February 2, 2012 - Breakfast Crepe

Workout

I started the day off with a Nike Trainer Club workout while watching The Lying Game. Yes, I do have guilty pleasure television shows.

Breakfast

Since we had already made crepe batter in the house I knew I had to have one for breakfast. I made one and added some cheese and ham. Holy delicious.

Snack

Lunch
For lunch I had a packed sandwich from the day before. Worked out pretty perfect. It was just a veggie basil, tomato, mozzarella sandwich.

Dinner
After work I met up with a few friends for a UVA meet up. I didn't go there, but several of my friends did, and I was invited to learn about the economics of craft beer and enjoy some tasty NXNW food. It was a lovely night, I was really glad I went. I ended up just eating a few of their appetizers for dinner. They were quite tasty and quite garlicky.

February 1, 2012 - Crepe Surprise

Breakfast

I ended up having some cereal for breakfast.

Lunch at Spicy Pickle
Although I spent my most of my morning at a career fair to recruit interns, I was able to come back to work with a sandwich waiting for me. Lunch was catered by work. I ended up eating a veggie sandwich and some chips. Delicious.

Dinner
For dinner I had some green beans.

And then some leftover lasagna.

Later Mike got home and made crepes. I ended up having one with nutella.

A friend was over to bring us some sympathy beer and cake. It was perfect. We had a good time catching up. Although we ended up eating the cake on a later date. The cake though was a carrot cake and it was delicious. Mmmm.

January 31, 2012 - Training, Taco Deli & Peanut Curry

Breakfast

We had breakfast brought to us from my boss because of more training. I had 1.5 kolaches.

Lunch at Taco Deli
After training a few of us went out to Taco Deli, my favorite lunch spot in Austin hands down. Mmm this amazing taco just fills me with joy.

The Beautiful New Stove
Mike and I got a new stove recently and I wanted to show you. It has 5 burners, including an oval shaped one in the center for cooking things like fish or making pancakes on a griddle. Amazing.

Dinner
Although I have a new pretty stove I ended up some leftover peanut curry soup. I ate the rest of it and am sad. I want to make more of this stat.

January 30, 2012 - Comfort

Breakfast

We had no food in our fridge that sounded good for breakfast so I just had a pb & j bagel at work.

Lunch
We had plans for some training at work so they ended up buying us lunch. I got a sandwich from Jason's Deli.

And a cookie. It was good, but I regretted eating it because I definitely did not need that entire cookie.

Dinner
After work I went to the grocery store to pick up a few basics, then I went over to my friend Lindsay's house who had made Mike and I some delicious biscotti. It was really nice seeing her and having her comfort in hug and cookie form.

For dinner I ended up just eating cereal. I wasn't really in the mood to cook.

January 29, 2012 - The Egg & I

Breakfast at The Egg & I

I ended up waking up and taking my father to the airport. He came out to help support the family. It was really nice to see him and I was really glad that he was able to meet Diva at Christmas. After the airport we went to brunch with Dean and the Iowa Family. I had never heard of this place before but Dean said that him and Diva went there before. I got the french toast special, which was essentially eggs and sausage between french toast. I ended up eating half of this. I wanted to eat more because it was so delicious, but regretted even eating half of it because I was beyond full after.

Although not the best picture, here is proof of the bird again the next day.

Dinner

Later that day we met up with some of Dean's extended family in Houston for a family dinner. They do a family dinner ever single weekend and I love it. I have always wanted to have something like that. Perhaps someday we can.

They were serving make your own fajitas. This was a spectacular dinner, especially with those jalapeno poppers. Mmm.

The whole family shared even more stories about Diva, and how she affected each and everyone of them, and how she even helped several of their friends. It was a very therapeutic dinner.

After the dinner, Mike and I headed back to Austin for a long yet mostly uneventful drive home. We did end up hitting something on the side of the road, but no flat tire this time. We were paranoid though and stopped and made sure.

January 28, 2012 - The Funeral

Breakfast

We started our morning off with a tasty breakfast. Look how perfect that egg was cooked? Definitely not by me. Mike and I keep talking about how one cooks an egg so well. haha.

