"a little pick me up"

We all need them from time to time. Today is one of those days for me. I usually turn to laughter. And I usually find my laughter by watching something funny. It is just the quickest way to make me smile and didn't I read in The Happiness Project that laughter was healthy and good for us? Or was that just something I remember Mom saying. Either way, I agree. It definitely helps me! For example, this past December my Grannie passed away after spending about a week in a hospice type setting. Hospice nurses and helpers and staff at her retirement center were all so great and wonderful and comforting but still, I felt we (especially my dad) needed a break to laugh - so I quickly looked up a funny baby video on youtube and he and I both laughed out loud. It was great, he and I both felt a little pause from the life-changing events going on. It changed the mood of the room, yes it was still sad in there, very sad. You could physically feel the sadness when you walked in - BUT - our moods had lightened just a tad. Our spirits had risen just the tinniest bit and it helped. So, here are my newest "pick me up" videos...

Hey Ya'll!

How many hexipuffs do you have yet?! I'm still in the twenty's cause I've been trying to finsih up a few gifts for others. Then it's back to hexi-puffing.

I wanted to write to you all and give you a little update on our KAL. Sadly, I will no longer be hosting it at Amelie's. I have gone back on my crazy diet and it is just TOO HARD to be there with all those yummy pastries and not have anything but orange juice. Do you understand? Do you hate me? I was planning to cancel it all together but then I had a different idea. So here's what we will try for March...

March 7th 6:30pm - till (they close at 11pm)

Don't worry, they have coffee and treats here too! I just crave Amelie's too much to attend regularly. This will help me out in oh so many ways!

#1 the whole craving thing I just said.

#2 it's a few blocks down the street from me so I can walk down and if no one shows - I didn't drive 45min to sit and knit by my lonesome.

#3 I want to hang out at Summit more often and support my neighborhood. This would give me an extra excuse to do so.

I'm so sorry if this is farther of a drive for you. BUT I hope you understand. Do you? Will you still come? What are your thoughts?

"Healthy" Desserts

Okay, well they aren't really healthy per say but they are healthiER. All three contain no gluten, sugar-cane, eggs, corn, or dairy. Not that any of that stuff is bad, it's not. It just reacts badly in my body so I choose not to eat it.

I am extra excited to show you guys these three new "healthy" dessert recipes I have come across. I'll be making all three this week, eating a serving and then freezing the rest. That way if I'm ever craving something sweet - I'm prepared. I haven't tried any of the recipes yet so I can't tell you they are good - but the ingredients make me think they will be. I'll be sure to let you know what I think.

Apple Cider & Honey Vinaigrette

I have found a dressing recipe that I can have AND that i love. It's a miracle! Are you about to cry like I am?! No, just me? Oh well. To me, eating salad is all about the dressing. Lettuce is boring to me, I know some folks love lettuce and don't need any dressing at all. But that is absolutely NOT me. I need dressing and I'm really tired of just olive oil, lemon, salt and pepper. Don't get me wrong - that combo is yummy! But I miss vinegar dressings, I miss having something tangy to dip carrots in, or marinate fish in. But most of all I miss having options. Now do you understand my joy a bit more?!

Apple Cider Vinegar and Honey Vinaigrette

3/4 cup olive oil

1/4 cup apple cider vinegar

2 Tablespoons water

2 Tablespoons honey

1 1/2 teaspoons salt (I used 1 1/4)

1/4 teaspoon pepper

1. Combine vinegar, water, honey, salt, and pepper in a blender

(I used a food processor and it worked just fine.)

2. Drizzle olive oil into blender until combined.

3. Enjoy!

V-Day

My main reason for going a wee bit crazy with the V-Day decorations is a little lady named Macie. She is my roommate's niece and my fake niece. She calls Jennifer "JuJu" and me "Whoo" or sometimes "Mamma Whoo". Can you guess why?! Anyway, I decided that I would host a little Valentine's Ladies Lunch for us. A Recipe & A Cooking Experiment

Have you seen THIS on pinterest? I was so very intrigued. Especially since I let my water boil over all the time. Well, I decided to give it a try! AND I was a really big dork about it and decided to film it too. So here you go...my first video kitchen experiment...

Have you tried it before? Did you have the same result or do you agree with my hypothesis that it boiled over a tiny bit because of my uneven burner? I know, I'm crazy:)

Here's what I made with the pasta in the pot...

Chicken Sausage and Pasta
it was really really yummy!

slice and cook sausage in a swig of safflower oil until brown.

this is my fav sausage!
and the only kind i can have:)

put a little marinara sauce in pan.
I didn't use very much cause I didn't really feel like sauce.
But you could totally add more if you wanted.

This is my fav sauce.

Cook until it looks close to the above photo.
Basically I cooked it until most of the sauce has married with the sausage.
Then toss with your cooked pasta.

I topped mine with Pecorino Romano.
If you are afraid of the sheep's milk...don't be!
It tastes a lot like parmesan only better.
but if you are still scared you can totally use parmesan.

There is nothing new or original about this recipe...but...I have so many friends that are a bit scared of cooking. So I thought I'd share some of my quick and easy "recipes". Enjoy!

Nature continues to floor me. It's just amazing that almost everyday I see something new and beautiful that stops me in my tracks, or in this case - wait too long to turn causing the car behind me to honk (sorry)! It all just reminds me that I am one very small creature in this big, beautiful world that God has created. And that makes His love for me even more amazing. If only I could remember this all the time.

The Happy Table

Since moving in September, I've decorated the house for almost every holiday. In the past I've only decorated for Christmas...but now...I think I'm addicted. AND my Pinterest and Martha Stewart obsessions are definitely not helping. But that's okay...I sorta LOVE IT!

Tuesday Tunes #22

Paul Curreri.

Paul is one of my all-time favs AND he happens to be a friend. I love him and his music. He manages to write beautiful songs that can still make you giggle every once in a while. And still to this day, one of my favorite evenings was spent with my friend Amanda and Paul. Listening to his then new and unreleased record, The Velvet Rut, drinking wine and raspberry beer, and Paul yelling at Amanda not to use her old "collectable quarters" to buy more cigarettes. According to him... "they'd be worth money someday!"...heh! Still makes me laugh. Best night in EVER!

He also happens to be married to another one of my favorite's, Devon Sproule. I love to see them together, which is rare. I love that you can see how much they love each other when they sing together and that makes my heart happy. They just moved to Berlin, and that makes my heart a little sad. But I'm so excited that they are both doing so well over there!! But friends, please don't stay over there all the time, America loves you too!

I love that they are some serious musicians but they don't take themselves too seriously!

And as you know my most favorite collection is owls. When I was in the market for an iPhone case I looked high and low for an owl case I liked. All the ones I found were way too cutesy for my taste. Of course now I find this fun ones...

The one I ended up getting makes me smile (and sometimes giggle) and I like that! Not everyone gets it, and I'm okay with that. And some people get it and still don't think it's funny, it's soft humor...BUT...it makes ME happy and that's all that matters. It's from a company called Indie Cases and they are now only selling through Everlane. These also make me giggle, and why shouldn't we laugh at our iPhone everyday;)

Champagne, you desperately need #4. Who cares if you don't have an iPhone...you NEED it;)
