My 8 year old daughter and I were home...Alone! No boys to be seen! This just NEVER happens!

I wanted it to be a special evening, so I told her we could do "anything she wanted." Guess what she wanted to do? She wanted to cook dinner for the two of us...all by herself.

Hmmmm. I figured we would be dining on ice cream and cookies.

Instead, she emerged from the pantry carrying two cans of Chef Boyardee Beefaroni.

Well that was easy! I thought to myself.

But the Little-Foreman-in-Pink IS my daughter, and she informed me that she wanted to cook "like Mommy" and turn one thing into something else!

I was stumped, so I did what I always do and went to my trusty internet for inspiration. I found the Chef Boyardee web site, and guess what?? They actually have chef-created recipes using their products! (http://www.chefboyardee.com/recipes)

Some looked more interesting than others, but they all got our minds going, and we were determined to come up with our own creation using our Chef Boyardee Beefaroni.

We decided to make a Beefaroni Pot Pie! Yep, I said it! A Chef Boyardee Beefaroni Pot Pie! This is how we did it...

We started with our Chef Boyardee Beefaroni.

First, we heated it up on the stove.

While the Beefaroni was heating,

we mixed up one package of our favorite cornbread mix.

We got out our cute single-serving sized casserole dishes

and filled them about 2/3 of the way full with our hot Beefaroni.

Then we topped it with the cornbread batter.

(Making sure it touched the edges of the casserole to seal in the Beefaroni.)

Once they were all filled and pretty, we put them in a 400 degree oven

to cook for about 18 minutes.

When the cornbread is golden brown it's done!

We were thrilled with the results!

Not only did I get to enjoy one of my childhood favorite meals with my daughter, but we made it "our own" by changing it up.

We couldn't have done this at a better time.

Chef Boyardee is doing some really cool things to encourage you to get your kids in the kitchen too!

YOU could win free groceries for a year by using Hector Boiardi’s original recipes to create your own creations. It's January 11th 2012 and I haven't blogged yet this whole year!

...I kinda suck like that.
But in my defense, I HAVE been busy!
Let me do a quick re-cap so we can all get on with our lives. ;)

2011 was a year full of changes!
These were my children at the beginning on 2011...

Now...

Worker #1 -

- Graduated High School,
- Started College to become an electrician.
- and moved out of the house! My "Baby"! He's all grown up and gone! ugh!

Worker #2 -
Graduated High School
Moved out and turned into...

THIS!

Double UGH!
He is now stationed in Afghanistan fighting for OUR freedom.
I am proud... But I am also a worried freak on the verge of tears at any given moment!

Worker #3-

- Is a sophomore in High School,
- He was selected as one of the top students in his school and is now going to graduate NEXT YEAR!
This means he will be gone to college faster than planned! I am, once again, proud of him.
But Come ON!!! do they REALLY have to be on the FAST-TRACK to leave the house??
- He has blossomed so much this past year! He even started playing Tennis for his school team! And if you knew this kid.. and his hatred for anything that may result in sweat, You'd be SUPER shocked as well!

Worker #4 -

- He is now officially in Jr High!
How in the heck did THAT happen??
I swear it was just last week he was hiding behind my knee all shy and cuddly!
He is still a goofy-baseball-loving-smile-that-can-knock-you-off-your-feet kid...
But he is growing up... too fast!

- She is now a "Big Girl" and in the second grade. (Just ask her! She'll tell ya!)
- She is the perfect combination of Glitter & Guts!
She will play in the mud and beat up the boys...
all while wearing her rainbow and glittery ruffled Party Dress.
That's the Super-Quick-Recap about the kids...
Tomorrow?... Hang on to your hats...
I'll try to explain what I've been up to!
Man oh Man what a difference a year makes!
Thanks for hangin with me even when I prove that I am one of the Suckiest Bloggers Ever!

As I was sitting here thinking about just how old that makes me, my mind couldn't help but go back in time and remember....