Early that morning we saw this bird in the tree. We thought it was so strange because this is not a bird one normally sees in a backyard. We spent a lot of the morning trying to figure it out. We finally did, but I somehow forgot the name. I liked to call it the penguin bird. We kept talking about how it mus be Diva watching in on us. The funnier thing is that this bird stayed at the house off and on in the same spot for several days after and might still be there. With this, we definitely just thought of it as Diva watching over us.

We also spent some of the morning trying to take cute photos of the dogs.

Lunch was another sandwich and salad.

The Funeral
The funeral ended up being uplifting as well, similar to the viewing. One of Diva's closest friends and boss spoke about her and told really great stories that represented her very well. After the funeral we went to a reception after and spent the time sharing fun stories about Diva.

Dinner
Once the funeral was officially over we went back home and talked with close friends and family until late in the night. We ended up eating a lot of crackers and then getting some pizza, from the the place that Diva loved. We continued to share stories about Diva, honoring her in the only way we knew we could at the time.

January 27, 2012 - The Viewing

Breakfast

One benefit of staying at La Quinta, despite having to sneak our dogs in, was that they served us a pretty great breakfast. I ended up getting the blueberry texas shaped waffle with some pecans. How obnoxious were these Texas waffles? I love how much Texans love Texas. It makes me smile.

Lunch
Once we got the tires fixed, and finished our journey to Dean's place we were able to get some lunch in us. We ended up showing up just in time for sandwiches. Dean's family from Iowa was there which was really nice. We hadn't seen them in awhile and they are amazing people. It was nice to have them there to support the family and make everything a bit better.

Dinner
We ended up eating an early dinner, because we were headed to the Viewing for Diva. I had some meatloaf that was pretty fantastic, and some salad and green beans.

The Viewing
The viewing was actually much better than I thought it would be. It was mostly just family and friends gathering and telling amazing stories about Diva and celebrating her life. Mike and I ended up smiling most of the time with all the great stories we were told. After each story, Mike and I kept commenting about how we had no idea how Diva made so much time to touch so many people's lives. It was a great tribute to her and made us all feel really happy that with such a short life, she was able to make so much out of it. It was inspiring.

January 26, 2012 - An Adventure

Breakfast. I

I started the day off with some Lucky Charms.

Lunch
On my lunch break I went shopping to try to find something to wear to the funeral on Saturday. I didn't find what I wanted and decided to just go with what I had at home already. I ended up picking up some fruit "sushi" for lunch and a spring roll.

Dinner
After work I went home and attempted to eat some leftover pho. It was gross though. I opted to just eat a few crackers instead. Then Mike and I packed and were on our way to Houston.

This is when the adventure starts. The drive to Houston is about 3.5 hours (at least to the part we needed to end up in). We ended up leaving a lot later than we meant to. The roads were traffic free at least, until we hit Columbus. We suddenly got into dead stop traffic. We decided to just exit the freeway and grab some fast food to wait it out since neither of us really ate a nice dinner. Once we were done eating we got onto the freeway and there was no traffic. Mike and I were shocked. We looked to the side of the freeway and saw the vehicles that must have been the cause of the traffic because there were three all smashed up. Then all of a sudden we hear a bad noise, and know immediately that we got a flat tire. We pull over to the side of the freeway, Mike gets out and checks it and yes, it is completely slashed. The freeway area we were at was completely dark and only semi trucks were driving through it. We were afraid we would get hit if we attempted to change the tire. We ended up pulling off the freeway onto the feeder, into a ditch essentially at a crazy angle.

Although this was safer, because we were not completely off the road, we could not attempt to change the tire. At this point it was about 1030 at night. I called AAA, because we needed something to light the area up so we wouldn't get hit. AAA ended up showing up 1.5 hours later after many phone calls. The guy was really nice, and asked where we were headed. When we said to our mom's funeral, he was very sympathetic.

Once we got the tire fixed, and got back on the road, I looked at how many miles it would take to get to our destination. It was 98 miles, and the donut was only supposed to go 100. We were exhausted at this point, and were wary of getting another flat tire. We decided to just get a hotel and get the tire changed in the morning. We both were talking about how all we wanted was a hot shower, and kept predicting other things that could possibly go wrong, because we just figured with all the things that had been going wrong for us, there must be more out there just waiting. I know a terrible way to look at it, but we were really just laughing about it.

