Cinnamon eggy bread & bacon

What a wet miserable weekend!!

My hubby is away this weekend with work, the eldest son is at his dads & my smallest is not well so lots of inside time for us this weekend.

What a nicer way to start of Sunday morning though than eggy bread & bacon!!
I added some cinnamon & sugar though to mine to give it an extra crunch & sweetness needed on a wet & cold Sunday in March!!!

what did I use?

2 eggs
2 slices of wholemeal bread with the end crust cut off but the side ones left on.
Golden sugar & cinnamon in a bowl.

I melted a knob of butter in a pan & then after dipping the bread in the egg cooked on each side for 1-2 mins till brown.

Then immediately coated the bread in the sugar & cinnamon mixture

I had some bacon that needed cooking so served it warm with bacon which strangely was a really good combo!!

All in all this was a really quick, yummy Sunday morning breakfast.

Good old fashioned Macaroni cheese!

So when the snow is falling & bellies are rumbling there is no better dish than good old simple Macaroni cheese. I spend alot of time looking over recipes for putting different things in Mac & cheese but somehow I think that it is just fine as it is! Yes I could add bacon, broccoli or cherry tomatos but why mess with something that is beautiful in its simplicity!!

My family always devour this regardless of how many pots of left overs I was planning to be able to salvage!!!

In the words of my husband......always a winner!

So how do I make it?

This may come as a surprise to alot of people but I cook my sauce in a microwave! In my opinion life is far to short for standing over a oven striring a sauce!

So, pop 500g of Macaroni on the hob & let cook.

I use a Pampered Chef rice cooker for the rest!! It works for me!

Melt 50g butter & mix with 50g plain flour to make a roux. Then stir in 1 pint/500ml of milk. I usually use semi skimmed but if I am feeling particularly virtuous I will use skimmed!

Give it a good whisk and pop it in the microwave for 5 mins. You may want to adjust the cooking times depending on your microwave strength.

Take it out & give it a really good whisk & pop it back in for about 2-3 mins. Giving it another good whisk I always end up with a perfect lump free sauce. Then stir in a good helping of good old cheddar cheese!

Mix with the macaroni, pop it into a oven proof dish & sprinkle with a bit more cheese.

I then cook for 20 mins at 200c

What we have then is the perfect Wednesday night tea for 2 hungry boys, 1 hungry Husband & me!!

Is it wrong to get a bit too excited about Mondays now!!!

Last weeks menu plan went all according to plan except the Chipotle pork as I forgot to take it out of the freezer! So it is re-appearing on this weeks menu.

This week we have -

Chicken pizza melts

Turkey Kofta curry

Mexican Rice with Chipotle Pork

Chunky chilli with green rice

Singapore Noodles

Only 5 meals as I am away on Saturday night at a friends birthday party so hubby & youngest son are going to a friends. Then on Sunday I am predicting a hangover so will freestyle that once I have recovered!!!

Cake pops - My first attempt!

I have a new toy!!! A cake pop machine.

I had been eyeing it up for a while but as I had a weekend on my own with the kids I thought I would get one & give it a go! We had a great time & it has been a really worthwhile purchase!

So, we started off making a basic vanilla cake mix, well......when I say we I mean the kids! I got the ingrediants all ready & they did it!

The cake pop maker its self is from Lakeland - Cake Pop machine

It is super easy to use! You plug it in, wait for the light to go green, brush a small amount of oil over the plate , fill each of the 6 'holes' with cake mix, close lid & leave for 4 minutes.

Once they are out & completely cool its time to insert the sticks into the cake balls. This is done by melting a little of chocolate & putting it on the end of the stick before pushing it about 2/3 of the way into the cake ball.

These then need to 'set' before they can be decorated. After trial & error and much frustration I devised a novel use for the holes in my Pampered Chef Stackable cooling rack! The height is perfect for popping the sticks through the holes & standing them up!

When it came to decorating I took to you tube to see if there were any top tips for decorating these little balls! In theory it was so easy!! I found this post which actually really helped!

So, I melted chocolate & got the sprinkles out & these are the end result!!

So we have Milk & White chocolate for the coating.

Then I used sprinkles, chopped walnuts & shredded coconut for the decorations.

I took them to a friends tonight & they all went down really well!!

what I would do differently next time though is get some Oasis from the garden centre to put them into when they are setting so I can pick them up & put them in the fridge as it was 26 degrees today & the chocolate was a nightmare to work with!!!

I am thinking of experimenting with various chocolate bars to decorate them with........which ones do you think would work??

Michelle's Mexican eggs!

As you may know from my previous posts I am following the Slimming World plan to keep my weight in check! I have lost 1 stone in total but this has fluctuated slightly in August due to holidays!

