Stuffed Portobello Mushrooms

Yield: 4

Author: Jennifer L. Scott

The wonderful umami flavor of Portobello Mushrooms makes this savory dish delightful.

Ingredients

4 large Portobello mushroom caps
2 tsp avocado oil
2 Tbsp butter
Handful of favorite herbs, chopped
1 cup tri color couscous, cooked
2 cups yellow lentils or split peas, cooked
3/4 cup panko bread crumbs
¼ cup grated parmesan cheese
¼ cup melted butter.
2 tsp Italian herb seasoning

Instructions

Preheat the oven to 350 degrees F. Clean the mushroom caps and cut off stems, if necessary. Place on a roasting pan, drizzle with avocado oil, add a pat of butter and chopped herbs (ideas are parsley, thyme, dill, scallions, chives). Roast for 15 minutes. To make the filling, combine couscous, beans, breadcrumbs, cheese, chopped mushroom stems, melted butter and Italian herb seasoning. Mix. Add a large heap of filling to each mushroom cap and roast for an additional 15-20 minutes. Enjoy!

Sweet Potato Nachos

Yield: 4 - 6

This dish is easy to make and nourishing to enjoy!

Ingredients

5 sweet potatoes
Extra virgin olive oil
1 cup dry black beans
1 sheet kombu seaweed (optional)
1 cup sour cream
1 avocado
Juice from 1/2 a lemon
Large handful of herbs (dill, parsley, cilantro)
Salt and pepper to taste

Instructions

The night before rinse and sort 1 cup of dry black beans and place them in a bowl with about 2 inches of water on top. Let the beans soak overnight. The next day peel and chop up 5 sweet potatoes into thick fry shapes. Rub with olive oil, salt, and pepper.
Roast the sweet potatoes at 350 degrees F for between 30 - 50 minutes (this depends on how thick you cut your fries and how caramazlied you like them).
Meanwhile cook the beans. Drain and rinse them one more time and then add them to a large pot with about two inches of water over it. Add Kombu seaweed, if desired. Let beans come to a boil and then cook them on a simmer for about 60 minutes or until beans are done.
For the herbed sour cream, place sour cream, avocado, lemon juice, herbs, salt and pepper in a blender. Blend until combined.
Place sweet potato fries on a plate and top with desired amount of beans and a dollop of the herbed sour cream. Enjoy!

Brussels Sprouts Soup

Author: Jennifer L. Scott

Ingredients

1 Tbsp olive oil
2- 3 onions, thinly sliced
1 lb Brussels sprouts, trimmed and halved
1 teaspoon fresh lemon thyme
6 cups vegetable stock
salt and ground black pepper to taste
Sour cream for topping
Dill for garnish

Instructions

Combine oil and onions in a pot over low heat. Cover and cook until soft and caramelized, 30 to 40 minutes.
Stir Brussels sprouts and lemon thyme into the pot. Pour in stock and season soup with salt and pepper. Bring to a boil, reduce heat, and simmer until sprouts are cooked, about 20 minutes.
Once the soup has cooled slightly, use an immersion blender or place soup in a traditional blender and blend until smooth.
Serve with a dollop of sour cream and a sprig of dill.

Baked Apples

Yield: 2 - 4

This easy and delicious dessert is feeling and comforting

Ingredients

2 large apples
1 cup old-fashioned oats
¼ cup brown sugar
1 Tbsp ground cinnamon
2 Tbsp ground flax seeds
2 Tbsp butter
Vanilla ice cream (optional)

Instructions

Core the apples almost to the bottom but not quite. Grease a small loaf pan or casserole dish. Place the apples in the pan. In a separate bowl, mix together the oats, sugar, cinnamon, and flax seeds. Stuff the mixture in the apples. Sprinkle the excess around the apples. Place 1 Tbsp butter on top of each apple. Bake in a preheated oven at 350 degrees F for 35 minutes. Serve with vanilla ice cream.

Sometimes you step off the busy road and go seeking. How we find ourselves here we don’t know. There appear to be clear paths but there are many. Does it matter which ones we choose? Should we think about it too much? There is beauty at the end of the destination. That is something we do know. But there is also beauty along the way. Sometimes I miss that. The beauty in the details along the everyday path. The changes in scenery as the path unfolds. The excitement of walking that path and visioning what it leads to but not fully knowing for sure. And the final revelation, a moment to soak in. Life, in its essence, is beautiful and to be treasured. I want to appreciate the details. I don’t want to miss them. For the details are what makes the revelation so grand.

In today's video we explore some of the small details of my trip to England.

This berry compote would be easy to replicate. I will try to do so back in America.

What do I have for breakfast? It's an obscure topic, but I always enjoying knowing what people like to eat for breakfast, especially while traveling. While my breakfast isn't particularly English in nature, I have been enjoying a very steady combination of Greek yogurt, granola, and berries... usually with a piece of hot, buttered toast with a savory spread on it (like pâté or taramasalata).

Food Presentation Tips for the Home Cook | Do's and Don'ts

Food presentation matters. We eat with our senses: what we see, taste, smell, and feel. So in today’s video, I’m sharing food presentation tips for the home cook.

I have a passion for fine living at home. And of course, a major part of living well is through our meals and food presentation is a big part of that. In today’s video I’m going to reveal 10 food presentation secrets that will send your meals over the top. All the food presentation supplies featured in this video are in my Amazon Store.

