greetings y'all!! one day I hope to be back to semi normal blogging, til then, this is a little peak as to what's been going on-xo

i am heart broken and devastated for boston & the running community, family friends & victims...

i wore my boston hat & race shirt in honor & memory yesterday...

then i turned the big FOUR OH.....

and then decided it was time to get a tattoo.....

then the next week, another :)

it represents our anniversary 4.7.1993
the 2nd line reads: 1434...
which means, i love you more.
it's something we say in our house to one another and i have this tattoo just incase
there comes a day when i can no longer speak or i shall pass and my family is saying their last goodbyes and i love you's, i will always have the last word & they will know that i loved them more than life itself!

then ofcourse i have had some fun girl trips.....never a dull moment, boston bound!

then the local brewery opened so we had to be at the grand opening (and the silent opening to, ha)....
first ones in line, of course!

i ran over 7 miles of a half marathon barefoot bc i was getting blisters...

(i don't recommend this)

thankfully some people at about mile 9 were impressed so they gave me a beer :)

i hope that everyone is having a great spring thus far.
my life is a whirlwind although i wouldn't want it any other way!

i have been so busy with my not so little kids, daughter on the tennis team, son in college, traveling about ever 2-3 weeks between Isagenix, 1/2 marathons & visiting my husband out of town that i seriously ned a vavation where i go, sit and SOAK UP THE SUN!! that is happening at the end of the month and can't get here fast enough! esp. since i am leaving thursday for cold snowy new jersey!

y'all know how much i love glasses and i have posted about them in the past. well, i was thrilled when i was contacted by smart buy glasses to share their site with y'all. i had never even heard of them. they have great prices on great name brands. so with spring break coming, i think it's time for a new pair.....my favorite ones that i live in right now are my prada aviators.

this is the time for people to make their resolutions for the new year,

i like the term "lifestyle change" better:)

i know so many of my friends run & work out,

therefor start the day off (and sometimes end it as well)

with a protein shake.

i have used several brands for different reasons over the years.

if so, how long did you have your beloved fur baby?

our sweet khaki just turned 9 in september. she has never had any health problems. that was until about 7-8 months ago. she started having seizures. (If you have a large breed dog & witness this, not only will it freak you out, it will break your heart) 😥

after her having about 4, we took her to the vet. dr said she had adult canine epilepsy. (but for some reason didn't want to put her in meds??) so..... fast forward to last night.

seizure free all these months. last night made her 3rd in 4 days. she is my sons very.best.friend.ever. she can't function when he isn't around. she lays on his bed til he returns home. she has been planning on leaving for college in a few short weeks also with him ☺. they have been BFFs since Santa brought her when she was a tiny baby almost 9 years ago. I am so afraid something may happen while they are away. (4 hrs away) i can't imagine him going into his apartment and something being wrong with her.

if you have ever owned a lab..... (((gasp))) how long did they live? i am trying to be positive but also realistic.

creamy chicken & potato soup {recipe}

good morning y'all!
i am not sure how the weather is in your part of the world, but it's "trying" to get chilly here in the south. i love to make chowders, chilies & soups for football weekends. i love to smell it all day while it simmers in the crock pot! ahhhhh

while this doesn't have to simmer, it's a simple & super quick soup!
i have stripped it from many of the ingredients to keep it plain & healthy.
here is the original version.

ingredients:
3 cups organic low sodium chicken broth
2-3 chicken breasts (i pulled apart an all natural rotisserie chicken)
1/4 whole wheat flour
1 cup horizons fat free milk
1 cup reduced fat evaporated milk
salt/pepper/cayenne (to your taste)

directions:
-in a dutch oven, stir in broth & potatoes
-bring to a boil
-reduce heat, cover & simmer for 10-15 min (or til potatoes are tender)
-stir in chicken
-salt/pepper/cayenne to your liking

in separate sauce pan over med heat:
-combine flour & fat free milk, stir until smooth
-add evaporated milk
-bring to boil, stir for 2 min.
-add to dutch oven
-simmer 5 more minutes

