I started doing a contributor of the week, and then just had several issues that prevented me from continuing. So let's pick up where we left off!

New Year, new fun!

Well Happy New Year folks! The first thing I really want to mention is how wonderful you have all been over the last few months in closing 2011. I have gained several new followers/subscribers and more traffic than I could have possibly imagined, being that I have only had this going for a few months. So thank you all so much for being a part of my little adventure!

Secondly, I really want to let you all know about this new site... www.treehousesocial.com. It's brand new, just starting to get up and running. The idea behind it is really neat! It's similar to facebook in terms of what you can do with it so far... with the exception of being less heard of, of course. What makes this unique is that you actually earn money. It's an MLM Social Networking Site. As more people join, you earn more money. Here is mine so far. I just broke $1! And I'm thrilled! hahaha

Anyways.... that's what it looks like. And eventually I'll be making bank ;) Start now and you can be making bank too. So if you are interested, click on that little green button at to the right that says "Treehouse Social" and start referring away.

Now, moving on... I'm sure you all have New Years Resolutions. One of the most common is to lose a few pounds. We start out ambitious.. we say "I want to lose 30 pounds by the end of the year". Then once January ends and we move on to February, it's no longer considered the new year and we forget all about our resolutions. It's a human thing to do. And it's why we kind of suck, right?

Well I work for a company called Yoli. We are the Better Body Company. Everyone I work with is so fantastic and chipper and my day is almost always great. The CEO walks around greeting and chatting up everyone, every single day. Which I think really helps improve employee morale. Anyways, I bring it up because we see this thing called a Transformation Kit. It includes a pH Balancing supplement, a digestive formula, an energy drink, and a protein drink. Together, they really help with the weight loss. I lost 14.5 pounds in my first 30 days which was between November and December so included a lot of cheating.... and I still lost weight! So I am starting my next 30 days today and with the exception of celebrating birthdays (one fun day for mine, my husbands, my moms and my dads birthdays) I will not be cheating or giving my self a free day. At last the two best holidays ever are here! Thanksgiving and Christmas are the absolute best. Christmas means fun gifts and happy family times, but Thanksgiving means lots and lots of wonderfully delicious pies! In honor of this fabulous holiday, I have decided to share a few recipes with you. Below is a recipe for Blueberry, Apple, and Pumpkin pies, using only fresh fruit. Not that canned stuff. Blah! I make these pies every year, and every year they gone within moments of deciding its time for dessert. I don't like the taste of pumkin pie too well, but I can eat this one myself. Fresh pumpkin just tastes so much better than canned. Anyways, I hope you all enjoy these recipes!

Very Blueberry Pie - click here to print

Ingredients:

Filling -

¾ C Sugar
2 Tbs Cornstarch
1 tsp Cinnamon
¼ C Water
6-7 C Fresh Blueberries - please don't use canned. It's insulting. :)
1 Tbs Instant Tapioca
1 Tbs Unsalted Butter
1 ½ - 2 tsp Lemon Juice

Preheat oven to 375*

Whisk together sugar, starch, and cinnamon in a large skillet. Stir in water. Add blueberries. Gently stir. Bring to slow boil. Cook over low heat, 5 minutes, of just until mix thickens.

Dont smash the blueberries.
Dont overcook the blueberries.

Using a slotted spoon, empty blueberries into a large shallow container, about ⅓ at a time. Sprinkle each layer with Tapioca. Let stand for 15 minutes.

Reserve the syrup for the blueberry sauce to use on pancakes, ice cream, or over this pie.

Empty the filling into the pie dish. Dot with butter and sprinkle with lemon juice.

Crumb Topping -

1 C Sifted Flour
¼ C Finely Chopped Walnuts
¼ C and 1 Tbs Sugar
¼ C and 1 Tbs Lightly Packed Light Brown Sugar
1 tsp Cinnamon
¼ tsp Baking Powder
⅛ tsp Salt
⅓ C Unsalted Butter - melted and cooled to tepid.

Combine flour, walnuts, sugars, cinnamon, baking powder and salt in a medium bowl. Add cool melted butter and toss with fork to make crumbs. Take a mound, form into a large clump, then crumble over filling. Repeat to use all crumbs.

Make foil edging to keep edges from burning. Use drip pan. Cover pie loosely with foil to bake.

Bake 40 minutes. Remove all foil and bake 10-15 minutes or until brown. Cool 4 hours before serving.

Blueberry Syrup -

Juice from Filling
½ C. Water
1-2 Tbs Crem de Cassis or Kirschwasser
1 tsp Lemon Juice

Bring juice and water to slow boil. Keep stirring. Remove from heat. Add liquor. Return to boil for 30 seconds. If too thick, add more water.

