by Cheryl R. from Harrison, AR

You will need:

2-4 medium size zucchini (depends on how much you want)

Salt

Water

Cheddar cheese (any cheese that you like including Velveeta will probably work in this recipe)

Cavenders Seasoning

Clean and wash zucchini thoroughly

Cut 1 inch off each end

Slice 1/4 inch thick ( I cut zucchini in half lengthwise than slice)

Fill large pan with water/add teaspoon of salt/bring to a boil

Place zucchini in boiling water for 5 minutes than drain

Let zucchini cool

Prepare casserole dish by spraying lightly with cooking spray

When zucchini has cooled place a layer in casserole dish/then sprinkle with the Cavender’s seasoning/add a layer of cheese

Than another layer of zucchini/ Repeat the above steps until zucchini is used up. Be sure the top layer is cheese

Place in oven until cheese becomes bubbly.

Remove and enjoy.

This recipe has many variations. You can add other vegetable such as carrots and/or tomatoes to the recipe. Use your

imagination and add the Ingredients that your family loves.

You can also sprinkle crumbled bacon on top to add even more flavor.

Yum Yum Pudding Recipe by Sondra H. from Pearl, MS

Yum Yum Pudding
by Sondra H. from Pearl, MS

Ingredients:

l bowl cool whip (8, 12 or 16 oz)

1 box graham crackers

1 can/jar of chocolate cake frosting

2 large boxes of french vanilla instant pudding

milk

Mix instant pudding according to directions on the box.

Add 1/2 of th bowl of cool whip and mix thoroughly with the pudding mix.

In a 9 x 12 x 2 dish, layer graham crackers covering the bottom. Pour mixture (1 box of instant pudding mixed with the cool whip) over graham crackers.

Place another layer of graham crackers on top of mixture. Pour remaining mixture (2nd box of instant pudding mixed with the cool whip) over second layer of graham crackers.

Place another layer of graham cracker on top. Remove foil from top of chocolate icing; place in microwave 10 to 30 seconds. CAUTION: Do not overheat the icing; needs to spread easily but not be runny.

Pour icing over the top layer of graham crackers. Refrigerate until icing is solid and serve.

Please note: I find it easier to mix my pudding separately. I do one box, pour it in when needed. Then mix the second box and pour it in when needed. This keeps the pudding from setting and me from having to hold a large bowl and divide. That's been my experience with this recipe. The chocolate icing can be any chocolate (dark, creamy etc.)

by Joy R. from Blum, TX

This is one of my favorite recipes. I use it allot during Christmas for gifts

as well as gatherings. It's always a hit!!

Ingredients

1 teaspoonvanilla extract

1/2 cup,finely chopped pecans

2 tablespooncold water

1 cup sugar

14tablespoon (1 stick plus 6 tablespoons) butter

Dash salt

6 ouncesmilk chocolate chips

Directions

Thoroughly buttera cookie sheet.

Mix butter, sugar, and water in a pan over medium-high heat. Bring to a bubbling

boil, stirring constantly, about 10 minutes. Then cook to a very brittle stage

(300 degrees to310 degrees F on a candy thermometer) stirring occasionally. Or,

make a coldwater test: candy will separate into hard, brittle threads when

dropped in coldwater. Remove from heat and add nuts to mixture. Add vanilla and

salt. Pouronto prepared cookie sheet and spread to about 1/4-inch thickness.

While the toffee cools, melt the milkchocolate chips in a double boiler on top

of the stove. Stir the chocolate and heat untilmelted. Pour the chocolate over

thetoffee.

Coolcompletely and break into pieces. Store it in an airtight container.

Note: I use a pan with rectangular molds. I allow them to cool a little, and

then carefully dump them on a cookiesheet where I cover them in the chocolate.

You can wrapthem individually in plastic wrap and they make great gifts too!