1. Keep it together We want certain foods to feel controlled and put together. When you are enjoying a sandwich, for example, you don’t want the stress of feeling like it is going to fall out and be messy when you try to eat it. So there are various ways to keep your sandwiches together and make them look more appetizing at the same time. The first is with the traditional cocktail party toothpicks. You see these at delis and they hold a large sandwich together. Here I’ve made a grilled cheese sandwich with grilled red onions and tomato. I use the picks to hold the sandwich together and they look much more festive this way. Another way to keep your sandwiches together is to wrap them in wax paper.

I like to use colorful wax paper that makes the sandwich look like a little gift. The paper I had here was slightly too small, but I made it work by wrapping the sandwich on an angle. I use tape to seal it. Then when you cut the sandwich in half, you have a beautifully packaged work of art. You can really see the difference in the before and after with this one.

2. Create height Create height when plating your dishes. Use cake molds and ramekins to create height with your food. In the video I share an easy baked crab tartar. When plonked in a bowl, it does not look very appetizing, but when placed in a mousse or cake mold, it suddenly looks like a gourmet creation from a fine restaurant. Ramekins are also a great way to plate rice so that it holds a shape and presents a dynamic of height on the plate.

3. Think of color They say we eat with our eyes and when everything is the same color on the plate, it’s less appealing. Plus, as I write in Connoissuer Kids, eating the rainbow with fruits and veggies is very healthy. Adding purple cabbage to a sandwich makes it look so much tastier, than if it were just turkey and cheese. The addition of Roma tomatoes and grilled red onions on the grilled cheese add a beautiful color as well. Even things like grill marks on the grilled cheese help in appearance. Here’s another example: I made coconut rice, air fryer chicken, and tropical salsa. Look how bland the rice and chicken look before I add the colorful salsa: which contains mango, papaya, tomatoes and cilantro. The colors make the dish look so appetizing.

4. Edible garnishes Garnishes are key to making a plated meal look enticing. I once watched an interview with celebrity chef, Wolfgang Puck, and he said the best way to make a plated dish look good is with edible flowers. I like to use fruit, herbs, and other sauces to create a pretty finish.

5. Footed dessert bowls I use footed dessert bowls for so many things… ice cream, puddings, unruly desserts. Footed dessert bowls add height, structure, and elegance to an otherwise unruly looking dish.

6. Get creative Get creative with your food plating. Think about how you can use containers for different purposes. For example: using sherry or cordial glasses for small desserts. Here I've made a very simple pudding dessert for the kids. I place dark chocolate pudding in the bottom of the sherry glass, top with whipped cream and a raspberry. Simple but beautiful. The kids were delighted to see these and the presentation is so charming. I’ll often use teacups or drinking glasses to plate desserts or things like overnight oats in.

7. Portion sizes small The food on the plate looks more appealing, when there is less of it. Think of a giant plate heaped high with lots of food. You’ll notice that high end restaurants plate smaller portions of food… this just looks more appetizing. When you see a smaller plate beautifully plated, you want to eat the whole thing.

8. Use a squeeze bottle for sauces It’s all about control and a squeeze bottle allows you to decorate your plated food in an artful way. Normally if you are using a sauce out of a bottle, it can come out clumpy. The squeeze bottle allows you to control the distribution of the sauce in an appealing way.

9. Copy restaurant style Think about your favorite dishes at restaurants and mimic what you like about them at home. You can even do this with casual meals like sandwiches. Here I’m using wax paper and a sandwich basket to serve the grilled cheese in. It looks delightful like this. The presentation is festive and makes the sandwich look even more appealing. The only things that’s missing is a pickle!

10. Plate selection Of course, we must discuss plate selection. You can use white plates to be safe but don’t be afraid of color and pattern. You know how much I love my Spode Blue Italian plates and my Portmeirion Botanic Garden plates. I use them on a daily basis and love the color. And here’s a trick… when you don’t have time to go a bit extra with your food presentation, pretty plates make up for it. They still give your eyes something to feast on.

11. Bonus tip: Section it off If your children are picky eaters, consider serving them on plates that have sections. For some reason, sectioned plates are visually appealing to many children. They like the choice and variety. You can sneak in some vegetable salads and other things they might not try if plated on a regular plate.

Chapter 11 in Lessons from Madame Chic is Live Life as a Formal Affair. It's one of my favorite chapters because I truly believe that adding formality to your life can improve your every day experience in countless ways.

Today, I'm sharing 5 ways to live a formal life on a budget. Adding elegance to everyday life is attainable for everyone. I hope you enjoy today's video.

1. Clear the Clutter Clean up your space and work with what you have. Living in a cluttered environment does not give you an opulent formal life feeling. Decluttering is free, everyone can afford to do it. Most people need to do it, including myself. Go over your hot spots and the places that regularly need maintenance.

2. Consider the atmosphere You know that nice candle you received for your birthday? The one you’re saving for company? The one you say you will burn later? Burn it now. Put on classical music or healing atmospheric spa music (or whatever you like) to make your surroundings more serene and formal. Get excited about curating the atmosphere in your home, like you would curate an art museum.

3. Dress up every day Almost everyone has nice outfits that they are saving for special occasions. It’s time to break out of your comfort zone and wear these outfits on a daily basis. I’m not telling you to go shopping. I’m telling you to wear what you have. If you’re in the habit of dressing down everyday in sweats and exercise clothes, it might be time to try a change. Note now you feel when you wear nice clothing at home for no reason at all. You might feel uncomfortable. You will probably feel uncomfortable. Journal all those feelings and emotions and explore them. Why? What subconscious beliefs are you holding that tell yourself that you and you alone are not good enough to wear this outfit for no reason at all? Once you break through those feelings of discomfort you train yourself to enjoy dressing well on a daily basis and soon, you will become uncomfortable with dressing down in sweats. It will become unheard of to you.