Are YOU old enough to have these memories too?
(warning... LOTS of pics to follow!)

My brother and I would stay up late to watch...

Grizzly Adams

and...

EMERGENCY!

We LOVED those shows!

I cut out and mailed in countless box tops to get my very own...

They never grew...

They never lived...

I was NOT impressed!

When my family needed to go shopping, we would all load up in our brand new "fancy"...

It was awesome! My brother and I had our own rear-facing seat in the back!

No seatbelts!

When it got old and rusty, my brother would bring his ARMY man...

Tied to a string....

And we would slowly lower the brave soldier down through one of the rust holes and we would watch him bounce along behind us on the road.

Mom was not thrilled when she found out!

When we got to the store, we bought our favorite foods!

It's what the astronauts drink in SPACE!!!

How cool is THAT?!?

Knox Blocks!

yes.. They were NOT "Jell-O Jigglers" back then.

Knox Blocks were all the rage!

If we were really good in the store we were allowed to pick out a snack at the check out!

I usually went for the....

Wax Bottles!

Not only did you get to drink the sweet drink inside..

BUT, you could chew the wax like gum when you were done!

If we wanted "real" gum,

It HAD to be...

When I was in the first grade, I got my very first pair of...

They were bifocals...

They were rainbow...

I was "cool"

My amazing rainbow glasses helped me see my favorite toys!...

"Roller-Skates" of awesomeness!

We would be gone cruising around town for most of the day!

No cell phones to check in,

we just knew we had to be home by dinner...

And out mothers were just fine with that!

Dinners were cooked differently back then too!

Even the simple hot dog was cooked in a new and fancy way!...

We thought that this Hot Dog Electrocution device was the coolest thing ever!

it actually used an electric current to cook the suckers!

was that even safe?...

I was getting a little older,

Not only did I have a fancy new accessory to wear...

Headgear!

My taste in TV shows was becoming more sophisticated as well.

I never missed an episode of....

"Silver Spoons"

Oh that adorable young Ricky Schroder!

I loved you!

Fashion was changing too!

Every girl in my school had one of two hairstyles....

The "Dorothy Hamill" wedge

was ever popular!

and then it was

Farrah Fawcett "wings"

My hair was too curly to pull off either of those styles,

But I still wanted to wear the latest fads.

EEEEEK! How in the world did THAT happen?

We are having his birthday dinner tonight.
In our family, the birthday boy or girl gets to choose the menu.

I thought I would share My Favorite 16 yr old boy's Favorite meal with you!
First, he asked for...

Cajun Fettuccine Alfredo (I posted that recipe today on Craving Comfort) You can find the complete recipe and pictures by clicking the link below.
Cajun Fettuccine Alfredo

For dessert, He always requests My famous Pineapple Upside-Down Cake.
I've posted the recipe below....
Enjoy!!!

I remember my mom making Pineapple Up-Side down Cake.
I loved it!
I loved the super-sweet and moist topping with it's embedded fruit.
I loved the tender cake.
I loved everything about it!

I have tried many recipes for this classic cake.
None were as perfect as this one.

I kinda feel bad, because it's so easy and it starts with a boxed cake mix!
Try it!
I bet you'll agree, It's the Best I've ever had...
And by far, the easiest!

Best Pineapple Up-Side Down Cake.

I've driven the Malibu and The Silverado too!
but this Traverse....
Well, it was love at first drive!
It is beautiful!

The first thing that struck me was the fact that the Traverse has a full third row seat!

I just don't understand how they fit SO MUCH room into such a cute sleek-looking package!

Seriously, you can haul all your kids stuff in the Traverse and STILL have room to let the kids ride in comfort too!

The Traverse has all the "bells-n-whistles" but my favorite is the remote start.
In Texas how great would it be to be able to click a button from inside your house, have your car start and be all nice and cool by the time you go outside?!?
No more burnt thighs ladies!!
The Traverse does it!
When I heard about this feature, I always wondered how safe it was...
I mean... an unattended running car that is as beautiful as the Traverse would be something anyone would want!
I found out that it is very safe!
watch how my assistant demonstrates...