Add lemon juice. Drizzle over pie.

This can be made in advance and stored for up to 2 days. It can be frozen.

Freshly Carved Pumpkin Pie - Click here to print!

Ingredients:

2 C pumpkin pulp puree from a sugar pumpkin (the cute mini ones!)

1 ½ C Heavy Cream

½ C Packed Dark Brown Sugar

⅓ C Sugar

½ tsp Salt

2 Eggs + the yolk of a third egg

3 tsp Cinnamon

1 ½ tsp Ground Ginger

½ tsp Ground Nutmeg

½ tsp Ground Cloves

½ tsp Ground Cardamon - I consider this to be optional because I don’t really like it. :)

½ tsp Lemon Zest

Pie Crust - personally I think graham cracker crust tastes better with this than the normal white pie crust.

Retrieving the Pumpkin Pulp

This part is really fun, a little messy, and pretty fast. Kind of.

Preheat your oven to 375*

Cut out the top of the pumpkin like you would for a Jack-O-Lantern. Then with the pumpkin upright, cut it in half. Dig out all of the goop, trying to get as much of the stringy stuff as possible.

(save the seeds for a yummy and nutritious snack!)

Line your cookie sheet with foil. If your cookie sheet does not have raised edges, remember to “make” raised edges with the foil. This will prevent any juices that leak from the pumpkin, from spilling out into your oven.

Loosely cover the pumpkin with more foil. Pop in the oven and bake for about an hour, checking it about every 20 minutes. Once the pumpkin is soft, it’s ready to take out.

Let cool completely. Once it cooled, just peel off the skin and scrape the pumpkin into your food processor to puree it.

Instead of baking, the pumpkin could be steamed as well, but it takes longer & more work :)

Making the Pie

Change oven to 425*

Mix sugars, salt, spices and lemon zest in a large bowl. Beat the eggs and add to the blend. Stir in the pumpkin puree. Mix well. Add the heavy cream.. Whisk all together until well incorporated.

Pour into the pie shell and sprinkle with cinnamon. Bake for 15 minutes. Reduce the temperature to 350*. Bake 40-45 minutes or until toothpick inserted comes out clean. When done, sprinkle again lightly with cinnamon. Let cool on a wire rack for 2 hours.

Once you taste this recipe, you will never want to go back to using canned pumpkin again. I promise. :)

Best ever Apple Pie. Ever. - Click here to print!

In this recipe, I use a store bought crust. But I’m not very great at making that part myself. So you can do whatever you want!

Ingredients:

⅔ C Sugar
3 Tbs Flour
¼ tsp Ground Allspice
¼ tsp Ground Nutmeg
¾ tsp Ground Cinnamon
1 ½ tsp Pure Vanilla Extract - Not that imitation stuff
2-3 lbs Apples - I like to use a little more than half red apples (I like Braeburn) and the rest green (Granny Smith) apples.
2 store bought pie crusts.

1 ½ tsp Brandy - This is completely optional but really compliments the flavor. And don’t worry, the alcohol is baked right out. :)

Combine sugar, flour and spices in large bowl. Use your hands and mix in the apples so they are well coated, then add brandy and vanilla extract.

Let crusts sit at room temperature for 5-10 minutes. Spoon in apple filling into one crust, making a nice high mound in the center. You may not be able to fit all of the apples, but I like to fit in as many as possible. To me, the higher the better. And then additionally, I like to sprinkle even more cinnamon over the mound.

scatter a few really tiny butter cups (cut up) here and there over the filling.

Gently take the second pie crust out of the pan it was purchased in. Cut some slits through it and then gently place it over the mound of filling, sealing the edges.

Egg Wash:

1 large Egg Yolk
1 Tbs Heavy Cream

Blend the egg yolk and cream together until well blended. With a pastry brush, brush generously over the top of the crust, making sure to get all the crust covered.

Bake pie until crust begins to turn golden, about 20 minutes, then reduce heat to 350°F. Tent the rims with aluminum foil or a pie protector if the edges are browning too quickly. Bake until crust is golden and juices are bubbling, anywhere from an additional 30 to 45 minutes, depending on the type of apples you are using. Transfer to rack; let stand 1 hour. Serve pie warm or at room temperature.

Now... go ahead and try these and tell me how fantastic they are!

Thanksgiving Special!!

Well, Halloween is in just a couple days and then next up is Thanksgiving! The best food day of the year. Sure, there are great things about other holidays, but on this particular day, everyone forgets to count calories, or go jogging, or skip the carbs... it's simply the best day of the year to eat anything and everything warm and comforting. Turkey, rolls, stuffing, yams, every pie you can think of... I told you it was the best day :)

So, in celebration of this wonderfully tasty holiday, I would like to offer a special. Take it or leave it, it's here for the whole month of November!