Anyway so we get to Motel 6, because it is one of the only motels that accepts dogs. We go inside and they tell us there is no hot water in the hotel right now. And we ask if there is at least a discount for that, and they just say they can take $10 off. A $10 discount for no hot water? We decided to just leave. It was now about 130am.

We go to the La Quinta across the street. They have a room, but do not accept dogs. We ended up just sneaking our dogs in, by wrapping them up in blankets. It was really hilarious looking and obnoxious to be honest. But the dogs had to go somewhere right? We did end up getting our hot shower at least, despite the drama. The dogs ended up barking in the morning once the house keeper came by and blew our cover. While leaving we wrapped them up anyway, and on our way out the house keepers laughed at our obnoxious situation. It was pretty hilarious.

January 25, 2012 - Woody Allen Double Feature

I ended up not having time to eat lunch at home so I just had a bagel once I got to work.

Lunch
Lunch was catered at work. Although it looks like this might be lasagna it was really a veggie enchilada and some salad and guacamole. It was quite tasty.

Dinner
After work I met up with Mike to watch a Woody Allen double feature at the Paramount. We both love Woody Allen and were really excited to watch it. During the break between movies I got a veggie pita, and it was awesome. I was really really glad to have decided on this. I considered falafel at first because its delicious but they would have cooked it on the same grill with chicken so I just got ingredients that wasn't going on the grill. It worked out well so no complaints here.

January 24, 2012 - Veggies in the Microwave Fail

Breakfast

I started off my Tuesday with some Lucky Charms.

Lunch
I ended up eating at my desk for lunch. I had some leftover pad thai from the night before.

Dinner
I attempted to make a bunch of veggies in the microwave. The stove was out of commission and we needed to make a lot of of our veggies because we were heading out of town that weekend. I spent a long time trying to make it happen. I went to eat it but then I discovered most of the veggies were a bit under cooked still. In the mix is rutabaga, beets, broccoli, and some great northern beans.

I attempted to eat a few bites but then ended up just freezing it and putting it off until I had a stove to cook them better. I then ended up just eating some leftover pizza. It was kind of gross though, far too old and chewy.

January 23, 2012 - Good Friends + Fun Drinks

Breakfast was eaten on the way to work.

Lunch
On Friday, when I wasn't able to go to work, I ended up missing the opportunity to go to lunch with the intern that I am managing for her first team lunch. My team ended up moving it to Monday so that I could be there. We ended up going to Hai Ky, and I ordered the pad thai with tofu. For some reason I knew their pad thai was sub standard, but I wanted it anyway.

Dinner
After work I had plans to go home and rest but Mike really wanted distraction. He suggest we get pho so we went to Phonatics, near my work, and got some pho and shared a bahn mi sandwich. Both of which were awesome.

After dinner we ended up meeting up with a few friends at Trudy's for Mexican Martini Monday's. Those were definitely necessary for the state we were in. Good friends and fun drinks equals feeling a tiny bit better about life.

January 22, 2012 - Doggie Dinner

Breakfast

We ended up starting out the morning with another bowl of raisin bran with bananas. Dean taught me the trick to cut them just right so you have as many bites of banana as possible.

Lunch
I ended up eating leftover pasta for dinner. We ended up doing a few errands and more planning.

This was Emily's favorite spot all weekend.

Dinner
Dinner was provided for us from a family friend. They bought some delicious BBQ. Normally I am not a huge fan but this kind was pretty good, and hit the spot. So I have a funny story about this dinner. The whole family walked outside to chat in the garage, and left the food on the counter unattended for about 5 minutes. Within those 5 minutes the dogs had devoured an entire carton of brisket and sausage. We were amazed they could get down to business so quickly.

Mike ended up driving home that night. We made it home safely, but were exhausted once we got home.

January 21, 2012 - Planning

Breakfast

I ended up being the 2nd to wake up. I joined Dean for some cereal and some conversation. The picture is blurry because I wasn't sure if it was rude to take a photo under these circumstances. I helped Dean write an email to a pastor to ask her to speak at the funeral.