See?
It's awesome!!

There are SO many things to love about the Traverse!
and... YOU can see em all for yourself!

If you live in the Houston area, the Houston Area Chevy Dealers have a great deal for you!
RIGHT NOW!
If you go in and test drive a Malibu or Travers they will give you a $40 SpaFinders Gift Card!
Check them out on Facebook for a list of participating dealers!
Have YOU driven the Traverse?
What did YOU think?

I broke my camera... I dropped it...... It fell..... I cried.
Please excuse the pretty pathetic iPhone pics for this recipe...
The pure yummiocity of this one should earn me your forgiveness anyway!

~Dana

Chai Tea Latte.
It's that creamy, spiced drink that just makes me feel kinda sophisticated to drink

~ It Just feels fancy ~

(notice the "fancy" umbrella inside the TOTALLY un-fancy Mason Jar drinking vessel...
When I mentioned I was making Iced Chai Tea one day on Facebook, I was swarmed with requests for the recipe....
so, here goes!...
I posted the full recipe and lots of pictures on my cooking blog.
Here is a link if it looks yummy to you! Dana's Iced Chai Tea Latte.
Oh My!!

Chili-Dogs.... Yum!
Cornbread.... Yum!

I got to thinking.... why not mix the two?

The results were an AMAZING dish that everyone in my house loved and asked for seconds of!
This is more of a technique than an actual recipe..
Here we go!

The Cast Of Characters

Hot dogs, Sliced.

Cheddar Cheese, Shredded

Your favorite chili, canned or homemade.

Corn bread Homemade, or my favorite Jiffy Brand.

Your favorite individual-sized casserole dishes.

Directions

Add sliced Hot dogs to chili in a pot on the stove and heat to a simmer.

Fill your individual casserole dishes a little more than half-way with the hot chili/hotdog mixture.

3. Generously sprinkle with shredded cheese.

4. Top the cheese layer with your cornbread batter, (filling almost to the top)

5. Bake at 400 degrees for approx 10-12 min or until a toothpick inserted into the cornbread comes out clean.

6. Dig in and ENJOY!

I am also going to try this with my favorite homemade chili recipe this winter! YUM!
I also made a batch using a 9x9 square pan, took longer to cook, of course, but turned out GREAT!

It hurts and you go into it KNOWING it's gonna hurt.

I recently realized that there is another labor and delivery in child rearing that is much harder and more painful.
It's the labor of raising them right, and delivery of letting them go out into the world with out you by their side.

Worker #2 graduated ARMY Boot-camp 2 weeks ago.

He came home for 5 days following graduation.
Then he left for his "home base" in Washington state, where he quickly found out he will deploy to Afghanistan in February.

This is where the mother in me freaks out!

It seems that literally overnight you go from Mommy, who fixes things, kisses the boo-boo's, and makes sure her children are safe and sound at all times to someone who has no control or say-so in the well-being of her child.

You are expected to be standing on the sidelines, chest puffed out with pride, waving your American flag because your son is amazingly brave, he is patriotic, he is an American Soldier!

While I AM indeed So very proud of him.

I am also SO very scared.

Never... EVER has there been a time in his life with me that I haven't known where he was....
Never EVER has there been a time I didn't know he was ok...
He has never been somewhere that I could not contact him or call to make sure he was ok...
And.... Never EVER was someone actually shooting at him!

How am I supposed to do this?
How can things be ok?
How can we be a family with one of us in harms way?
How will we laugh, knowing he might be "out there" somewhere scared?
How will we sleep without visions of what might be happening in some sandy place on the other side of the world at that very second?
How can everything go on as "usual" when I know my child is in danger?!?

How do I DO THIS?

THIS is the Labor and Delivery that really hurts!