So as I have been getting people to contribute to these wonderful giveaways, I have also been collecting information from them for your reading enjoyment! Just a little "About Me" type of dealio. Personally, I like to read about the people I am ordering handmade goods from. So I thought you might like it to. Each month a new Featured Seller will be posted.

The Sada Abe Experience

To be honest, I don’t expect much from the person answering the questions... just because I absolutely hate to. But I was so happy with these answers! I hope you enjoy learning more about The Sada Abe Experience and how it came to be!

Leece: How did you choose the name of your brand?

TSAE: Since "Cowboy's Sweetheart", "Honky Tonk Angel", and "Fujiyama Mama" were already taken, I had to get creative and went with "The Sada Abe Experience". Skipping the history of who Sada Abe was (I think I'll euphemistically call her a "folk hero" of sorts), I wanted something that said "swingin' good time" and "goofy camp"... You know, something fun that makes you picture go-go dancers!

Leece: How do you choose your flavors?

TSAE: Go-go dancers aside, I am very tradition oriented, especially when it comes to food. Nowadays, you can find mochi with chocolate, peanut butter, or ice cream inside, and in all kinds of fabulous flavors. But personally, I like the elegance of the old Japanese classics, and that's why I sell mochi based on a recipe my grandmother used. There's just a particular simplistic charm to the gold of the kinako (roasted soy bean flour) against the stark green of the mochi. And why green mochi? Again, just tradition, I suppose!

Leece: What inspired you to open up this type shop?

TSAE: In the vein of Mary Lou Williams and Edith Massey's thrift stores, I wanted a spunky little spot on the internet that sells EVERYTHING! Of course, there's the mochi, but I started with knit goods and expanded to hand embroidery, t-shirts, and beyond. I remember in the beginning reading various Etsy blogs that deemed that sort of eclectic thinking absolutely toxic in terms of "alienating" your clientele, but I've never been a fan of just sticking to one strict aesthetic, ha. And I probably never would've gotten the "alienation" idea if they didn't explicitly say not to do it.

Leece: What is the number 1 item on your personal wishlist and why?

TSAE: A pie bird! I usually bake cream, custard, or shoofly-sorta cake pies to where I totally don't need it, but they're just so cute.

Leece: If you could do one thing for or with anyone in the world, past or present, who would it be and why?

TSAE: ...Stop Patsy from getting on that plane in 1963! Or host some kind of daily, five hour musical-political-food symposium with Linda Ronstadt, because the current programming on Lifetime TV just isn't cutting it.

Leece: What is something strange/unique about you or your shop?

TSAE: I'd say the whole enchilada I'm running here is one big, strange quirk. And that's exactly the way I wanted it to be, like some kind of wonderful culinary/craft racket Amy Sedaris would be running!

Ok, so I know it says week 1 for October. It's not completely accurate. I have a very specific way that I have organized the names for giveaways so that I myself understand them.

October week one is actually covering September 25th through September 30th. I named it week 1 because October 1st lands on a Saturday, and then week 2 begins. It just makes more sense to me. :)

Well, we are coming near the end of September, and I didn't have a new giveaway ready to go as I had hoped. I contacted someone who acted more than happy to provide some goodies, but since has been hard to reach! That's okay, though, because we are going to get a giveaway ready that is going to take your breath away!

I LOVE holidays. Halloween is next month, which is a super fun holiday... but I want to celebrate a lot of holidays in one month. So...let's see what google says about holidays in October, shall we?

These are all run for one week only, and may or may not have more than one single winner. That is all going to depend on the contributions. I have contacted at least 50 people so far to see what we can do.

Tres Leches Cake

I have a new found love for Tres Leches cake, and today I have decided to post a super easy and pretty fast recipe for your convenience! Because of that, this recipe includes a boxed cake mix. However, you can easily replace that with your own homemade yellow cake recipe if you are feeling ambitious, or just buy an un-frosted, pre-made yellow cake from your local grocery store/bakery to make it even easier!

What you'll need:

1 box of your favorite brand yellow cake mix plus all ingredients required on the back of the box (eggs, oil, water)

14 oz. sweetened condensed milk.
(evaporated milk is not the same thing)

1 cup whole milk or evaporated milk

1 cup whipping cream

Optional frosting and fresh fruit of your choice

So, here is what you'll do:

Step 1- Bake your chosen cake mix as directed on the box. I preffer Duncan Hines because it's pretty dense for a cake mix and I'm not a "light & fluffy" kind of gal.

Step 2- Once baked, let stand for about 5 minutes. Poke top of hot cake every 1/2 inch with fork, wiping fork occasionally to reduce sticking.