4. Set the table Even if you have the most limited resources for setting a table nicely, most people have place mats or a tablecloth. Perhaps you have one or two tablecloths that you are saving for a special occasion… I encourage you to use those on a daily basis. What do you do when the special occasion comes? Don’t worry about that right now. Living a formal life aims to get you out of the mindset that you save your best things for later. Use your best things now. When you save your best things for later it’s like you’re subconsciously telling yourself that you don’t deserve the nice things every day. That’s not true. You do. So use your tablecloths, cloth napkins, and placemats. If you have none of these things, you can bring nature indoors. Create a bouquet from flowers or foliage outside.

5. Read more Reading... It’s so quaint! Does anyone do this anymore? Or do we prefer to binge watch television in our spare time? If you used to be an avid reader, but it’s been ages since you picked up a book, why not get back into it. Reading in the afternoon while well-dressed gives one a wonderful feeling. You will feel very formal and maybe even old-fashioned (in a good way). If you have access to your local library this is free! Of course, I recommend you read my Madame Chic series. Today’s outfit is casual and comfortable but stylish at the same time. I’m inspired by nautical looks, especially in the summertime. I’m wearing the Fae striped cardigan by SKYE, and these gauzy shorts by Michael Stars. My quilted flats are by John Josef. Under my cardigan I’m wearing this lace silk camisole by Lilysilk. I tuck the camisole into the high wasted shorts. Jewelry is something I pay attention to every day, even if I’m not planning on leaving the house. I love looking at my wrists and seeing a great watch and a pretty bracelet. Or catching a glimpse of my necklace and earrings in the mirror. Jewelry feels like a royal adornment, even if it’s casual. All my jewelry today is by Miranda Frye. I’m wearing the crawler earrings, The Marlowe Chain and gothic letter charm, and the Miranda Frye cuff bracelet with my tag Heuer watch. Clean and simple jewelry for this streamlined look. On my nails is the illuminating nail concealer by London town.

This look is inspired by Coco Chanel, who made wearing Breton stripe sailor shirts fashionable. This is her in 1928. I’m ready to start my day of adventure.

And now for the beautiful meal...

Air Fryer Chicken with Tropical Salsa & Coconut Rice

Yield: Serves 6 - 8

Ingredients

Coconut Rice in Rice Cooker

2 cups of basmati, jasmine, or plain white rice
2 cups of water
1 14oz can coconut cream
pinch of salt
Shredded coconut for garnish (optional)

Air Fryer Chicken Tenders

12 - 16 chicken tenders
2 large eggs, beaten
1 tsp seasoned salt
1 1/2 cups panko bread crumbs
1 Tbs paprika
salt and pepper

Tropical Salsa

1/2 papaya, peeled, de-seeded, and chopped
1 avocado, chopped
1/2 red onion, chopped
1 mango, cubed
1 large tomato, chopped
1/3 cup hearts of palm, chopped
1 large handful cilantro chopped
zest and juice of one lime
salt and pepper to taste

Instructions

Rice Cooker Coconut Rice

Place 2 cups of basmati, jasmine, or plain white rice in your rice cooker, along with two cups of water, and one can of coconut cream. Add a pinch or salt. And press on.
When the rice is finished, press in a ramekin and turn upside down on a plate so the rice appears in a dome- shape. Top with shredded coconut, if desired.

Air Fryer Chicken Tenders

Prepare two dishes for dredging. In the first dish place the two raw eggs, scrambled. In the second dish, place panko bread crumbs, paprika, and seasoned salt.
Sprinkle the chicken tenders with salt and pepper. Take the chicken tenders and first dip them in the egg wash and then in the bread crumbs to coat and repeat this process for all the tenders.
Preheat the air fryer to 400 degrees. When it is ready, spray the inside of the air fryer with cooking spray and place the chicken in. Cook for ten minutes, flipping half way through. The internal temperature of the chicken should be 164 degrees F. Cook longer, if chicken has not reached this temperature.

Tropical Salsa

Let it be noted that any combination of preferred ingredients can be used here. This recipe shares the fruits, vegetables, and herbs I used for this particular preparation.
Peel and de-seed the papaya. Chop the papaya in cubes and place in a large bowl. Add chopped avocado, chopped red onion, cubed mango, tomato, cilantro, chopped hearts of palm, lime, salt and pepper.
Stir all ingredients together and allow to sit for at least 30 minutes. Serve with the chicken and rice.

And now to make the banana cream pie dessert cups.

Banana Cream Pie Dessert Cups

Yield: 4 - 6

Ingredients

1 packet graham crackers
2 Tbs melted butter
2 cups prepared vanilla pudding
10 Nilla wafers, crushed
2 - 3 bananas, sliced

Instructions

Crush the graham crackers and place them in a large bowl. Pour melted butter on top and mix until combined. Place a small layer in the bottom of each dessert cup.
Top the graham cracker with vanilla pudding.
Place sliced bananas in a ring on top of the pudding and top with crushed Nilla wafers. Enjoy!