Anyway, as of Thursday I am back on plan 100% between now & Christmas!

This morning I was not sure what to have for breakfast so I stood there in front of the fridge to see what I had left. I was inspired by a post on Facebook earlier from Nigella for Mexican scrambled eggs Link but it was not 100% SW friendly so I thought I would 'tweak it'!!

I chopped some button mushrooms, cherry tomatoes, green pepper & about 1/3 of a red chili & fried it all up in some frylight.

Then added 2 eggs whisked up with some skimmed milk & 30g cheddar cheese (Healthy extra allowance) and scrambled it. As simple as that.

The mushrooms were getting towards the end of their shelf life so they have colored the eggs a little but but served on top of 2 slices of wholemeal toast washed down with a lovely cup of coffee & this has set me right up!!

I love a good mash up of ingredients from the fridge that need eating, I find that these can usually be the best dinners!! What is your favorite mash up?

Lemony Prawn & Chorizo Rice

As part of my Monday Meal Planning post I said I was going to make Lemony Prawn & Chorizo Rice and we had it tonight.

Hubby is away in Budapest on a stag do so it was just me & the boys. I did think twice about cooking it as neither of them are big fans of peppers but I just made sure that they were big enough chucks to be able to pick them out!!!

The recipe is one that I saw in the BBC Good food magazine but it is also on the website Recipe

1 tbsp olive oil
1 onion , sliced
2 small red peppers , deseeded and sliced
50g chorizo , thinly sliced
2 garlic cloves , crushed
1 red chilli (deseeded if you don't like it too hot)
½ tsp turmeric
250g long grain rice
200g raw peeled prawns , defrosted if frozen
100g frozen peaszest and juice 1 lemon , plus extra wedges to serve

1) Boil the kettle. Heat the oil in a shallow pan with a lid, add the onion, peppers, chorizo, garlic and chilli, then fry over a high heat for 3 mins. Add the turmeric and rice, stirring to ensure the rice is coated. Pour in 500ml boiling water, cover, then cook for 12 mins.

2)Uncover, then stir - the rice should be almost tender. Stir in the prawns and peas, with a splash more water if the rice is looking dry, then cook for 1 min more until the prawns are just pink and the rice tender. Stir in the lemon zest and juice with seasoning and serve with extra lemon wedges on the side.

OVEN-BAKING If you don't want to spend time at the stove, you can bake this dish in the oven. Tip the oil, onion, peppers, chorizo, garlic and chilli into an ovenproof dish, then bake for 15 mins at 200C/180C fan/gas 6. Stir in the turmeric, rice and water, cover, then bake for another 20 mins, stirring in prawns and peas for the final 2 mins. Season and stir in lemon zest and juice to serve.

We all really enjoyed this tonight, it took no time to make & all 3 bowls were clean afterwards! Also, as hubby isn't here I have lunch tomorrow sorted!!!

For those that are following Slimming World I substituted Olive Oil for Fry light & syned the Chorizo!

Shellac nails

I wanted to do a post about my nails!
If you look back through alot of my previous (old!) posts you will see I have a little nail varnish thing going on. I love all the beautiful colours & bottles. I'm like a magpie in Boots!!!

But a couple of months ago I found my nails to be splitting & really weak. A friend suggested Shellac to me and explained that it helps to strengthen your nails & encourages them to grow as they are less likely to break. I had a trial & have been hooked ever since! I probably get them done every 14 days ish! It costs £25 a go but it's been worth it as my nails are now nice & strong. I'm not sure if I'll keep it up long term as its quite pricey but every so often to get the strength I'm happy with.

The beauty of this is too is that when you have it removed the nails underneath are not damaged in anyway.

I'm still a magpie when it comes to nail varnish though!!!!

Here is a picture of my nails today, this has been on since Saturday so 6 days & still nice and shiny!!!!

Every family has one, that one recipe you can cook with your eyes closed and you can guarantee empty plates at the end of it all.

Ours is Chicken Pesto Rice.

If any one in the house is poorly this is always the 1st meal they ask for when they are feeling better too!!

I don't have any pictures if I am being honest but will take one next time I make it (will definatley put it on next weeks menu plan)

I found the recipe on here Chicken Pesto Rice

Chicken Pesto rice

4 chicken thighs
1 onion finely chopped
4oz sliced mushrooms
6oz long grain or basmati rice
1/2 jar green pesto
1pt chicken stock

Method: Pre-heat oven to 200C/gas mark 6

Brown the chicken in a pan

In a baking dish put the rice (uncooked), onion and mushrooms and mix up. Place chicken on top. Mix pesto and hot chicken stock and pour over chicken and rice.

Cook in the oven uncovered for 1 hour and it's done.

I usually use brown rice as this is just our preference!

