Harga bawang merah selalu berfluktuasi. Pada panen besar produksi melimpah dan harga bawang merah menjadi rendah, sedangkan pada waktu tertentu produksi rendah sehingga harga bawang merah menjadi tinggi. Dari keadaan tersebut di atas maka penelitian ini menitik beratkan permasalahan pada: bagaimana struktur biaya usaha bawang goreng, berapa pendapatan dari usaha bawang goreng, berapa tingkat efisiensi produksi bawang goreng, berapa besar nilai Break Event point dan Break Event Price usaha bawang goreng, dan berapa nilai tambah dari usaha bawang goreng.

Adapun tujuan dari penelitian ini adalah: Untuk mengetahui struktur biaya usaha bawang goreng, untuk mengetahui pendapatan dari usaha bawang goreng, untuk mengetahui tingkat efisiensi produksi bawang goreng, dan untuk mengetahui nilai impas atau nilai Break Event Point dan Nilai Break Event Price dari usaha goreng, serta untuk mengetahui nilai tambah dari usaha bawang goreng.

Daerah penelitian ditentukan dengan sengaja daerah yang dipilih adalah usaha bawang goreng milik Bapak Sugeng Raharjo dengan mempertimbangkan jumlah kapasitas produksinya.

Data yang digunakan adalah data primer, data primer ini diperoleh dari pemilik usaha bawang goreng dengan cara pengamatan dan wawancara langsung, pengamatan di sini dilakukan dalam jenjang waktu tertentu dalam penelitian ini selama 26 hari yang diamati setiap hari. Metode analisa data mengunakan metode analisa kelayakan usaha yang terdiri dari: metode analisa pendapatan, analisa R/C Ratio, analisa BEPq dan analisa BEPr, serta analisa nilai tambah.

ABSTRAK Bawang merah (Allium ascalonicum L.) adalah komoditas yang cukup potensial khususnya di Lembah Palu. Bawang merah lokal Palu selain sebagai bahan penyedap masakan sangat cocok digunakan sebagai bahan baku bawang goreng (Bawang Goreng Palu). Bawang goreng Palu mempunyai peluang yang cukup baik sebagai komoditas agribisnis. Penelitian ini bertujuan untuk mengetahui permasalahan dalam industri bawang goreng Palu. Kata kunci : bawang merah, peluang, masalah, agribisnis.

Jika saat normal, harga bawang merah ukuran kecil bisa mencapai Rp 15 ribu per kilogram dan ukuran super bisa di atas Rp 25 ribu per kilogramnya.

Perajin makanan olahan kemudian memanfaatkan anjloknya harga bawang merah untuk bahan baku olahan, yaitu dibuat bawang merah goreng, kemudian dibungkus dengan pelbagai ukuran. Data di Dinas Pertanian Bojonegoro menyebutkan tanaman bawang merah pada Januari-April 2015 seluas 1.781 hektare. Untuk musim tanam kedua April 2016 seluas 1.155 hektare dan akan ditambah Juni ini. Lokasinya tersebar di beberapa desa di Kecamatan Kedungadem, di antaranya Desa Pejok, Duwel, dan Megale—berbatasan dengan Kabupaten Nganjuk yang juga penghasil bawang merah.