And now for our beautiful thought. An old friend of mine sent me a letter with Japanese calligraphy kanji and wrote me a haiku. It was so fun to receive in the mail. I’m returning the gesture now and coming up with a Haiku of my own to send. I also need to send off two letters. While I’m writing my letters let’s explore the haiku. Haiku is a type of short form poetry originally from Japan. Traditional Japanese haiku consist of three phrases that contain a kireji, or "cutting word", 17 on in a 5, 7, 5 pattern, and a kigo, or seasonal reference. I’m not as familiar with writing Haikus so I looked up some of the best haikus ever written to see what makes them so special. Here are a few of my favorites:

“A Poppy Blooms” by Katsushika Hokusai

I write, erase, rewrite
Erase again, and then
A poppy blooms.

“Over the Wintry” by Natsume Sōseki
Over the wintry
Forest, winds howl in rage
With no leaves to blow.

“The Old Pond” by Matsuo Bashō
An old silent pond
A frog jumps into the pond—
Splash! Silence again.
I finish my letters and write my haiku. I won’t share it on here… that’s for my friend. But perhaps I’ll write one for you too. I need to practice more. Have you ever written a haiku? Homemaking with Flowers

What role do flowers play in the life of a homemaker? Let’s explore that in today's video.

Welcome back to the Daily Connoisseur. One’s life at home is very complex. Home is a place of refuge and rest. It is a place of shelter too.

It is also a space that we need to take care of. We clean it, organize, declutter, and purge the things in it. The home is also a place that represents beauty for us. Arguably it is the space in our lives that should be the most beautiful. It is where we spend most of our time and when we come home from being in the outside world, our homes become our havens. What role to flowers play in all of this? What is the purpose of the flower? Why do we keep them in our homes? Why do we cut them off our plants, place them in vases and display them? Why? Because they bring beauty to our lives. Nothing cheers me up like seeing a perfect little bloom in a vase while I’m doing the dishes. Their fragrance and aesthetic perfection are like an intoxicating little tonic.

The natural world is blooming all around us. Especially this time of year. Do we pay attention to its presence? As we go about our homemaking, let’s look at flowers in history. In myths and legends, flowers are used to celebrate new life and also to commemorate death. They are symbols of purity, passion, and romance. They evoke beauty and pleasure. It is for these reasons that we likely bring them into our homes. When flowers wilt, they remind us of the brevity of life and out we go into the garden to find new blooms. And the cycle continues. Look at this spectacular bloom on a cactus plant in my parents’ garden. It blooms but once a year and only for a few days. What an enchantress of a flower.

We have some beautiful flowering plants in our own garden. I’m obsessed with roses like many of you are. Today, I’m creating a simple peony bouquet. I’m combining store-bought peonies with lavender and bay leaves from our own garden. Peonies are perennial plants that return every year. These bushes are very hardy… some can live up to 100 years! They bloom from late spring to early summer. Marco Polo described peony blossoms as “roses as big as cabbages”. Yep, I would say that description about sums it up! Peonies, of course, represent romance as you will often see them in wedding bouquets. In fact, I chose peonies for my own bouquet. They also represent bashfulness too as in mythology mischievous nymphs were said to hide in their petals. Two more interesting things about peonies: their petals are edible and The roots are commonly used in Traditional Chinese Medicine (TCM) for many purposes. Peony might block chemicals that can cause pain and swelling, as well as prevent blood clotting, kill cancer cells, and act as an antioxidant. Well, now that we know more about these roses as big as cabbages, we can appreciate them even more in our homes.

I had another thought. We homemakers are busy as bees. We are buzzing about when we are at home… flitting from one chore and duty to another, cooking, cleaning, folding, wiping. Perhaps in a way, we relate to the bee on a different level and that’s another reason why we like to be surrounded by flowers. We bring them in through our wallpaper, our paintings, and in reality, through our gardens. In the winter months we might represent them with faux flowers. But they are always here. And I know they’re there while I’m doing my tasks. Folding laundry, specifically the kitchen linens, is one of my least favorite tasks. I just dread it. I usually watch YouTube while doing it. Or I’ll listen to an audio book. Today I’m watching YouTube, Vogue’s channel, specifically, while folding. And all the while I sense the presence of the beautiful hot pink rose behind me on the nightstand. Flowers give a vitality to a room that is noted by the perceptive. They keep us company and make each task more pleasant.

The next time we wipe away the streaks, sticky fingerprints, and grime in our daily lives, meditate on the flower. Make yourself consciously aware of the nearest one. Accept the pure joy and beauty it brings you. The spiritual nectar it feeds you. Its gentle prompting to make you work like a bee, in harmony with your surroundings.

Don’t forget to steal some time for yourself in the natural world. This is my secret hideaway. I come here with my family but many times I am alone. And when I walk under the garden arch I disappear to a different world… I can’t tell you what goes on there. That’s between me and the fairies.

3 cups chopped fruit (Stone fruits and berries work well here. In this recipe I use plums, apricots, and strawberries)
1 Tbs sugar or honey (optional)

Instructions

To prepare the crust

Mix together the flour, salt, and sugar (if using) in a large bowl.
In a separate measuring cup, whisk the olive oil and water together until well-blended.
Pour the oil and water mixture into the flour mixture and mix together until moist.
Gather the dough into a ball and press into a deep dish pie pan until your crust is formed.

Filling and baking instructions

Prepare your fruits for the filling by de-seeding (if using stone fruits), hulling, and chopping them. Place fruits in a bowl and sprinkle sugar or honey over them and mix until the fruit is well-coated.
Pour the fruit into the pie crust.
Bake in a preheated oven at 350 degrees F for up to 50 minutes.
Serve warm with a dash of heavy cream, if desired.