I'm not even gonna say how long it's been since my last real blog post...
I'm not gonna explain myself...

Lets just play catch-up and everyone will be up to speed.

~ Three kids Graduated.
~ I cried.
~ Three kids moved out.
~ I celebrated!
.... Then I cried.
~ Texas had (and is still having) a major drought.
~ Worker #2 went to ARMY Bootcamp.
~ I cried.
~ My garden shriveled and died.
~ My husband and I built an awesome Tortoise habitat.
~ I went fishing.
~ My girlfriend and I built a new chicken pen/yard.
... Our nails will never be the same.
~ I cooked.
~ I did NOT clean.... enough.
~ I broke a tooth.
~ Worker #1 started college.
~ I shot greedy squirrels out of my pecan trees.
~ We drove to Georgia.
~ Worker #2 graduated Bootcamp...
.... I <strike>sobbed </strike> cried.
~ I worked.
~ I got a really cool Tortoise from a friend of my sons.
~ I started hard-core couponing.
~ I found out the new Tortoise is one of the ONLY endangered ones in Texas that you cannot even touch without getting a hefty fine.
~ I had my hair colored to match my cow.
~ I had lots of phone calls from friendly Texas State & Wildlife personnel.
~ I perfected the recipe for Iced Coffee.
~ I got hate mail.
~ I got rid of the super-cool Tortoise before I got hauled away to prison.
~ Worker #2 left to go to his "home base" in Washington State and might not come home for over 3 years.
~ I cried.
~ I had lots of meetings.
~ I won a trip to Fiji!!
~ I passed out.
~ I got back on my diet hot and heavy so I won't be mistaken for a beached whale in Fiji.
~ I finally wrote a blog post.

The End
... I'm baaaaaaack

I live on a farm...
I am surrounded by various farm animals...
I feed those animals....
I protect those animals....
I love the animals...
and, we even eat those animals...

Needless to say, Farm animals are a HUGE part of our life...

I don't understand why I got such a strange look,
when I drove into the big city to get my hair done....
I took a picture to my hairdresser to show her what I wanted my hair to look like,
Everyone does that right?!?!

Here...
I'll show you....

This is the picture I brought to my hairdresser....

I explained to her that I wanted my hair to match the rear-end of my red Bull.

What?!?!

It's a PRETTY color!!!

yeah.... she wasn't able to keep a straight face either!

I bet a local hairdresser would TOTALLY understand!

But, if there WERE any local hairdressers here, I wouldn't be living in the country!

Oh!
By The Way....

"After"

After she composed herself and all the other hairdressers quit laughing at her backwoods client,
I think she did a really good job!

I LOVE it!

I'm talking about my brand new Black & Pink....

Heelys!!
Yep, these babies are NOT one of my kids shoes.
They are all mine!

Remember a year or so ago when Heelys were all the rage with every kid in school?
Well... They are not just for kids!

Not only do they look all fancy-like (and match my Jeep)
But they were easier to use than I thought they would be!

Now, before you shake your head, or ask me what color cast I am now wearing, let me tell you about them.
The really cool thing about Heelys is the fact that YOU choose when you want to use the wheels!
BY shifting your weight from the back to the front of your foot, you control when and if you are gliding or walking normally.

I won't lie and tell you I wasn't worried when I laced them onto my feet, I mean come one, I am NOT known for my gracefulness withOUT wheels!
But, They are surprisingly easy to use!
and riding/gliding around on them has made me use muscles I forgot I had!

Thats right!
I look hip and cool, but my butt, calves and thighs are getting a work-out! Whats NOT to love?

If you don;t believe me,
Look for yourself!

How to use Heelys
Or... read this!

The Heelys Playbook

Ok Moms! It's OUR Time!
Get your wheels on!!

If for no other reason than it's super-fun to glide through the isles at the grocery store!!

I wrote this post to tell you my 100% honest thoughts about my Heelys, I was given a pair of Heelys to review in exchange for this post.
