest of the sauce, and sprinkle with mozzarella/Parmesan as you please.

Bake covered at 350 for 35-40 minutes. Soooo yummy! Even my baby loved this lasagna :-)

Anthony's Ribs

Anthony made ribs for dinner last night and they were sooooo good! Ok, so the picture may not be a winner, but this recipe sure is! They were so tasty and they had a yummy little kick to them :-)

Easy Rib Recipe:

1 rack ribs
1 liter Coke
5 garlic cloves (mashed)
1 teaspoon habanejero sauce
1 half onion (chopped into large chunks)
1 bottle BBQ sauce (we used Sweet Baby Ray's which I would recommend)

Place ribs in a large stockpot and cover with Coke. Add the garlic, habanjero sauce, onion and bring to a boil (or you could bake this in your oven or crockpot if you have more time)--cook until ribs are tender. Once ribs are tender, drain out the liquid and cover with bbq sauce. Bake at 350 for about thirty minutes and you're ready to go! Soooo tasty, we hope you enjoy!