I have been inspired to do this by the lovely At home with Mrs M so here goes.........my first Meal planning Monday!!

and a very much freestyle see if I can get invited to a friends house as hubby is away on a stag night dinner!

So far we have actually stuck to it as we plan Sunday to Saturday in this house.

Last night we had a very yummy lasagne with sweet potatos & peas. It was lovely with 2 boxes of left overs in the fridge for lunches so feeling very virtuous!

Not really 100% slimming world friendly but I am working the syns in!!!

So I will really do my best to do posts on some of these dishes but if anyone wants the recipes please shout!

I have missed blogging

I have had such a lovely summer & I have enjoyed every single minute of it but I will be so glad to get back to normality on Wednesday!

I have decided to get with the programme & get organised in the house & in life in general. We want to move house so this involves clearing out all our stuff we don't want and saving lots & lots of money. I figured one of the best ways for me to do this is to chart my progress somewhere I can put down my thoughts........here!! Whether it is interesting & whether anyone reads it is yet to be seen!

I am going to start off with a easy post about the best 5 things about my summer!!!

1) We went on a lovely summer holiday to Corfu. Not a Greek island I had been to before but it was lovely. We stayed in a hotel called Aquis Sandy beach in the resort of St George South. It was a big complex with 2 pools and alot going on but when you have 2 kids aged 5 & 13 you need that!!!

This is my only picture of me, hubby & the boys on the last night by the pool!

2) The Olympics! How can we not mention the amazing Olympics & the fever that gripped the country! Hubby & me were lucky enough to go to the Velodrome for some of the cycling & it was a real treat! Now that the Paralympics are on I have to say it is making me feel a bit guilty for not getting out there & get my running sorted. It is something I really want to do & I look at these amazing athletes & think to my self if they can overcome their disabilities to run & do all manner of amazing sports then I can put my wine glass down & get out there!!! So watch this space to see if I actually do so!

3) My kids!! they have had such an amazing summer & have been so well behaved I really am so grateful! Ollie turned 6 a couple of weeks ago & Alex will be turning 14 in a couple of weeks from now & he is turning into such a lovely young man, a typical teenager at times but lovely none the less!!!

4) My inlaws! They had Ollie for a whole week so G & me could be just us again and we had such a lovely week! We were working but we made the time to go out in the evening and do things we could not do if it was all of us. We spent a lovely day in London on bank holiday Monday & had a few cocktails!!! Went to a fab resturant called Navajo Joes in Covent garden. The staff were great & the food (and cocktails) hit the spot nicely!!! They also have possibly the largest selection of tequilla's I have ever seen! Check out the website here - http://www.navajojoe.co.uk/

5) Food! I eat & drank what I wanted this summer and I am paying for it now!!! So will be getting my backside back on the Slimmingworld wagon & excerising lots in the next month.

But until then, its my wedding anniversary. 7 years today so I am off for a glass of wine :-)

I have had a rough day at work & am numbing the pain with wine but in the meantime I thought I really do have alot to be thankful for.

1) MrB got a promotion this week at work! I am very very proud of him. He is going to be doing the job he has wanted to do for years so this is BIG news in the house! Payrise in the new year but it's not all about the money is it!
2) MrB is getting a one off bonus in October salary!! yay
3) I have just found Katy Perry tickets for £26 if Mr B agree's to let me use his American Express card!!!
4) My little man Ollie............I love the way he puts his arms round my neck & tells me how much he loves me. Makes my heart melt...........just what I need after the day I have had.

5) It's pay day on Monday!!! yay!!

It is not as dense as I usually like & you can see my nail line but I'm sure a 3rd coat would sort that out. I 'do' love the colour though :-)

Well I have been a bit AWOL recently haven't I!!

To explain I have had 2 children start 2 new schools and my hours at work have changed but now I am feeling like I can have some ME time now so I am hoping to get back on with my blog.
I am now back to Slimming World too so I may do some SW related articles to help me stay on the straight & narrow!!!

Anyway, here is my NOTD!
I love this colour so much, I am actually really suprised I have not blogged it yet!

Typical Barry M application. This is 2 coats with a Nails Inc basecoat & Models Own 3 in 1 top coat. Apologies about rubbish pic but it is raining & overcast so not good photo taking weather really!

NOTD - Models own Peacock Green

I will say this now but I LOVE THIS COLOUR!
I have had this on since Sunday evening & I have had so many comments & so many people ask me where it is from!
I really don't want to take it off but my other untrieds are sitting on the shelf looking at me with that look!!!

This is 2 coats using Models own 3 in one top/base coat as both base & top coat!

It really shimmers & I just can't help keep looking at my nails!!

Do you own this shade? Are you as in love with it as me?

