The ever peaceful sound of silence lingering throughout the air, nothing more then the sound of the slight breeze passing though the leaves on the trees, a few cars way off, just giving off a nice background hum. It is night the start of a brand new day the earth is asleep just snoring away, such a beautiful display.

Friday the 9th 0100

BEEP! BEEP! BEEP! BEEP! and I'm up here we go, the day begins like any other day, get up, press snooze and roll over and cuddle my girlfriend for a bit longer. Eventually I get up the strength to hop out of bed and start getting ready for work, its quiet simple I'm sure most of you do the same thing, shower, dress, get to work some might throw in a cup of coffee and some breakfast somewhere in there, but I'm not a fan of coffee. One of the perks being a baker and starting so early is freshly baked goods for breakfast a++ ham and cheese croissants. Made it to work a few minutes early and got straight into it, its usually pretty slow during the first couple of hours, everyone tired and can hear their bed calling them plus everything is heating up so there isn't a lot you can do really. At this time of night there is a chance you will spot a baker in a weird spot just trying to get a couple of extra Zs, store room, behind flour, under benches etc... so you've got to be a little careful around the baker otherwise you might end up with the fright of your life; but hey at least you will both be wide awake now. Today wasn't much different to say the least, not much movement was happening around the bakery this morning. It was as though I had stepped into zombie movie, but instead of craving and moaning for brains, it was more like angry muffles and craving dreams. Once the gears start moving and everything began to move at a fast pace, and before we knew it, those zombies had disappeared and it's like watching the clubs win the world series: you wouldn't expect a bunch of miss fits to work so smoothly together. But the speed kept increasing throughout the night, one deck of blocks comes out, and another deck goes in etc. Until before we know it we are left with 2 doughs to mix with only being at work for 4.4 hours. To say at the least, we were all pretty happy with our progress so far and how smoothly everything came together. Work today was good! I just hope we can keep up the work tomorrow and smash it out and bring our customers the best bake possible.

Until next time...