Yield: 4

Ingredients

1 15oz container Ricotta cheese
2 Tbs honey
1/2 tsp vanilla extract
1/4 cup shredded coconut

Instructions

In a mixer bowl, combine the ricotta cheese, honey, vanilla extract, and shredded coconut. Beat mixture until well-blended, about one minute.
Pour the pudding into four dessert ramekins and refrigerate for one hour.
Serve with berries and mint leaves as a garnish or extra toasted coconut, if desired.

Ingredients

1 cup old-fashioned oats (not instant oatmeal)
1/2 cup ground flaxseed
1/2 cup peanut butter or almond butter
1/2 cup mini chocolate chips
1/3 cup honey
1 tsp vanilla extract
1/4 cup shredded coconut

Instructions

Mix all of the ingredients together in a bowl until well-combined. Drop rounded, tablespoon-sized portions onto a cookie sheet lined with parchment paper. Refrigerate for one to two hours. To store, refrigerate in an air-tight container for up to one week, or freeze for up to three months.

Everyone can recognize the William Tell Overture finale. This month we are listening to a performance by The Milwaukee Symphony Orchestra. It is listed as one of the most famous classical music pieces everyone should know and was composed by Italian musician, Gioachino Antonio Rossini (1792 - 1868). We will learn more about Rossini later in the month.

Chic Assignment No. 3 Send a postcard to a friend this summer

We love letters here on the Daily Connoisseur but when was the last time you sent a postcard? My grandmother used to send me postcards all the time and they have become a lost art. I was reminded of them when my friend, Jenny Williams from Carrot Top Paper Shop, sent me a postcard in the mail. It was so delightful to receive this card, I wanted to make this an assignment. You can often find cards at your local drug store or in more "touristy" spots in your town. You can, of course, order some online too. Surprise someone you love with a postcard this month. Later in the summer we will check out the history of postcards and read some of the most famous postcards ever sent.

Chic Assignment No. 4 Engage in conscious relaxation

I know many of you find it difficult to relax... truly relax. Our to-do lists are so long and never seem to end. We tell ourselves we will relax once we get through those lists... but the end never comes! This summer let us engage in conscious relaxation. Schedule it in. Pause what you're doing... it can wait. And relax in whatever way means most to you. You might take a nap, or lay outside in the sun, or read a book, or enjoy downtime with your kids without being "productive". This conscious relaxation has been a boon to my health because I was running on empty for a long time! We will explore conscious relaxation later in the summer too.

🗝 Skin Let's start with stating the obvious: we need to drink enough water, get enough sleep, keep stress at bay, and apply sunblock every day. These are things we all know. As far as looking presentable, it will be different for each person. If you choose to wear makeup, come up with a simple makeup routine (in the Madame Chic books, I call it "le no makeup look".) This will be an easy and manageable routine that targets that areas you'd like to "spruce up" in your appearance. My bare minimum makeup routine is brows, mascara, and lip gloss. This only takes a few minutes but improves my look dramatically and brightens my eyes. When I have time for a full makeup routine (which takes about 10 minutes), I am able to also achieve a natural, yet polished look.

Occasionally I will bake a sweet salmon with honey and mustard, or apricot jam and mustard, or maple syrup and soy sauce. I have a recipe for salmon quiche, but I always use canned salmon. I make a crust similar to what you have done, and mix the salmon with milk, a little flour and mayonnaise, and fill the crust. I like what you did with the vegetables.

Easy Salmon Recipes Every Cook Should Know

I'm sharing three easy and delicious salmon recipes you can make from a large roasted salmon filet in today's video.

I'm roasting a large filet of salmon in the oven for 20 minutes at 400 degrees F. We will use this salmon filet to make all the recipes below. These recipes are a wonderful way to make the salmon stretch to create multiple meals.

Salmon Quiche is a delicious and satisfying way to enjoy salmon. The quiche crust is easy to make too with a few simple ingredients.

Salmon Quiche

Prep time: 20 MinCook time: 55 MinTotal time: 1 H & 15 M

Ingredients

Quiche Crust

1 cup all purpose flour
1/2 tsp salt
1/4 cup extra virgin olive oil
1/4 cup cold water

Salmon Filling

1 medium onion, chopped
1 Tbs minced garlic
1 Tbs butter
2 cups shredded cheese (Swiss or Italian)
1 - 1 1/2 cups cooked salmon (14oz)
1 tomato, sliced
5 eggs
2 cups half and half
1/4 tsp salt
1/4 tsp pepper
2 Tbs parsley, chopped

Instructions

Crust Instructions

In a large bowl combine the flour and salt and mix until combined. In a separate container, combine the olive oil and cold water and whisk. Pour into the flour and mix together with a rubber spatula, and eventually knead with your hands until the dough is moist and in a ball. Press the crust into a deep dish pie pan and set aside.

Quiche Instructions

Preheat the oven to 350 degrees F.
Sauté onion and garlic in butter in a small skillet until slightly brown. Place the cooked onions and garlic in the bottom of the prepared crust. Flake the cooked salmon with your fork and place on top of the onions. Sprinkle cheese on top of salmon (reserving some of the cheese to sprinkle on top). Place the sliced tomatoes on top.
In a small bowl, whisk the eggs, cream, parsley, salt and pepper; pour over salmon mixture. Top with an extra sprinkling of cheese. Bake at 350° for 50- 55 minutes or until a knife inserted in the center comes out clean. Serve warm or cold. This makes a great breakfast as well.