We ended up having an impromptu meeting with the pastor at the church and set it up to meet with her after the funeral home arrangements.

Lunch
I ended up eating a peanut butter sandwich for lunch.

At 1:30pm Dean, Mike and Steven and I went to the funeral home to make the arrangements. I had never done anything like this and it was very hard. There were moments when all of us just froze, felt helpless, felt like we couldn't move forward another second. We all fought through somehow, and made the appropriate arrangements.

Once home we were already getting flowers, these ones were from my Step Dad and Mom. They were beautiful. Diva had a fondness for yellow flowers so these were perfect.

The pastor stopped by, shortly after arriving home. She is an amazing woman and really helped us all focus on more of the positive things and understand that being upset is a good normal thing. It was also relieving to know Diva would have been exceptionally happy with this pastor if she had gotten to know her as well as we did. She had met her at least once before and talked with her about a cancer survivorship program she was throwing. The pastor had a lot of the same beliefs as Diva which was very comforting. I feel like from the moment we met with her things got a little better for us all.

Dinner
Later, Mike, Steven and I ended up going to target to pick up a few things we forgot to pack, and to pick up a few food items so everyone had something to eat. I ended up picking up ingredients to make home made spaghetti. For some reason Italian food is always my comfort food so I was hoping it would be for them as well.

We spent the rest of the evening together again. We just started to talk about stories of Diva to help make us feel better.

January 20, 2012 - The Day Tragedy Struck

The Day Tragedy Struck

The morning of January 20, 2012, I hit snooze a few times and decided to skip my workout. This is the first time that skipping a workout was ever a good idea. Mike and I got a phone call from Dean (his Dad) 10 minutes after I was supposed to be at the gym. I will not go into too many personal details, but it was the phone call where we found out that Diva, my mother in law, had passed away that morning.

Mike and I spent a bit freaking out, being upset and what not, and immediately decided we were going to Houston immediately. We packed up our stuff, our dogs, sent out emails to our employers and were on our way. We knew we needed to be with Dean, be with family, as soon as possible.

For whatever reason we were unable to get a hold of Michael's brother. We kept trying to call him along the drive to Houston, a 3.5 hour drive. We had no idea what his address was (he lives in Houston though) so we couldn't just go to his house to tell him in person.

We ended up stopping at a donut shop so Mike could make a call to him before we got to his parents house. I picked up some kolaches and donuts while he made the phone call in case the family and friends needed some food. Still no answer.

We met up with Dean and tried to comfort him as much as possible. Then we decided that we needed to get to Steven as fast as possible. It was already 12pm and he needed to know. We got his address from Dean and drove 40 minutes back to his place. After knocking on his door a few times he got up and we told him. My heart was breaking for everyone. Into a million pieces. All of this was utterly soul crushing.

After, we ended up getting the strength to go back to Dean's. We spent the day making funeral arrangements and helping Dean call friends and family. It was the hardest day of my life, and I am sure it will always be the hardest day in Michael's life.

Eventually we decided we needed to eat dinner. A neighbor brought over a casserole, but of course it had chicken in it. That is the main ingredient in most casseroles. I took advantage of this, and called my mom and talked to her on my way to get a subway sandwich.

We spent the rest of the evening spending time together, but mostly remained in silence and tears.

January 19, 2012 - Working Through Lunch

I ended up doing a Nike Trainer workout for 45 minutes. Those workouts are some of the most intense workouts ever.

Breakfast

I ended up eating a half of a bagel with pb and jelly. A childhood favorite.

Snack

Lunch
Lunch was leftovers from 2 nights before. It was still quite delicious. I ate it at my desk and wished I would have left my desk for a bit instead of just staying there. Often if I eat at my desk before I leave I never actually leave. I need to figure this one out. I really need to get out of the office at lunch instead of stay there and work through. It makes me so much more productive and happy if I do that. It benefits everyone.

Dinner
Mike really wanted pizza for dinner so I decided to give in. At least the pizza we chose was fantastic.

January 18, 2012 - Bistrot Mirabelle

Workout

I started out my morning with a morning workout. I did an interval run and a dumbell class act skimble workout. It was nice.