My lip balm collection

I have just been sorting out my handbag ready for work tomorrow & I was suprised to find not 1 but 7 lipbalms in there!
So I thought I would go through them all & list why I love them so much!

So good old plain Vaseline. This is a staple. When my lips are dry I can just rub it in & instantly feel relief! I swear by this stuff & have a big pot on my bed side table.

Then we have Carmex. This is more of a winter lip balm but it is lovely. Has a fab medicated smell to it & in the winter it is invaluable for dry horrible lips. Me & my husband fight over it so I have to buy him his own pot! My 12 year old son even has a pot in his school bag.

Then there is All Talk from Temple Spa. Now I have never actually paid for a tube of this as I have 2 that I picked up on a P&O cruise ship & 1 that a friend bought me. These come in little tubes that you rub over your lips as opposed to a pot you stick your finger in but these are lovely. Not that strong in very cold or drying weather but I have one in my draw at work & it is perfect for that kind of enviroment.

Then you have Rose Vaseline. This one is not one you can smother all over your lips as otherwise you end up looking like you have been at the jam pot! It is perfect however for a very natural pink tone with gloss. It is almost like a nice moisturising lip gloss.

Lastly I have the Sweet Lemon lip butter - I only bought this last week so still getting used to it. It is more of a cream/butter than a balm. But it has a lovely subtle lemon scent & dose the job nicely!

I am sure I have more somewhere, I do have a Elizabeth Arden Eight Hour cream somewhere which is good for lips.

NOTD & new purse lusting

Good evening ladies (& any gents who wish to read!)

Today we have taken the kids to Chessington world of adventures. It was very busy but a good time was had by all (My feet hurt though!)

My nails have been done tonight with one of my new Models Own polishes. I was very excited about trying this one as it looked so pretty in the bottle!! It is called Dusty Mauve and is a shimmery grey/mauve colour. It goes on in the 1st coat very sheer & I thought it would take more than 2 coats but it actually is fine with 2 coats. I also used my new Models own 3 in 1 base coat & top coat which although has a very strong smell (I think all MO polishes have a very strong smell to them actually) dried very fast & has given a nice shine to the nails. The polish went on over it well & I think I am on to a winner here!!

It is more of a steely grey colour really than mauve. But it is dark & my lightbulbs are those stupid energy efficent ones which let off a very small amount of actual light so in the day light I may actually change my mind on that!!!

Also while standing in a long queue at Chessington I decided I needed a new purse! So I have had a little look on the House of fraser website & have chosen this one!

My favourite products - Bathroom

I have been wondering all morning what to blog about today! I am very tempted to make it a nail varnish one as 5 beautiful bottles of Models Own arrived this morning in the post but I took such a long time painting my nails yesterday that I am going to leave that till tomorrow I think! (Although I may do my toes!)

So I thought I would do some product reviews of some of the things that I use!
I am a bit of a skinflint when it comes to products as I have usually never got any money so I do look for value & products that actually do what they say they are going to do!!!

I read alot of blogs of lovely ladies reviewing beautiful high end products which I can only dream of so I want to review products for those of us whose budget stretches to Boots as opposed to Harvey nicks!! Although I adore the blogs mentioned above as one day I will be a millionaire! (Just got to keep buying the tickets!!!)

So the 1st thing like most of us do on a morning is jump in the shower (Unless it is Monday when we crawl!)

At the moment I am using

VO5 silky Smooth Elixir shampoo & conditioner. I bought these as they were on special offer in Asda & I am actually quite impressed!! They come in really pretty looking pink bottles so look nice on your shelf in the bathroom. They smell delicious which always helps. I do have quite problematic hair as it is a bit curly, bit straight, bit frizzy and so far I have been impressed with what this shampoo has done for me considering it was something like 2 for £3!!

Imperial Leather Japanese spa shower gel I LOVE these shower gels. They smell really lovely & foam up well & make my skin feel really soft. Plus they are always on special offer!!! Yay!

Olay Total affects cleanser - This is a cream wash so I use it in the shower. This is what the Olay website says about it

Fights 7 signs of ageing with beta-hydroxy complex and refining beads.

It is a nice thick creamy consistancy which foams up nicely. Has tiny little grains in it so is a gentle exfoliator too.

Then on my skin I am using BodyShop Spa Wisdom Mono Miracle oil.

I have just had a look at the bodyshop website as I bought mine a while back & they seem to have changed it now. It is called Polynesia Monoi miracle oil now & the packaging is different. But I am thinking it may be the same!! Miracle Oil Link

I love this oil, it is wonderful stuff. Smells divine & leaves your skin feeling so silky & sexy! Hours later you still feel moisturised & yummy. You can also use it on your hair but I have not done this. Might try it though & report back!

I have waffled on long enough now so I will do face products I love on another blog!!!