Creamy Salmon Angel Hair Pasta has spinach, capers, lemon, cream... What's not to like? My daughters asks for this dish again and again.

Creamy Salmon Angel Hair with Spinach

Yield: 8

This delicious pasta has a creamed spinach taste and the added salmon and capers make it delightful.

Ingredients

12 ounces angel hair pasta
2 - 3 cups of spinach
1/2 medium onion, chopped
4 cloves of roasted garlic (optional)
1 Tbs extra virgin olive oil
2 salmon fillets, cooked
1 tsp salt
1/2 tsp pepper
1-1/4 cups heavy cream
1/2 cup white wine
1 teaspoon grated lemon zest
Juice of one lemon
A small handful of parsley, chopped
2 Tbs capers
Parmesan cheese (optional)

Instructions

Boil water for pasta and cook according to the package directions. Add spinach in the boiling water one minute before pasta is finished cooking. Drain pasta and spinach and set aside.
While the pasta is cooking, sauté onions and roasted garlic in olive oil in a skillet on medium heat until the onion is browned. Add cream, wine, capers, lemon zest, and half a squeezed lemon (reserve the other half for a final topping), chopped parsley, salt and pepper. Cook for 5 minutes on low heat, until sauce is thickened. Add the flaked salmon. Stir to combine. Add the cooked pasta and spinach. Top with extra lemon juice and parmesan cheese, if desired.

Sesame Salmon Lunch Bowl This is an easy way to serve leftover salmon. Use whatever vegetables and fruits you have on hand. The key is in the dressing. I love the sesame dressing from Yo Mama's.

Sesame Salmon Lunch Bowl

Use your favorite toppings on this delicious and easy-to-assemble salmon bowl.

Ingredients

Rice, cooked (white, brown, or any kind you prefer)
Cooked salmon
Sesame or Teriyaki marinade or sauce
Avocado, sliced
Mango, peeled and sliced
Cucumber, sliced
Carrot, sliced
Sugar Snap Peas
Cilantro and chopped green onion (optional)
Sesame seeds for topping

Instructions

There are no measurements in this recipe as it depends on how many bowls you are making. Fill each bowl with desired amount of rice. In a separate container, mix cooked salmon with desired sauce (sesame and teriyaki sauces work well here... Use 1 to 2 Tbs per salmon filet). In an attractive manner, lay the toppings on top of the rice in "stripes". Drizzle extra sauce on top. Top with chopped cilantro and sliced green onions and sesame seeds. Enjoy!

When I was younger, I took a lot of harassment about not eating breakfast or skipping lunch if I eat a brunch — basically follow a 2-meal plan and rarely snack. I also serve dinner at 5:00-5:00 and always have done. So it’s wonderful to receive validation for what I intrinsically knew. I weigh what I did in high school, moderately exercise daily, and eat healthy (cut the sugar!!). Having meaningful activities that stimulates you is important too. I am 69 and never sick and on NO medication. Neither is my husband, 76, and he credits me for the compliments we receive about how young and vital we look. Life is very good."

Intermittent Fasting Benefits: Weight Loss is Just the Beginning

I have been doing the 16:8 method of intermittent fasting for over two years and have lost over 30 lbs and have kept it off. It’s true that I started intermittent fasting with the intention of losing weight. I didn’t expect much else from it.

 Now that I’ve lost the weight, why do I continue to do it? Because the other benefits I get from intermittent fasting are incredible, and as I did my research, I found that what I was experiencing was backed by science. In today's video, we explore 5 other benefits to intermittent fasting.

1.	Increased energy Apart from weight loss, one of the lesser-known benefits of intermittent fasting is said to be an increase in energy. Eating several times throughout the day means our metabolism goes through cycles of breaking down carbohydrates and turning them into blood sugar. Eventually it is used for energy or stored in cells for later, contributing to an overall feeling of increased energy.

2.	An overall feeling of well-being I don’t feel bloated and have stomach issues anymore, which also contributes to an overall feeling of well-being. I actually enjoy the feeling I get from my nighttime fasts. I used to think that feeling was hunger, but it’s just my body getting to work on areas other than digestion. 

3.	Increased mental clarity and focus. I have noticed better clarity and focus, especially with my work. When I sit down to write, I feel so much clearer about what I’m working on. I don’t have the brain fog that I used to deal with. I feel hyper-focused. The Psychology Today article says IF gives us a sharpened cognitive focus. In fact, the whole article is on how IF can supercharge your mental focus. 

Aging backwards I have been devouring Interviews with David Sinclair of Harvard Medical Group. He purports that fasting aids in longevity. A few simple measures could delay or reverse the aging process: take care of your mental health, don't smoke, skip meals and get good sleep. Can we slow down the aging process with these steps? Perhaps! 

Better sleep I have been getting great sleep lately and I know intermittent fasting has a lot to do with it. Apparently it reinforces our circadian rhythms. Circadian rhythms are physical, mental, and behavioral changes that follow a 24-hour cycle. These natural processes respond primarily to light and dark and affect most living things, including animals, plants, and microbes. Chronobiology is the study of circadian rhythms. This article from sleepfoundation.org suggests intermittent fasting may improve the quality of your sleep by reinforcing your circadian rhythms. Your circadian rhythms manage a host of biological functions, from your appetite and metabolism to your sleep-wake cycle.