Breakfast

I had a slice of toast with some peanut butter and jelly. So good.

Before I left the house I got to see these cuties in bed still. It was hard to leave.

Snack

Lunch
Lunch was catered at work from an Indian Buffet place. I had some chana masala, some cauliflower curry and naan and a samosa.

Bistrot Mirabelle
Teddy got invited to a media event at Bistrot Mirabelle. She invited me as a plus one. Don't think the people there knew I was also a food blogger, but at least I was still treated as one. haha.

Although this menu is hard to see, it was a lovely one.

When I got there I started with a Duck Rilletes. Tell me I would like this 3 years ago, I would call you crazy. But I do. This is delicious.

This was the highlight of the meal, and boy was it a highlight. It was mussels in a delicious buttery white wine sauce with some grilled onions and french fries. This was heaven in my mouth. I have been thinking about it for days.

This was the steak tartar. Although I am not a big fan of dijon, this was still delicious.

I also had the linguine and absolutely loved it all. They gave us a gift card and you KNOW I will be back. Holy moly it was delicious. I canNOT wait to go back.

Once I got home I also saw these cutie pies. They really do love to cuddle on top of each other. I can't help but smile every time I see it. haha.

January 17, 2012 - Major Random Win

Lunch
Another reason why my lunch the day before was a mistake, I had the leftovers available at my disposal. Yes I ate this delicious greasy meal twice. I need to remind myself only to take healthy meals home as leftovers.

Dinner
For dinner I ended up making a really random meal. It included beets, polenta, cabbage, bok choy, khorabi and parsnips and sweet potato with jalapeno sausage and a blueberry habanero sauce. Sounds crazy but it was awesome. Mike even liked it. Major random win.

January 16, 2012 - On the Other Hand

I woke up exhausted and had some peanut butter pretzels for breakfast again.

Lunch at Gloria's
A few people at work went to Gloria's for lunch. I ended up getting cheese enchiladas which were delicious but should have been avoided. I only ate about half, but then saved it for later.

Dinner
After work I met up with Mike at the Alamo Drafthouse Village to watch Haywire for an Austin Film Society event. I ended up getting the asain chicken wrap with tofu instead of chicken. The movie was okay, but not my favorite. The food on the other hand was delicious.

January 15, 2011 - One Last Brunch

Breakfast

I started the day off with a smoothie. I knew I had plans for brunch, but it was going to be at 1230. I was very glad that I barely drank during the party so was only hungry and tired when I woke up.

Brunch at East Side Cafe
All of my friends, and Mike's parents were all to meet at the East Side Cafe. We were celebrating my friends last day in town, another one leaving the country, and my mother in law's birthday. This actually was the last time Mike and I got to hang out with Diva. We wish now that we would have made this event a family only event, but then are also happy that Diva got to see us with a big group of friends that all love us and make us happy. I think at worst, sharing this brunch with her and our friends let her know that we have a great support system, and are all happy in our lives.

Now back to the food. I started out with a blueberry muffin. This was one that Diva was jealous of. So jealous she ordered her own, even though I offered to give her mine.

I ended up ordering the eggs benedict. I have never ordered this before, but I have tried it before when Mike ordered it in the past, and knew I had to have it. It was delicious. I ended up eating about half of this, and ended up regretting it shortly after, just because I was so full.

Here is my friend who is moving to Brazil. Diva offered her advice about Brazil, it was nice having them talk. All of my friends knew her and all used her as a source of information. It was so amazing.

Here is Mike and Diva (my mother in law). She had fallen down in Brazil over the New Year so she had a bruise on her face.

After brunch, the in laws left because they had a long trip back. We now wish we got to stay with them longer that day, but that is life. Mike and I spent the rest of the day watching The Wire and hanging out.

Dinner

I ended up eating broccoli, with psata sauce, Parmesan and toasted cashews for dinner. Kind of a weird dinner, but it was still good.

After dinner Mike and I headed over to a friends house for a final goodbye party. I only ended up staying for 2 hours, because I was utterly exhausted, and then promptly got stuck in traffic on my way home. Oops.

