Hi All,
I know it has been a long time since I wrote a post, but life has been very busy. Tonight I want to tell you about two very important people in my life, my Mom and Dad.

I have had the pleasure of growing up with loving and supportive parents. They have been such an inspiration to me over the years and I don't know what I would have done without them. In a past post I wrote about my Mom on Mother's Day, and how I have her to thank for all she has done for me. I am right now having to deal with my Mom going through cancer and it is so hard to keep a positive outlook on the situation when the cancer keeps coming back each time she kicks it. It makes me so angry at times when all the cures out there, why can't my mom be cured of this awful disease. It breaks my heart to watch her go through each operation and radiation, I wish I could do it for her :"( If there is anyone out there dealing with cancer in your family, I can certainly sympathize. All we can do is pray and hope that she will come through this again victorious! I love you Mom and Dad, you are the best.

Our New Tetherball/Swingball Court

Announcing... a great new way for our guests to have fun at the Evergreen Forest! We just completed a regulation-sized tetherball court. The entire area is filled with sand, so you can play in bare feet if you like! We call it our Beach Tetherball Court. We had such a great time building it (the kids didn't think so), we thought you might be interested in seeing how we did it.

Build Your Own Beach Tetherball Court

Step 1: Drive a stake into a reasonably level part of your yard and use a 10-foot string or rope to scribe a 20-foot diameter circle on the grass. Follow this line with a sod-cutting shovel, and remove all the sod from the enclosed area. Make your sod pieces about 2 inches thick. If your site is perfectly flat, use the sod somewhere else on your property. If not, place the sod on the low side of the hole, but a few feet away from the edge. Now dig a level-bottomed hole such that you're down at least 8 inches on the high side of the hole. On the low side, the depth may only be an inch or two; that's OK. If you have to dig deeper than 12 inches on the high side to make a level bottom, it might be wise to choose a more level site! Place all soil in a ring around the low side, but not too close to the edge.

Step 2: If you have anxious children waiting to play tetherball (I did), do this step right away. The concrete base needs a few days to harden enough for use; let it harden while you do the landscaping work. Get a 12" sonotube, and use a piece at least 24 inches long to make a pole base. This will hold about three bags of quick-mix concrete. Don't embed a permanent pole in the concrete; much better is to embed or bolt a pole base, into which the pole can be socketed. In this manner, the tetherball pole can be removed and replaced with one for another game (swingball comes to mind) .

Step 3: Use some strips of thin plywood or 1/4-inch floor underlayment to shore up the low side of the hole so that a new edge is created that's level with the high side. For my hole, I had to go about two-thirds of the way around to achieve this, and I used 8-inch strips. Back the plywood with wood stakes; it may be necessary to screw the plywood to the stakes to hold them level.

Step 4: Now smooth the soil around the low side of the hole, and bring it up to within 2 inches of the top of the plywood strips. You'll need that room for the sod. Try to blend this soil at the edges to the existing grass.

Step 5: Install the sod on the landscaped soil. Water it well if you're working in hot, dry weather. If necessary, leave a blending ring of soil around the edge of the sod, through which your existing grass can grow. Doing this will prevent a bump at the transition between the original and new grades.

Step 6: Fill your hole with about 1 cubic yard of sand for each inch of depth. Beach sand is nice and soft; screened sand gives better grip. When the sand is well settled (a good rain helps), pull up the stakes, plywood and any remaining fasteners. A nice touch is to install a garden divider around the perimeter. It doesn't really keep the sand in, but it looks professional. Install the pole and tetherball and start having fun!

Mother's Day Picnic

May 13th 2012 - We went for a picnic to Wingham. The family, my Mother-law and my parents. What a lovely day we had.

Mother's Day

This Sunday May 13th is Mother's Day, and I am so thankful that I have such a wonderful Mother!!!
For the past two years my mother has been battling cancer, she is so strong and I am so proud of her. When I was growing up my Mom was always there for us kids, and now it is our turn to be there for her. She is not just a mom to me, she is also a friend.
I remember as a teen growing up never minding going out with my mom, shopping and bike riding, she was always so much fun to be with, I love her so much. I remember one time being at the shopping mall with her, we were both talking and laughing that we did not realize we were walking up an escalator that was coming down, it was so funny that we started laughing even more. Even though we don't live in the same city we always talk to each other all the time on the phone, it is so special to hear her voice and know that we can talk about anything.
Mom just finished radiation treatment a couple of weeks ago and is recovering again, but you would never know it with her, she is so amazing!
To all those out there that are Mothers, I wish you all the best.
To my Mom, I love you, you make me laugh, you make me smile, you make me glad to be alive, but most of all thank for being there for me, now it is my turn to be there for you.

Walking The EverGreen Forest B&B Trail

Tonight I decided to walk our trail on our 52 acres, and this time I remembered to take the camera. So I have now taken pictures from start to finish, ending in the lower gardens. We do have a trail in the front part of the property, but I will do that another time. This is in order starting just to the south east of our garage.