How to Look Presentable Always | 5 Tips

The key to looking presentable without daily effort lies in your preparation. You must plan to look presentable always. Preparation is key.

In today’s video I’m sharing 5 tips to help you look presentable always.

1. Service your clothes ahead of time. Make sure your clothes are steamed and ironed ahead of time. If you get behind on laundry, or if you find yourself really busy (who doesn’t?) you might, after washing your clothes, simply place them in drawers or on hangers without preparing them to be worn. Then on a busy morning, you want to wear one of your presentable core items, but it’s wrinkled or rumpled. The thought of bringing out the iron or steamer at that point in your busy morning seems too much for you so you either just wear the wrinkled garment and hope no one will notice, or you opt to wear something else… maybe something less appropriate. Set aside one day a week, preferably the same day you wash your clothes, to finish the task completely by ironing and/ or steaming whatever needs to be prepared.

2. Store your clothes properly. I like to fold my tee shirts and sweaters, but I find that even if I iron or steam them before doing so, they are still wrinkled when I go to wear them. So I like to iron them and then hang them up. I still fold some tee shirts, but the ones I know I’ll likely wear that week will be pressed and ready to go, hanging with my other core items. If you do the ten-item wardrobe, you might be in the habit of only hanging your core items and folding your extras… but there are no rules here. You can hang up your extras next to your core items if it means you will be more prepared to wear them each day.

3. Create outfits ahead of time. Spend time creating presentable outfits from the clothes you already have. This will require an hour or so in the afternoon. Have fun with it! Make yourself a cup of tea, put on some music and create outfits. You might discover outfit combinations you never thought of. Channel your inner influencer and take a mirror selfie to remind yourself of the outfit and also to see how you look in it. You can create a lookbook of sorts for this season that is custom for you.

4. Only display the current season of clothing in your wardrobe. Most people display all seasons at the same time. If you have a small closet, this is even more problematic. Your eyes will only meet confusion each morning as you try to select an outfit. You must visually and physically sort through the out-of-season clothing to even see what you have. When you do the ten-item capsule wardrobe, this is one of the first things you tackle. Think about your closet as you would a chic boutique. If you walk into a nice clothing boutique on a warm summer’s day, you would not expect to see heavy sweater dresses next to pretty sun dresses. You would immediately think something was wrong with the management of that boutique and you might walk out. You expect to see the curated summer items. Your closet should be no different. No, if you have a large walk-in closet with room to house all seasons, make sure the out-of-season items are off to the side and out of view, separate from your current season of clothing.

5. Be okay with wearing the same things repeatedly. When you find “outfit winners” you will be wearing them over and over again. They will become your go-tos. This does mean that you might wear the same things all the time. This was an initial concern for me years ago, but I have so gotten over that. I used to have the mentality that I needed a new outfit every day and people couldn’t see me in the same thing twice. Where did we get that from? Perhaps television? In television shows, the characters are in new outfits in each scene and generally don’t wear the same thing unless the director wants to convey that they have fallen on hard times. Even when you read articles on the royal family, if The Duchess of Cambridge wears the same thing twice, the media makes a big deal out of it saying she is “recycling” an outfit. No, she’s just wearing it again because it’s normal to wear an outfit more than once. When you adopt the ten-item wardrobe, you get over that eventually. You don’t care that people see you in the same outfit over and over again because you know you look good and that’s what matters anyway. Taking this stress away helps you to look presentable.

Watch this video when you must clean… but you don’t feel like it.

Welcome back to the Daily Connoisseur and another homemaking video. I’m hoping to provide inspiration for you today. You might be wondering why I’m outside stabbing sweet potatoes.

Well, that’s because the kitchen is still a hot mess from breakfast. It’s just one of those days… School is out. My kids are still in their pajamas. One of them has a cold. My work is piling up. I’m just not feeling it. We all have one of those days. But I need to get these sweet potatoes in the oven for lunch and clean up the kitchen. So I thought I’d capture it and give you a bit of encouragement because let’s face it… WE HAVE ALL BEEN THERE.

Housework is mundane and unglamorous. It requires physical effort and can often feel like the dead last thing you want to do. Dead last! We want a little excitement in our lives. Some beauty. Sometimes you just want to play with the kids. Or you have a lot of work you need to get done. How tiresome to have to clean the kitchen… again! So, you don’t feel like cleaning. Don’t feel guilty. That’s a totally normal feeling. The question is, what are you going to do about it? Can you get someone else to clean it? If not, and it’s on you, here we go. Time to shift our mental attitude. Get on that apron and those gloves, pop in those air pods to listen to music or an audio book and get to it. Here’s my little secret. In At Home with Madame Chic I talk about the pleasures of the day and how they can be goal posts for you. So, I’m going to tuck into this messy kitchen right now, and stab the potatoes, and get lunch ready and then I have a bit of a treat planned…. Tea and Henry James by the pool. Yep, that’s what I’m aiming for. The imminent pleasure of the afternoon will see me through this, friends.

You’re not alone. Do you know that? I think every homemaker in the history of the world has felt this lack of motivation at some point, if not frequently. It’s totally natural and cyclical. I equate it to burnout. We go through cycles in our homemaking. Sometimes we are on top of it all. On point. Raring to go. Loving every minute of it. Then enter an illness in the household or a work deadline, or a beautiful day outside that you’d rather frolic in. Totally normal. Well, when I go dark about wanting to do my tasks, I like to shift my mental reality. Call it triggering the Matrix. As a man thinketh in his heart so is he, after all. So what do I need to think in my heart about this situation? If I moan and prolong this inevitable task, I’m only making it worse. The other day my son had a gross-tasting medicine he had to take. He was prolonging it by taking wee bitty little sips. I told him he was prolonging the bad taste. Just get it over with, I tried to encourage him. He took it in two shots and it was done with. I’m going to take this kitchen in two shots. Because I have plans this afternoon.