January 14, 2011 - Brunch & A Party

Brunch at Takoba

After a late night, a bunch of my friends headed over to Takoba for brunch. I ended up getting the migas.

I had a lot of fun with my friend from out of town.

My friends who I see on a regular basis.

And my friend who is about to move to Brazil for her internship.

We were all exhausted that day but kept it together because we had a party to help throw that night.

Dinner & A Party
We helped my friend throw a party for her birthday and going away party. It was also great because another friend was in from out of town. We ended up making a lot of the appetizers and making sure we made a birthday cake (strawberry shortcake) and brought party supplies.

In the midst of getting ready we ended up going to torchys for some tacos. I got the shrimp tacos. I was super excited to find out that I could get shrimp that wasn't fried. I chose that because sometimes if shrimp is fried in the same cooker as chicken I get sick.

We ended up staying out really late and having a load of fun. I have such amazing friends and am filled with joy that I am lucky enough to have them each and every time we hang out.

January 13, 2011 - East Side Fun

I knew I needed a tasty breakfast so I made croissants for breakfast. It really hit the spot.

Lunch
I ended up eating some pasta at my desk for lunch. I apologize for the terrible photo. No idea how that happened.

After Work
After work I ended up going to my friends house to meet up to go out later. I ended up getting there before she got home, and waited in my car. While waiting in my car her cat wanted to visit. She kept trying to get into my car. It was pretty hilarious. We like to call this one Zombie Annie.

Dinner
We ended up going to the Liberty Bar, so that I could show my friend East Side Kings. We ended up getting the pho sandwiches.

Later on we ended up going to some other food trailers, where I got some guacamole. I was going to get a regular meal but all the food prep was too easily contaminated with chicken so I decided to not risk it and get that. After this we went to Rio Rita, where I got a delicious jalapeno margarita. It had a real kick to it. I ended up going home very early because I was exhausted. It wasn't that early, I was able to stay out until 12am, but everyone else stayed out until about 2am.

January 12, 2011 - Much Later Than Intended

I ended up getting to work a bit later than usual and ended up eating leftovers from lunch the day before. I had a spring roll and a crab rangoon for lunch.

Dinner
After work I had an egg salad sandwich. Then I ended up heading out with mike and some friends to The East Side Showroom with a few friends that were in from out of town. We had a lot of fun and ended up staying out much later than I intended. Oops.

January 11, 2012 - Peanut Sauce Obsession

Lunch was catered at work by Firebowl. I ended up getting a spring roll, a crab rangoon an some of the veggie stir fry meals.

Snack
I ended up having another tofu spring roll as a snack. Delicious. I am kind of obsessed with spring rolls right now. Not sure if it is the innards or just the peanut sauce.

Dinner
I ended up needing a comfort meal, which called for a nice bowl of pasta with some cheese. So delicious.

January 10, 2012 - Happy Hour at La Condessa

Another breakfast of peanut butter pretzels.

Lunch
At lunch I went to panera bread and did a little bit of reading there as well. I got the sandwich and soup combo. The roast beef sandwich and the black bean soup. Delicious.

Happy Hour & Dinner
After work we had plans for happy hour at La Condessa. One of my good friends was in from out of town, and another one is about to move to Brazil so we knew we needed to get together. I ended up getting this lovely cocktail as well as a corn on the cob. It sounds funny, but this kind had cotija cheese on it, red pepper and more. It was delicious. After happy hour we ended up going to the Gingerman and getting a few drinks and chatting it up.

We ended up getting home late, and by the time we got there the pups were exhausted.

Workout
I started the morning out with a Nike Trainer workout. Definitely an intense 30 minute workout.

Breakfast
For some reason I have been randomly eating peanut butter pretzels for my breakfast. Protein, carbs and delicious? Sign me up.

Lunch
At lunch I went to Einsteins and got a bagel thin sandwich. I spent my lunch doing some reading. It was nice.

Dinner
This dinner was completely random. I knew I wanted some veggies, and an egg. I ended up using the grits as the grain/carb. It was randomly delicious. There was some broccoli, khorabi, and radishes and some ham. I would like this meal again, right now, please.

Puppy Fun
I thought it was so cute that Emily was using Ender as a head rest.