A standard Bed an Breakfast pancake here at the Evergreen Forest Resort, and recipe can be varied by adding whole-wheat flour, nuts, fruit or other ingredients. Remember that you can thin a batter which has become too thick while standing with extra milk. Refrigerate any leftover batter to use the next day. If using an electric griddle, skillet or waffle baker, preheat it following manufacturer's directions. I find for the griddle that I prefer to use, I preheat it to 175c or 350f. You can test by sprinkling a few drops of water on griddle, drops should sizzle.
Begin 30 minutes ahead

Yield: 12 - 4-inch pancakes
Calorie-wise: 123 calories each

Ingredients:

1 ¼ cups all-purpose flour
3 tbsp sugar
1 ½ tsp baking powder
¾ tsp salt
1 large egg
1 1/3 (for thicker pancakes, use only 1 cup of milk)
3 tbsp oil

Instructions:

In large bowl, mix first 4 ingredients.
In small bowl, beat egg slightly; stir in milk and then the oil; add to flour mixture and stir just until flour is moistened. We typically add frozen blueberries immediately after they're poured on the griddle. As with all pancakes, watch your cook time; the most common problems for us are:

Over-browning on the first flip. The griddle may be hotter than you think!
If you apply frozen fruit to the pancake-tops, remember they'll need a little more time to cook when you flip them.
Don't let frozen blueberries thaw out on your fingers; you'll have alien-blue hands!

Functional and Beautiful Furniture

I thought I would show you a couple pieces of furniture that Doug has made for me, and does make upon request. The first piece is a half moon style table that is functional for your hall or any wall, and it can be fastened to the wall for stability. I have used it in my kitchen area as a telephone table, but now I use it in the Bed and Breakfast hallway as an accent table. It really is quite lovely.

The next piece of furniture came about because we needed some type of functional closet and luggage rack, but I did not want to put in a full closet into the B&B bedrooms, it would of taken up more space than I wanted. This two piece shelf was built to be elegant as well as useful, and believe me it is both. We call it "The Bikini", because it is busy on the top and bottom and naked in the center. Isn't it sweet?

Here at our Bed and Breakfast there is never a dull moment, we always have something new to do or show you. One of the newest projects on the go is the GAZEBOS. We have had a lot of inquiries about the gazebo and whether Doug would be interested in building them, well the answer is yes. In the next little while we will have our website for it up, but I thought I would give you a sneak peek at what the one we have to show you now. It was made with pressure treated wood that has screens in the walls and the floor, so to keep all the pesky little bugs out. The roof is clear so it is nice and bright during the day. We will get into more of the details and specs on the website later. Hard at Work

Well remember when I mentioned about my lovely handy husband making a canoe trailer? He finished it on Friday night, and I must say he did a great job! So, Saturday morning off we went to London to pick up my sister's canoe, which she so graciously loaned us for the summer. The canoe trailer followed along smoothly and without a hitch (pardon the pun). Now for his next project, hmm, what should it be.

Accomplished A Lot Today At The Evergreen Forest Bed And Breakfast Resort

Well the sun came out today and gave us a bit of warmth, it was glorious! Today was the first day I actually wasn't feeling too bad, after getting over my cold/flu, never want to go through that again.
I decided to make today a baking day, and started out just after breakfast this morning. I tried out a bunch of new recipes, and I must say every one of them were a success. I got them off my favourite spot, Pinterest, I love it, it is so helpful when you need to find something, it is also very addictive. These recipes that I did today I have added to my boards for those that follow me on Pinterest.
I made Chocolate Yogurt Cake Loaf, Buttermilk Banana Loaf, and made a new version of Pumpkin Loaf by following the Buttermilk Banana recipe and substituting it with pumpkin. Also did a version with the pumkin and added some chocolate chips to a couple of the loaves.

I also made some great cookies that were made with cream cheese, so moist.
While I was waiting for my baking to cook I wandered outside to talk with my husband Doug.
He was busy today making a trailer for our canoes. He was able to get an old trailer from our neighbour and he is modifying it to be able to carry several canoes for our guided tours we are going to be doing this year.

I'll show you a picture of it when he is done, and has it all painted up.
Our neighbour down the road who is a retired teacher is also a handy kind of guy, he likes to make all kinds of things with cedar, here is one of them, it's and angel. If anyone is interested let me know, he does sell his wares.

A few days ago when my husband was sitting in the office doing some book work, he heard a smack on the front window. This is what was left on it.

Can you see the impression of the bird on the window? He thinks it was a dove, don't worry it wasn't hurt, it flew away.
There is never a dull moment here at our place, come on out for a visit and relax on the deck or go for a lovely hike on our trails, you won't be disappointed!

We had a visit last night from our friendly neighborhood porcupine doing his or her rounds at our gazebo. Doug had just installed the newly built doors and screens and getting ready to install the lighting. My daughter was out there at the gazebo site this morning with my husband and notice quills on the floor, holes in the door screen and all the window screens. But the little critter didn't just stop there, it decided to chomp down on some tasty wood, urinate and leave his droppings. What a lovely surprise for Doug to discover:( So now before we fix all the damage we are going to have to figure out how to keep those pesky critters out. I was just reading that they like like the taste of pressure treated wood, great, anybody has some ideas? We were thinking of putting an electric wire around the area at night when all is in bed. Does anybody have any better suggestions for us? Would welcome some advice:) Cheers Caroline

Directly behind our Bed and Breakfast we have a lovely walkway out to this beautiful gazebo. Doug started this project last spring. We had to put a halt to it over the summer because we were too busy and too many bugs to contend with. He was able to start up again in the Fall, and now is hoping to finally complete the main part of it before the season hits us this summer. It is quite impressive to see, the workmanship is outstanding! I know I am a little bias, but hey, what can I say, I have a good man! The way it was built our guests can go out in the evening and enjoy being in the forest without getting attack by anything that flies around and bites, it is completely screened in. We hope you are able to come up and enjoy it this summer:) Cheers Caroline