I take a coconut tea loaf out of the freezer to thaw and plate lunch for today. Doesn’t it look delicious? After lunch there is a light cleanup and a few more tasks to accomplish. Let’s talk about these pleasures as our goal posts. Give yourself a treat. Something to look forward to. You are not an automaton. You can’t just break your back every day (proverbially speaking) and not reward yourself. The brain responds well to treats and they are good for your mental health. So when I am faced with a task I don’t particularly want to do, I make sure there is something special waiting for me at the end of it. This doesn’t demean the task I’m doing, rather, it exalts it and makes it more exciting. I’m able do it with vigor and more enthusiasm. If there was nothing to look forward to that might not be the case.

Afternoon tea is a daily pleasure for me. The whole ritual from start to finish is calming and centering from the pouring of the water into the pot, to the stirring of the sugar and milk. The coconut tea cake will be served with heavy cream and blueberries. I take it outside to enjoy my rest along with this volume of Henry James’ letters… Remember, make time to relax. It’s imperative. I know your to-do list is still long. There’s so much more you need to accomplish today but that can wait. Use the pleasure of the afternoon as your goal post. When you reach it and reward yourself you will feel a sense of joy.

I'm sharing 5 ways living a formal life can keep you slim in today's video. 1. Living a formal life honors set mealtimes. When you live a more formal and structured life, you generally honor mealtimes. Breakfast, lunch, teatime (if you observe it) and dinner are seated affairs, usually at a nicely set table, whether by yourself or with others. When you set the table nicely and sit down at the appointed time, you are generally more present and conscious of what you are eating. The whole experience is structured and therefore more enjoyable. People who eat at irregular times everyday at their desk or in front of the tv or even while walking around the house are not going to be aware of what they are eating. Their eating experience will be an unconscious one. They won’t even know what or how much they are eating. The experience will be sloppy.

2. A Formal Life requires structure and there is less opportunity to snack out of boredom. It has generally been my experience that when I take part in mindless snacking, it’s because I’m stressed or bored… not because I’m actually hungry. When you live a formal life, you plan your day and have a structure around it. There is less opportunity to mindlessly snack.

3. When live a more formal life, dressing well becomes a priority and when you dress well, you are likely to notice weight gain as opposed to when you are wearing comfy elastic pajamas or sweat pants.

4. When you look good, you don’t want to mindlessly snack. We recently discussed the Goblin Mode phenomenon in a 3 articles on the subject of dress video. In Goblin Mode people just give up and let themselves go. When you have given up and don’t care about your appearance or your surroundings, of course you’re not going to care about what you eat or when you eat. In fact, the article referenced “downing Eggo toaster oven waffles with hot sauce over the sink because you can’t be bothered to put them on a plate.”

5. Formal Surroundings are Likely to Affect Your Behavior. Think about how you would act in a fancy restaurant vs. a casual one. There is a difference in behavior no matter how subtle. When your surroundings are more formal, you naturally become more self-aware- I think in a good way. Your posture improves, you become aware of how you’re dressed and how you present yourself. When the food is presented to you, you take it in. People purposely seek out fancy restaurants for special occasions for this reason.

Let’s now delight in these special 50th anniversary designs: we have the double camelia (which is my personal favorite), honeysuckle, slender columbine, Barbados cottonflower, Flowered Chrysanthemum, and snowdrop crocus, which all have the prestigious back stamp displaying the 50th anniversary. Here’s what our dining room table looks like decked out in this beautiful spring Botanic Garden theme. But with the addition of the picnic hamper.. we are going to have an equally elegant experience al fresco. Let’s prepare the picnic food. I better start making the treats as the girls will be back soon for their surprise.

Let’s start off with cherry turnovers. My daughters love cherries as much as I do and these handheld pies are sure to delight them. I take one sheet of thawed puff pastry and divide it into quarters. In the center of each pastry, I place cherry pie filling. Then brush the edges with egg wash and fold into triangles. I seal the edges with a fork and brush the top with more egg wash. I cook these in the air fryer at 370 degrees for 8 minutes.

Tea sandwiches are a favorite of ours and so easy for a picnic. I start off by making smoked salmon and cucumber sandwiches. I spread some herbed cheese on the sandwich bread and place the smoked salmon and sliced cucumbers on top. I cut the crusts off and cut into triangles. For the roast beef sandwiches, I’m using a special chive cream cheese along with the roast beef. I also make more cucumber sandwiches with this spread.

I want to do a savory take on the cherry pies with this asparagus and cheese turnover. I prepare the puff pastry the same way I did for the cherries. This time I add herbed cheese and fresh asparagus. I fold into a triangle and press together to make little savory pies. These are also delicious stuffed with spinach too. I cook them in the air fryer in the same manner as the cherry turnovers. The girls are back just in time for the surprise, and they help me load the picnic hamper.

Time to lay down the blanket in our kitchen garden. To set the scene. We are enjoying homemade treats along with some French macarons, Portuguese custard tarts, and French Berry lemonade. Nothing beats the luxury of spending quality time, barefoot in the garden, with a special picnic.