NOTE: It's best to use a long-tined fork so it goes down deeper.

Step 3- In large bowl, stir together sweetened condensed milk, whole milk and whipping cream. Carefully pour evenly over top of cake. Cover; refrigerate about 1 hour or until mixture is absorbed into cake.

Here is where frosting is optional. I prefer to either use a tub of whipped cream (or remaining from recipe above) as frosting and then top with slices of fresh strawberries. But frosting and fruit or not, this cake tastes unbelievably delicious!

I recently spent some time browsing etsy, just to get an idea of what has or hasn't been done, compare pricing, or look for items to add to my own favorites list. During that time, I came across Ploctopia!

Now, the first thing that really caught my eye was the yummy looking Red Velvet Cookie Pies. They look rich, moist and almost sinful!

When one thing in a shop catches my eye, I have to keep looking through that shops items to see what other wonderful things they have to offer. And boy am I glad I did! I found these adorable Hot Chocolate on a Stick(s)! I never would have thought to make something so clever! So of course, I'm super jealous I didn't think of it first.

Anyways, moving on... Christy Ploch is the creator of Ploctopia and she is one multi-talented woman! She sells baked goods, upcycled clothing renewed with her own personal touch, bouquets and accessories! After reading her interview, you will see why the name she chose to represent her label is perfectly fitting!

Hi, Christy! Take a moment and tell us a little about yourself!

My name is Christy Ploch and I'm the owner of Ploctopia. As you can see from my shop and my Facebook page I have my hands in a bit of everything! I like to create, bake, design, photography and the list goes on… I love baking and trying to come up with the most unique sweet edibles. My other loves are designing weddings, receptions, food and landscape photography, and creating beautiful headbands! I also find myself up-cycling (recycling) purses, clothing, and anything I can get my hands on. My brain is always on creative mode. :O)

What is something strange/weird/unique about you?

Unique - would always be thinking outside the box. Strange and weird would be my sense of style in the way I do things.

The name of your brand is so unique! how did you choose the name?

I'm always in my own little world - in my mind - creating and making the perfect desserts, flowers, photography, and anything I can put my hands on. So I decided since it's my perfect creative world I dropped the “h” off my last name and added utopia making it Ploctopia – a place I create in and share it with the world.

How do you choose your flavors?

I receive a lot of feedback from my customers, travels (how I was inspired to do a Mojito Cake Pop), and doing my every day running. A trip through the candy isle or my favorite restaurant kicks my brain into gear and off I go creating and experimenting with all kinds of goodies!

What is your most favorite flavor that you offer?

I really don't just have one flavor, but if I have to pick… it’s my Handmade Smore’s in a Jar.

How do you determine your pricing?

My pricing is based on the time and materials I put into a product or the amount of time and ingredients I put into my baked goodies.

Who has been the most influential in your baking?

My Daddy. Both my parents could rock out some really good food, but my Dad has some of the most wonderful sweet yummies!

Where do you get your inspiration?

Everyday life inspires me. I wake up and everything I see, do and everywhere I go gives me tons of ideas.

If you could bake for anyone in the world, dead or alive, who would it be and why?

My Grandma. I used to sit at her breakfast bar and watch her cook up the yummiest homemade food! I told her "Grandma when I grow up I’m going to cook you the best dinner in the world.

Have you done, or do you plan to do, any collaborative work?

I've not been approached with this offer, but would defiantly consider it!

What tools in your kitchen/bakery

could you absolutely NOT live without?

Love my stand mixer and my spatula. Great inventions!

Buttons - Share the Sweet!

Booths and Events!

So to start, I promise that a giveaway is coming soon. Just waiting on a little more information and we will be set! It will for sure be posted Sunday, 8/14, so dont forget to check back and get your entries in!

Second, I recently added a bunch of new products that I am super excited about! Please click HERE or the "Shop Now!" tab at the top of the screen to check them out! There are a few new categories, some with products, some waiting for upcoming products, and I am happy to take suggestions at any time!

And finally, as the title suggests, I have been looking into attending some events that may be going on throughout this summer and the rest of the year. There are a few boutiques and charity events that I am very interested in. If I find that I can give the commitment necessary, I may even get a booth at an indoor Swap Meet here in Salt Lake! What I love about that idea is that its a monthly flat rate, and that I get to be there 4 days a week!

Did you read that right? Of course you did! This is an exciting new feature I am adding to this blog. Most of the time I am hoping that each special guest featured (new guest will be posted soon) will also agree to a giveaway at the same time. Just to double the fun! In some cases, that might not happen.

In case you haven't checked it out yet, July's special guest Cannibal Cupcakery was added a little late in the month. In addition, I just barely decided on giveaways. About 5 minutes ago.
