Refogue com 1 e 1/2 cebola picada.&lt;/p&gt;  &lt;p&gt;Junte o tomata, os dois tipos de pimentão e 1 folha de louro.Deixe ferver em fogo baixo até que o tomate de desmanche.&amp;#160; Adicione o vinho, o sal, a pimenta e deixe no fogo por mais 5 minutos.&amp;#160; Junte a azeitona&amp;#160; e o cheiro-verde. &lt;/p&gt;  &lt;p&gt;Para cozinhar o macarrão, leve ao fogo uma panela grande, com cerca de 4 litros de água. Junte o sal, a folha de louro restante, o azeite e 1/2 cebola. &lt;/p&gt;  &lt;p&gt;Tampe e deixe ferver até borbulhar bem. Vá juntando aos poucos o espaguete para que a fervura não se interrompa (Tome cuidado para não quebrar os fios). Cozinhe “al dente”, por 5 a 7 minutos, e escorra. 1/2 Kg mais 1/2 xícara de chá de farinha de trigo&lt;br /&gt;
4 ovos&lt;br /&gt;
1 colher de café de sal&lt;br /&gt;
1 colher de sopa de óleo&lt;br /&gt;

Modo de fazer&lt;/h2&gt;
&lt;/div&gt;
Peneire 1/2 Kg de farinha de trigo sobre mármore e faça uma cova no centro. Coloque aí os ovos inteiros, o sal, o óleo.&lt;br /&gt;
Vá misturando com as pontas dos dedos, agregando sempre mais farinha até que ela e os ovos estejam bem misturados.&lt;br /&gt;
Faça uma bola, corte ao meio, coloque um pedaço sobre o outro e comece a amassar com as mãos. Repita essa operação por mais três vezes. Cubra com um guardanapo e deixe repousar durante uma noite.&lt;br /&gt;
Passa a massa pela máquina de macarrão cortando-a na forma desejada (Para abrir com o rolo, polvilhe farinha de trigo sobre o mármore e torne a amassar e a distender a massa. Abra-a bem fina, num retângulo. Faça um rolo com cada retângulo e corte o macarrão na largura que quiser).&lt;br /&gt;
Deixe o macarrão secando pendurado no varal, durante algumas horas. Cozinhe em bastante água com sal, por 5 minutos.&lt;br /&gt;
&lt;strong&gt;Variação:&lt;/strong&gt; Para preparar a massa caseira verde, ao iniciar a preparaçãom junte 1/2 maço de espinafre abafado, espremido e bem batido à farinha de trigo. O espinafre deve estar sob a forma de pasta. &lt;br /&gt;

Leve numa frigideira pequena a manteiga, aqueça e refogue ligeiramente a cebola, apenas para murchar e não para dourar. Deixe amornar, junte a polpa de melancia batida com o limão e ligue com o merengue, feito com as clara e o açúcar. &lt;/p&gt;  &lt;p&gt;Mexa levemente até começar a engrossar e coloque na forma, previamente untada com óleo e molhada com água. &lt;/p&gt;  &lt;p&gt;Leve à geladeira por 4 a 5 horas. Leve ao fogo em banho-maria até espumar e engrossar ligeiramente. &lt;/p&gt;  &lt;p&gt;Deixe esfriar e leve ao congelador até engrossar. Bata e acrescente o coco ralado. Retire a polpa e corte em pedacinhos., deixando alguns maiores para decorar. De manhã no dia seguinte, esfregar os grãos deixando sair as cascas. Passar os grãos pelo processador.&lt;/div&gt;  &lt;p&gt;Numa tigela, colocar o grão-de-bico. Adicionar a cebola ralada, a hortelã, os tomates, a água e misturar bem. Juntar a farinha de trigo e misturar bem, deve ficar uma massa mole.&lt;/p&gt;  &lt;p&gt;Numa frgideira funda, colocar o óleo para esquentar bem. Juntar 1 xícara de café de água e deixar cozinhar em fogo brando até os líquidos evaporarem. Desmanchar as cebolas cozidas com a ajuda de uma colher, juntá-las à carne, adicionar o queijo, sal e pimenta do reino e misturar bem.&lt;/p&gt;  &lt;p&gt;Derreter o restante da manteiga numa frigiderinha. Numa forma untar, deitar a metade da massa folhada, untando cada folha com a manteiga derretida. Adicionar a carne moída e cobrir com o restante da massa folhada sempre untada com manteiga. Na verdade, o segredo é o uso da lingüiça de carne de porco que fazem na ilha. Mas é claro pode ser feita com outro tipo de lingüiça.&lt;/p&gt;  &lt;h2&gt;Ingredientes&lt;/h2&gt;  &lt;p&gt;4 lingüiças médias&lt;/p&gt;  &lt;p&gt;4 batatas cortadas em rodelas finas&lt;/p&gt;  &lt;p&gt;2/3 xícara de chá de queijo ralado&lt;/p&gt;  &lt;p&gt;1/2 xícara de chá de leite&lt;/p&gt;  &lt;p&gt;8 ovos&lt;/p&gt;  &lt;p&gt;um pouco de hortelã picada&lt;/p&gt;  &lt;p&gt;sal &lt;/p&gt;  &lt;p&gt;pimenta do reino&lt;/p&gt;  &lt;p&gt;azeite para fritar&lt;/p&gt;  &lt;h2&gt;Modo de fazer&lt;/h2&gt;  &lt;p&gt;Numa frigideira antiaderente colocar azeite o suficiente para cobrir o fundo da frigideira, e quando aquecer um pouco, fritar as lingüiças inteiras previamente perfuradas com um garfo, por mais ou menos 5 minutos.&lt;/p&gt;  &lt;p&gt;Retirar as lingüiças a frigideira e colocar sobre toalha de papel mantendo-as quentes. Colocar um pouco mais de óleo para fritar as batatas já salgadas, até amolecerem um pouco. Retirar da frigideira o excesso óleo que sobrou depois de fritar as batatas.&lt;/p&gt;  &lt;p&gt;Bater muito bem os ovos com o leite, juntar o queijo, a hortelã, sal e pimenta do reino a gosto.&lt;/p&gt;  &lt;p&gt;Juntar as lingüiças novamente à frigideira com as batatas. Despejar por cima a mistura dos ovos batidos, e tampar a frigideira deixando cozinhar em fogo médio. Dar uma olhada no fundo da omelete com a ajuda de uma espátula. Quando a carne começar a dourar, polvilhar a farinha de trigo e misturar com uma colher de pau para não colar.&lt;/p&gt;  &lt;p&gt;Adicionar o alho e quando dourar, adicionar o vinagre e o vinho. Quando o vinagre e o vinho evaporarem, adicionar o cubo de caldo de carne, a salsinha e 1 1/2 xícara de água. Forre a assadeira com a massa, reservando um terço para cobri-las. Coloque o recheio.&lt;/p&gt;  &lt;p&gt;Decore com rodelas ou tiras feitas com a massa. Pincele com a gema e asse em forno moderadamente quente. Depois de assado e frio, cortes-os em pedaços e passe no açúcar granulado misturado com a canela.&lt;/p&gt;  &lt;br /&gt;  &lt;div dir="ltr" style="text-align: left" trbidi="on"&gt;   &lt;h3&gt;Recheio&lt;/h3&gt; &lt;/div&gt;  &lt;p&gt;Junte o açúcar com a água e faça uma calda grossa. Acrescente o abacaxi e o coco, mexa e retire do fogo. Deixe esfriar, ligue com as gemas e leve de novo ao fogo, mexendo sempre, até soltar-se do fundo da panela.