*my husband added cheese to his, that grossed me out but he said it was delish :)

i am sharing THE BEST & easiest salad recipe...

it's as clean & healthy as you can get a chicken salad, y'all.

it will make paula deen want to slap her momma!

ingredients:

3-4 chicken breasts

1 avocado

1/2 greek yogurt

1/3 cup chopped almonds or pecans

salt/pepper to taste

{ofcourse you can add anything else you'd like & add less/more yogurt depending upon your taste}

directions:

boil the chicken breasts til done (abt 7-8 min)

scoop out the entire avocado

throw everything in a food processor, pulse til blended

TADA!!

i threw mine on a bed of baby spinach and ate with a few wheat crackers

this would be a great side dish to take for thanksgiving or a holiday get together, seriously takes no time at all. you could even pull apart a rotisserie chicken to make it.

{i have since become a vegetarian since i made this and honestly,

if i was to eat any meat right now, THIS would be at the top of the list!!!}

skinny coconut shrimp

happy monday, y'all! i just wanted to share another delish recipe. i have so many piling up & now that I don't eat meat, I gotta share them before i look at them tooooooo long & want to cook them:) hope everyone had a great weekend.

if you like shrimp & coconut, you will LOVE this recipe! this is a super easy, quick, clean and delish meal- enjoy

SKINNY COCONUT SHRIMP

ingredients
1 lb. peeled, deveined, tail-off, large shrimp (frozen is fine if you thaw)
1/2 cup dry coconut flakes, no added sugar
1/2 cup whole wheat Panko bread crumbs (or make your own with this recipe)
1 1/2 tsp. garlic powder
1 1/2 tsp. onion powder
2 egg whites
2 tsp. coconut oil

directions

1 – pat the shrimp dry with a paper towel if they are damp or wet.

2 – in a medium mixing bowl, whisk together the egg whites and the coconut oil.

3 – in a separate medium sized mixing bowl, whisk together the coconut flakes, bread crumbs, garlic and onion powder.

4 – drop the shrimp in the egg whites and give them a good stir.

5 – pick them out (I used my hands), allowing them to drip off a bit of the excess and drop them in the dry coconut mixture.

6 – shake them around until they are coated and then place them individually on a parchment lined cookie sheet.

7 – bake at 350 for 20 minutes (no more!). They should be lightly golden brown.

i ate mine over a bed of fresh spinach.....delish!!

** if you like HOT stuff, use some rooster sauce for dipping :)

hello friends (if anyone is still out there??)

it's been a long & crazy few months. i can't wait to start my regular blogging & blog hopping again! i just wanted to hop on and share some recipes that have been piling up! i will post a few over the next week or so. i am also looking forward to recipe swap fridays!!!

spinach lasagna rolls
{original recipe}

Ingredients:

8 lasagna noodles, cooked
8 oz frozen chopped spinach, thawed and completely drained
15 oz fat free ricotta cheese
1/2 cup grated Parmesan cheese
1 egg
salt and fresh pepper
32 oz tomato sauce
3-4 oz part skim mozzarella cheese, shredded (i used fresh & grated)

Directions:

Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Rollcarefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

To serve, ladle a little sauce on the plate and top with lasagna roll.

{i served with garlic whole wheat pita bread. itook a pita and sprinkled garlic salt & butta then broiled for about 2 min}

ugh i was hoping this wouldn't happen again - last summer was BUSY but this summer is going to be very hectic.

i am packing up to make a BIG move at the end of july. (think sand and blue water!) trying to start building a house. trying to get lil mr ready for college. mini me has 3 tennis lessons a week, almost an hour away. the mr is traveling again. i am plugging away but i can't do it all on the social media side. (pinterest & instagram will be my outlet!)

i will be back in the fall. i already have a giveaway lined up. i may pop in here and now with a recipe or shopping deal that you HAVE TO KNOW about :) i just won't be doing {s} ww or blog hopping (much).

i am so thankful to the friends i have made who are now my IRL friends & texting buddies. i don't want to be totally out of the loop. you can always email, just put something GOOD in the subject line bc i get so so so much spam/junk in my blog email.
